The determination of the effect of processing on nutritional composition and level of undigested oligosaccharide in Cucumeropsis mannii seeds was carried out. The dried melon seeds were sorted, cleaned, soaked in 60mL water for 15 min for easy removal and de-hulled to get the cotyledons, which were divided into three portions. The first portion was used unprocessed, the second portion was boiled while the third portion was fermented for analysis. The microbial load, physicochemical analyses, proximate compositions, anti-nutritional factors, antioxidant activity, vitamins, mono and oligosaccharides sugars were determined. Processing led to significant increase in the pH, moisture contents buta reduction in the total titratable acidity. Processing increased protein, fat and ash contents. Significant reduction in anti-nutritional factors of boiled and fermented melon seed was noted. Processing led to significant increase in the antioxidant activity. The saccharide sugars reduced after processing. The study observed that processing increased significantly the nutritional composition of the melon seeds but significantly reduced the anti-nutritional factors.

The potential of wheat bran (WB) addition as a prebiotic source were demonstrated using yogurt with probiotics (Lactobacillus acidophilus and Bifidobacterium lactis). Yogurts (with 4% WB) were significantly (P < 0.05) different in total bacterial counts (9.1 log CFU/mL), and total titratable acidity % (TTA, 1.4%) compared to controls during 28 days cold storage (4°C). Additionally, WB-total dietary fiber contents and their bound phenolic profiles were investigated as well as the antioxidant activity of WB-water extractable polysaccharides (WEP) was studied. HPLC analysis of alkaline hydrolyzed DF fractions showed that insoluble DF had higher phenolic acids (84.2%) content than soluble DF (15.8%). Also, crude-WEP showed stronger antioxidant activity compared to purified-WEP with an ORAC of 71.88 and 52.48 µmol TE/g, respectively. Here we demonstrate WB has potentials as a source of prebiotics, which may have the potentials for functional foods and nutraceutical applications.

The rapidly growing civilization and economy need the judicious usage of floral and faunal heritage. Acacia nilotica (Family: Fabaceae) is a beneficial plant species and each part of it exhibits numerous biological and pharmacological effects. The gum exudates of Acacia nilotica trees are underutilized plant products that can be explored for their potential as a therapeutic and curative agent. Its nutritional composition, interaction with anti-nutritional factors and antioxidants can determine its utility as a food. The present investigation was aimed to estimate the anti-nutritional factors and antioxidant activity of Acacia nilotica gum. It also focused on establishing a relationship of the obtained data with the ethnomedicinal and pharmacological properties claimed in the literature. The analysis was carried out using standard methods and protocols involving spectrophotometric and gravimetric principles. The anti-nutritional components like tannin, trypsin inhibitor, phytate, oxalate, total saponin, steroidal saponins, alkaloid content of Acacia nilotica gum was found to be 0.2369±0.0354 g tannic acid equivalent/100 g, 0.0108±0.0037 TIU/mg, 156.3333±9.4516 mg/100 g, 132.5±28.3152mg/100 g, 12.7183±6.7788 mg diosgenin equivalent /g, 0.0705±0.01 mg diosgenin equivalent /g, 0.1333±0.0577 g/100 g respectively. The amounts of total phenols and flavonoids was determined to be 8.0033±2.7211 mg of gallic acid equivalent/g sample, 0.0458±0.0186 mg quercetin equivalent /g sample respectively with a significant DPPH Scavenging activity. The results indicate that the quantity of anti-nutritional factors in gum is within the range of the contents of anti-nutritional factors found in commonly consumed foods. The substantial presence of phenol, flavonoids and DPPH activity in the gum indicates the presence of high antioxidant properties. The presence of anti-nutritional factors and antioxidants in favourable levels can impart diverse physiological responses. The present study concluded that Acacia nilotica gum can be used as a nutritious food commodity with a plethora of recuperative activities.

