Do professional courses prepare hospitality students for efficient surplus food management? A self-evaluation of professional competence in food waste prevention

Purpose This study aims to examine Taiwanese hospitality students’ self-reported professional competence in surplus food management and assess the usefulness of their university training in this area. Using the importance-performance analysis (IPA) method, it is possible to obtain a clearer understanding of the priority order of the items that require improvement and to identify which surplus food management competence items should be strengthened in the school curriculum and which items should be enhanced by the students. Design/methodology/approach This study used the questionnaire survey method. It evaluated seven dimensions covering 29 items related to surplus food management competencies of the kitchen staff. The evaluation was done using IPA to determine the relationship between professional competence (performance level) and courses provided (importance level). The factor coordinates were completed according to the means of personal qualifications and courses provided. Findings According to students’ self-assessment, the dimensions of “Personal moral attitude,” “Food handling attitude,” “Education and training attitude” and “Culinary knowledge” were located in the “Keep up the good work” quadrant, meaning that the students think that their surplus food management competence is relatively high and the courses provided are sufficient. Thus, these items have better performance at the present and they hope to maintain the status. However, “Menu analysis” and “Sanitation knowledge” were found to have low importance and low level of performance. Therefore, these two dimensions require attention in the course design and educational training. Research limitations/implications The questionnaire responses were self-reported; this study assumed that all participants answered honestly. Future studies may include additional factors in the analysis, such as hospitality management, culinary skills, internship experience and work time that may affect the perceptions of students. Moreover, professional chefs could be surveyed to determine their professional competence and training needs. Originality/value The professional training that students receive determines, to a large extent, their performance in their jobs and the resulting stability of their employment. Therefore, improved competence gained through good-quality training can help students meet the demands of the hospitality industry.

Purpose This study aims to comprehend the ambidexterity and organizational learning capability construct in the Indian E-commerce industry context. Design/methodology/approach The survey method was adopted for this study. A survey was circulated among the personnel working in E-commerce companies in India. The focus was on people working in managerial positions and had at least three years of experience in the same industry. Findings This paper investigates the link between two dimensions of ambidexterity, i.e., exploration, exploitation and learning capability in firm performance. The paper also establishes the moderating effect of the learning capability on the two dimensions of ambidexterity and firm’s performance. Research/limitations/implications Our focus was to cover most of the E-commerce companies, yet to generalize the research the analysis needs to be conducted with even more E-commerce companies. Although we took extraordinary care to gather data from multiple resources and discarded the data that was incomplete or was from lower level employees yet, we need a larger sample to establish the causal claim of our model. Practical/implications We reason that learning capability of a firm impacts the two dimensions and firms should focus both on external and internal knowledge to benefit from the ambidexterity efforts. Social/implications Learning capability influences a firm’s performance and has managerial implications. The analysis’ results on the India based ecommerce companies differs from prior research done in more developed countries and other industries. Originality/value No prior research has been done from this perspective in the Indian context, and thus our work opens up new avenues for researchers to look at.Keywords Ambidexterity, Firm performance, Learning capability

This paper examines some aspects of professional training in linguists specialising in “Translation and Translation Studies” within competence-based approach that are of importance for competence development in translation/ interpreting. Professional competence is developed through knowledge acquiring and mastering the skills graduates need to translate and interpret. The content analysis of professional training and training in translation / interpreting allows of exploring methods to increase effectiveness of the educational process as well as correlate competences in the federal state educational standard in linguistics and competences required in translation market.

Purpose The alignment between the labour market and initial vocational education and training (IVET) is placing always more importance on technical knowledge and skills, whilst metacognitive competences such as critical thinking and media literacy are increasingly neglected. In the context of IVET, this results in authors and practitioners paying always more attention to how to devise possible training interventions, with the double aim of implementing their educational pathways and enhancing students’ critical thinking and media literacy. This paper aims to report the state of the art concerning such processes of enhancement in IVET students. Design/methodology/approach The study adopted the method of systematic scoping review to address the research questions on how to enhance critical thinking and media literacy in the context of IVET. Findings The paper presents the analyses of the n = 19 contributions collected. Then, it proposes an initial conceptualization of the dimensions of critical thinking and media literacy. Moreover, by combining evidence from various contributions, the review proposes implications for educational practices and strategies. Around these pieces of knowledge, further avenues of research and practice are proposed. Research limitations/implications This study contributes to the literature on critical thinking and media literacy in the context of IVET by advancing initial comprehensive conceptualizations of the two dimensions. Moreover, the study advances initial practical implications for teachers and trainers for the development of training interventions. Originality/value The originality of the present review rests in its proposal of definitions of critical thinking and media literacy; moreover, it widens the discussion of practices on how to enhance such metacognitive competences. Indeed, the study identifies the teaching and training practices meant to enhance critical thinking and media literacy and proposes applied implications in the context of IVET.

