Background : flavor enhancing food additives are often added as a flavor enhancer known as MSG that exceed the dose . if the addition of the additive is often done to cause dependence , so it will pose a health hazard to the consumer , such as stomach disorders, allergies , hypertension , asthma , cancer , diabetes , and lower intelligence. Most housewives do not know the information would adversely affect health. Objective : This study aims to describe the level of knowledge of the use of monosodium glutamate ( MSG ) housewife in backwoods village sauleya timbuseng Polongbangkeng northern districts Kab.Takalar. Methods : This is a descriptive study. samples are all housewives in the hamlet village sauleya timbuseng Polongbangkeng northern districts Kab. Takalar , who meet the criteria as much as 49 people . Data on the use MSG knowledge samples obtained by the interview method which uses a questionnaire instrument.the data presented in the from of frequency distribution graphic and narrative. Result : Results of research on the use of knowledge MSG housewives generally less category as many as 25 ( 51.0 % ) , use of MSG housewives generally can not be tolerated as many as 36 ( 73.5 % ). Conclusion : Knowledge of the use of MSG housewife classified as less and use MSG can not be tolerated.

Spreads are used widely for making the fast foods more amazing and tasty. Varieties and cross combinations of ingredients are used to make many flavours of fast foods. Different restaurants prepare their signature spreads for attracting people but this can cause opposite result if not prepared using high quality raw materials and proper hygienic conditions are not maintained. Current study was conducted on ten different types of spreads (pesto, cilantro, queso, tomato sauce, peanut butter, honey, mustard, cream cheese, chocolate sauce and butter) which are used by the local restaurants in Dhaka city, Bangladesh. Almost all the samples (nine out of ten) harbored total viable bacteria exceeding the standard limit. Four spread samples showed high fungal count (102 cfu/gm). Four samples showed to be positive (˃101/ml recommended acceptable count) for Escherichia coli and Klebsiella spp. which indicates that these spread cannot be recommended for public consumption. Among all the samples examined, only chocolate sauce showed acceptable result without the presence of coliforms, Staphylococcus spp. and Pseudomonas spp. This finding suggests proper maintenance of sanitation in spread preparation and selling area. A proper guidelines and monitoring can help keep up the quality of food additives. Stamford Journal of Microbiology, Vol.10 (1) 2020: 16-19

Liver disease or liver cancer is the sixth most common cancer and the third leading cause of cancer mortality in the world. Hepatitis viral infection, food additives, alcohol, fungal toxins (aflatoxins), toxic industrial chemicals, air and water pollutants are the major risk factors of liver cancer. Moreover, due to high tolerance of liver, HCC is seldom detected at an early stage and once detected treatment faces a poor prognosis in most cases.Fumaria indica possesses hepatoprotective activity as evidenced by the significant and dose dependent restoring the activities of entire liver cancer marker enzymes, diminution in tumor incidence, decrease in lipid peroxidation (LPO) and increase in the level of antioxidant enzymes (GSH, CAT, SOD, GPx and GST) through scavenging of free radicals, or by enhancing the activity of antioxidant, which then detoxify free radicals. These factors protect cells from ROS damage in NDEA and CCl4-induced hepatocarcinogenesis. Histopathological observations of liver tissues too correlated with the biochemical observations. Thus, present investigation suggested that the Fumaria indica would exert a chemoprotective effect by reversing the oxidant-antioxidant imbalance during hepatocarcinogenesis induced by NDEA and CCl4. Besides Fumaria indicais very much effective in preventing NDEA-induced multistage hepatocarcinogenesis possibly through antioxidant and antigenotoxic nature, which was confirmed by various liver injury and biochemical tumour markers enzymes. The hepatoprotective activity of a Fumaria indicaof 50 % ethanolic extract was studied using rats. The animals received a single intraperitoneal injection of N-nitrosodiethylamine 200mg/kg body wt followed by subcutaneous injection of CCl4 in a dose of 3 ml/kg body wt. Fumaria indica extract dose dependently and significantly the increase in serum hepatic enzyme levels after NDEAand CCl4 treatment compared to the toxin control group. The results of this study confirmed the antioxidant and hepatoprotective activity of the Fumaria indicaextract against carbon tetrachlorideand N-nitrosodiethylamine induced hepatotoxicity in rats. In addition to this, studies on molecular aspect of hepatoprotective therapy will give mechanistic information in hepatoprotective therapy and also critical balance should be there between the animal model and clinical research. The hepatoprotective properties of Fumaria indicashould provide useful information in the possible application in hepatic liver disease.

