AbstractNixtamalization, which means cooking maize in alkaline water, is the central technique for the culinary use of maize in Mexico and Central America. Without this procedure, relying on maize as the basic starch staple is inadequate because of nutriment deficiencies. Mexico has more than 50 principal racial types of maize, and these differ in grain qualities that can require the adjustment of the nixtamalization process. Properties such as hardness and grain composition influence nixtamalization because they are related to the absorption of water that occurs during cooking and steeping. Some maize preparations, like tortillas and tostadas, can also require the adjustment of nixtamalization to obtain a high-quality foodstuff. We studied how women in three regions of the state of Chiapas, which differ in the prevalent maize race available, prepare their nixtamal and whether they make changes according to the type of food they prepare. Interviews of 30 women follow the measure of relevant variables when the women prepared nixtamal. We found that nixtamalization is adjusted for different grain hardnesses and for environmental conditions. Variations were found in the cooking time of the nixtamal, in the amount of time the nixtamal was steeped, and in a special process of double boiling of the nixtamal performed by some women for tostadas. Women that specialize in production for the market have developed variations preferred by consumers. As practiced by women in Chiapas, nixtamalization is a flexible technique that is adjusted for maize type and for food preparations.

Abstract The neotropical region ranks third in the number of termites with five different families. Of these, Termitidae is the most diverse and includes the species Nasutitermes ephratae and is common in the neotropics. To date, only one study has been published about phylogeographic issues in neotropical termites (N. corniger). Here, we aimed to investigate and analyze the population genetic patterns of N. ephratae and then evaluated the phylogeographical processes involved in the evolutionary history of the species. We used the mitochondrial genes 16S rRNA and COII as molecular markers: These were sequenced for 128 samples of N. ephratae. We estimated the genetic diversity and divergence time as well as the demographic and genetic structure analyses. We also produced ancestral area reconstruction and a haplotype network. The results showed high genetic variability, recent demographic expansion, and strong genetic structure. We also inferred a dispersal route for the species that occurred in both directions between South and Central America. The results emphasize a temporary separation between the South and Central America population that affected the origin of the current Central America populations. These were formed form different phylogeographic histories.

AbstractLarge mammal herbivores are important drivers of plant evolution and vegetation patterns, but the extent to which plant trait and ecosystem geography currently reflect the historical distribution of extinct megafauna is unknown. We address this question for South and Central America (Neotropical biogeographic realm) by compiling data on plant defence traits, climate, soil, and fire, as well as on the historical distribution of extinct megafauna and extant mammal herbivores. We show that historical mammal herbivory, especially by extinct megafauna, and soil fertility explain substantial variability in wood density, leaf size, spines and latex. We also identified three distinct regions (‘‘antiherbiomes’’), differing in plant defences, environmental conditions, and megafauna history. These patterns largely matched those observed in African ecosystems, where abundant megafauna still roams, and suggest that some ecoregions experienced savanna-to-forest shifts following megafauna extinctions. Here, we show that extinct megafauna left a significant imprint on current ecosystem biogeography.

Why do drug traffickers sometimes decide to use violence, but other times demonstrate restraint? Building on recent work on the politics of drug violence, this article explores how Central American drug trafficking organizations’ strategies impact their use of violence. I argue that three inter-related political factors—corruption, electoral competition, and the politicization of the security apparatus—collectively determine the type of relationship between traffickers and the state that will emerge. That relationship, in turn, determines the primary strategy used by traffickers in that country. Drawing on over two years of comparative ethnographic fieldwork in key transshipment points along the Caribbean coast of Central America, I show how co-optation strategies in Honduras have resulted in high levels of violence, evasion strategies in Costa Rica have produced moderate levels of violence, and collusion strategies in Nicaragua have generated the lowest levels of drug-related violence.

Garcinia intermedia (Pittier) Hammel, known as the lemon drop mangosteen in English and by a variety of names including limoncillo and toronjil in Mexico, belongs to the family Clusiaceae, and is distributed in the warm tropical regions of Mexico and Central America at elevations of 300 to 1,000 m. It is an underutilized fruit tree that reaches up to 20 m in height and produces yellow fruits with up to four seeds. The pulp is bittersweet and is highly valued by the rural population of the regions where it grows, where bats and spider monkeys also consume it. The fruit has medicinal properties; it is rich in benzophenones, which attack colon cancer cells. The fruit of G. intermedia has higher antioxidant capacity than the fruit of the mangosteen (G. mangostana Linn.); however, little is known about the horticultural management of this species, and basic knowledge, such as asexual propagation or postharvest conservation, has not been reported. There is no information on ex situ conservation of this species in Mexico and Central America, and no selection of outstanding specimens with high quality fruits has been made. Most of the information reported so far for this species is about its ecology and medicinal properties.
