Abstract. Estimates of phenotypic and genetic parameters for live Performance and detaiied dissection traits of body components and carcass tissues in Pekin ducks were calculated and used to construct selection indexes. The expected reduction in potential gain in live weight, dressing percentage and carcass characteristics resulting from restricting change in subcutaneous fat level to zero were assessed. The aggregate genotype measurements were weight at slaughter, dressing percentage and percent subcutaneous fat. The index measurements were weight at hatching, weight at slaughter, weight gain, breast width, breast length and breast circumference. The restricted indexes as compared with the unrestricted would lead to minimum reduction in potential gain of 29.4% in total net merit, 96.4% in weight at slaughter, 49.0% in dressing percentage, 74.0% in dissected side weight and 75.0% in muscle to bone ratio. The potential reduction in percent abdominal fat and percent bone in side was decreased by at least 38.5% and 80.2%, respectively. Absolute genetic response results showed that selecting for breast width alone (rTI = 0.79) would be recommended for birds with substandard levels of SCF, whereas use of the restricted index containing weight at hatching and breast width (rTI = 0.54) would be advised for individuals with Standard fatness.

AbstractThis study investigated the effects of the percentage of Texel or Rouge de l’Ouest (Rouge) genes in lambs (0, 50, 75 or 100%; the remainder being Greyface (Border Leicester × Scottish Blackface)) on lamb carcass characteristics and meat quality. Ewe lambs were slaughtered at 34, 40, 46 and 52 kg and ram lambs were slaughtered at 40, 46, 52 and 58 kg live weight. Dressing proportion increased (P < 0·001) by 0·53 and 0·27 g carcass weight per kg live weight for each 1% increase in Texel or Rouge genes respectively. Carcass conformation classification increased (P < 0·001) by 0·016 and 0·007 units (on a five-point scale) for each 1% increase in Texel or Rouge genes respectively. Carcass fat depth measures were reduced by Texel and Rouge genes such that at a constant fat depth end point, carcass weight could be increased by 0·029 and 0·023 kg for each 1% increase in Texel or Rouge genes. Carcass lean content increased (P < 0·001) by 0·99 and 0·27 g/kg for each 1% increase in Texel or Rouge genes. Subcutaneous fat content was reduced (P < 0·001) by 0·36 and 0·29 g/kg for each 1% increase in Texel or Rouge genes. Intermuscular fat content was reduced (P < 0·01) by 0·38 g/kg per 1% increase in Texel genes, whereas Rouge genes had no effect. Similarly, bone content was reduced (P < 0·01) by Texel genes only (0·31 g/kg per 1% increase in Texel genes). Warner-Bratzler shear force values showed a quadratic effect with increasing Texel and Rouge genes, with an initial decrease from 0 to 50% followed by an increase to 100%. Cooking loss increased (P = 0·05) as the percentage of Rouge genes in lambs increased. Increasing the percentage of Texel or Rouge genes significantly increased L* values (P < 0·01 and P < 0·05 respectively), b* values (P = 0·05 and P< 0·05 respectively) and H° values (P < 0·001).

Breed effects on live weight gain, slaughter characteristics and carcass composition were compared in Aberdeen Angus, Charolais, Hereford and Simmental bulls. The experiment extended over 2 years and involved totally 96 animals. The target slaughter live weights were determined 550 kg for earlier maturing breeds Aberdeen Angus and Hereford and 630 kg for later maturing breeds Charolais and Simmental. Charolais and Simmental gained more rapidly (P &lt; 0.05) than Aberdeen Angus while Hereford were intermediate. Hereford had lower (P &lt; 0.05) dressing percentage than the other breeds. Percentages of grade I meat were significantly higher (P &lt; 0.05) in Charolais and Simmental. The highest percentage of separable fat was recorded in Hereford (P &lt; 0.05). Charolais and Simmental had lower (P &lt; 0.05) thickness of subcutaneous fat over MLLT than Aberdeen Angus andHereford. The later maturing bulls generally tended to achieve higher live weight gains during the experiment, produced less fat and had higher percentage of meat from high priced joints in comparison with earlier maturing animals. &nbsp;

