Abstract The physical and chemical properties and structure of lamb fat are derived from the qualitative composition and content of saturated and unsaturated fatty acids. Higher levels of saturated fatty acid in sheep fat increase the melting point and yield a solid lard. Characteristic fat deposition in the carcass of young sheep is closely related to meat productivity and nutritional value of mutton. The paper presents the results to prove the influence of the genotype of purebred Tsigai rams and their crosses from the Romanov, Texel and Edilbay rams. Crossbred young animals of all genotypes are proved to have an increased content of polyunsaturated fatty acids. The amount of lipids in intramuscular fat in crossbred Romanov rams is 1.68% more, Texel – 13.97% and Edilbay – 21.79%, while the cholesterol content is lower by 1.47%, 6.35% and 5.21%, respectively.

In this study, physical and chemical properties (dry matter, ash, moisture, protein, fat, fiber, carbohydrate, starch, amylose, and vitamin C) of sweet potato tuber and flour of Anggun 1 cultivar were evaluated at different conditions. During peeling, the tuber and flour were processed subjected to three different conditions, which were unpeeled tubers (C1), peeled tubers (C2), and skin of tuber only (C3). From the results, the highest (p < 0.05) dry matter was observed in C1 while higher contents of ash, moisture, and protein were found in C3. Regarding the fat and vitamin C content, no significant differences (p > 0.05) were found between each condition. The highest fiber, carbohydrate, and amylose content (p < 0.05) were found in C1. The C1 and C2 reflected significantly higher (p < 0.05) starch content. Overall, these results provide important information about the peeling effect on the physical and chemical properties of Anggun 1. The information could be used as adding value to healthy food in the Malaysian diet due to the nutritional value of sweet potato.

After Nile tilapia skin was preserved using the methods of freezing and dry salting, characteristics of skin gelatin were evaluated with regard to yield, rheological features and physical and chemical properties. Preservation was performed after filleting, at which time skins were either frozen (-18°C) for 7 days or salted (25°C) for 7 days. Although no differences (p > 0.05) were observed with respect to humidity, protein, lipid, ash and calcium levels, gelatin from salted skins had a higher concentration of iron relative to frozen skins. Further, twenty-three fatty acids were detected in salted skins compared with merely three found in skin derived gelatin. Of amino acids found, glycine, alanine, proline and arginine were the most abundant. Hydroxyproline abundance in salted and frozen skin gelatin were 8.76% and 8.71%, respectively. In addition, salted skin gelatins had a greater accumulation of saturated fatty acids and lower rates of monounsaturated fatty acids. Salted skin gelatin had the highest yield (18g × 100g-1), gel strength (200 g) and viscosity (19.02mPas) when compared to the yield (17g × 100g-1), gel strength (12.7g) and viscosity (9.16 mPas) of frozen skins. Results show that gelatin from dry salted skin had the best yield and also had relatively better rheological properties, more iron, and better coloration relative to gelatin obtained from frozen skins of Nile tilapia.

To investigate the effect of histamine (8 mkg/kg, i/v) on the concentration of lipids in the rats bile. Using the method of thin layer chromatography concentrations of phospholipids, cholesterol and its esters, free fatty acids, triglycerides were determined in the rats bile collected in acute experiments (anesthesia, sodium thiopental, 50 mg/kg). The results were calculated using Statistica 7.0; p<0,05. Histamine increased concentration of phospholipids, cholesterol, its esters and reduced content of free fatty acids and triglycerides in the rats bile. Probably, histamine, acting on transport lipid components in bile effect on its physical and chemical properties and the maintenance of cholesterol in mixed bile micelles. Histamine affects the metabolic conversion and transport of lipids in the liver cells, causing the increase in the concentration of phospholipids, cholesterol and its esters in bile and decrease it in the content of free fatty acids and triglycerides.

A method of isolation of polysaccharide complex from the leaves of Burdock (Arctium lappa L.) is described in the article. For the first time the qualitative composition of this complex was determined, belonging to the group of heteroglycans. Some of physical and chemical properties of polysaccharide complex were studied. It is shown that polysaccharide complex increases catalase activity and peroxide resistance of the erythrocyte membranes of healthy donors. The study found that polysaccharide complex of Burdock improves physical performance of test animals.

The chemical and physical properties of a biosurfactant synthesized by hexadecane-grown Rhodococcus species H13-A are described. The biosurfactant is an anionic glycolipid consisting of 1 major and 10 minor components. The hydrophilic portion of the molecule is trehalose, which is acylated with normal C10 to C22 saturated and unsaturated fatty acids, C35 to C40 mycolic acids, hexanedioic and dodecanedioic acids, and 10-methyl hexadecanoic and 10-methyl octadecanoic acids. The major glycolipid species was identified as 2,3,4,6,2′,3′,4′,6′-octaacyltrehalose, plus minor glycolipid species of di-, tetra- and hexa-acyltrehalose derivatives. The glycolipid exhibited a critical micelle concentration of 1.5 mg/mL and minimum interfacial tension value of 2 × 10−2 mN/m against decane, with a further reduction in interfacial tension to 6 × 10−5 mN/m in the presence of the cosurfactant pentanol. The phase behavior of the glycolipid indicates the formation of a surfactant-rich, "middle-phase" microemulsion containing liquid crystals, both of which are associated with surfactant systems having ultralow interfacial tension values. In connection with the spectrophotometric study of population-type characteristics of various kinds of stars, a statistical analysis of kinematical and distribution parameters of the same stars is performed at the Toruń Observatory. This has a twofold purpose: first, to provide a practical guide in selecting stars for observing programmes, second, to contribute to the understanding of relations existing between the physical and chemical properties of stars and their kinematics and distribution in the Galaxy.

Organic farming is one of the management strategies that improve productivity of marginal uplands. The study aimed to: (1) evaluate effects of various organic-based fertilizers on the growth and yield of corn; (2) determine the appropriate combination for optimum yield; and (3) assess changes on the soil physical and chemical properties. Experiment was laid out in Randomized Complete Block Design, with 3 replications and 7 treatments, namely; T0=(0-0-0); T1=1t ha-1 Evans + 45-30-30kg N, P2O5, K2O ha-1; T2=t ha-1 Wellgrow + 45-30-30kg N, P2O5, K2O ha-1; T3=15t ha-1 chicken dung; T4=10t ha-1 chicken dung + 45-30-30kg N, P2O5, K2O ha-1; T5=15t ha-1 Vermicast; and T6=10t ha-1 Vermicast + 45-30-30kg N, P2O5, K2O ha-1. Application of organic-based fertilizers with or without inorganic fertilizers promoted growth of corn than the control. But due to high infestation of corn silk beetle(Monolepta bifasciata Horns), its grain yield was greatly affected. In the second cropping, except for Evans, any of these fertilizers applied alone or combined with 45-30-30kg N, P2O5, K2O ha-1 appeared appropriate in increasing corn earyield. Soil physical and chemical properties changed with addition of organic fertilizers. While bulk density decreased irrespective of treatments, pH, total N, available P and exchangeable K generally increased more with chicken dung application.
