Mie merupakan suatu jenis makanan hasil olahan tepung yang sudah dikenal dan digemari oleh sebagian besar masyarakat Indonesia. Rumput laut K. alvarezii merupakan rumput laut penghasil karaginan (karigenofit)danG. verrucosa merupakan rumput laut penghasil agar (agarofit).Penelitian ini bertujuan untuk mengetahui pengaruh untuk mengetahui pengaruh penambahan rumput laut terhadap karakteristik sifat fisik mie (gel strength) dan penerimaannya dalam masyarakat, meliputi kesukaan terhadap tekstur, rasa, aroma, warna, dan kenampakan mie.Penelitian dilakukan secara eksperimental menggunakan rancangan acak lengkap (RAL) dengan 7 perlakuan dan 4 ulangan dengan perbedaan konsentrasi penambahan rumput laut segar yakni: Kontrol (karagenan + terpung terigu), A (K.alvarezii + karagenan + terpung terigu),B (G.verrucosa + karagenan + tepung terigu). Kemudian dilakukan uji organoleptik yang meliputi tekstur, warna, rasa dan aroma produk mie. Hasil penelitian menunjukkan bahwa uji organoleptik terhadap tekstur mie yang paling disukai yaitu pada perlakuan A2 (4,30), dan yang tidak disukai yaitu padaperlakuan B3 (3,27). Rasa yang paling disukai yaitu perakuan A2 (3,74) dan yangtidak disukai pada perlakuan B3 (2,64). Aroma yang paling disukai yaitu pada perlakuan A3 (3,63) dan yang tidak disukai yaitu pada perlakuan B1 (2,71). Warna yang paling disukai yaitu pada perlakuan B3 (3,67) dan yang tidak disukai yaitu perlakuan A2 (3,53). Kenampakan yang paling disukai yaitu pada mie dengan perlakuan A3(3,80) dan yang tidak disukai yaitu pada perlakuan B3 (3,54 Hasil dari ANOVA gel strength menunjukkan bahwa penambahan rumput laut berpengaruh nyata terhadap sifat fisik mie P<0.05). Noodle is a type of processed food that is well-known and favored by most Indonesian people. K. alvarezii seaweed is a carrageenan-producer seaweed (carregenophyte) and G. verrucosa is agar-producer seaweed (agarophyte). This study aims to determine the effect of the addition of seaweed to the characteristics of the physical properties of noodles (gel strength) and its acceptance in community, including preference for texture, taste, scent, color, and appearance of noodles. The research was conducted experimentally using a completely randomized design (CRD) with 7 treatments and 4 replications with different concentrations of fresh seaweed addition namely: Control (carrageenan + wheat flour) , A (K. alvarezii + carrageenan + wheat flour), B (G.verrucosa + carrageenan + wheat flour). Then the organoleptic test was performed which included the texture, color, taste and aroma of the noodle product. The results showed that the most preferred organoleptic test on the texture of noodles was in the treatment A2 (4.30), and the one that was disliked was the B3 treatment (3.27). The most preferred flavor is rooting A2 (3.74) and which is not preferred in B3 treatment (2.64). The most preferred scent was in treatment A3 (3.63) and the one that was disliked was in treatment B1 (2.71). The most preferred color is the B3 treatment (3.67) and the least preferred one is the A2 treatment (3.53). The most preferred appearance was noodles with A3 treatment (3.80) and the undesirable one was on B3 treatment (3.54 results from ANOVA gel strength showed that the addition of seaweed significantly affected the physical properties of noodles P <0.05).

PurposeThis study aims to investigate the effects of incorporating seaweed composite flour on soft roll dough rheological characteristics and quality.Design/methodology/approachIn this study, wheat flour was substituted with seaweed powder obtained from red seaweed (Kappaphycus alvarezii) at varying proportions (100:0; 99:1; 98:2; 97:3; 96:4; 95:5, 94:6, 93:7 and 92:8) and applied in soft roll production. The effects of seaweed composite flour were evaluated in terms of rheological characteristics, proximate composition and physical properties. The sensory characteristics of the soft rolls was evaluated by 40 untrained panellists by using a hedonic scale.FindingsFarinograph analysis of the soft roll doughs showed that the incorporation of seaweed powder promoted an increase in water absorption, development time and mixing tolerance index, whereas it decreased stability time. Analysis of the proximate composition of the soft rolls showed that protein and carbohydrate contents decreased, but moisture, ash and crude fibre contents substantially increased. Dietary fibre increased with the increase in the proportion of seaweed powder added. The specific volume, bulk density and firmness of the soft rolls ranged from 3.01 to 5.48 cm3/g, 0.18 to 0.33 g/cm3 and 1.86 to 20.63 N, respectively. Sensory evaluation results showed that the mean score of sensory attributes decreased as the proportion of seaweed powder added was increased in the formulations. With regard to the overall acceptability, the panellists preferred the soft rolls with the least amount of seaweed powder added. The results of hedonic tests revealed that the panellists' acceptance decreased as higher amounts seaweed powder were added in the formulations.Originality/valueThis study showed that the seaweed powder of K. alvarezii can be utilised as an ingredient to improve the nutrient composition of baked products.

Objectively and reliably determined indicators of rheological properties of the dough were identified using the alveograph device to create a system of classifications of wheat and flour from it for the intended purpose in the future. The analysis of the relationship of standardized quality indicators, as well as newly developed indicators for identifying them, differentiating the quality of wheat flour for the intended purpose, i.e. for finished products. To do this, we use mathematical statistics methods.

Type II diabetes mellitus due to an unhealthy lifestyle, one of which is the lack of fiber in daily food consumption. One food that has a high fiber content is tofu dregs. The purpose of this study was to determine substitution of wheat flour with tofu dregs flour to produce a snack bar with the best characteristics, and determine the effect of consumption of snack bar from tofu dregs on blood sugar content in rats. The research was conducted two steps. Step I: Formulation of snack bar using a completely randomized design with tofu dregs flour concentration of 0 %, 10 %, 20 %, 30 %, 40 %, and 50 %. The variables of this study were the content of water, ash, protein, fat, carbohydrates, sensory tests, and effectiveness tests. Step II: the best characteristic snack bar in the step I was used experimental rats. This step used true experimental design with pre-post test control group design. The variables of study were blood glucose levels before treatment and after treatment. The treatment group consisted of normal, negative, positive control, and snack bar. The results of the first step of the research showed that substitution of wheat flour with 40 % tofu dregs produced the best characteristic snack bar with 17.19 % water content, 1.33 % ash content, 11.03 % protein, 20.53 % fat, 49.92 % carbohydrate, light brown color, unpleasant aroma, distinctive soy taste, crumb texture, 0.63 % water soluble food fiber, 1.57 % water insoluble fiber, and total food fiber 2.36 %. The results of the second step of the study showed that the provision of substitution of wheat flour with tofu dregs flour 40 % could reduce blood sugar levels in diabetic mellitus rats until normal, start 290 mg/dl to 108.5 mg/dl. Tofu dregs flour can be used for snack bar formulations for people with diabetes mellitus.
