The state diagram, which is defined as a stability map of different states and phases of a food as a function of the solid content and temperature, is regarded as fundamental approach in the design and optimization of processes or storage procedures of food in the low-, intermediate-, and high-moisture domains. Therefore, in this study, the effects of maltodextrin addition on the freezing points (Tm′, Tm) and glass transition temperatures (Tg′, Tg) required for the construction of state diagrams of fruit juice model systems by using differential scanning calorimetry methods was investigated. A D-optimal experimental design was used to prepare a total of 25 anhydrous model food systems at various dry mass fractions of fructose, glucose, sucrose, pectin, citric acid, and maltodextrin, in which this last component varied between 0 and 0.8. It was found that maltodextrin mass fractions higher than 0.4 are required to induce significant increases of Tg′, Tm′, Tg, and Tm curves. From this perspective, maltodextrin is a good alternative as a cryoprotectant and as a carrier agent in the food industry. Furthermore, solute-composition-based mathematical models were developed to evaluate the influence of the chemical composition on the thermal transitions and to predict the state diagrams of fruit juices at different maltodextrin mass fractions.

The paper presents the results of the analysis of the state diagram of compounds in the system А12O3-SiO2. It has been found that the presence and the concentration of oxygen have a very important effect on formation of compounds with a crystalline structure in different syngony based on SIALON. Oxygen contributes to transition of the metastable AlXSi3-XN4compound into stable one. The parameter of structural “friability” of compounds has been used in the analysis of thethermodynamic stability of compounds in the Al-Si-N-O system. It has been foundthat the SiAl4O2N4 compound with the 12H-SIALON structure (Pearson symbol hP32) has the greatest thermodynamic stability among the compounds under study in this system.

State diagram is a map of the different states of a food polymer as a function of water or solids content and temperature. The main advantage of drawing map is in identifying different states of a food polymer which helps in understanding the complex changes when food's water content and temperature are changed. It also assists in identifying food’s stability during storage as well as selecting suitable conditions for processing. This research successfully developed the state diagrams of two Thai rice varieties differing in amylose contents (San-pah-tawng and Phitsanulok 2) by measuring the glass line; glass transition temperature (Tg) vs. solids content, freezing curve; initial freezing point vs. solids content by using the differential scanning calorimetry (DSC) method. Rice with different amylose content exhibited similar freezing curves and glass transition patterns. The state diagrams obtained in this study are in agreement with previously published data. They can be useful in optimizing the drying and freezing processes as well as studying the physicochemical changes during storage of rice.

The article concerns the research specificity of model systems such as cocoa butter – palm olein, cocoa butter – sucrose and cocoa butter – glucose syrup by the differential scanning calorimetry (DSC) method. The researchers run experiments in the temperature range from –100 to –50°C at a heating rate of 10 °C/min. In the cacao butter – palm olein system an eutectic occurs with a palm olein content of 30.0 % indicating the limited solubility of palm olein in cocoa butter. In the cocoa butter – sucrose system, cocoa butter crystallizes as in the α-form (10,0– 30,0; 60.0–90.0 % MK), and as a mixture of α-and β-forms of MK (40.0; 50,0; 70,0 and 80.0 %). Sucrose stabilizes low-temperature polymorphic modifications of cocoa butter. In the cocoa butter – glucose syrup system, temperature of samples melting is 21-22 °C. This composition is promising for use as a filling of confectionery products and glazes production. In this regard, a man can use glucose syrup only in the candy cases production. The role of surfactants used for the formation and stabilization of cocoa butter polymorphs and increasing the thermal stability of the shock-lad without the introduction of palm stearin requires separate consideration.

Dalam hal mengecat tidak semua orang dapat melakukan pengecatan dengan sempurna, banyak hasil cat yang tidak merata atau lapisan yang terlalu tebal dan terlalu tipis. Tujuan penelitian ini adalah membuat sebuah alat yang membantu manusia untuk mengecat objek di permukaan datar secara otomatis. Komponen yang digunakan dalam penelitian ini yaitu motor DC PG28, sensor encoder, sensor limit switch dan PLC Omron CP1E-NA20DR-A. Alat ini bergerak berdasarkan sumbu x dan y yaitu bergerak ke atas-bawah dan ke kanan-kiri, kemudian untuk pengecatanya menggunakan roll cat. Setiap pergerakan alat di program menggunakan ladder diagram di software CX-Programmer. Untuk memonitor pergerakan mesin peneliti membuat HMI dari software CX-Designer. Pada pembuatan program ladder diagram peneliti menggunakan metode state diagram karena metode ini dapat menyusun program ladder dengan baik. Pengujian pembacaan RPM motor peneliti membandingkan data dari PLC dengan tachometer dan didapat error sebesar 0,52%. Pergerakan alat pada sumbu x didapat dengan mengendalikan pulsa putaran per rotasi yang terbaca 1380 pulsa per 10 cm oleh sensor encoder. Jarak 10 cm mengacu pada lebar dari roll cat yang dipakai. Kemudian dengan tegangan luar sebesar 12V didapat kecepatan maksimun pada motor DCPG28 sebesar 379 RPM.In the case of painting not everyone can paint perfectly, many paints are not evenly distributed or layers that are too thick and too thin. The purpose of this research is to create a tool that helps humans to paint objects on a flat surface automatically. The components used in this study are the PG28 DC motor, encoder sensor, limit switch sensor and PLC Omron CP1E-NA20DR-A. This tool moves based on the x and y axis that is moving up-down and right-left, then for painting using a paint roll. Every movement of tools in the program uses ladder diagrams in the CX-Programmer software. To monitor the movement of the engine the researcher made an HMI from the CX-Designer software. In making ladder diagram programs researchers use the state diagram method because this method can arrange ladder programs well. Testing the RPM reads the motorbike comparing the data from the PLC with the tachometer and obtained an error of 0.52%. The movement of the tool on the x-axis is obtained by controlling the rotational pulses per rotation which reads 1380 pulses per 10 cm by the encoder sensor. A distance of 10 cm refers to the width of the paint roll used. Then with an outside voltage of 12V, the maximum speed of the DCPG28 motor is 379 RPM.

Polymer composite materials based on polylactic acid (PLA) filled with titanium dioxide (TiO2) nanoparticles were prepared. The aim of this work was to investigate the antibacterial action of TiO2 against a strain of E. Coli (DH5α) to obtain information on their potential uses in food and agro-alimentary industry. PLA/TiO2 systems were prepared by a two-step process: Solvent casting followed by a hot-pressing step. Characterization was done as a function of particle size (21 nm and < 100 nm) and particle content (0%, 1%, 5%, 10%, and 20%, wt %). Structural characterization carried out by X-ray diffraction (XRD) and Fourier Transformed Infrared spectroscopy (FTIR) did not reveal significant changes in polymer structure due to the presence of TiO2 nanoparticles. Thermal characterization indicated that thermal transitions, measured by differential scanning calorimetry (DSC), did not vary, irrespective of size or content, whereas thermogravimetric analysis (TGA) revealed a slight increase in the temperature of degradation with particle content. Bacterial growth and biofilm formation on the surface of the composites against DH5α Escherichia Coli was studied. Results suggested that the presence of TiO2 nanoparticles decreases the amount of extracellular polymeric substance (EPS) and limits bacterial growth. The inhibition distances estimated with the Kirby-Bauer were doubled when 1% TiO2 nanoparticles were introduced in PLA, though no significant differences were obtained for higher contents in TiO2 NPs.
