The purpose of this paper is to identify the progress made in research on demand factors of development of the Polish organic food market in 2004-2018, to present the strengths and weaknesses of relevant research and identify cognitive gaps in this respect. The review is restricted to Polish literature because of the particularities of the domestic organic food market which reflect its immaturity. The analysis focused on the last fifteen years (2004–2018). The papers were retrieved from the Web of Science Core Collection, Scopus, Google Scholar and BazEkon, basing on four keywords: demand for organic food; purchasing behavior of organic food consumers; availability of organic food; and organic food prices. The article presents a review of research from 107 publications. The review of research findings suggests that progress has been made in the identification of key demand factors of development of the organic food market. Some development barriers (high prices, limited availability of the product range) were not removed in the study period. The weakness of the relevant research is the insufficient use of complex statistical methods.

The past few years have seen significant demographic changes in most regions, including an increased elderly population. Subsequently, elderly citizens comprise an important market segment of consumers, with the food industry one of the most affected areas in this context. However, food market managers previously believed that elderly consumers’ needs were stereotyped in nature. The lack of focus on this sector, therefore, left elderly consumers as an untapped market, without realizing the financial independence of this segment regarding their nutrition. This research will attempt to provide the key determinant factors on elderly consumers’ behavior related to food. For that purpose, a complete literature review of more than 123 papers regarding these concepts has been carried out. Once analyzed, we highlight the common insights to give clear guidance for supermarket managers and food manufacturers to have a better knowledge of the reasons behind elderly people’s food acquisitions.

The purpose of this study is to examine the impact of attitudes on young consumers’ organic food purchasing intentions. The attitude factor in this regard is attitudes towards environment in general and towards organic food consumption behaviors in particular. The results of structural equation modeling (SEM) analysis showed that environmental attitude and environmental concern have a direct impact on organic food purchasing intentions and an indirect impact through attitudes towards organic food. In addition, perceived effectiveness of environmental behavior is also an explanatory factor of consumption intentions of organic food by young consumers. The findings suggest that managers and administrators should concentrate not only on consumers’ attitudes toward organic food but also on environmental attitudes, environmental concern, perceived effectiveness of environmental behavior in order to promote organic food consumption by young consumers.

Due to the influence of COVID-19, people pay more attention to the balance between human and nature and pursue more healthy, environmental and nutritional sustainable products (such as organic food). However, the mainstream consumption of organic food is far less, especially in developing countries like China. Therefore, it is urgent to take effective measures to promote the development of China's organic food market. This current study investigated the relationships between consumers' similarity (i.e., information anxiety, uncertainty, and sustainable consumption attitude), perceived values (i.e., functional value, health value, and environmental value) and organic purchasing behavior based on the Stimulus-Organism-Response (S-O-R) theoretical model and information similarity effect. And considering gender differences in consumers' similarity, perceived values and organic purchasing behavior. Meanwhile, the mediating effects of perceived values on the relationship between consumers' similarity and purchasing behavior were also discussed, considering the background of COVID-19. Data were collected using structured questionnaire survey in first-tier cities in China. A total of 344 consumers of organic foods participated in the study. Structural equation modeling was employed for data analysis. The results indicated the significant association of information anxiety, uncertainty and sustainable consumption attitude with perceived values. And perceived values and sustainable consumption attitude had a positively significant influence on purchase behavior. In addition, environmental value played mediating effects in the relationships between organic purchasing behavior and information anxiety, uncertainty and sustainable consumption attitude. And the impact of sustainable consumption attitude and environmental value on organic purchasing behavior differed in gender. The research not only provides novel insights for understanding organic consumption, but also provides reference for organic sellers to develop sales strategies and policy makers to formulate policies to guide organic consumption, which are conducive to promoting China's organic food industry.

This research study focuses on factors which can affect purchasing behaviour of young customers with regard to organic food. Results from this study show that attitudes, perceived behavioral control, perceived consumer effectiveness and concern for self-image positively impact purchasing behaviour of highly environmental concern consumers. With respect to slightly environmental concern consumers their puchasing behaviour is not exposed to attitudes, perceived behavioral control, perceived consumer effectiveness and concern for self-image. Subjective norms positively affect consumer behaviour, regardless of whether the consumer is highly environmental concern or not. However, the effect of subjective norms on purchasing behaviour of low environmental concern consumers is greater than that of consumers with high environmental concern.