Lambs from the Poll Dorset x (Border Leicester x Merino) cross were raised from a late lambing in 1983 (a year when pastures grew unchecked and had high clover content) and 1984 (a year with intermittent dry periods and a low clover content in pastures). Multivariate repeated measures analyses were used to compare growth rates for rams, wethers and ewes within 2 periods of growth in 1983, and 4 in 1984. In all stages rams grew significantly faster than wethers and ewes, whereas wether growth rate exceeded that of ewes in only 3 stages. In general, when pasture availability and quality was high, rams grew faster than wethers by 0.3 kg/week and ewes by 0.5 kg/week. The rams grew 0.16 kg/week faster when pasture availability was limiting for a period in winter but lost significant (P<0.01) body condition, whilst ewes maintained both weight and condition. When good quality feed was again available, rams gained more weight than wethers, as did wethers compared with ewes, while rams and wethers gained more condition than ewes. Carcass weight and fatness, measured either as indicators of fat (GR measurement or fat score) or as total subcutaneous fat, could be predicted from assessments made on live lambs. Full liveweight, sex and year explained 41% of variation in GR, 48% in fat score and 79% in subcutaneous fat. Condition score, sex and year explained 45% of variation in GR, 52% in fat score and 57% in subcutaneous fat. Full liveweight, condition score, sex and year explained 80% of the variation in subcutaneous fat, 47% in GR and 57% in fat score. An interaction of sex with full liveweight in predicting carcass weight and subcutaneous fat indicated that as carcass size increased, the sex of the lamb became an increasingly important consideration when assessing characteristics important in describing lamb carcasses. Dressing percentage decreased by 0.08/kg as liveweight increased. This result was consistent over the 2 years, with opportunities for error being assessed and eliminated in the second year. Notwithstanding that this was an unimportant loss in real terms, published information showed an increase in dressing percentage with liveweight.

The aim of this study was to assess the influence of different finishing systems on the in vivo measurements, quantitative and qualitative carcass characteristics, commercial cut ratio, and shoulder tissue composition of lambs. Thirty-two male lambs were distributed in four finishing systems with eight replications each, as follows: suckling lambs on pasture; suckling lambs in confinement, with access to creep-feeding containing corn bran and soybean meal; weaned lambs fed roughage, characterized by ad libitum supply of alfalfa hay; and weaned lambs fed concentrate, composed of oat grain and soybean meal. The lambs were slaughtered as they reached the pre-set live weight at slaughtering of 30 kg. Most of the in vivo biometry variables were not significant (P > 0.05) when comparing the finishing systems, except for hindlimb height and thoracic perimeter. Regarding the quantitative carcass characteristics, all variables differed (P < 0.05) between systems, except for carcass length, leg width, and subcutaneous fat thickness. For the qualitative carcass characteristics, only the fatness and carcass conformation presented significant differences (P < 0.05). Most in vivo measurements and the proportion of carcass cuts were not influenced by finishing systems. Weaned lambs fed an exclusive concentrate diet presented leaner carcasses with an inferior conformation when compared to the other finishing systems. Suckling lambs in confinement presented shoulders with a higher fat deposition when compared to those weaned. Suckling lambs both on pasture and in confinement presented a superiority in the quantitative carcass characteristics when compared to weaned lambs.

In this study, it was aimed to determine the fattening performance, slaughter and carcass characteristics of lambs of Eþme Kývýrcýðý (EKIV), Bursa Kývýrcýðý (BKIV), Çine Çaparý (CC) and Karya (KAR) sheeps. A total of 37 male lambs at the age of 3.5 months formed the animal material. Fattening period is 56 days. During slaughtering, head, feet, skin, liver, hot carcass weights were determined and hot carcass yield was calculated. Each carcass was cut out into 7 parts. The overall average of daily weight gain was 144.82 g. While the highest daily live weight gain was observed in the KAR, the CC had the lowest value. The total share of the rump, shoulders, back and arms are 57.65%, 66.85%, 65.80% and 67.12% for CC, EKIV, KAR and BKIV, respectively. The effect of the genotype on all the characteristics other than cooling loss is important. In terms of dressing percentage value, the ranking was CC, BKIV, KAR and EKIV from the highest to the lowest.

A total 90 Vanaraja experimental birds were divided into three respective groups based on floor density viz., G1 (16 birds/m2), G2 (12 birds/m2) and G3 (8 birds/m2). No significant difference in average live weight and carcass weight was observed between groups. Average feed consumption, feed conversion ratio (FCR) and dressing percentage in G2 and G3 was significantly (P<0.05) higher as compared to G1. There were no significant effect (P>0.05) of stocking density in the carcass characteristics except the heart weight. There were non significant differences among groups for total protein, albumin, globulin and A:G ratio. Blood glucose was significantly (P>0.05) higher in group G1 as compared to G2 and G3. Blood cholesterol level increased with increase in stocking density but not significantly. Blood parameters eosinophil, monocyte, basophil counts and H:L ratio were not affected by the stocking density. Hb concentration increased non-significantly with increased stocking density. Vanaraja birds from 8 birds/m2 to 12 birds/m2 give the better growth performance, FCR and dressing percentage without change in blood biochemical and hematological indices.

