Food waste is a tough and profound question in the world. Although the development of agricultural technology has effectively promoted the increase of vegetable and fruit production, one-third of global vegetable and fruit production are still wasted. This issue is caused not only by food overproduction or overstock, but also by customers’ requirements for fresh products. This paper aims to thoroughly explore the reasons for food waste and provide some solutions to solve this problem, especially from the “Agri-fresh produce supply chain management” perspective. Solutions include improving the cold-chain logistics system and intelligent methods. To clearly analyze reasons for food wastey, this paper interprets the issue from three dimensions (customer, food supply chain, and farm) and then explores solutions.

Reducing food waste in the entire food supply chain is one of the key challenges to further development of the world. In developed countries the highest food wastage is observed in the final stages of the chain, mainly at the consumption stage. The aim of this study was to compare different aspects of food wastage in households of selected consumer groups i.e. students of life sciences universities in Poland and Sweden. Own questionnaire studies were conducted in the years 2014 and 2015 on a sample of 234 consumers: 132 Polish and 102 Swedish ones. Polish students more often declared behaviours proving or leading to irrational management of food. Respondents from Sweden behaved more rationally when it comes to using food surpluses and less often declared the majority of the causes of food wastage. The results indicate the necessity to publicize the issue of food waste, especially undertaking actions aiming at its reduction in the consumption processes in the households.

Aiming at the problem of high cost in cold chain logistics of fresh products home-delivery in supermarket chain in the new retail era, the paper constructs the model of Location Inventory Routing Problem (LIRP) optimization in Satellite Warehouse mode in view of customer satisfaction with the broken line soft time windows. The model minimizes the total cost of the cold chain logistics system of supermarket chain through the location allocation, inventory optimization, the determination of distribution service relationship between Satellite Warehouse and customer, and the constraint of time penalty cost. Then, the paper designed an improved ant colony optimization to solve the LIRP model of supermarket chain. Finally, the simulation in MATLAB verifies and analyzes the validity of the model and algorithm. Therefore, LIRP optimization model in Satellite Warehouse mode can effectively improve the operational efficiency of fresh products home-delivery in the supermarket chain and thus reduce the logistics cost.

SummaryThe goal of this paper is to assess the current trends in research on food waste management innovations in social sciences and mapping them. To achieve this, 107 articles were extracted from the Web of Science database with the keywords food waste and innovations/technologies. Then, we grouped them in accordance with part of supply chain they concern and type of innovation they propose. We identified that the majority of the innovations concern the final stages of the food supply chain. It makes them more suitable for developed countries, where the wastage is the greatest in this phase of production. It also indicates a research gap in waste-reduction technologies in the initial stages of the food supply chain. Improvements in this field may be particularly beneficial from the food security point of view, because countries suffering from food shortages waste most of their supplies in the early stages of production.

Mainly in developing countries, food loss and waste is a problem that is difficult to measure. Investigations have been conducted in industrialized countries; however, consistent evidence of how much is really being depleted is limited. The accessible data give the illusion of evidence, but are supported by very restricted facts. In recent years, food waste and loss have gained importance because more than 35% of food is wasted. Nevertheless, with this percentage of food, most of the 800 million people that go hungry every day in the world could be fed. This reflection paper aims to describe the different approaches and meanings of food waste, food loss and food wastage. Similarly, this article identifies the phases of the food supply chain where food is being lost and wasted. Based on the available data, developed and developing countries are compared. It was concluded that, in developed countries, the most important losses are in the consumption phase; in developing countries, the losses take place in the growing and harvesting phase. Changing consumption habits as well as the improvement of cropping and harvesting processes could be an option for reducing this problem, especially in developing countries.

This chapter proposes sustainable supply chains in agrifoods, achieved through logistical strategies to minimize food waste and losses. Proposals will recover organic and inorganic waste and reincorporate it into the supply chain or add it to new chains through new products generated from food waste. A literature review is presented regarding the causes of food losses and waste within the supply chain and the strategic opportunities in the logistical process to reduce such losses. The creation of models that include the three dimensions of sustainability in food logistics is required in order to achieve a reduction in waste and food losses in transport, as well as to minimize costs and environmental impacts. If a correct sustainable logistics is carried out, it would favor the reincorporation of waste into new supply chains.

