The article considers the possibility of expanding the range of fermented milk products enriched with natural sources of biologically active substances, which is an urgent task today, as it corresponds to the concept of state policy of the Russian Federation in the field of healthy nutrition. As a solution to this problem, it has proposed to enrich the curd mass as part of the daily diet. Promising plant raw materials of the Far Eastern region, such as Ahnfeltia tobuchinensis, a representative of the genus of red algae growing in the Far Eastern Seas, are used as functional and enriching ingredients; Dahurian larch wood extract – arabinogalactan (Lavitol-arabinogalactan) and peppermint (Méntha piperíta). Grounded ahnfeltia was used in the size of not more than 0,5 mm. On the basis of the analysis of the composition and properties of the applied non-traditional additives, the possibility of enrichment of curd products with dietary fiber and organic iodine from plant components has been substantiated. Optimal ratios of enriching prescription components to the weight of cottage cheese in a finished product are the following: ahnfeltia powder – 1,5%, arabinogalactan – 2,5%, peppermint – 1%. Also, when determining the optimal dosages of the introduced components, it is proposed to replace the prescription amount of sugar with flower honey, which is a natural sweetener and a powerful antioxidant. Organoleptic and physicochemical parameters of the finished samples have been analyzed. As a result of the research the functional curd product one portion (100 g) of which is capable to satisfy daily physiological need of an organism for iodine for 29,32%, in dietary fibers for 12,38% has been developed.

The paper presents data on the study of the content of carotenoids in plant fruits of different Sorbus species and varieties when introduced in the Komi Republic. As a result of a biochemical analysis, the accumulation of various amounts of carotenoids has been revealed: from 2,6 to 43 mg/%, depending on the species, sample and variety. The author compared the content of this group of substances in raw materials of plants introduced in the Komi Republic with the ones growing in other regions of Russia (Republic of Bashkortostan, Republic of Mordovia, Saratov, Penza, Moscow Region and others). It has been shown that under northern conditions in rowan fruits the value of the total carotenoids prevails in representatives of the Sorbus section with an East Asian range ( S. pohuashanensis , S. discolor , S. amurensis ), except the Far Eastern species S. sambucifolia . A different content of carotenoids in the plant fruits of S. aucuparia samples has been established: the maximum is in the sample from Yoshkar-Ola, which is 3-5 times higher than that in S. aucuparia from the Komi Republic. The content of this group of substances in the rowan fruits of the three studied varieties (Businka, Rubinovaya and Sorbinka) has been determined; their predominance in the Sorbinka variety has been shown. The study of the biochemical composition of plant raw materials of mountain ash species and varieties with the highest content of carotenoids when introduced in the North should be continued in order to further assess its qualitative composition and to develop recommendations for its use as a medicinal product, as well as a source of functional ingredients for pharmaceutical and food industries.

The results of the study of the possibility of using additional technological influence in the formation of doped coatings are presented. The distribution of thermal fields has been calculated, which makes it possible to estimate and predict the influence of additional influence on the formation of the coating in a simplified manner. Experimental studies have shown that additional technological influence promotes mixing of the melt, leading to an increase in the transition of alloying elements, as well as an increase in the mechanical properties and quality of the weld metal.

Analysis of current status and use of lead and zinc resources in the Far Eastern region, on the territory of Primorsky region for many decades and such analysis is of practical importance for evaluation and selection of areas in this field of activity. Russia safeguarded stocks and lead and zinc resources in the long term. On the territory of the Far East region there are significant deposits of these metals, but for single resources most of them substantially less large deposits in other regions of Russia - Siberia, Altai, Ural. Significantly to support lead-zinc industry in the region is possible in case of exploration of new deposits of ores with high quality. Lead and zinc minerals industrial scale in the region undoubtedly has and can be represented by a leading geological-industrial types of fields, but there is currently little studied. You must not reforming the present state of the industry and its innovative development: need to develop intra-regional use of raw materials in the form of the final product, that will give the region's resources development of new incentives. Nonferrous metals resource potential of the region, with an effective strategy to use them can be a significant factor in changing the geopolitical significance of the far eastern part of Russia.

This paper presents the results of the research aimed at the creation of the ilmenite-fluorite welding flux using mineral raw materials of the Far Eastern region. The authors have performed thermodynamic calculation based analysis of the possible physical and chemical processes in the slag system. The experimental research we have conducted resulted in the mathematical dependencies that allow selecting flux components that would ensure the desired properties of the hard facing surfaces formed. Experimental overlay welding sessions were performed to determine the welding-technological characteristics and properties of the welded deposit. The results of the research show that the flux, consisting of 50 % of the mineral components extracted in the Far Eastern region and of 50 % of the standard flux АN22 is basic (В = 1.46) and has a low oxygenation capacity (А = 0.22). This facilitates reduction processes in the slag bath and, as a consequence of, results in obtaining high quality weld deposit. High level mechanical and performance properties of the coatings formed is maintained due to the reduction of alloying elements and possible formation of carbides (CrFe)7C3 or (CrFe)23C6, alloyed cementite (CrFe)7C3 and other substances. As an example, overlay welding under AN22PK-DMS flux produces the maximum content of chrome in the welded deposit of 12 – 15 %, and the maximum content of manganese of 6 %.

The antiradical properties of hydrolysates and hydrothermal extracts of bivalve mollusks (Anadara broughtonii) from the Far Eastern Region of Russia and their influence on lipid oxidation in mayonnaise were investigated. The radical binding activity of hydrolysates and extracts of A. broughtonii varies from 55% to 89%. The maximum radical-binding activity was observed for acid hydrolysates. The antiradical efficiency of acid hydrolysates is 35%–41% of the BHT (butylhydroxytoluene) index. The antiradical activity depends on the (method of) technological and biotechnological processing of raw materials. Acid and enzymatic hydrolysates and hydrothermal extracts of A. broughtonii in mayonnaise slow down the process of oxidation of lipids and hydrolysis of triglycerides. Acid hydrolysates reduce the speed of oxidation and hydrolysis of lipids in mayonnaise more efficiently than the enzymatic hydrolysates.

Article is devoted to a question of financial and economic stability of the enterprises. Uncertainty and instability of the external environment can lead to a slowdown in economic growth, to a decline in production and reduction of investment. In recent years, problems of financial instability and bankruptcy have grown into a category of economic security of the country. Annually for these reasons, thousands of businesses cease operations, which has a negative impact on the social and economic situation of the regions. The article examines the theoretical and methodological tools of financial stability of economic entities as an indicator of the effectiveness of the financial management system in commercial organizations. This is ensured by permanent solvency by maintaining a sufficient level of liquidity of assets (finished goods, receivables, short-term financial investments, etc.). The author made attempts to create a methodology for assessing the financial and economic sustainability of mining companies in the Far Eastern region that are engaged in the extraction and processing of non-ferrous metal ores in order to avoid their bankruptcy and as an exit - merger into a vertically integrated company. This will allow to connect the technological cycle at individual enterprises: from the extraction of raw materials and its processing to the production of high-value products and to increase their competitiveness both on the Russian market and on the world market.
