In recent decades, food safety has become a major concern due to frequent food safety incidents in many countries. This may lead to increased health risks associated with low quality food consumption, thereby reducing consumer trust in food safety. A better understanding of consumer perceptions of food safety can improve indicators that do not meet consumer expectations. We propose a food safety gap model with four gap-construct based on consumer expectations and perceptions. The model was empirically tested through a survey of 25 items, and then assessed for gaps through the importance–performance analysis (IPA). From a sample of 697 Taiwanese consumers, we found a huge gap between consumer expectations and perceptions related to food safety. More importantly, the results of the IPA indicate that most items must be immediately improved, which is vital in order to mitigate the risk of food safety.

PurposeThe aim of this research is to empirically investigate how different types of trust relate to consumer perceptions of food safety.Design/methodology/approachAfter a review of trust literature this study classifies trust into three distinct types: supplier‐level specific trust, industry‐level specific trust and general trust. The direct and indirect relationships between three types of trust and consumer perceptions of food safety were studied through a survey of 1165 consumers from Beijing municipality, China using structural equation model as an analytical tool.FindingsThe results indicate that trust in manufacturers and trust in retailers are directly positively related to food safety perceptions. Trust in farmers is not directly related to food safety perceptions. Industry‐level specific trust is not related to food safety perceptions directly, but it is positively related to supplier‐level specific trust, which in turn is positively related to food safety perceptions. Finally, general trust has only a weak indirect positive effect through its effect on trust in food manufacturers.Practical implicationsThe results imply that consumer perceived safety of food products might be enhanced by improving consumer trust in manufacturers and trust in retailers. The results also suggest that food suppliers are more difficult to build consumer trust when industry‐level specific trust is low and declining. In addition, food suppliers also get potential benefits through influencing and improving industry‐level specific trust. At last, the results suggest that some concerns about food safety are related to individuals' world reviews and maybe beyond the control of the food system.Originality/valueThis study is the first to investigate the relationship between different types of specific trust in the context of food safety. Accordingly, it complements existing trust models and helps predict and explain how trust relates to food safety perceptions directly and indirectly through interactions between different types of trust.

Abstract Background Animal-source foods (ASFs) are high-quality nutrient-dense products key to reducing stunting and micronutrient deficiencies. However, their consumption among the poorest households in urban informal settlements is low. Several drivers beyond price, including health considerations have been reported to drive ASF choice and consumption among consumers. This current study explores consumer perceptions of food safety associated with animal source foods (ASFs) consumption in urban informal settlements with a view to unpacking the health considerations driving their choice and consumption. Methods Coupled households with children 6–59 months formed the study sample. The Food Environments Working Group (FEWG) Framework of the Agriculture and Nutrition for Health academy (ANH) was used to guide the study which utilized qualitative methods namely, 60 in-depth interviews (IDIs), 19 focus group discussions, and 19 key informant interviews (KIIs) complemented by unstructured observations. Data were transcribed and analysed according to emerging themes. Results Consumer perceptions of food safety are driven by concerns about food production, processing, handling, storage and the health risks associated with consumption of the ASFs. For all the ASFs, lack of traceability of source, unhygienic environments in which they were sold and health risks around consuming too much or improperly cooked products were key perceptions from the community. To mitigate against food safety risks, consumers used strategies such as boiling the ASFs, purchasing their products from trusted retailers, avoiding vendors in unhygienic environments and reducing the amount and frequency of consumption of ASFs or totally avoiding their consumption. These consumer perceptions are increasingly influencing the ASFs choice and consumption in low-income populations besides other drivers. Notably, given limited incomes that influence their purchasing power and the need for nutritious diets that included ASFs, the dilemma of quality vis-a-vis quantity persists and consumers still accessed and consumed these ASF products to supplement their diets. Conclusions To enhance food safety for ASFs, as well as assure consumer access to safe ASFs from informal markets, there is need to contextualize the value chain as informed by consumer perceptions on food safety as these influence their ASFs choice and consumption.

Abstract Introduction Understanding the various eating habits of different population groups, according to the geographical area, is critical to develop evidence-based policies for nutrition and food safety. The FAO/WHO Global Individual Food consumption data Tool (FAO/WHO GIFT) is a novel open-access online platform, hosted by FAO and supported by WHO, providing access to harmonized individual quantitative food consumption (IQFC) data, especially in low- and middle-income countries (LMICs). Methods FAO/WHO GIFT disseminates IQFC data as ready-to-use food-based indicators in the form of infographics, and as microdata. The infographics intend to facilitate the use of these data by policy makers, providing an overview of key data according to population segments and food groups. The microdata is publicly available for download, and is intended for users that would like to do further analysis of the data. Results FAO/WHO GIFT is a growing repository. By June 2020, 14 datasets were available for dissemination and download, and an additional 44 datasets will be made available by 2022. FAO/WHO GIFT also provides an inventory of existing IQFC data worldwide, which currently contains detailed information on 268 surveys conducted in 105 countries. Conclusions FAO/WHO GIFT collates, harmonizes and disseminates IQFC data collected in different countries. This harmonization is aimed at enhancing the consistency and reliability of nutrient intake and dietary exposure assessments globally. FAO/WHO GIFT is developed in synergy with other global initiatives aimed at increasing the quality, availability and use of IQFC data in LMICs to enable evidence-based policy-making for better nutrition and food safety.

