Carcass beef yield as a basis for carcass evaluation and marketing

The carcass yield of prescribed proportions of muscle and dissectible fat, described as 'carcass beef ', was studied in 49 steers of four breeds. Carcass beef consisting of 80% muscle, 20% fat and also of 75% muscle, 25% fat was predicted from fat thickness (FT), liveweight, carcass weight and dressing percentage. Carcass beef as a percentage of carcass weight was usefully estimated from FT (± 3%) but not from the other parameters. Carcass beef percentages and the corresponding FT measurements up to 15 mm were tabulated for the four breeds. There was no significant difference between the Herefords, Angus and Charolais X. Yield was less in the Friesians at a common FT, but a smaller FT was required to obtain a yield from carcasses of that breed. Carcass beef as a percentage of carcass weight, where the carcass beef composition is of specified proportions of muscle and dissectible fat, is proposed as a basis for the evaluation and marketing of carcasses.

The experiment was conducted to evaluate the effect of dried bloodrumen content mixture (DBRCM) on carcass characteristics of broiler chicks to replace soybean meal (SBM). A total of 225 unsexed day old broiler chicks (SASSO C44) were randomly distributed to five dietary treatment groups in a completely randomized design. Each treatment was replicated thrice with 15 birds per replicate. The experimental diets were formulated to contain 100%SBM+0%DBRCM (T1), 80%SBM+20% DBRCM (T2),60%SBM+ 40% DBRCM (T3), 40%SBM+60% DBRCM(T4) and 20%SBM+80% DBRCM (T5) in 56 days of age. At the end of the experiment, two male and two female birds per replicate were used to determine carcass characteristics. The result revealed that the edible carcass yield ranged from 977.9-1159.3g. The dressing percentage based on the edible carcass weight was 63.9 % (T1), 66.6 % (T2), 65.4 (T3), 64.2% (T4) and 63.1% (T5). There was no a significant difference (P>0.05) in both edible carcass yield and its dressing percentage. The commercial carcass weight was 937.4g (T1), 984.7g (T2), 962.0g (T3), 925.0g (T4) and 833.1g (T5) and the dressing percentage was 54.9%, 56.6%, 55.3%, 53.7% and 53.7% for T1, T2, T3, T4 and T5, respectively. Significant difference (P>0.05) was not observed in commercial carcass yield and its dressing percentage among the treatment groups. There was no a statistical marked difference (P>0.05) in total nonedible offal and edible offal. Females had more (P<0.05) breast meat than that of males. The abdominal fat and abdominal fat percentage were not significantly influenced (P>0.05) by a diet containing DBRCM. However, abdominal fat and its fat percentage were higher (P<0.05) in females than males. Based on this result, it could be concluded that DBRCM can replace soybean meal up to 80% substitution level without any adverse effect on carcass characteristics.

Crossbreeding in dairy cattle has been used to improve functional traits, milk composition, and efficiency of Holstein herds. The objective of the study was to compare indicators of the metabolic energy balance, nonesterified fatty acids (NEFA), beta-hydroxybutyrate (BHBA), glucose, body condition score (BCS) back fat thickness (BFT), as well as milk yield and milk composition of Holstein and Simmental cows, and their crosses from the prepartum period until the 100th day of lactation at the Livestock Center of the Ludwig Maximilians University (Munich, Germany). In total, 164 cows formed five genetic groups according to their theoretic proportion of Holstein and Simmental genes as follows: Holstein (100% Holstein; n = 9), R1-Hol (51–99% Holstein; n = 30), first generation (F1) crossbreds (50% Holstein, 50% Simmental; n = 17), R1-Sim (1–49% Holstein; n = 81) and Simmental (100% Simmental; n = 27). The study took place between April 2018 and August 2019. BCS, BFT blood parameters, such as BHBA, glucose, and NEFA were recorded weekly. A mixed model analysis with fixed effects breed, week (relative to calving), the interaction of breed and week, parity, calving year, calving season, milking season, and the repeated measure effect of cow was used. BCS increased with the Simmental proportion. All genetic groups lost BCS and BFT after calving. Simmental cows showed lower NEFA values. BHBA and glucose did not differ among genetic groups, but they differed depending on the week relative to calving. Simmental and R1-Sim cows showed a smaller effect than the other genetic groups regarding changes in body weight, BCS, or back fat thickness after a period of a negative energy balance after calving. There was no significant difference for milk yield among genetic groups, although Simmental cows showed a lower milk yield after the third week after calving. Generally, Simmental and R1-Simmental cows seemed to deal better with a negative energy balance after calving than purebred Holstein and the other crossbred lines. Based on a positive heterosis effect of 10.06% for energy corrected milk (ECM), the F1, however, was the most efficient crossbred line.

