To match the current life-style, there is a huge demand and market for the processed food whose manufacturing requires multiple steps. The mounting demand increases the pressure on the producers and the regulatory bodies to provide sensitive, facile, and cost-effective methods to safeguard consumers’ health. In the multistep process of food processing, there are several chances that the food-spoiling microbes or contaminants could enter the supply chain. In this contest, there is a dire necessity to comprehend, implement, and monitor the levels of contaminants by utilizing various available methods, such as single-cell droplet microfluidic system, DNA biosensor, nanobiosensor, smartphone-based biosensor, aptasensor, and DNA microarray-based methods. The current review focuses on the advancements in these methods for the detection of food-borne contaminants and pathogens.

Listeria monocytogenes, an opportunistic food borne pathogen can cause serious infections in immunocompromised individuals. L. monocytogenes is capable of producing biofilm on the surface of food processing lines and instruments.The biofilm transfers contamination to food products and impose risk to public health. In the present study biofilm producing ability of L. monocytogenes isolates were investigated phenotypically and genotypically by microtiter assay and multiplex PCR, respectively. Out of 38 L. monocytogenes isolates 14 were recovered from animal clinical cases, 12 bovine environment and 12 from milk samples. A total of 3 (21.42%) clinical, 2 (16.66%) environment and 3 (25%) milk samples respectively, revealed biofilm production in microtiter assay. Cumulative results showed that 23 (60.52%) out of 38 strains of L. monocytogenes were positive for luxS and flaA gene and 1 (2.63%) was positive only for the flaA gene.

Over the past few years, sustainable supply chain initiatives (SSCIs) have grabbed attention in the domestic, as well as global, marketplace of the food sector. Nowadays, the success of the entire food supply chain depends on the prosperity of farms, local communities, trader processors, and agro-based industries. Despite its importance, food processing industries (FPIs) are encountering various hurdles in achieving sustainable business goals due to the sheer number of potential barriers. Due to this reason, stakeholders are continuously pressuring the management of FPIs to embrace sustainable food processing activities. In light of this, the present study aims to apply a hybrid fuzzy analytical hierarchy process (F-AHP) framework, based on fuzzy technique for order preference by similarity to the ideal solution (F-TOPSIS), for analyzing the barriers and prioritizing the possible pathways in adopting the SSCIs for the development of FPIs. Based on the extensive review of literature and panel consultation with experienced experts, a total of seven main barriers, forty-two sub barriers, and five possible pathways as strategic tools were finalized and ranked. An empirical case investigation of a Pakistani-based food processing company has been taken to check the practical application of the proposed framework along with sensitivity analysis. The findings of this study reveal that the lack of sustainable outsourcing factors were found as the top-ranked barrier in implementing SSCIs, and the possible pathway to overcome this barrier is the appropriate management of the procurement cycle. The major contribution of this study is to establish a barriers prioritization framework and suggest possible pathways to overcome these barriers for the successful implementation of SSCIs. Finally, the theoretical, managerial, and policy implications are provided as a way forward for the concerned stakeholders and policymakers.

The RFID is not only a feasible, novel, and cost-effective candidate for daily object identification but it is also considered as a significant tool to provide traceable visibility along different stages of the aviation supply chain. In the air baggage handing application, the RFID tags are used to enhance the ability for baggage tracking, dispatching and conveyance so as to improve the management efficiency and the users’ satisfaction. We surveyed current related work and introduce the IATA RP1740c protocol used for the standard to recognize the baggage tags. One distributed aviation baggage traceable application is designed based on the RFID networks. We describe the RFID-based baggage tracking experiment in the BCIA (Beijing Capital International Airport). In this experiment the tags are sealed in the printed baggage label and the RFID readers are fixed in the certain interested positions of the BHS in the Terminal 2. We measure the accurate recognition rate and monitor the baggage’s real-time situation on the monitor’s screen. Through the analysis of the measured results within two months we emphasize the advantage of the adoption of RFID tags in this high noisy BHS environment. The economical benefits achieved by the extensive deployment of RFID in the baggage handing system are also outlined.