In recent years, the problem of food waste has attracted considerable interest from food producers, processors, retailers, and consumers alike. Food waste is considered not only a sustainability problem related to food security, but also an economic problem since it directly impacts the profitability of the whole food supply chain. In developed countries, consumers are one of the main contributors to food waste and ultimately pay for all wastes produced throughout the food supply chain. To secure food and reduce food waste, it is essential to have a comprehensive understanding of the various sources of food wastes throughout the food supply chain. The present review examines various reports currently in the literature and quantifies waste levels and examines the trends in wastage for various food sectors such as fruit and vegetable, fisheries, meat and poultry, grain, milk, and dairy. Factors contributing to food waste, effective cost/benefit food waste utilisation methods, sustainability and environment considerations, and public acceptance are identified as hurdles in preventing large-scale food waste processing. Thus, we highlight the need for further research to identify and report food waste so that government regulators and food supply chain stakeholders can actively develop effective waste utilisation practices.

Food supply chain management is becoming a critical management and public policy agenda. Climate change, growing demand, and shifting patterns of food production, delivery, and consumption have elicited a series of new challenges, such as food security, safety, and system resiliency. This chapter first introduces the typical players in a food supply chain and examines the global food system characterized by consolidation and industrialization. It then discusses some critical topics of the sustainable food supply chain that aim to address these challenges. These topics include traceability, transparency, certification and standards, and alternatives to industrialized food systems, including cooperatives, community-supported agriculture, and roles of small and medium-sized growers in regenerative agriculture. The chapter ends with a discussion of several important emerging logistics management topics, including last-mile delivery, new technology, and cold chain management.

Purpose This paper aims to investigate the impact of three critical dimensions of supply chain resilience, supply chain preparedness, supply chain alertness and supply chain agility, all aimed at increasing a firm’s financial outcomes. In a turbulent environment, firms require resilience in their supply chains to prepare for potential changes, detect changes and respond to actual changes, thus providing superior value. Design/methodology/approach Using survey data from 77 firms, this study develops scales for preparedness, alertness and agility. It then tests their hypothesized relationships with a firm’s financial performance. Findings The results reveal that the three dimensions of supply chain resilience (i.e. preparedness, alertness and agility) significantly impact a firm’s financial performance. It is also found that supply chain preparedness, as a proactive resilience capability, has a greater influence on a firm’s financial performance than the reactive capabilities including alertness and agility, suggesting that firms should pay more attention to proactive approaches for building supply chain resilience. Originality/value First, this study develops a comparatively comprehensive definition for supply chain resilience and explores its dimensionality. Second, this study provides empirically validated instruments for the dimensions of supply chain resilience. Third, this study is one of the first to provide empirical evidence for direct impact of supply chain resilience dimensions on a firm’s financial performance.

Purpose This paper aims to review the healthcare supply chain (HSC) literature along various areas and to find out the gap in it. Design/methodology/approach In total, 143 research papers were reviewed during 1996-2017. A critical review was carried out in various dimensions such as research methodologies/data collection method (empirical, case study and literature review) and inquiry mode of research methodology (qualitative, quantitative and mixed), country-specific, targeted area, research aim and year of publication. Findings Supply chain (SC) operations, performance measurement, inventory management, lean and agile operation, and use of information technology were well studied and analyzed, however, employee and customer training, tracking and visibility of medicines, cold chain management, human resource practices, risk management and waste management are felt to be important areas but not much attention were made in this direction. Research limitations/implications Mainly drug and vaccine SC were considered in current study of HSC while SC along healthcare equipment and machine, hospitality and drug manufacturing related papers were excluded in this study. Practical implications This literature review has recognized and analyzed various issues relevant to HSC and shows the direction for future research to develop an efficient and effective HSC. Originality/value The insight of various aspects of HSC was explored in general for better and deeper understanding of it for designing of an efficient and competent HSC. The outcomes of the study may form a basis to decide direction of future research.