Charolais sires were mated to Jersey dams and the progeny compared with Friesians for vealer (33 weeks) and steer (90 weeks) beef production. Nurse cows double-suckled one vealer of each breed. No significant difference in growth to slaughter between the Charolais x Jersey (C x J) and Friesian (0.79, 0.70 kg day-1 respectively) was recorded. The C x J vealers produced a significantly heavier carcase. Neither breed had sufficient fat cover (< 0.3 mm) for vealer production. No breed difference existed in the edible meat and fat proportions but the Friesian carcase had a larger percentage of bone. C x J had a significantly greater proportion of hindquarter in the carcase than the Friesian but no breed difference was recorded for either high or low priced cuts. Plunketting showed no difference in milk intake between breeds, but 24-hourly observations revealed that the C x J animals were usually the first to arrive at and last to leave the suckled cow. Steers double-suckled to weaning (1 2 weeks) and then run together until slaughtering gained 0.56 kg animal-1 day-1. There was no breed difference in carcase weights but the C x J had a significantly higher dressing percentage (53.1 vs. 50.5) and 25.3 per cent greater area of eye muscle. Again, fat thickness of the C x J (2.1 mm) and Friesian (1.8 mm) was far below the optimum (7-10 mm) required for the local market.

Abstract This research was conducted to examine the effect of slaughter age and sex class to carcass characteristic from Red Brahman Crossbred Cattle. The research materials were 126 heads (grouped by slaughter age (<1,5 years, 2-2,5 years, and 3 years) and sex class (bull and steer)) with taken from KASA Company, rested for 12-24 hours, and slaughtered in AM FARM abattoir with halal MUI slaughter methods. The research method was used field experiment. The data of research were analysis by using Complete Randomized Factorial Design (2X3) and Duncan Multiple Range Test if there were differences. Parameters of carcass characteristic were slaughter weight, hot carcass weight, dressing percentage, carcass components percentage (meat, bone, fat), MBR, MFR, rib eyes area, and 12th fat thickness of ribs. The results of this research showed that slaughter age and sex class has significantly (P<0,05) affect to slaughter weight and hot carcass weight. Interactions of slaughter age and sex class has significantly (P<0,05) affect dressing percentage, bone and meat percentage, MBR and MFR, and has not significant (P>0,05) rib eyes area and fat thickness. From these results, it can be concluded that slaughter age and sex class affect carcass characteristics of Red Brahman Crossbred Cattle.

The aim of our study was to assess the dynamics of the characteristics in pig carcasses as affected by the season and year of slaughter. A total of 106 027 carcasses of growing-finishing pigs of commercial production, slaughtered in the same abattoir in 2014 and 2015 were included in the study. The carcasses were classified using UltraFOM 200 device, as the characteristics controlled were back-fat thickness at two locations and the depth of m. Longissimus dorsi. These measurements were used to further determine the lean meat percentage. The results of the study showed significant differences in the dynamics of changes of carcass characteristics during the seasons and the years. The highest lean meat percentage was found in summer (56.48%), followed by spring (56.34%), autumn (56.29%) and winter (56.10%). On the other hand, the pigs slaughtered in winter displayed highest carcass weight and back-fat thickness at both locations.

