The management of wineries for industrial red winemaking is limited by the capacity and availability of fermentation tanks over the harvest season. The winemakers aim to optimize the wine quality, the fermentative maceration length, and the fermentation tank’s productive cycle simultaneously. Maceration in varietal wine production is carried out until a specific sugar content (digging-out point) is attained, finishing before alcoholic fermentation. Winemakers have found that by trial and error handling of the digging-out point, they can improve the winery capacity and production cost. In this work, we develop an optimal control problem for managing the digging-out point considering two objectives associated with process efficiency and costs. A good compromise between these objectives was found by applying multi-criteria decision-making (MCDM) techniques and the knee point. Two control strategies were compared: free nutrition and traditional nutrition. TOPSIS and LINMAP algorithms were used to choose the most suitable strategy that coincided with the knee point. The preferred option was nitrogen addition only at the beginning of fermentation (6.6–10.6 g/hL of DAP) and a high fermentation temperature (30 °C), yielding the desired digging-out point with a small error (6–9 g/L).

Wine fermentation is a specific and complex research subject and its control is essential to ensure full process completion while improving wine quality. It displays several specificities, in particular, (i) musts with a very high sugar content, low pH, and some limiting nutrients, as well as a great variability in must composition according to the year, grape variety, and so on; (ii) atypical fermentation conditions with non-isothermal temperature profiles, a quasi-anaerobiosis and legal constraints with a limited and predefined list of authorized operations. New challenges have emerged, related to the increasing diversity of commercially available yeast strains; the fluctuating composition of musts, particularly owing to climate change; and sustainability, which has become a key issue. This paper synthesizes approaches implemented to address all these issues. It details the example of our laboratory that, for many years, has been developing an integrated approach to study yeast diversity, understand their metabolism, and develop new fermentation control strategies. This approach requires the development of specific fermentation devices to study yeast metabolism in a controlled environment that mimics practical conditions and to develop original fermentation control strategies. All these tools are described here, together with their role in the overall scientific strategy and complementary approaches in the literature.

In each winegrowing region, the winegrower tries to value its terroir and the oenologists do their best to produce the best wine. Thanks to new remote sensing techniques, it is possible to implement a segmentation of the vineyard according to the qualitative potential of the vine stocks and make the most of each terroir to improve wine quality. High resolution satellite images are processed in several spectral bands and algorithms set-up specifically for the Oenoview service allow to estimate vine vigour and a heterogeneity index that, used together, directly reflect the vineyard oenological potential. This service is used in different terroirs in France (Burgundy, Languedoc, Bordeaux, Anjou) and in other countries (Chile, Spain, Hungary and China). From this experience, we will show how remote sensing can help managing vine and wine production in all covered terroirs. Depending on the winegrowing region and its specificities, its use and results present some differences and similarities that we will highlight. We will give an overview of the method used, the advantage of implementing field intra-or inter-selection and how to optimize the use of amendment and sampling strategy as well as how to anticipate the whole vineyard management.

This study considers the optimal control of dry bulb temperature and moisture content in a single zone, to be accomplished in such a way as to be implementable in any zone of a multi-zone system. Optimality is determined in terms of appropriate cost and performance functions and subject to practical limits using the maximum principle. Several candidate optimal control strategies are investigated. It is shown that a bang-bang switching control which is theoretically periodic is a least cost practical control. In addition, specific attributes of this class of problem are explored.

This project aims to study the optimal control model of the ice-storage system which is theoretically close to the optimal control and also applicable to actual engineering. Using Energy Plus, the energy consumption simulation software, and the simple solution method of optimal control, researchers can analyze and compare the annual operation costs of the ice-storage air-conditioning system of a project in Beijing under different control strategies. Researchers obtained the power rates of the air-conditioning system in the office building under the conditions of chiller-priority and optimal contro1 throughout the cooling season. Through analysis and comparison, they find that after the implementation of optimal control, the annually saved power bills mainly result from non-design conditions, especially in the transitional seasons.

Tropospheric ozone (O3) can strongly damage vegetation. Grapevines (Vitis vinifera L.), in particular, have intermediate sensitivity to ozone. Wine production is an important economic activity, as well as a pillar to the cultural identity of several countries in the world. This study aims to evaluate the risk of Douro vineyards exposure to ozone, by estimating its concentration and deposition in the Demarcated Region of Douro in Portugal. Based on an assessment of the climatology of the area, the years 2003 to 2005 were selected among the hottest years of the recent past, and the chemical transport model CHIMERE was used to estimate the three-dimensional field of ozone and its dry deposition over the Douro region with 1 km2 of horizontal resolution. Model results were validated by comparison with measured data from the European air quality database (AirBase). The exposure indicator AOT40 (accumulated concentration of ozone above 40 ppb) was calculated and an exposure–response function was applied to determine the grapevine risk to ozone exposure. The target value for the protection of vegetation established by the Air Quality Framework Directive was exceeded on most of the Douro region, especially over the Baixo Corgo and Cima Corgo sub-regions. The results of the exposure–response functions suggest that the productivity loss can reach 27% and that the sugar content of the grapes could be reduced by 32%, but these values are affected by the inherent uncertainty of the used methodology.

We discuss control strategies for the surface hardening of steel with laser or electron beam. The goal is to acchieve a prescribed hardening depth avoiding surface melting. Our mathematical model consists of a system of ODEs for the phase volume fractions coupled with the heat equation. The system is solved semi-implicitely using the finite element method. For the optimal control we discuss two approaches: model reduction using POD (Proper Orthogonal Decomposition) and a feedback control of temperature. The numerical results prove that it is not sufficient to control the surface temperature in order to obtain a uniform hardening depth. Instead the best strategy should be to compute the optimal temperature in the hot spot of the beam by solving the control problem and use this temperature as the set-point for the pyrometer control of the real process.

This study presents a two-strain deterministic model which incorporates Dengvaxia vaccine and insecticide (adulticide) control strategies to forecast the dynamics of transmission and control of dengue in Madeira Island if there is a new outbreak with a different virus serotypes after the first outbreak in 2012. We construct suitable Lyapunov functions to investigate the global stability of the disease-free and boundary equilibrium points. Qualitative analysis of the model which incorporates time-varying controls with the specific goal of minimizing dengue disease transmission and the costs related to the control implementation by employing the optimal control theory is carried out. Three strategies, namely the use of Dengvaxia vaccine only, application of adulticide only, and the combination of Dengvaxia vaccine and adulticide are considered for the controls implementation. The necessary conditions are derived for the optimal control of dengue. We examine the impacts of the control strategies on the dynamics of infected humans and mosquito population by simulating the optimality system. The disease-freeequilibrium is found to be globally asymptotically stable whenever the basic reproduction numbers associated with virus serotypes 1 and j (j 2 {2, 3, 4}), respectively, satisfy R01,R0j 1, and the boundary equilibrium is globally asymptotically stable when the related R0i (i = 1, j) is above one. It is shown that the strategy based on the combination of Dengvaxia vaccine and adulticide helps in an effective control of dengue spread in the Island.