Abstract The article analyzes the development of competency-based professional training standards and their implementation into educational process in foreign countries. It determines that the main idea of competency-based approach is competency-and-active learning, which aims at complex acquirement of diverse skills and ways of practice activities via mastering respective competences. The article states that competency is the product of competence due to which a person successfully realizes themselves in different spheres of their professional engagement, gains social independence and becomes mobile and qualified. The article also dwells on the international experience of professional and training standards development, it analyses specific internal national, as well as external all-European and worldwide conceptions of professional and training standards development, conceptual foundations of competency-based approach in national higher education within the framework of global information society formation. It highlights specific aspects of standards development based on activity-oriented technologies and professional competence assessment. The article states that within the framework of competency-based teaching and training, quality-assuring actions have to ensure the correspondence of standards and learning outcomes. It informs that the labour market is represented by employers, trade unions and the government. The article explores the fact that in Russia, Ukraine and many other countries the employers and the trade unions do not collaborate to formulate their needs with regard to professional training standards, that is why the government and its administration bodies have to do the task of predicting labour market needs on their own.

Purpose The purpose of this paper is to identify the dimensions of service quality in the context of Islamic higher education (IHE); explain the determinant dimensions of overall perceived service quality (PSQ) according to students; and explains the difference in the level of quality felt by students in each dimension based on gender, year of study and level of education of students in Indonesia. Design/methodology/approach A survey method from 384 questionnaires collected from students in four major cities in Indonesia; 378 questionnaires were declared valid for explanatory analysis using SEM-PLS and t-test. Findings The new model called Islamic Higher Education Service Quality (i-HESQUAL) with seven dimensions of quality that are considered important by students i.e. teaching capability and competence of academic staff (TCC), reliability of service (ROS), reputation of university (REP), responsiveness of employees (RES), empathy of employees (EMP), internalization of Islamic values (IIV) and library service support (LSS). The dimensions that influence the overall PSQ are the IIV and LSS. In addition, students based on the year of study have differences in assessing the dimensions of quality, namely the dimensions of TCC, ROS, IIV, LSS, while the level of education also has differences, especially on the dimensions of ROS, REP and LSS. Research limitations/implications This research was only carried out at four public Islamic universities, for that there is a need for further research in the form of longitudinal studies with different geographical samples e.g. in the perspective of private universities to generalize research results. Practical implications The i-HESQUAL dimensions can be used by IHE managers to measure their performance according to students' perspectives. The two dimensions that determine the overall PSQ should be IHE's strategic advantages and the dimensions that do not affect the overall PSQ are feedback to identify weaknesses. Originality/value These findings contribute to PSQ research in the context of IHE, which operates on the values and culture that surrounds it (Islamic culture), while most of the previous research was conducted in the context of developed countries with a secular education system.

Purpose – This study investigates the impact that software utilization may have on students' knowledge acquisition of the accounting cycle. Differences in knowledge acquisition are examined between three groups of students: those who completed an accounting case manually using the traditional pencil and paper approach, using software, and first manually and then using software. The main research question is: “To what extent does using computers to study the accounting cycle lead to better knowledge acquisition?” This paper aims to inform changes in accounting education. Design/methodology/approach – The survey method was employed to collect information from accounting students in a Canadian business school. A total of 1,053 usable questionnaires were returned. Declarative knowledge and procedural knowledge are the theoretical underpinnings. Findings – The results indicate that students who first completed the case manually and then completed the same case using accounting software experienced the best knowledge acquisition. This suggests that the best manner for students to acquire concrete knowledge of the accounting cycle is by completing cases using both methods. The results also indicate that students who completed the case using only the software experienced better knowledge acquisition than did students who completed the case only manually. This suggests that software can be effectively utilized and integrated in class to improve knowledge acquisition of accounting information systems. Originality/value – Little investigation has been performed on the usefulness and impact accounting software utilization may have on students' level of learning. The findings may benefit students and faculty members by helping in curriculum design changes, course design, and computer implementation decisions. The findings of this study have the potential to make a difference in the way that educators teach and business students learn. Business education may be improved by the judicious use of software in the classroom.

Purpose This study aims to problematize how gender is enacted within entrepreneurship education and training (EET). Design/methodology/approach Using a social feminist lens, this study advances principles, a conceptual framework, assessment criteria and illustrative performance metrics to inform gender-sensitive EET programs and courses. Findings are based on a cross-case thematic analysis of two large-scale case studies conducted in Canada and Jordan. Findings The findings bridge social feminist theory and EET studies. The originality of the research rests in its utilization of the principles and conceptual framework to examine EET and to inform the development, design and assessment of gender-sensitive programs and courses. Research limitations/implications The framework and criteria do not differentiate types or levels of EET. The investigators lead the assessment of curricula and co-construction of gender-sensitive course content. Interpreter bias cannot be ruled out. Practical implications The proposed principles, framework, criteria and performance will assist stakeholders in EET program/course design, content, delivery and evaluation. Social implications Aligned with the United Nation Sustain Development Goal 5 (gender equity), the findings demonstrate the value of adapting a critical lens across all elements of EET and responding to biases in participant selection and engagement, program design and curricula. Originality/value To the best of the authors’ knowledge, this is among the first studies to use a social feminist perspective and case study methodology to inform criteria to assess EET.