Objective and subjective tests for quality were performed on the meat from 40 cryptorchid second-cross lambs fed lucerne only (L; n = 8), lucerne plus an oat grain supplement ad libitum (LO; n = lo), lucerne plus wilted lucerne silage ad libitum (LS; n = 11), or an oat-lupin grain (3:1) supplement at 90% of ad libitum while grazing dry summer annual pasture (OL; n = 11). All carcasses complied with the Elite lamb specification of weight >22 kg and GR measurement 6-15 mm. There was no significant difference between groups for hot carcass weight, the mean (� s.e) values being 25.1 0.43, 25.2 � 0.36,25.2 � 0.38, and 25.3 � 0.36 kg for L, LS, LO, and OL groups, respectively. When the GR and fat depth over the eye muscle at the 12th rib were adjusted to a common carcass weight of 25.2 kg there was no significant difference between groups. There was no significant difference between groups for pH, or the colour values a*, b*, and L* of the M. longissimus thoracis et lumborum (a* is relative redness, b* relative yellowness, and L* relative lightness). The shear force values for the loin muscle were significantly (P<0.05) greater for lambs from group OL than for those from group LO. Cooking loss for the loin muscle was significantly (P<0.05) greater for OL lambs than all other groups. A comparison of the mean values for aroma and flavour showed the lambs from group OL produced meat that was considered significantly (P<0.05) less desirable for these characteristics, with other groups being similar. Meat from OL-fed lambs was considered oilier and less meaty than meat from lambs fed the other diets. There was a significant (P<0.05) difference in absolute scores between panellists, but their ranking was not affected and there was no panellist x sample interaction. Because many producers use grain supplements such as oats and lupins for finishing lambs on dry forages, further study is recommended that focuses on the interaction between supplement and the base forage.

The growth and carcass characteristics of first-cross Border Leicester x Merino ram, cryptorchid and wether lambs were compared over a range of slaughter weights (35-55 kg). Lambs were offered feed ad libitum after weaning. The growth rate of wether lambs (221 g/day) was less (P< 0.01) than that of rams and cryptorchids (308 and 280 g/day respectively, P = 0.076). The dressed carcasses of the wether lambs were approximately 2 percentage units heavier than those of the ram and cryptorchids, but this difference was partly due to the weight of the testes. Across all sex groups, dressing percentage increased by 0.46 percentage units per kg increase in carcass weight. The carcasses of rams and cryptorchid lambs tended to be leaner than those of wethers. Fat score distributions, based on export standards, were such that wethers scored higher (fatter) than rams and cryptorchids (P< 0.05). There was a significant sexx carcass weight interaction with GR tissue depths. Above 17 kg carcass weight, tissue depth of wether lambs was greater than those of the other sex types. Of 12 families assessing consumer acceptability (taste, smell, size, fatness and tenderness) of leg roasts, the majority showed no preference for any of the sexes.

