The concentrations of three toxic heavy metals, mercury (Hg), lead (Pb), and cadmium (Cd), were determined in preserved variegated scallops (Chlamys varia, Bivalvia, Mollusca), which are often consumed in Tenerife (Canary Islands, Spain). A total of 300 samples of seven commercial brands (A, B, D, H, J, L, and M) and one processed product (“scallop sauce”) were analyzed. Samples were collected weekly in a major shopping area in Santa Cruz de Tenerife during a 12-month period. The concentrations of lead and mercury were far below the maximum limit permitted for human consumption by the European Communities Commission regulation (EC) 466/2001 (1 and 0.5 mg kg−1 wet weight for Pb and Hg, respectively). Concentrations of cadmium were close to the maximum limit permitted by regulation (EC) 466/2001 (1 mg kg−1 wet weight).

Concentrations of three toxic heavy metals (Hg, Pb, Cd) and six essential heavy metals (Fe, Zn, Mn, Cr, Cu, Ni) were determined in mussel conserves (Mytilus galloprovincialis, Bivalvia, Mollusca) consumed habitually by individuals in Tenerife (Canary Islands, Spain). A total of 600 samples were analyzed, corresponding to six different commercial brands and four different processing types: pickled sauce (mixture of olive oil, vinegar, red pepper, laurel, and salt), coquille St. Jacques sauce (coquille St. Jacques broth), nature (water and salt), and bionature (water, salt, and soluble vegetal fiber). Samples were collected weekly from markets in Santa Cruz de Tenerife during a 12-month period. All values for toxic metals were lower than the permitted maximum for human consumption as proscribed in European Community Directive 2001/22/CE (1,000 μg/kg wet weight for Pb and Cd) and European Community Decision 93/351/EEC (500 μg/kg wet weight for Hg). For the six essential heavy metals, mussels are a very good source, contributing high percentages of the recommended daily allowance.

Nine bottled water brands collected from retail shops and food shops beside the University of Dhaka were analyzed for their major and trace element constituents to ascertain their suitability for human consumption. The results obtained were compared with parametric values (PVs) set by European Community Council Directive 98/83/EC and the guideline values (GVs) recommended by WHO. It was found that the majority of the brands tested were low in mineral contents. Moreover, lower values of hardness, TDS and conductivity than the prescribed limits of WHO showed that water was deficient in essential minerals. Minerals like magnesium, potassium, calcium were present in some cases in such a low concentration that water seemed to be as good as distilled water. In case of heavy metals, only lead and cadmium were found to be below the detection limit (0.001 mg/L) which indicates bottled water brands are better for drinking. Being much appreciated all over the world for their high nutritional values, escargots or terrestrial snails are farmed in many countries. Within the last few years, snail farming started to become a very popular activity in Romania too. It represents an ecological type of agricultural activity that can also be certified as biological, organic farming if the soil’s conditions and the technology are as such. Extensive amount of research offers details on the physiology of the edible snail species as well as regarding their biochemical content and their nutritional value. No much research reflects snail’s ability to bioaccumulate selenium. In the same time, a lot of research demonstrated the snail’s ability to accumulate contaminants such as heavy metals. Using fluorimetric analysis, we investigated selenium accumulation in meat and shell of edible terrestrial snails Helix pomatia and Eobania vermiculata Muller gathered from different regions of Moldova Republic, Ukraine and Russia. The meat selenium concentration in terrestrial snails reflects the ability of those invertebrates to accumulate high selenium contents. Based on the intake recommendations, snails can be a very good source of selenium for human consumption. Depending upon the soil mineral content and level of contamination, the snails will accumulate large quantities of heavy metals such as lead and cadmium, therefore making the snails a very high-risk food product. Therefore, it is very important a careful selection of the agricultural land designated for snail farming. Additives containing selenium may be a way to supplement snail’s diet.

The aim of the study was to determine concentration of macroelements (P, Ca, Mg, Na, K), and some microelements, including toxic heavy metals (Cr, Fe, Mn, Zn, Cu, Co, Pb, Cd and Hg) in milk of Jersey cows. Milk samples were collected from Jersey cows kept in tie-stall barn in Greater Poland Province. The feeding was based on total mixed ration mixture. The maximum permitted level of Pb concentration in raw milk (0.02 mg/kg wet weight)was significantly exceeded (0.063±0.035 mg/dm3). The content of Hg was very low (0.106±0.057 μg/dm3).Significant (P£0.05) Spearman coefficient correlations were observed between contents of some elements in milk. Especially interesting were positive correlations of heavy metals: Cd-Cr, Co-Mn, Cr-Zn, Mn-Zn. Additionally the content of Ca was positively correlated with numerous elements: Hg, Cr, Cu, Mn, Zn, Mg, and negatively correlated with the content of Fe.

