Chitosan is a natural polysaccharide and emulsifier that can ensure a significant emulsion stability at suitable pH, ionic strength, composition, concentration, or thermal processing. The evaluation of the electrokinetic properties is a key factor in investigation of the stability of the nanoemulsions with a view to their potential applications in bionanotechnology. Consequently, the precise control over the physicochemical characteristics of chitosan (degree of acetylation, DA and molecular weight, Mw) can provide a high stability and specific biological properties of the developed functional structures. The chapter is focused on the interpretation of the electrokinetic response from nanoemulsion stabilized by adsorption of chitosan (as a polyelectrolyte or uncharged polymer) by using appropriate theoretical approaches.

Abstract Purpose Chitin purification from remains (pupal exuviae after metamorphosis to adult flies) of Hermetia illucens farming was optimized performing demineralization, deproteinization and bleaching under different conditions. The optimal parameters to obtain high-purity chitin were determined. Methods Dried and ground pupal exuviae, whose composition was initially determined, were demineralized using six different acids. Proteins were removed with a NaOH treatment in which temperature, molarity and duration were varied in a randomized experiment. Bleaching was carried out testing ten different chemicals, including NaOCl, H2O2, solvent mixtures and enzymes. The efficiency of each step was determined to assess the optimal conditions for each of them. The resulting chitin was subjected to spectroscopic characterization. Results The highest demineralization efficiency (90%) was achieved using 0.5 M formic acid for 2 h at 40 °C, confirming the validity of organic acids as a more sustainable alternative to inorganic acids. The treatment with 1.25 M NaOH at 90 °C for 4 h showed the highest deproteinization efficiency, removing 96% of the proteins. Temperature and NaOH concentration were the significant parameters for deproteinization efficiency. The most efficient bleaching treatment was with 6% NaOCl at 60 °C for 1 h (67% efficiency). H2O2 could also be a valid alternative to avoid environmental risk related to chlorine-containing compounds. At the end of the purification process 17% of the original biomass was retained with a chitin content of 85%, corresponding to a chitin yield of 14% related to the initial biomass. Solid-state nuclear magnetic resonance showed that the purified chitin had a degree of acetylation of 96% and X-ray powder diffraction gave a crystallinity index of 74%. Conclusion This investigation shows an optimized method for extraction of high-purity chitin from H. illucens pupal exuviae, supporting the validity of insect-farming remains as source of this versatile biopolymer. As a popular marine saccharide, chitooligosaccharides (COS) has been proven to have good antioxidant activity. Its antioxidant effect is closely related to its degree of polymerization, degree of acetylation and sequence. However, the specific structure–activity relationship remains unclear. In this study, three chitosan dimers with different sequences were obtained by the separation and enzymatic method, and the antioxidant activity of all four chitosan dimers were studied. The effect of COS sequence on its antioxidant activity was revealed for the first time. The amino group at the reducing end plays a vital role in scavenging superoxide radicals and in the reducing power of the chitosan dimer. At the same time, we found that the fully deacetylated chitosan dimer DD showed the strongest DPPH scavenging activity. When the amino groups of the chitosan dimer were acetylated, it showed better activity in scavenging hydroxyl radicals. Research on COS sequences opens up a new path for the study of COS, and is more conducive to the investigation of its mechanism.

Chitosan as a natural biopolymer has been produced to be the important host for the preparation of metallic nanoparticles (MNPs) because of its excellent characteristics like:- good stabilizing and capping ability, biocompatibility, biodegradability, eco-friendly and non-toxicity properties. Chitosan can play a very important role for synthesis of metallic nanoparticles, as chitosan is a cationic polymer. It attracts metal ions and reduces them and also Capps and stabilizes. So basically chitosan can be responsible for the controlled synthesis of metallic nanoparticle. Chitosan has a very good chelating property. This property is due to its –NH2 and –OH functional groups. Size and shape of metallic nanoparticles are much affected by chitosan concentration, molecular weight, time of reaction, degree of acetylation of chitosan, pH of the medium, method of synthesis and type of derivative of chitosan etc. Metallic nanoparticles`s properties and applications are much associated with their size and shape. Optimization of the metallic nanoparticle size and shape has been the subject of curiosity for nanotechnology scientist. Chitosan can solve this problem by applying the optimization conditions. But a very little work is reported about: - how chitosan can affect the size and shape of metallic nanoparticles and how can it reduce metal salts to prepare metallic nanoparticle, stablilized in chitosan metrics. This is very first report as a review article highlighting the effect of chitosan on synthesis of metallic nanoparticles and optimization conditions. This review will also be beneficial for scientist working on food sensing application of nanoparticles.  Various synthesis methods and applications of chitosan based metallic nanoparticles have also been reported in details.

AbstractIn the present study, a commercial chitosan soluble in acid solution and obtained from shrimp shell waste, with a molecular weight of 173 kDa and a degree of acetylation of 17%, named as chitosan (173/17), was investigated. Chitosan is a well-known biopolymer whose antimicrobial properties are highly influenced by the molecular weight, degree of acetylation as well as the preparation and derivatization methods used. Chitosan (173/17) was applied on grapevine leaves before Botrytis cinerea inoculation to verify its effectiveness as a preventive treatment against the fungal infection. The expression of a set of defense marker genes, as well as accumulation of stilbene phytoalexins, was investigated. Thanks to its fungistatic and filmogenic properties, chitosan (173/17) protected grapevine leaves against B. cinerea. Moreover, it induced grapevine defense response: three days after the treatment an induction of the jasmonic acid and ethylene-mediated response, a repression of the salicylic acid-mediated signaling, and a transient accumulation of trans-resveratrol were registered. Our data indicate that chitosan (173/17), when used in preventive application, is able to protect grapevine against B. cinerea infection. The effectiveness of chitosan (173/17) as a natural ecofriendly product for the control of B. cinerea on grapevine was demonstrated.
