A COMPARISON OF FEEDLOT PERFORMANCE AND CARCASS CHARACTERISTICS OF CHARBRAY × HEREFORD WITH HEREFORD STEERS

Bulls of Charbray breeding and Hereford bulls were turned out with a commercial herd of Hereford cows in southwestern Saskatchewan in 1956. It was assumed the cows were bred at random. At weaning in 1957, 25 Charbray × Hereford (crossbred) steers and 25 Hereford steers were selected at random, weighed and removed to a commercial feed lot where they were fed in two groups to a desirable slaughter finish.Crossbred steers were heavier at weaning, gained more per day on feed and returned a higher hot carcass weight with a greater eye of lean area than Hereford steers. There was no significant difference between groups in dressing percentage, average thickness of rib fat, TDN consumption per pound of liveweight gain, or average muscle fibre diameters of samples taken from m. longissimus dorsi. The Hereford group produced a higher proportion of choice carcasses than the Charbray × Hereford group.

The experiment was conducted to evaluate the effect of dried bloodrumen content mixture (DBRCM) on carcass characteristics of broiler chicks to replace soybean meal (SBM). A total of 225 unsexed day old broiler chicks (SASSO C44) were randomly distributed to five dietary treatment groups in a completely randomized design. Each treatment was replicated thrice with 15 birds per replicate. The experimental diets were formulated to contain 100%SBM+0%DBRCM (T1), 80%SBM+20% DBRCM (T2),60%SBM+ 40% DBRCM (T3), 40%SBM+60% DBRCM(T4) and 20%SBM+80% DBRCM (T5) in 56 days of age. At the end of the experiment, two male and two female birds per replicate were used to determine carcass characteristics. The result revealed that the edible carcass yield ranged from 977.9-1159.3g. The dressing percentage based on the edible carcass weight was 63.9 % (T1), 66.6 % (T2), 65.4 (T3), 64.2% (T4) and 63.1% (T5). There was no a significant difference (P>0.05) in both edible carcass yield and its dressing percentage. The commercial carcass weight was 937.4g (T1), 984.7g (T2), 962.0g (T3), 925.0g (T4) and 833.1g (T5) and the dressing percentage was 54.9%, 56.6%, 55.3%, 53.7% and 53.7% for T1, T2, T3, T4 and T5, respectively. Significant difference (P>0.05) was not observed in commercial carcass yield and its dressing percentage among the treatment groups. There was no a statistical marked difference (P>0.05) in total nonedible offal and edible offal. Females had more (P<0.05) breast meat than that of males. The abdominal fat and abdominal fat percentage were not significantly influenced (P>0.05) by a diet containing DBRCM. However, abdominal fat and its fat percentage were higher (P<0.05) in females than males. Based on this result, it could be concluded that DBRCM can replace soybean meal up to 80% substitution level without any adverse effect on carcass characteristics.