SUMMARYFour equally spaced feeding levels, estimated to cover the range of commercial practice, were examined using a total of 208 pigs over the live-weight range 28–100 kg. The pigs were penned in groups of six or eight and were balanced for sex within pens. Three centres participated in the experiment contributing five, two and one replicates respectively.Efficiency of feed conversion was not significantly affected over the range of feed intakes studied, thus daily gain was linearly related to feed intake. A 10 decrease in feed intake increased killing-out percentage by 0·3 unit and decreased backfat thickness by 1 mm at both the shoulder and mid rump. The corresponding changes in the percentages of subcutaneous fat plus skin and meat were similar in magnitude at approximately 0·85 unit.Muscle quality was reduced with higher feed intakes but weight of liver, as increased. Details of other offal weights and carcass measurements are given.

ABSTRACTA comparison was made of the carcass characteristics of purebred Galloway, Luing and Welsh Black steers, and crossbred steers out of Blue-Grey and Hereford × Friesian dams by Aberdeen-Angus, Charolais, Devon, Hereford, Limousin, Lincoln Red, Simmental, South Devon and Sussex sires, in winter and summer fattening systems. A total of 1430 cattle were involved and the trial extended over 6 years.The cattle were slaughtered when their fatness was estimated, using the Scanogram ultrasonic machine, to be in fat class 3L of the Meat and Livestock Commission Beef Carcase Classification Scheme. Carcasses were evaluated using a standardized commercial cutting technique.The data for crossbred and purebred cattle were analysed separately within the fattening system using leastsquares models, which included effects for year, sire breed and dam breed, and with regression on age at the beginning of the trial and carcass subcutaneous fat concentration estimated by visual appraisal.Limousin and Charolais crosses killed out best. Their carcass weights were, on average, 20g/kg live weight heavier than those of Aberdeen-Angus, Devon, Hereford and Lincoln Red crosses. There was a range of 20 to 30 g/kg carcass weight between sire breeds in carcass saleable meat yield: the highest values were recorded for the Limousin crosses (evaluated on winter fattening only) followed by Charolais and Aberdeen-Angus crosses; Lincoln Red crosses had the lowest values among the crossbreds and Luing cattle among the purebreds. These differences were more a reflexion of differences in fat trim than of differences in meat to bone ratio.Continental sire breeds had significantly more of their total saleable meat in the higher-priced cuts (P<0·05), although the range between sire breeds was only 15 g/kg.

ABSTRACTCarcass characteristics of purebred British Friesian steers and crossbred steers by eight sire breeds out of British Friesian dams, in 16-month and 24-month beef production systems, were compared. Sire breeds included Charolais, Simmental and the main traditional British beef breeds. A total of 579 cattle were involved.The cattle were slaughtered at a fixed level of fatness and the carcasses evaluated using a standardized commercial cutting technique. Data were adjusted to equal carcass subcutaneous fat concentration.Sire breed differences were similar in both feeding systems. Charolais crosses killed-out best and Aberdeen- Angus and Devon crosses poorest; the range was 25 g/kg live weight.Significant differences were recorded between breeds in the proportion of saleable meat in the carcass (P<0·001): Charolais, Sussex and Aberdeen-Angus crosses had the highest values, on average being 15g/kg carcass weight better than purebred Friesians. Breed differences were detected in the proportion of total saleable meat occurring in the higher-priced joints, Simmental and Charolais crosses ranking highest, but the range across sire breeds was only 10 g/kg carcass weight. There were important differences between sire breeds in rate of meat weight gain that were related to mature size.Purebred Friesians were less efficient than either Charolais or Hereford crosses in converting food into meat in the 24-month system. Friesians also had the lowest efficiency and Hereford crosses the highest efficiency in the 16-month system, although the differences were not statistically significant.

SUMMARYMale Sudan desert sheep and goats of three age-groups, young, yearling and mature, were used to compare some of their carcass characteristics when reared under range conditions and in feedlot. Carcass traits studied were the dressing percentage, the percentage of bone in the carcass and wholesale cuts, chemical composition of meat, and muscle fibre thickness. An organoleptic test was carried out on meat from the fattened animals.The dressing percentage, percentage of edible meat, chemical fat and muscle fibre thickness were increased by fattening in the feedlot. Increases were also observed with advancing age, but the effect was more marked in fattened than unfattened animals. Goats yielded a higher carcass weight per unit live weight than sheep, the stomach content and skin weight relative to live weight being greater in the sheep than in the goats. Goats were shown to possess less chemical fat and thicker fibres than sheep. Taste panel scores revealed a highly significant (P < 0·005) treatment effect on tenderness and a significant (P = 0·5) treatment effect on juiciness in relation to age and species. Taste panel flavour scores were not associated with animal age or species.