This study aimed to characterise progeny of sires representing major families in the Poll Nellore breed. Fourteen Poll Nellore sires, two Angus sires and one Brahman sire were mated by AI to ~400 multiparous Poll Nellore dams. Calves were raised and stocked on pasture in central Brazil until reaching ~18 months of age, then fed a sugarcane bagasse-based diet on an ad libitum basis until reaching market weight and finish (average 23 months). There were 236 Poll Nellore (N), 38 Angus × Poll Nellore (AN) and 31 Brahman × Poll Nellore (BN) calves born in total. The weaning and 423-day weight weights, and growth rates and pre- and post-weaning were greater (P < 0.05) in males than in female calves, and were influenced by breed and by sire within the N animals. The weaning weights were higher (P < 0.05) in AN and BN than in N calves. The 423-day weight weights were greater (P < 0.05) in AN calves, followed by BN, with straightbred N being lightest. Feedlot average daily gain was unaffected (P > 0.05) by sex or by sire within N, but was lowest (P < 0.05) in N cattle, and highest in AN and BN animals, which did not differ (P > 0.05). Heifers reached the end of the study with lower bodyweight (BW) and dressing percentage than steers, resulting in lower carcass weights, smaller longissimus muscle areas (LMA), but greater 12th to 13th rib backfat (BF) and similar marbling score and mean shear force. However, the proportion of carcasses grading Choice or Prime was numerically greater in heifers than in steers (23.6% vs 9.8%). AN cattle reached greater harvest weights than BN, and those were heavier than N cattle (P < 0.001). However, dressing percentages were lowest in AN animals, so that there was no significant difference in carcass weight between AN and BN cattle. AN carcasses also had greater LMA, BF and marbling scores than the N carcasses. The proportion of carcasses grading Choice or Prime was numerically greater in AN cattle than in the BN and N groups (25.9%, 11.8% and 15.9%, respectively). Steaks from AN calves were more tender than N steaks, with the BN steaks being intermediate. There was significant variation among N sires for final BW, dressing percentage, carcass weight, LMA and marbling score, but not for BF or mean shear force. The percentages of carcasses of N cattle grading Choice or Prime ranged from 0% to 61.5%. Three N sires produced progeny with greater than 40% of carcasses grading Choice or above (Berílio OB, Furador OB, and Litoral OB). Likewise, three N sires (Blitz OB, Furador OB and Sossego OB) had progeny with 67%, 62% and 75%, respectively, of steaks classified as tender. This study confirmed that Zebu cattle have inferior carcass and meat quality relative to AN crossbreds under tropical conditions, however there is substantial variation within the N breed for these traits, and several sires have a proportion of their progeny comparable in terms of meat tenderness to those of Angus sires.

The objective of this study was to evaluate the effect of crude protein substitution of soybean meal with urea (slow-release or otherwise) on the carcass and the meat characteristics of finished steers in confinement. Twenty-seven castrated, purebred and Charolais-Nelore crossbred steers with a mean age of 20 ± 1,5 months and initial mean live weight of 293 ± 31 kg, were distributed in three treatments: Protected Urea (concentrate containing slow degradation urea ); Soybean meal (concentrate containing soybean meal) and Urea Common (concentrate containing common urea). A randomized block experimental design (racial predominance) was used, with three treatments and nine replications, with the animal as the experimental unit. Feeding treatments did not influence the hot and cold carcass weight and yield. The fat thickness that covered the carcass was not altered, according to the diets studied, being on average 3.97 ± 0.94 mm. The measurements and the carcass compactness were not altered by the diets, presenting average values of 127.55; 74.86; 39.86; 38.84 and 25.72 cm for carcass length, leg and arm, arm perimeter and cushion thickness, respectively. A significant difference was observed in marbling, and the meat of the animals treated with soybean meal were higher than those treated with protected urea (3.72 vs 2.28 points).

This paper aimed to identify and evaluate the effects of sire breed on temperament and productive traits of different cross-breeds between Nellore (NE), Tabapua (TB), and Brahman (BR) bulls mated with Angus cows (AN), as well as the relationship between temperament and productive traits. The productive traits measured in this study include slaughter weight and post weaning weight gain. Temperament was assessed by flight-speed (FS). Carcass data collected in this study include hot carcass weight, hot carcass percentage, cold dressing percentage, carcass length, initial pH, ultimate pH, subcutaneous fat thickness and carcass longissimus muscle area. The sire breed effect was greater for slaughter weight. Hot carcass weight was not affected by the sire breed. The longissimus muscle area was larger for AN x TB and AN x NE crossbreeds than for AN x BR crossbreeds. Subcutaneous fat thickness and cold dressing percentage were not affected by sire breed. The offspring of NE, TB, and BR sires mated with AN cows had similar carcass measurements, except for the longissimus muscle area, which was smaller for offspring sired by the Brahman breed. The temperament trait was not influenced by sire breed.