Eighteen non castrated Murrah male buffaloes, averaging 403 kg in weight, have been used in a feed lot randomized complete-block design, to test three different diets (T) with different combination of roughage (R) and concentrate (C). Tukey test has been used (5% of significance) to evaluate the obtained averages. The trial was carried on at AGRONOMIC INSTITUTE OF PARANÁ (Pinhais town, Paraná, Brazil), during 91 days. The animals have been fed twice daily, and the diets contained (%): T1 =75 R : 25 C; T2 =65 R : 35 C and T3 =55 R : 45 C, and it was calculated to have the same level of protein and energy in its composition, aiming to evaluate the diets effects on the animals’ performance on body weight and carcass characteristics. The R utilised was corn silage plus 0.5% of urea. The C was composed by soybean, wheat meal, corn, cottonseed, plus mineral, presenting: T1 =32.78 and 71.08; T2 =24.17 and 66.50; T3 =20.23 and 63.84, in percentage of crude protein and total digestive nutrients, respectively. The following quantitative characteristics have been evaluated: Hot Carcass Weight (HCW); Cold Carcass Weight (CCW); Hot Carcass Dressing Percentage (HCP); Cold Carcass Dressing Percentage (CCP); Loss After Cooling (LC); Carcass Length (CL); Leg Length (LL); Thigh Thickness (TT); Longissimus dorsi muscle area between 12th and 13th ribs (LA); Loin Area per 100kg of Cold Carcass (LA/100kg CC); Loin Fat Thickness Under the Skin, measured between the 12th and 13th ribs (LF); Bones Percentage (BP), Muscle (MP) and Fat (FP) of the Carcass - data, relative to 9th, 10th and 11th ribs. The evaluated qualitative characteristics were: Carcass Conformation (CONF); Meat Marbling (MM); Meat Texture (MT); Meat Color (MC). The diets have not affected (P > 0.05) the main carcass characteristics: HCW(kg)=265.83; 267.67 and 268.67; CCW(kg)=257.97; 260.92 and 259.27; HCP(%)=50.28; 51.20 and 51.05; CCP(%)=48.80; 48.81 and 49.45; LC(%)=2.96; 2.91 and 3.13; CL(cm)=133.75; 133.50 and 135.83; LL(cm)=70.66; 71.33 and 72.40; TT(cm)=26.16; 26.25 and 26.25; LA(cm2 )=65.48; 67.83 and 62.76; LA/100kg CC(cm2 )=25.37; 26.16 and 24.20; LF(mm)=7.58; 8.42 and 6.88, respectively for T1 , T2 , and T3 . Higher values (P < 0.05) of BP (%) have been observed in T3 (17.32) when compared with T1 (16.06). However, T2 (16.38) had a non-significant difference (P > 0.05). The MP (%) and FP (%) were similar (P > 0.05) for the three diets, and the values were: T1 =56.47 and 27.85; T2 =61.07 and 22.73; T3 =59.00 and 23.50, respectively. The diets have not affected (P > 0.05) the qualitative carcass characteristics, and the marbling observed has been classified as soft. It has been concluded that the use of different relations of roughage and concentrate for non-castrated male buffaloes, submitted to a confined system, on diets of the same protein and energy levels, at the trial conditions, have not influenced the productive performance of the animals, neither the carcass qualitative and quantitative characteristics.

Liveweights, carcass characteristics, bruising and muscle properties of Bos indicus x Bos taurus (BiX) and Bos taurus (Bt) cattle (1070 steers and 394 cows) were compared from 7 experiments throughout Queensland. In general, the cattle were weighed (unfasted), transported as mixed genotype groups to an abattoir and given access to water from arrival until slaughter. Access to feed varied between experiments. Mustering to slaughter periods varied from 4 to 9 days. For steers, mean liveweight at slaughter and carcass characteristics (weight, dressing percentage, liver weight and rib fat depth) were generally similar for BiX and Bt. In 1 of the 5 experiments with steers, BiX had a greater (P<0.05) mean liveweight, carcass weight, dressing percentage and liver weight. In both of the experiments with cows, BiX had greater (P<0.05) mean carcass weight but in only 1 experiment greater (P<0.05) mean liveweight and dressing percentage. There were no consistent differences between BiX and Bt in bruise score. Meat properties were compared in 1 experiment each for steers and for cows. BiX cows had a greater (P<0.05) mean initial yield(YI) shear value and tended to have a greater peak force (PF) for M. longissimus dorsi (LD) muscle than Bt cows. BiX had a lower (P<0.05) PF - IY value. Genotype had no significant effect on shear values and sarcomere length in steers or on cooking loss in steers and cows. Over all experiments, there was a higher (P<0.05) percentage of Bt than BiX carcasses ( 8.5 v. 3.7%) with high pH (> 6.0) values 24 h post mortem (pH24) for LD muscle. Genotype had no significant effect on mean pH24 and ultimate pH in cows or steers. Significantly more (P<0.05) cow than steer carcasses had high pHz4 values (10.9 v. 5.0%). In 2 experiments, more (P<0.05) heads and tongues were condemned for BiX than Bt steers, but there was no significant difference for the percentage of burst rumens. We conclude that the belief held by producers, butchers and others that BiX cattle have more bruising and produce darker meat than Bt cattle is unfounded. The overall toughness of meat from cattle slaughtered in northern Australia is of much greater concern than minor differences between genotypes.

