The research has been conducted on “Agroholding” sheep farm, where 860 heads of sheep are bred, 66 % of which are Armenian semi-coarse-wool breed and 34 % are other breeds. Sheep bonitation has been conducted according to their breed, age and productivity characteristics. To improve the qualitative composition of the animal stock, breeding and selection works should be continuously implemented on the mentioned farm. It is recommended to apply such breeding technology which would enable to improve not only the breed’s qualitative composition but also to increase both milk and meat productivity.

Abstract The physical and chemical properties and structure of lamb fat are derived from the qualitative composition and content of saturated and unsaturated fatty acids. Higher levels of saturated fatty acid in sheep fat increase the melting point and yield a solid lard. Characteristic fat deposition in the carcass of young sheep is closely related to meat productivity and nutritional value of mutton. The paper presents the results to prove the influence of the genotype of purebred Tsigai rams and their crosses from the Romanov, Texel and Edilbay rams. Crossbred young animals of all genotypes are proved to have an increased content of polyunsaturated fatty acids. The amount of lipids in intramuscular fat in crossbred Romanov rams is 1.68% more, Texel – 13.97% and Edilbay – 21.79%, while the cholesterol content is lower by 1.47%, 6.35% and 5.21%, respectively.

Abstract At present, modern high-yielding crosses of broiler chickens are used to produce high-quality meat with high technological and consumer properties. To assess the meat productivity of broiler chickens grown on fodder produced in the conditions of the poultry factory at our own feed factory, a control slaughter was carried out at the age of 42 days. Analysis of the data obtained shows that with an average poultry live weight of 2000 ± 50 g, the slaughter yield of broiler chickens was 71.8 ± 0.13%. At the control slaughter, we found that the weight of the gutted carcass was 75.23%, offal 10.32%, and technical waste 14.45% (Figure 1).When studying the quantitative and qualitative composition of by-products, we found that liver accounted for 18.42%, stomachs 7.47%, heart 3.39%, neck 12.59%, legs 33.9%, heads 24.23 % by weight of offal.In the structure of technical waste feather is 24.92%, blood is 32.87%, intestine is 42.21% (Figure 3).Thus, the results of our research show that when cutting broiler chickens grown on self-made feeds under the conditions of modern poultry enterprises with a closed production cycle, gutted carcass weight is 75.23%, while legs and heads constitute the main bulk of the mass of by-products.
