Brazil is one of the world’s leading beef producers. The goal of this chapter is to give an overview of how Brazilian beef production is important to Brazil and worldwide. We also give an overview of some aspects of red meat consumption in this country and the main tendencies regarding sustainability production. The economic importance of beef production is Brazil is based on secondary data and the main content about beef consumption is based on researchs conducted by the authors that interviews Brazilian consumers. The chapter focus in some concepts, concerns and factors that affects consumption as symbolic aspects, ethical, health and environmental concerns, brand, herd tracking, guarantees of origin, legal employment, safety and hygiene, animal wellbeing, sustainability and the Carbon Neutral Beef initiative (CNB). Marketing, certification, treaceability and brand strategies conducted by some industries, the red meat premium boutiques in the retailing sector, and the role of brazilian government in meat safety, monitoring and regulation are also covered.

The present study investigates household consumption pattern of snail meat in Oluyole Local Government Area of Oyo State. A multistage random  sampling technique was used to administer the questionnaires to a total of 120 respondents. Data collected were analyzed using both descriptive  statistics and inferential statistics. The socioeconomic factors analyzed showed that age group between 31 and 40 (45.0%) consumed snail more  while age group between 51 and 60 (11.70%) consumed less snails. The majority of respondents were Married (60.8%) and possess secondary education (54.2%). Most of the respondents (95.8%) consume snail meat but most of them consume snail meat on a seasonal basis unlike beef and fish. Furthermore, fried form of snail meat is mostly (65%) preferred when compared to cooked form (24.2%). The regression analysis shows that the consumption of snail meat depended on the price, household size, educational level, household income, nutritive value, occupation and its availability. Problems associated with snail meat consumption in the study area include Price, income level, unavailability and cultural belief. Based on the findings, this study recommends that extension workers should engage the public on the need to get involved in the rearing of snails to make it readily available all year round and thus make it more affordable for all sundry. Demands of animal foods from livestock (meat, eggs and milk) over time tends to increase in line with population growth, income, nutrition awareness, and improvement in education levels. But even though it has increased, the level of meat consumption of the Indonesian people is still categorized as very low. This study aims to determine the social and economic characteristics of households and analyze the factors that influence consumption of household beef in Pandan District. The analytical method used is descriptive analysis, namely by observing directly the social and economic conditions of the household, then using a questionnaire to obtain data on the socio-economic conditions of the household. The method of multiple linear regression analysis is used to analyze the factors that influence the consumption pattern of the household beef. The results of the study show that consumers of beef in Pandan Subdistrict have different socio-economic characteristics, both in terms of education, age, number of family members and income. The socio-economic characteristics of beef consumers, namely education, age, number of family members and income significantly influence the amount of consumption simultaneously. Age, number of family members and income have a partial effect on the amount of beef consumption, while the education variable does not have a partial effect on the amount of beef consumption.

The present study analyses the consumers meat consumption behaviour in Jammu district of Jammu and Kashmir. After preparing the comprehensive list of meat markets operating in Jammu district, three meat markets were selected, and from each selected meat market ten retail meat shops were randomly chosen. From each randomly selected retail meat shop, a list of consumers was prepared. Out of the list four consumers were selected randomly to make a sample size of 120 consumers. Data were collected through a well structured interview schedule. The data were coded, classified, tabulated and analyzed using the software; Statistical Package for the Social Science (SPSS 16.0). The presentation of data was done to give pertinent, valid and reliable answer to the specific objectives. Frequencies, percentage, mean and standard deviation were worked out for meaningful interpretation. It was found that majority of consumers started meat consumption in early childhood and any change in the meat consumption habit was insignificant. Most of the consumers preferred chicken meat twice a week and consumption was enhanced during winter and rainy seasons while due to religious sentiments some consumers avoided consuming meat on specific days. Visual examination and fresh and disease free meat were the most prominentindicators and desired meat quality by 100% respondents.A significant proportion of respondents showed reduction in the consumption of chicken and eggs due to the fear of bird flu outbreak
