Schizophyllum commune Fr., a native mushroom of Thailand, has a high nutritional value and is classified as a mushroom with medicinal properties that can neutralize the growth of many cancer cells. This research aimed to study the effect of S. commune strains and the extraction methods on the quantity and properties of β-glucan. The five S. commune Fr. strains used in this research consisted of Chanthaburi, 85-022, 85-023, 85-031, and 85- 043. There were two different β-glucan extraction methods employed: hot water (M1) and hot alkali extraction (M2), which were compared with the control (native-MR). The results indicated that the Chanthaburi strain has the highest β-glucan content 49.20±0.35% (w/w), and high potential antioxidant activity (79.14±0.77 DPPH% and 50.92±0.48 ABTS%) (p < 0.05). The extraction methods did not affect the yield of β-glucan, except the antioxidant properties and chemical structure of the extract substance. The extract substance from M2 has significantly the highest potential antioxidant activity (80.22±0.51). A mushroom juice drink in cans was developed using 1-day-old MR and adjusted pH of more than 7, which can increase the antioxidant properties of the product.

Amorphophallus bulbifer (A. bulbifer) is a promising species in Amorphophallus sp., with great potentiality of developing, low risk for cultivation and considerable commercial benefits, mainly locates in tropical and subtropical regions or near the equator. Konjac glucomannan (KGM) is the main component of Amorphophallus tuber which is a water-soluble dietary fiber. In this work, some physiochemical properties of KGM in three Amorphophallus species flour [one was A.bulbifer, the other two were current main species namely Amorphophallus rivieri (A. rivieri) and Amorphophallus albus (A. albus)] were studied and compared with each other. The KGM content in A. rivieri, A. albus and A. bulbifer flour were 85.03%, 76.28% and 88.07% (w/w), respectively. The apparent viscosity, viscosity average molecular weight, whiteness, gel-forming properties and chemical structure of KGM in the three flours were investigated by using viscometer, colorimeter, texture analyzer and Fourier transform infrared (FT-IR) spectroscopy. The results indicated that the viscosity and Mw of A. bulbifer was the largest, gel strength was almost same (p>0.05) and the molecular structure were of no differences of three KGM. It may be proposed that transplanting A. bulbifer from its native land in the tropical and subtropical regions to temperate zone in the southwest part of China would be feasible, and it would cause the revolution of Amorphophallus sp. and more considerable benefits.

Oxidative stress is a major issue in a wide number of pathologies (neurodegenerative, cardiovascular, immune diseases, and cancer). Because of this, the search for new antioxidants is an important issue. One of the potential antioxidants that has been enthusiastically discussed in the past twenty years is fullerene and its derivatives. Although in aqueous solutions fullerene derivatives have shown to be antioxidants, their properties in this regard within the cells are controversially discussed. We have studied two different water-soluble fullerene C60 and C70 derivatives on human embryonic lung fibroblasts at a wide range of concentrations. Both of them cause a decrease in cellular ROS at short times of incubation (1 hour). Their prolonged action, however, is fundamentally different: derivative GI-761 causes secondary oxidative stress whereas derivative VI-419-P3K keeps ROS levels under control values. To gain a better understanding of this effect, we assessed factors that could play a role in the response of cells to fullerene derivatives. Increased ROS production occurred due to NOX4 upregulation by GI-761. Derivative VI-419-P3K activated the transcription of antioxidant master regulator NRF2 and caused its translocation to the nucleus. This data suggests that the antioxidant effect of fullerene derivatives depends on their chemical structure.