Notwithstanding the increased toxic heavy metals/metalloids (THMs) accumulation in (edible) organs owed to goat′s feeding habit and anthropogenic activities, the chevon remains increasingly relished as a special delicacy in Nigeria. Specific to the South-Eastern region, however, there is paucity of relevant data regarding the prevalence of THMs in goat carcasses processed for human consumption. This work was, therefore, aimed to investigate the detection, distribution and health risk assessment of THMs in goat carcass processed for human consumption in South-Eastern Nigeria. To achieve this, a total of 450 meat samples (kidney, liver and muscle) were evaluated from 150 randomly selected goat carcasses processed in two major slaughterhouses in Enugu State. The detection, distribution, as well as health risk assessment parameters followed standard procedures. Results revealed that at least one THM was detected in 56% of the carcasses. Mean concentrations of arsenic (As) were 0.53 ± 0.10 mg/kg, 0.57 ± 0.09 mg/kg and 0.45 ± 0.08 mg/kg, lead (Pb) were 0.48 ± 0.38 mg/kg, 0.45 ± 0.24 mg/kg and 0.82 ± 0.39 mg/kg, cadmium (Cd) was 0.06 ± 0.32 mg/kg, 0.02 ± 0.00 mg/kg, and 0.02 ± 0.00 mg/kg for kidney, liver and muscle tissues, respectively. The estimated daily intakes (EDI) for all THMs were above the recommended safe limits. The target hazard quotient (THQ) and hazard index (HI) computed for all As, Cd and Pb fell below unity in all the studied organs, which indicated no non-carcinogenic risks. Curtailing the anthropogenic activities that aid the THM-contamination in goat production/processing lines is recommended. Screening for THM-contamination in Nigerian slaughterhouses is imperative, so as to ascertain the toxicological safety of meats intended for human consumption.

ICP-MS method was optimized for the simultaneous analysis of 16 metals (Pb, Cd, As, Hg, Sn, Sb, Co, Ni, Cr, Mn, Mo, Se, Cu, Fe, Zn , Al) in types of medicinal herbs commonly used to produce functional foods. The conditions of samples digestion in a closed system using a microwave and an opened system in Kjeldahl method have been studied in order to flexibly apply different methods of sample preparation in practice. The method was validated with parameters such as calibration curve, limit of detection, limit of quantitation, repeatability RSDr % (0.98 - 19.7%), reproducibility RSDR% (2.72 - 23.5%) and recovery R% (80.3 -109%) meeting the AOAC performance requirements. The method was applied to determine heavy metals in 40 samples of medicinal herbs of apart from the risk of pollution with some toxic heavy metals such as lead and cadmium in medicinal herbs.

A survey of deoxynivalenol (DON) content in cereals intended for human consumption was carried out in the Czech Republic (CR) over a seven-year period (2000-2006). Wheat, barley and rye samples of harvested cereals were collected directly from farmers where the selection was based on sample origin. In wheat, randomly sampled spikes and risk samples selected on the basis of visually scabby kernels (VSK) were also analysed. An immunochemical method, ELISA, was used for analysis. The maximum limit, according to Commission Regulation (EC) No. 1881/2006, for DON content (1,250 µg/kg) in unprocessed cereals for human nutrition was exceeded in random samples of wheat in 3.5% out of 345 analysed samples, of barley in 1.6% out of 498 analysed samples, and there were no samples of rye (out of 113) exceeding this limit. The analysis of spike samples and the samples that were selected based on VSK occurrence revealed much higher levels of DON content. Highly significant effects of the year, sample origin, and preceding crop on the DON content were found.

Phytoremediation combined with suitable microorganisms and biodegradable chelating agents can be a means of reclaiming lands contaminated by toxic heavy metals. We investigated the ability of a lead- and cadmium-resistant bacterial strain (JB12) and the biodegradable chelator ethylenediamine-N,N′-disuccinic acid (EDDS) to improve absorption of these metals from soil by tall fescue and red clover. Strain JB12 was isolated from contaminated soil samples, analysed for lead and cadmium resistance, and identified as Burkholderia cepacia. Tall fescue and red clover were grown in pots to which we added JB12, (S,S)-EDDS, combined JB12 and EDDS, or water only. Compared with untreated plants, the biomass of plants treated with JB12 was significantly increased. Concentrations of lead and cadmium in JB12-treated plants increased significantly, with few exceptions. Plants treated with EDDS responded variably, but in those treated with combined EDDS and JB12, heavy metal concentrations increased significantly in tall fescue and in the aboveground parts of red clover. We conclude that JB12 is resistant to lead and cadmium. Its application to the soil improved the net uptake of these heavy metals by experimental plants. The potential for viable phytoremediation of lead- and cadmium-polluted soils with tall fescue and red clover combined with JB12 was further enhanced by the addition of EDDS.
