This work considered the influence of the duration of olive storage on the chemical and sensory properties of extra virgin olive oil. In total, 228 batches of olives collected during three successive crop seasons were sampled in seven industrial mills; information about olive batches (variety, harvest date) was collected, together with the produced oils. Four classes of storage times were considered: ≤24 h, 2–3 days, 4–6 days, ≥7 days. The oils’ quality parameters free acidity, peroxide number and K232 increased significantly as storage duration increased, while phenolic content decreased significantly, with a resulting effect on oil stability. The fatty acid composition was not affected by the olive storage period, while α-tocopherol, lutein and β-carotene content decreased as storage duration lengthened. Finally, the main positive sensory attributes (olive fruity, green notes, bitter and pungency) underwent a statistically significant reduction with the increase in storage duration, while the intensity of defects increased, suggesting that the duration of olive storage has an important effect on the quality of the final oil.

ABSTRACT   Gonad quality of sea urchin Tripneustis gratilla is influenced by consumed seaweed type. Therefore, this study was conducted to determine the type of seaweed as potential source of carotenoids and produce a good quality of sea urchin gonad. The study was conducted in two phases, namely first phase was to obtain the content of carotenoids and β-carotene from several species of seaweed; and second phase was to testify the seaweed that produced high quality of sea urchin gonad.This study used completely randomized design with 4 treatmens of macroalgae diets, namely: 1. Enhalus sp., 2. Sargassum sp., 3. Ulva sp., and 4. Eucheuma sp. Each treament was repeated three times. Measured parameters were gonad weight, gonad maturity index, gonad color quality, and gonad texture.  The study result showed that Enhalus contained the highest carotenoid and β-carotene content with 1409.53 and 639.37 mg/kg respectively. The highest gonad weight was 2.8 g; gonad color and texture was good (score 3); and the highest gonad maturity index was 5.4% that obtained from sea urchin fed with Enhalus. Therefore, this study concludes that Enhalus is potential source of carotenoids for sea urchin T. gratilla diet that will produce a good quality of gonad.   Keywords: carotenoid, diet, gonad quality, sea urchin, seaweed.

ACE-1 perennial cereal rye (PC rye) (Secale cereale) was developed by the Agriculture and Agri-Food Canada Research Centre, Lethbridge, Alberta. This cultivar, tested as LRC 96-1 in western Canada, was developed for silage and greenfeed. ACE-1 is easy to establish, competes well with weeds, grows early in spring, produces more biomass than barley and fall rye under dryland and irrigated conditions, but produces less seed than high yielding fall rye cultivars. Forage quality of ACE-1 was found to be similar to barley. Key words: Cultivar description, rye, perennial, Secale cereale

Radiant Energy Vacuum (REV)-dried broccoli, oranges, and carrots prepared by the optimal drying protocols determined in this study were compared to the freeze-dried and air-dried samples based on the nutritional values before and after drying. An accelerated shelf-life study for REV-dried broccoli, oranges, and carrots was also conducted. For all the samples, REV drying significantly shortened the processing time. The REV-dried samples had much higher retention of the nutritional values (vitamin C, β-carotene) compared to the conventional air-drying process, and the values were also competitive to those of the freeze-dried samples. Although freeze-drying resulted in the best rehydration property, the REV-dried samples still earned the highest scores in the sensory test. In the accelerated shelf-life study conducted on the REV-dried samples, the moisture content and water activity stayed at the same level, but the nutritional values showed a downward trend. The sensory properties fluctuated in the shelf-life but still gained positive feedback from the panelists. Moreover, the testing method for β-carotene content was uniquely designed in this project and could be a semi-quantitative method to refer to.

Le changement des habitudes alimentaires au cours de ces dernières années a abouti à l’apparition des maladies dites de civilisation, parmi elles le diabète sucré. Des approches diétothérapeutiques privilégient la consommation des produits céréaliers sous la forme la plus complète possible. Ce travail a pour but de tester l’efficacité des régimes expérimentaux préparés à base des grains complets des deux céréales, le sorgho (Sorghum bicolor L.) et le seigle (Secale cereale L.), sur la correction de l’hyperglycémie et des marqueurs du stress oxydant associés au diabète chez le rat mâle Wistar. Les résultats montrent que les rats diabétiques, soumis au régime seigle pendant quatre semaines, présentent une diminution significative de la glycémie qui atteint les 53,95 % à la fin de l’expérimentation, ce qui fait que leur taux en glycémie se rapproche de celui des normoglycémiques. Le sorgho blanc présente, d’une part, une diminution significative de la peroxydation lipidique intracellulaire et, d’autre part, une augmentation de l’activité de la glutathion peroxydase, la glutathion réductase ainsi que la vitamine C. Ces approches méthodologiques peuvent, en améliorant la connaissance de l’importance des céréales (fibres alimentaires solubles et des polyphénols) dans l’évolution du diabète, aboutir à des recommandations et à une éducation nutritionnelle du diabétique.