The aim of our study was to assess the dynamics of the characteristics in pig carcasses as affected by the season and year of slaughter. A total of 106 027 carcasses of growing-finishing pigs of commercial production, slaughtered in the same abattoir in 2014 and 2015 were included in the study. The carcasses were classified using UltraFOM 200 device, as the characteristics controlled were back-fat thickness at two locations and the depth of m. Longissimus dorsi. These measurements were used to further determine the lean meat percentage. The results of the study showed significant differences in the dynamics of changes of carcass characteristics during the seasons and the years. The highest lean meat percentage was found in summer (56.48%), followed by spring (56.34%), autumn (56.29%) and winter (56.10%). On the other hand, the pigs slaughtered in winter displayed highest carcass weight and back-fat thickness at both locations.

Abstract Ractopamine hydrochloride (RAC) is a β-adrenergic agonist approved for feeding during the last 28 to 42 d prior to cattle slaughter to improve feedlot performance and carcass characteristics. Three thousand crossbred yearling steers (527 ± 2.4 kg; AVG ± SD) were used in two periods to evaluate the effects of various RAC withdrawal times on feedlot performance, health, and carcass characteristics. In Period 1, 6 blocks of 30 pens totaling 1,500 steers were utilized, which was repeated for Period 2. In a randomized complete block design, cattle were assigned to 1 of 5 treatments consisting of 1) No RAC fed (CON), 2) 12-h RAC withdrawal (12-hRAC), 3) 2-d RAC withdrawal (2-dRAC), 4) 4-d RAC withdrawal (4-dRAC), and 5) 7-d RAC withdrawal (7-dRAC). Cattle were fed for a total of 62 d, and applicable treatments were supplemented with 30.0 ppm (dry matter basis) of RAC (average dose = 322 mg per steer per day) for 33 d at the end of the feeding period, corresponding to their respective withdrawal times. Initial body weight (BW) displayed a quadratic curve, with 2-dRAC and 4-dRAC withdrawal periods having the greatest BW. Accordingly, dry matter intake (DMI) responded quadratically (P = 0.034), with 2-dRAC and 4-dRAC treatments demonstrating the greatest DMI. No significant treatment differences (P ≥ 0.641) were observed in final live BW, average daily gain (ADG), or feed efficiency. Alternatively, when using a common dressing percentage to calculate live BW, cattle on RAC treatments exhibited 7.6 kg additional live BW (P &lt; 0.001) compared to CON cattle. Furthermore, carcass-adjusted ADG and feed efficiency did not differ (P &gt; 0.10) between RAC treatments but were improved compared to the CON treatment (P ≤ 0.002). Hot carcass weight (HCW) was on average 4.9 kg greater (P &lt; 0.001) for RAC treatments vs. CON, and no differences were detected (P &gt; 0.10) among RAC treatments. Within RAC treatments, carcass cutability responded quadratically (P ≤ 0.005) to withdrawal period, with the 2-dRAC and 4-dRAC treatments containing more Yield Grade 4 and 5 and fewer Yield Grade 1 and 2 carcasses than the other RAC treatments. On the basis of the results of this experiment, feeding RAC improves dressing percentage, HCW, and carcass-adjusted BW, ADG, and feed efficiency. Furthermore, extending the RAC withdrawal period to 7 d does not have a significant impact on cattle performance or health and has minimal effects on carcass characteristics.

The growth and carcass characteristics of first-cross Border Leicester x Merino ram, cryptorchid and wether lambs were compared over a range of slaughter weights (35-55 kg). Lambs were offered feed ad libitum after weaning. The growth rate of wether lambs (221 g/day) was less (P< 0.01) than that of rams and cryptorchids (308 and 280 g/day respectively, P = 0.076). The dressed carcasses of the wether lambs were approximately 2 percentage units heavier than those of the ram and cryptorchids, but this difference was partly due to the weight of the testes. Across all sex groups, dressing percentage increased by 0.46 percentage units per kg increase in carcass weight. The carcasses of rams and cryptorchid lambs tended to be leaner than those of wethers. Fat score distributions, based on export standards, were such that wethers scored higher (fatter) than rams and cryptorchids (P< 0.05). There was a significant sexx carcass weight interaction with GR tissue depths. Above 17 kg carcass weight, tissue depth of wether lambs was greater than those of the other sex types. Of 12 families assessing consumer acceptability (taste, smell, size, fatness and tenderness) of leg roasts, the majority showed no preference for any of the sexes.