ABSTRACT: The objective of this research was to evaluate the nutritional composition and bioactive compounds of whole umbu fruit, including pulp, seed and peel, and also of a commercial umbu pulp. Samples of the fractions and of commercial pulp were analyzed for determination of minerals and proximate composition, total phenolic and antioxidant activity. Pulps and peel were also analyzed for vitamin C and carotenoids contents. Commercial pulp presented better nutritional composition than fresh pulp (P<0.05) and the peel presented higher phenolic content and antioxidant activity than seed. Peel also stood out by its vitamin C (79 mg.100 g-1) and total carotenoids (2,751 µg.100 g-1) contents, showing that, as the main barrier of the fruit for its protection, it is a fraction rich in bioactive compounds. The highest dietary fiber and iron contents were observed in umbu seed (P<0.05). Therefore, umbu by-products may be ingredients proper for development of food richer in nutrients and bioactive compounds.

AbstractChanges of total content of phenolic substances, alteration in total titratable acidity and differences in tartaric acid content in grapes of four white (Müller-Thurgau — MT, Pinot Blanc — Rulandské bílé in Czech, RB, Sauvignon (Sg), and Muscat Ottonel — Muškát Ottonel in Czech, MO) and two blue (Dornfelder — Df and Blue Frankish — Frankovka in Czech, Fr) grapevine varieties throughout their growth, ripening and maturing (July–November). Potentiometric titration was applied for the determination of total titratable acids in grapes (expressed as tartaric acid equivalents in g L−1). A spectrophotometric method according Rebelein based on the formation of a colored complex of ammonium metavanadate and tartaric acid was used for determination of tartaric acid in green juice made by pressing unripe grapes. A spectrophotometric method based on reduction of phosphomolybdato-tungsten complex in alkaline solution using Folin-Ciocalteau reagent was applied for determination of total content of phenolic substances (TCP).

Garcinia buchananii Baker (Family,Cluciaceae/Guttiferae) is an underutilized indigenous fruit tree that produces edible fruits that are used as both food and medicine in tropical Africa. This study evaluated the physical and chemical characteristics of G. buchananii fruits collected from Uganda and Rwanda. Ripe fruits were harvested during their peak seasons in Masaka and Bugesera Districts in Uganda and Rwanda, respectively. The fruits were analyzed for physical characteristics including; fruit weight, fruit size (that is length and width), number of seeds per fruit, seed weight, seed dimensions(length, width and breadth); chemical characteristics (pH and titratable acidity), proximate composition (moisture content, protein, fat, dietary fibre, carbohydrates and energy), mineral composition (K, Na, Ca, Mg, Ca, Fe, Zn, Cu), and bioactive components (total phenolic compounds, flavonoids and anthocyanins; and antioxidant activity). Data were statistically analyzed using a student T-test (p≤0.05). The results indicated that fruit weight and pulp content ranged from 6.3±1.3-9.5±2.8g and 54.1±10.6- 81.1±6.5%, respectively. Titratable acidity of the pulp ranged from 6.1±0.8 to 7.1±0.1 %. Nutritionally, dietary fibre, vitamin C, iron and zinc ranged from 20.0±0.4 -22.6±1.8 g/100g, 32.8±3.2-42.0±3.3 mg/100g, 4.8±0.2 - 6.5±0.8 mg/100g and 1.1±0.0 -2.5±0.1 mg/100g, respectively. The total phenolic compounds and antioxidant activity ranged from 996.7±50.5 - 1147.5±47.4 mg/g GAE (Garlic Acid Equivalent) and 8.0±0.2- 8.4±0.1 mg/100g AAE (Ascorbic Acid Equivalent) as IC50, respectively. There was a significant difference (p≤0.05) in the physical characteristics (weight, length, width and breadth), nutritional composition and bioactive components of the fruit samples of the two countries. Assessment of the nutrients indicated that the pulp was rich in vitamin C, iron, zinc, copper and dietary fibre. The pulp also contained phenolic compounds with antioxidant activity. The seeds had 6-24% crude oil content with palmitic, stearic, oleic and linoleic as major fatty acids. The total unsaturated fatty acids in the seed oil ranged from 58.4-59.5%. Although this finding showed significant differences (P≤0.05) in the physical and chemical of G. buchananii fruit from Uganda and Rwanda, the nutritional composition and bioactive component information has shown the potential of the fruits for processing into high-value nutraceuticals.