Abstract The FAO/WHO Global Individual Food consumption data Tool (FAO/WHO GIFT) is a novel open-access online platform hosted by FAO and supported by WHO. FAO/WHO GIFT is aimed at increasing the quality, availability and use of individual quantitative food consumption (IQFC) data in low- and middle-income countries (LMIC) to enable evidence-based decision-making and policy development for better nutrition and food safety. The platform is developed in synergy with other global initiatives working with food consumption data (e.g. Intake, Global Dietary Database, FAO/WHO FOSCOLLAB). The main objective of the session is to give the opportunity to participants to apply the knowledge gained over the previous sessions. Participants will be divided in small groups to do hands-on exercises using the features of the platform. Participants will learn how to identify existing IQFC surveys worldwide using the FAO/WHO GIFT inventory map. Participants will also explore the potential of the Indicators section of the platform according to the needs of different fields of work (food consumption, food safety and nutrition). Expert users will learn how to download dietary microdata and how to take advantage of other data sources using the same food classification and description system - FoodEx2. The workshop will close with a brainstorm session on how the FAO/WHO GIFT platform can be improved to support participants work.

Abstract Background Consumer trust in food systems is essential for consumers, food industry, policy makers and regulators. Yet no comprehensive tool for measuring consumer trust in food systems exists. Similarly, the impact that trust in the food system has on health-related food behaviours is yet to be empirically examined. The aim of this research was to develop a comprehensive instrument to measure trust in the food system (the Dimensions of Trust in Food Systems Scale (DOTIFS scale) and use it to explore whether trust in the food system impacts consumers’ health-related behaviours. Methods The DOTIFS scale was developed using sociological theories of trust and pre-existing instruments measuring aspects of trust. It was pilot tested and content validity was assessed with 85 participants. A mixed-methods exploration of the health-related behaviours of 18 conveniently sampled Australian consumers with differing trust scores determined by the DOTIFS scale was then conducted. During March–July 2019 shopping- and home-observations were used to assess participants’ food safety practices and exposure to public health fortification programs, while the CSIRO Healthy Diet Score determined their adherence to national dietary guidelines. Results The DOTIFS scale was found to have high comprehension, ease of use and content validity. Statistical analysis showed scale scores significantly trended as predicted by participants’ stated level of trust. Differences were found in the way individuals with more or less trust in the food system comply with national dietary guidelines, are exposed to public health fortification programs, and adhere to recommended food safety practices. Conclusions The DOTIFS scale is a comprehensive, sociologically- and empirically- informed assessment of consumer trust in food systems that can be self-administered online to large populations and used to measure changes in consumer trust over time. The differences in health-related behaviours between individuals with varying levels of trust warrant further investigation.

Legumes have high nutritional value and they are important sources of protein, carbohydrates, fats and dietary fiber. The contamination of legumes with pesticides and heavy metals has been reported in scientific literature. Human beings are mainly exposed to the residues of pesticides and heavy metals through the dietary route. The purpose of this review chapter is to highlight the acute and chronic health risks that human beings may be exposed to as a result of the ingestion of legumes polluted with pesticides and heavy metals. Additionally, the mechanisms through which pesticides and heavy metals engender different undesirable health outcomes in human beings were stated. Scientific literature were perused and the information contained in them were collated to derive this chapter. Pesticides cause short-term health effects including hypersensitivity and mortality, while heavy metals induce acute effects like seizures and death. Some chronic untoward effects of pesticides are congenital disabilities and neurological damage. Heavy metals elicit disorders like anemia, hypertension and cancer. It is envisaged that the findings documented in this review will create awareness of the health risks posed by the contamination of legumes with the residues of pesticides and heavy metals so that food safety measures can be enforced globally.

This article reviews only those empirical works that report results on the influence of sociodemographic factors on food consumption. It highlights those recent papers that can be helpful to the interested reader as a base from which to explore further aspects of demographics and food consumption. Reviewed empirical studies analyze the influence of demographics on food consumption following the two different approaches. This article presents the main demographic trends in developed countries. It gathers empirical evidence about the effect of demographic factors on food consumers' preferences for different food attributes, classified for pedagogical purposes in the following categories: ethics (organics, fair trade, and animal welfare), food safety and health (food safety, healthy diets, genetic modification, and irradiation), local and typical produce, ethnicity, and convenience. Finally, it concludes with some remarks and comments about emerging trends for future research.