The grocery store is ground zero in the tsunami of change facing Big Food. Consumers are changing how they relate to grocery stores, increasingly circling the perimeter, focusing on produce and preferentially choosing fresh, local, and new, even unknown, brands while spending less time in the processed food aisles in the center. The next generation, the millenials, are increasingly shunning traditional outlets when buying food. Traditional leading brands of processed food, backed by traditional marketing strategies (heavy advertising on traditional media, coupons, brand extensions, etc.) are failing to hold on to their customers. The challenges can be found throughout the food value chain, from new competitors for grocery providers to new delivery mechanisms, from changes in generational food preferences with social media platforms to express their preferences to farmers who increasingly can and want to communicate directly with the end-users who actually eat the food that they produce. This access to more information opens more options (and opportunities) to buyers and suppliers all along the food value chain. Barely 100 years old, the grocery store model is becoming obsolete, and with it the organization of the food value chain must be re-written. So what does that mean for Big Food and the food supply chain? What directions can the industry take to adjust to the new competitive realities? This paper offers direction and guidance for Big Food and other producers in the food supply chain.

This paper considers the price conflict problem between the online channel of a food processing factory and the offline channel of the food retailers in food supply chains by analyzing the pricing decisions and coordination mechanisms between the food processing factory and food retailers under the influence of a food quality information service. First, the Stackelberg game method and the Bertrand game method are used to optimize the pricing decisions with the goal of maximizing the profits of the food processing factory and retailer. The analysis shows that the food quality information service level is positively correlated with the price of the factory’s own channel, and the influence of the food quality information service level on the price of the food processing factory’s or the food retailer’s own channel is stronger than its influence on the price of a competitor’s channel. Second, the food supply chain members’ pricing decisions are analyzed using the case analysis method by considering practical problems in the food supply chain. The results indicate that the food processing factory should use the Stackelberg game to make pricing decisions. However, it is optimal for the food retailer to make pricing decisions under the Bertrand game, and the total profit of the food supply chain is optimized under centralized decision making. Finally, we use both the quantitative discount mechanism and the Stackelberg game method to analyze the profits obtained by the food processing factory and retailer. The results indicate that the food processing factory should implement a quantitative discount mechanism when the quantity discount coefficient is greater than 0.4, and the retailer should implement a quantity discount mechanism when the quantity discount coefficient is in the range of 0.25 to 0.4.

Biofilm (or attached growth) reactors can be effectively used to treat organic wastewater from various industries such as food processing industry. They have a number of advantages including high organic loading rates (OLRs) and improved operational stability. A flexible fibre biofim reactor (FFBR) has been developed for efficient and cost effective treatment of food processing wastewater. In the process, simple flexible fibre packing with a very high specific surface area is used as support for microorganisms. The COD removal efficiencies for a range of OLRs have been studied. The FFBR can support an increasingly high OLR, but with a corresponding decrease in the COD removal efficiency. Therefore, a two-stage FFBR was developed to increase the treatment efficiency for systems with high OLRs. Experimental results indicated that a high overall COD removal efficiency could be achieved. At an influent COD of about 2700 mg/L and an OLR of 7.7 kgCOD/m3d, COD removal efficiencies of 76% and 82% were achieved in the first and the second stage of the reactor, respectively. The overall COD removal efficiency was 96%. Therefore, even for wastewater samples with high organic strength, high quality treated effluents could be readily achieved by the use of multiple stage FFBRs.

Biosynthesized or biogenic metallic nanoparticles, particularly silver and gold nanoparticles (AgNPs and AuNPs, respectively), have been increasingly used because of their advantages, including high stability and loading capacity; moreover, these nanoparticles are synthesized using a green and cost-effective method. Previous studies have investigated reducing and/or stabilizing agents from various biological sources, including plants, microorganisms, and marine-derived products, using either a one-pot or a multistep process at different conditions. In addition, extensive studies have been performed to determine the biological or pharmacological effects of these nanoparticles, such as antimicrobial, antitumor, anti-inflammatory, and antioxidant effects. In the recent years, chitosan, a natural cationic polysaccharide, has been increasingly investigated as a reducing and/or stabilizing agent in the synthesis of biogenic metallic nanoparticles with potential applications in nanomedicine. Here, we have reviewed the mechanism of biosynthesis and potential applications of AgNPs and AuNPs and their chitosan-mediated nanocomposites in nanomedicine.

The challenges to fulfill the demand for a safe food supply are dramatically increasing. Mycotoxins produced by certain fungi cause great economic loss and negative impact on the sustainability of food supplies. Moreover, the occurrence of mycotoxins at high levels in foods poses a high health threat for the consumers. Biological detoxification has exhibited a high potential to detoxify foodstuffs on a cost-effective and large scale. Lactic acid bacteria showed a good potential as an alternative strategy for the elimination of mycotoxins. The current review describes the health and economic impacts associated with mycotoxin contamination in foodstuffs. Moreover, this review highlights the biological detoxification of common food mycotoxins by lactic acid bacteria.