Purpose – Enterprise architecture (EA) aligns information systems with business processes to enable firms to reach their strategic objectives and, when effectively employed by organizations, can lead to enhanced levels of performance. However, while many firms may adopt EA, it is often not used extensively. The purpose of this paper is to examine how performance expectancy (PE) and training affect the degree to which organizations use EA. Design/methodology/approach – The paper employed a survey method to gather data from IT professionals, senior managers, and consultants who work within organizations that have adopted EA. Covariance-based structural equation modeling was used to analyze the research model and test the hypotheses. Findings – The paper found PE to be a significant predictor of EA use. In addition, training is also shown to enhance use of EA while also playing a mediating role within the relationship between PE and use of EA. Research limitations/implications – The study is limited by the focus only on training as an intervention. Other mediators and/or moderators such as top management support and organization culture may also play an important role and should be examined in future studies. Nonetheless, the study demonstrates the critical role that training can play in facilitating widespread use of EA within organizations. Practical implications – Widespread use is a critical success factor for organizations that want to gain the maximum possible benefit from EA. To achieve extensive use, the study suggests that organizations that adopt EA should consider implementing a formal and robust education and training program. Originality/value – This study extends the research on information technology training by examining the role of training as an intervention within the technology acceptance paradigm. The paper also contributes to the literature regarding post-adoption innovation diffusion by demonstrating the efficacy of organizational training in promoting widespread usage.

ntroduction.The training of future special-ists with higher education in modern conditions requires the useof new approaches that will intensify the process of formation of their professional competence. New meth-ods, which have recently become more widely used in the educational process, include the use of coaching to solve the problems of the educational process. This fact fully relates to the training of future professional psychologists; the need to cover issues related to the use of coaching to prepare students studying in the specialty "Psychology", determines the relevance of this study.Purpose. To consider the features of coaching in the professional training of future professional psychologists in modern conditions. Methods. Analysis, synthesis, systematization, concretization, generalization.Results.As a result of the analysis of publications on the topic of research, the peculiarities of the use of coaching in the professional training of future specialists were established. Referring to them, the approach to the application of this technology in the performance of research studies by psychologists students in writing their coursework, based on their needs for such knowledge, the available level of knowledge and training requirements. The proposed approach in the real educational process of training of future professional psychologists in universitiesis tested.Originality. An approach to the application of coaching in the performance of research studies by psychology students in writing their coursework, based on the existing level of knowledge and training requirements, in order to make them understandable to students. The applied approach adequately reproduces the real process of scientific research in the preparation of future professional psychologists at universities; and after testing and refinement it can be recommended for introduction into the educational process.Conclusion.1. A review of the literature on the topic of the study has revealed that the works of domestic and foreign scientists have the necessary expertise to clarify the various aspects of counseling in the professional train-ingof specialists in universities in modern conditions. 2. Carried out on the basis of the con-ducted research into consideration of the possibilities of counseling in the professional training of future psycholo-gists, it is intended to create conditions for solving practi-cal problems, which creates conditions for optimizing the process of their preparation and achieving the goal of the educational process. Annotation.The article deals with the peculiarities of the use of coaching in the professional training of future professional psychologists in modern conditions. Review of scientific publications on the topic of research; studied works concerning coaching in the professional training of future specialists. The basic principles of the application of coaching in professional training of specialists in modern conditions are clarified. Purpose – The purpose of the paper is to find the relationship between education and training and performance of women entrepreneurs (WEs). The present study found that entrepreneurial education stimulates women to take up entrepreneurship as a career option. Design/methodology/approach – Also the findings of the study show that WEs lack the time for upgrading their skills and also need training for developing their skills. The methodology includes empirical study, collection of data and analysis with the help of SPSS, correlation method to find the relationship between education and training of WEs. Findings – Getting appropriate education helps them with finding sources of innovative ideas and converting these ideas into enterprises. The study also revealed that due to constraints in the time availability and resources, WEs find it hard to train themselves and equip themselves with the recent developments in technology and the market. Research limitations/implications – Moreover, the study findings suggest that providing them with professional training and skill development programme would help the women students to launch their businesses. The data colleted is only from India. Practical implications – The paper also discusses the managerial implications and research implications of such a study. The study shows that there is a significant relationship between providing entrepreneurial platform and education to the women to start up their ventures. Social implications – The study findings suggest that there is a lack of societal support for women entrepreneurship. Entrepreneurship is still expected to be a male-dominated field, and it may be difficult to gain the society's support for WEs. The women entrepreneurship can also provide a tool for social upliftment for below poverty line people. Originality/value – Moreover, the study findings suggest that providing them with professional training and skill development programme would help the women students to launch their businesses. The paper also discusses the managerial implications and research implications of such a study.