Lambs from the Poll Dorset x (Border Leicester x Merino) cross were raised from a late lambing in 1983 (a year when pastures grew unchecked and had high clover content) and 1984 (a year with intermittent dry periods and a low clover content in pastures). Multivariate repeated measures analyses were used to compare growth rates for rams, wethers and ewes within 2 periods of growth in 1983, and 4 in 1984. In all stages rams grew significantly faster than wethers and ewes, whereas wether growth rate exceeded that of ewes in only 3 stages. In general, when pasture availability and quality was high, rams grew faster than wethers by 0.3 kg/week and ewes by 0.5 kg/week. The rams grew 0.16 kg/week faster when pasture availability was limiting for a period in winter but lost significant (P<0.01) body condition, whilst ewes maintained both weight and condition. When good quality feed was again available, rams gained more weight than wethers, as did wethers compared with ewes, while rams and wethers gained more condition than ewes. Carcass weight and fatness, measured either as indicators of fat (GR measurement or fat score) or as total subcutaneous fat, could be predicted from assessments made on live lambs. Full liveweight, sex and year explained 41% of variation in GR, 48% in fat score and 79% in subcutaneous fat. Condition score, sex and year explained 45% of variation in GR, 52% in fat score and 57% in subcutaneous fat. Full liveweight, condition score, sex and year explained 80% of the variation in subcutaneous fat, 47% in GR and 57% in fat score. An interaction of sex with full liveweight in predicting carcass weight and subcutaneous fat indicated that as carcass size increased, the sex of the lamb became an increasingly important consideration when assessing characteristics important in describing lamb carcasses. Dressing percentage decreased by 0.08/kg as liveweight increased. This result was consistent over the 2 years, with opportunities for error being assessed and eliminated in the second year. Notwithstanding that this was an unimportant loss in real terms, published information showed an increase in dressing percentage with liveweight.

This study aimed to characterise progeny of sires representing major families in the Poll Nellore breed. Fourteen Poll Nellore sires, two Angus sires and one Brahman sire were mated by AI to ~400 multiparous Poll Nellore dams. Calves were raised and stocked on pasture in central Brazil until reaching ~18 months of age, then fed a sugarcane bagasse-based diet on an ad libitum basis until reaching market weight and finish (average 23 months). There were 236 Poll Nellore (N), 38 Angus × Poll Nellore (AN) and 31 Brahman × Poll Nellore (BN) calves born in total. The weaning and 423-day weight weights, and growth rates and pre- and post-weaning were greater (P < 0.05) in males than in female calves, and were influenced by breed and by sire within the N animals. The weaning weights were higher (P < 0.05) in AN and BN than in N calves. The 423-day weight weights were greater (P < 0.05) in AN calves, followed by BN, with straightbred N being lightest. Feedlot average daily gain was unaffected (P > 0.05) by sex or by sire within N, but was lowest (P < 0.05) in N cattle, and highest in AN and BN animals, which did not differ (P > 0.05). Heifers reached the end of the study with lower bodyweight (BW) and dressing percentage than steers, resulting in lower carcass weights, smaller longissimus muscle areas (LMA), but greater 12th to 13th rib backfat (BF) and similar marbling score and mean shear force. However, the proportion of carcasses grading Choice or Prime was numerically greater in heifers than in steers (23.6% vs 9.8%). AN cattle reached greater harvest weights than BN, and those were heavier than N cattle (P < 0.001). However, dressing percentages were lowest in AN animals, so that there was no significant difference in carcass weight between AN and BN cattle. AN carcasses also had greater LMA, BF and marbling scores than the N carcasses. The proportion of carcasses grading Choice or Prime was numerically greater in AN cattle than in the BN and N groups (25.9%, 11.8% and 15.9%, respectively). Steaks from AN calves were more tender than N steaks, with the BN steaks being intermediate. There was significant variation among N sires for final BW, dressing percentage, carcass weight, LMA and marbling score, but not for BF or mean shear force. The percentages of carcasses of N cattle grading Choice or Prime ranged from 0% to 61.5%. Three N sires produced progeny with greater than 40% of carcasses grading Choice or above (Berílio OB, Furador OB, and Litoral OB). Likewise, three N sires (Blitz OB, Furador OB and Sossego OB) had progeny with 67%, 62% and 75%, respectively, of steaks classified as tender. This study confirmed that Zebu cattle have inferior carcass and meat quality relative to AN crossbreds under tropical conditions, however there is substantial variation within the N breed for these traits, and several sires have a proportion of their progeny comparable in terms of meat tenderness to those of Angus sires.