<p>This study aimed to i) investigate probiotic potentials of raspberry and strawberry addition in yogurts, ii) explore antioxidant activity of berries extracted by microwave using oxygen radical absorbance (ORAC), and 2,2-diphenyl-1-picryhydrazyl radical (DPPH) as well as iii) determine the total phenolic content (TPC) of the berries. The probiotic potentials of those berry additions into yogurts containing different probiotics were determined by subsequent viable microorganism counts in each yogurt trial using selective media, pH and total titratable acidity (TTA) during 28 days of cold storage at 4ºC. Viable microbial counts in yogurt trials containing probiotic <em>Lactobacillus acidophilus </em>and raspberry increased (P&lt;0.05) for 21 consecutive days of cold storage. The pH levels decreased (P&lt;0.05) as the TTA increased over 28 days of cold storage in all yogurts containing the berries. ORAC results showed that raspberry had higher antioxidant activity (505.72 µmol TE/100g of fruit) than strawberry (495 µmol TE/100g of fruit). Also, DPPH scavenging activity results showed that raspberry (86.11%) had higher antioxidant activity than strawberry (85.69%). There was not a significant (P&lt;0.05) difference in TPC values of raspberry (0.20 g GAE/kg) and strawberry (0.18 g GAE/kg). This study suggests that both berries have potential as a source of prebiotics with antioxidant activity for future functional foods and nutraceutical applications.</p>

In order to determine the penetration of the thermal wave in the papaya fruit pulp (Carica papaya L.), cv. Golden, thermal diffusivity of the pulp was obtained measuring temperature at four different depths. Measurements were carried out initially with the fruit on the first stage of maturity. The changes of the thermal diffusivity were expressed as a function of ripening. A temporal decrease of the thermal diffusivity was observed. Chemical (pH, soluble solids and total titratable acidity) and physical (pulp firmness) properties were measured as well and the results were compared to the thermal diffusivity change.

The study was carried out to determine the effect of fermentation on the nutritional composition of banana and groundnut flour blends. Four blends of banana and groundnut flour was composed (50:50, 60:40, 100:0 and 0:100 (banana:groundnut )). Each blend was fermented naturally at room temperature for 72 hours. The pH and total titratable acidity (TTA) were monitored at 24 hour interval during fermentation. Mineral and antinutrient composition was also assessed using standard techniques. The pH of the fermenting samples decreased as fermentation progressed while total titratable acidity increased. Total microbial load of the samples decreased during fermentation. Antinutrients decreased while minerals increased after fermentation. From the research, it was observed that fermentation reduced the antinutrient contents of the samples while the minerals were enhanced, therefore food products from legume and carbohydrate blends should be fermented in order to increase the nutritional composition.

The Pachira aquatica Aublet, belonging to the Malvaceae family, is a tree of variable size, annually produces large quantities of capsule type fruits, in which its seeds remain stored. Even though it is commonly found in southern Mexico and Brazil, there are few studies on its composition. Therefore, the objective of this study is to demonstrate the characteristics of this fruit by means of physical analyzes and to evaluate the bioactive compounds of the almonds in the raw, cooked and roasted forms. Type of research laboratory and quantitative. The almonds showed high content of lipids (above 30%), proteins (above 15%), pH (above 5.66), total soluble solids (above 15º Brix) and total titratable acidity (above 3%). The roasted almond had a higher content of phenolic compounds, flavonoids and carotenoids. In the raw form, a higher content of antioxidant activity, anthocyanins and condensed tannins was obtained. The cooked almond presented intermediate values in all data on bioactive compounds and antioxidant activity.