Изучена целесообразность использования в рационах телят черно-пестрой породы комплексной минерально-витаминной кормовой добавки (КМВКД). Установлено пониженное содержание в кормах таких элементов, как кальций, фосфор, магний, сера, марганец, медь, цинк и кобальт. Соотношение питательных и минеральных веществ, степень их доступности для усвоения организмом не обеспечивают их потребность. Использование КМВКД способствовало улучшению всех гематологических показателей. Все испытываемые рецепты, имеющие в своем составе разные варианты макро-, микроэлементов и витаминов положительно влияют на обменные про- цессы в организме животных. У молодняка опытной группы, получавшей подкормку по рецепту 1, количество эритроцитов в сравнении с животными контрольной группы увеличилось на 6,6, гемоглобина на 6,93 соответственно, по рецепту 2 11,05 и 11,39 по рецепту 3 16,75 и 15,27, то есть соотношение макро- и микроэлементов, имеющихся в составе КМВКД и взаимодействие между собой меди, железа и кобальта сыграли особую роль на концентрацию форменных элементов. У молодняка, получавшего подкормку по рецепту 1 количество общего белка в сравнении с животными контрольной группы увеличилось на 1,99, кальция на 16,02, каротина на 10,92 соответственно, по рецепту 2 4,91, 25,96 и 19,12 по рецепту 3 на 3,58, 27,07 и 20,21. Значительное повышение содержания белка, кальция, фосфора и каротина по сравнению с животными контрольной группы объясняется тем, что недостаток их в рационах восполнялся за счет используемой подкормки, в результате их содержание увеличилось в сыворотке, но не выходило за пределы нормативных данных и соответствовало физиологическим нормам.Practicability of using a complex mineral and vitamin feed additive (CMVFA) in the ration of black-and-white calf breed was studied. Decreased content of such elements as calcium, phosphorus, magnesium, sulfur, manganese, copper, zinc, and cobalt was registered. The correlation of nutritive and mineral substances, and the level of their availability for digestion did not provide for their need. CMVFA use facilitated the increase of all hematologic parameters. Tested recipes which had different content of sapropel and zeolite, as well as various types of macronutrients, microelements, and vitamins, positively influenced the digestive processes in animal bodies. Young stock from the test group that was receiving food additives according to recipe No. 1 showed 6.6 increase in the quantity of red blood cells compared to control group animals, and 6.93 increase in hemoglobin quantity the ones who were fed according to recipe No. 2 demonstrated the increase by 11.05 and 11.39 recipe No. 3 showed 16.75 and 15.27 increase, which means that the ratio of macronutrients and microelements present in CMVFA and the mutual interaction of copper, iron, and cobalt played a special role in the concentration of formed elements due to the fact that they are integral elements of blood. Total protein of young stock that was receiving food additives according to recipe No. 1 was 1.99 higher than in test group animals calcium 16.02 higher carotene 10.92 as for recipe No. 2 the values were increased by 4.91, 25.96, and 19.12 recipe No. 3 3.58, 27.07, and 20.21. Substantial increase in the content of protein, calcium, phosphorus, and carotene compared to control group animals can be explained by the fact that their insufficiency in animal feed was replenished due to the use of feed additives, and as a result their content increased in the serum but did not go beyond the norm and corresponded to physiological norms.

Food and Agricultural Organization as a “sweeteners” consider products used for sweetening derived from sugar crops, cereals, fruits or milk, or that are produced by insects. Sweeteners, as an additive, have important role for technological functions of food, especially in providing texture, bulk and color, and also as preservative agents. Regardless the numerous sweeteners, alternative sweeteners to sucrose are in main focus for implementation in food industry. Nowadays Food and Agricultural Organization and World Health Organization Food standards, Codex Alimentarius Commission (2018) accepted list of 27 food additives that have the functional class “sweetener”. Nowadays, alternative sweeteners and their application in food technology are in main focus of scientist. Stevia plant stands for one of the most important natural intense sweetener, since stevia glycosides are almost 400 times sweeter than sucrose. Extracts of stevia represents a powerful tool for reducing sugars in food and beverages, which can be acceptable substitutes to full sugar versions of this products. Regarding the data of Euromonitor international, new food products containing stevia grew 10% from 2016 to 2017. The biggest increment in stevia use was noticed in categories of snacks, juice drinks, dairy, carbonated soft drinks and confectionery. Barriocanal et al. (2008) highlighted that safety studies reported no negative side effects of stevia use. Can be expected that in recent future use of S. rebaudiana as sweetener would be extended to almost all the world’s countries, regarding all discovered beneficial health effects.