Carcass characteristics of 3673 steers and heifers born over a 6-yr period 1973–1978 at Brandon, Manitoba (farm conditions) and Manyberries, Alberta (range conditions) were compared. Calves weaned at Manyberries were fed and evaluated at Lacombe. The progeny were out of 10 specific F1 crosses of dams mated to bulls of the Charolais (C), Simmental (S), Limousin (L) and Chianina (Chi) breeds. Dam crosses included the Hereford × Angus (HA) and crosses sired by C, S and L sires out of H, A and Shorthorn (N) dams. Breed of sire of dam effects indicated that progeny from S cross cows generally had the heaviest carcasses S = C > L, the greatest carcass weight per day of age S = C > L, the highest percentage of dissected bone of the round S > C > L and rib S > C = L, the highest proportions of brisket S > L > C and flank S > L = C, and carried more kidney fat (percent liveweight) S > C = L and average rib fat S > C = L. Progeny from Limousin and Charolais cross cows had the highest dressing percentage [Formula: see text] and rib eye area/100 kg carcass wieght L > C > S while those from Limousin cross cows had the highest proportion of long loin and the combined lean cuts (rib, round and long loin) a higher percentage of dissected lean in the round L > C > S and the highest lean-to-bone ratio L > C > S. Progeny from dams of Shorthorn breeding generally had the heaviest carcasses, the greatest carcass weight per day of age, the highest percentage kidney fat and at Brandon the greatest proportions of plate and brisket. Hereford cross dams consistently produced progeny with the highest percentage head H = A > N, hide [Formula: see text], feet H > A = N, percentage bone in the long loin [Formula: see text], round [Formula: see text], and rib [Formula: see text], and the highest percentage lean in the long loin H > N (Brandon) and chuck H > N (Brandon). The progeny from Angus cross dams carried the greatest average rib fat [Formula: see text], had the greatest rib eye area/100 kg carcass weight [Formula: see text], the highest percentage lean in the round [Formula: see text], and the highest lean to bone ratio A > H = N. A total 90 Vanaraja experimental birds were divided into three respective groups based on floor density viz., G1 (16 birds/m2), G2 (12 birds/m2) and G3 (8 birds/m2). No significant difference in average live weight and carcass weight was observed between groups. Average feed consumption, feed conversion ratio (FCR) and dressing percentage in G2 and G3 was significantly (P<0.05) higher as compared to G1. There were no significant effect (P>0.05) of stocking density in the carcass characteristics except the heart weight. There were non significant differences among groups for total protein, albumin, globulin and A:G ratio. Blood glucose was significantly (P>0.05) higher in group G1 as compared to G2 and G3. Blood cholesterol level increased with increase in stocking density but not significantly. Blood parameters eosinophil, monocyte, basophil counts and H:L ratio were not affected by the stocking density. Hb concentration increased non-significantly with increased stocking density. Vanaraja birds from 8 birds/m2 to 12 birds/m2 give the better growth performance, FCR and dressing percentage without change in blood biochemical and hematological indices.
