The aims of this study were to evaluate the microbiological quality and the occurrence of nontuberculous mycobacteria (NTM) in a variety of salads and sprouts from supermarkets and street vendors in Mexico City. Aerobic-mesophilic bacteria (AMB) were present in 100% of RTE-salads samples; 59% of samples were outside guidelines range (>5.17 log10CFU per g). Although fecal coliforms (FC) were present in 32% of samples, only 8% of them exceeded the permissible limit (100 MPN/g). Regarding the 100 RTE-sprouts, all samples were also positive for AMB and total coliforms (TC) and 69% for FC. Seven NTM species were recovered from 7 salad samples; they included threeM. fortuitum, twoM. chelonae, oneM. mucogenicum, and oneM. sp.Twelve RTE-sprouts samples harbored NTM, which were identified asM. porcinum(five),M. abscessus(two),M. gordonae(two),M. mucogenicum(two), andM. aviumcomplex (one). Most RTE-salads and RTE-sprouts had unsatisfactory microbiological quality and some harbored NTM associated with illness. No correlation between the presence of coliforms and NTM was found. Overall, these results suggest that RTE-salads and RTE-sprouts might function as vehicles for NTM transmission in humans; hence, proper handling and treatment before consumption of such products might be recommendable.

The objective of the present study was to determine the microbiological quality of bottled mineral water marketed in commercial establishments and by street vendors and to evaluate the influence of the storage and maintenance conditions on the microbiological quality of the product. Ten samples from the same batches of five different brands of water were analyzed, for a total of 50 samples. Of the five brands analyzed, only one (brand A), when collected in a commercial establishment, complied with the legal Brazilian standards for mineral water with respect to the presence of total coliforms, fecal coliforms, and Pseudomonas aeruginosa. The remaining samples failed to comply with these microbiological standards for at least one of the parameters evaluated. The water samples obtained from street vendors were inferior in microbiological quality to samples from the same batch that were obtained from commercial establishments.

ABSTRACTNontuberculous mycobacteria (NTM) are potentially pathogenic agents commonly found in a natural ecosystem. For this reason, food is considered another source of NTM transmission for humans. The aims of this study were to evaluate the microbiological quality and the occurrence of NTM in fresh-squeezed orange juice samples purchased from street vendors. All 102 samples analyzed were positive for aerobic mesophilic bacteria (AMB), with limits ranging from 1.8 to 6.2 log CFU/ml. A total of 55 (54%), 25 (25%), and 13 (13%) orange juice samples were positive for total coliforms (TC), fecal coliforms (FC), and Escherichia coli, respectively. TC, FC, and E. coli were present with limits ranging from <3 to >1,100 most probable number (MPN)/ml, <3 to 460 MPN/ml, and <3 to 11 MPN/ml, respectively. Six orange juice samples harbored NTM. These NTM were identified by using three molecular markers (hsp65, rrs, and rpoB genes) and corresponded to the fast-growing mycobacteria: Mycobacterium fortuitum (n = 3), Mycobacterium rhodesiae (n = 1), Mycobacterium obuense (n = 1), and a mixture of M. fortuitum and Mycobacterium mucogenicum in an additional sample (n = 1). No correlation was found between the presence NTM in orange juice samples with the presence and concentration of the indicator microorganisms (aerobic mesophilic bacteria, TC, and FC). Overall, these results suggest that fresh-squeezed orange juice might represent a vehicle for NTM transmission in humans. Therefore, prevention of contamination by humans (proper handling and washing of oranges) during juice preparation should be recommended.

The present work aims to assess the physico-chemical and microbiological parameters of the waters of the three sources (Ain Bergougaya, Ain Sigleb and Siporex) in the region of Oum el Teboul wilaya of El Tarf. Parameters such as temperature, pH, conductivity and salinity were measured in situ with a field multimeter. Hardness (62 mg/L to 266 mg/L), salinity (0.01 to 1 mg/L). From a microbiological point of view, there has been no evidence of the complete absence of germs of contamination such as total coliforms and fecal coliforms. This study compared to the drinking water standards shows that the waters in the area studied are of good quality.

Avaliou-se a qualidade microbiológica de 15 amostras de hortaliças/tubérculos e de 15 amostras de frutas minimamente processadas, comercializadas em Fortaleza (CE). Foram realizadas análises de coliformes fecais e totais, pesquisa de Salmonella sp., contagem total de bolores e leveduras, contagem de Staphylococcus coagulase positiva e contagem total de psicrotróficos. Detectou-se a presença de Salmonella em 66,6% das amostras de hortaliças/tubérculos e em 26% das de frutas. Foi verificado que 13,3% das amostras de hortaliças/ tubérculos apresentaram contagem de coliformes fecais acima do limite estabelecido pela legislação brasileira. Contagens elevadas de coliformes totais, de bolores e leveduras e de psicrotróficos também foram encontradas em ambos os produtos, indicando condições inadequadas de higiene durante o processamento, comprometendo seu armazenamento e sua qualidade microbiológica. MICROBIOLOGICAL EVALUATION OF VEGETABLES AND FRUITS MINIMALLY PROCESSED MARKETED IN FORTALEZA (CE) Abstract The microbiological quality of 15 vegetables and 15 fruits minimally processed samples marketed in Fortaleza - CE (Brazil) was evaluated. The following analyses were carried out: total and fecal coliforms, Salmonella sp., total yeasts and moulds count, coagulase positive Staphylococcus count and total psychrotrophics count. Salmonella was detected in 66.6% of vegetable samples and 26% of fruit samples. Fecal coliforms count higher than legislation limit, it was verified in 13.3% of vegetable samples. High counts of total coliforms, yeasts and moulds and psychrotrophics were also found on both products, showing inadequate hygiene conditions during manufacturing, affecting storage and microbiological quality of minimally processed fruits and vegetables.

Ice creams have great acceptance and demand by consumers around the world. They are foods obtained through an emulsion of fats and proteins, these ingredients if stored or handled incorrectly can be the source of multiplication of several microorganisms. This work focuses on the microbiological analysis of artesanal and industrial ice cream in two times of the year (winter and summer), performed using the methodology adapted from Silva et al (2010) and the legislative microbiological standards used from RDC No 12 from Anvisa (Brasil, 2001). The main focus was the detection of microorganisms of importance in the food industry, as they are precursors of foodborne diseases epidemics, such as Escherichia Coli, Salmonella, total coliforms, thermotolerant coliforms, molds, yeasts and aerobic mesophilic bacteria. It was observed in the analysis results that all 30 samples showed growth of aerobic mesophilic bacteria, molds and yeasts, that only four (13.33%) did not have total coliforms and none had Salmonella. There was no great difference between the results of the analyzes of samples collected in the summer and winter, the level of contamination in general was high in samples from both seasons.

AbstractHoney from the western region of Paraná receives the seal of origin and in-process denomination of origin because it is mostly produced in permanent preservation areas, adherence to hygiene and sanitary standards, proper management techniques and agro-industrial management. The objective of this study was to verify the microbiological quality of honey produced by beekeepers associated with Cooperative. Sixty-seven honey samples were evaluated for microbiological quality, and the mean values observed to total aerobic mesophiles were 2.52 log CFU/g; Clostridium spp. 1.46 log CFU/g; total coliforms 0.78 log CFU/g; fecal coliforms 0.50 log CFU/g; total yeasts 0.46 log CFU/g, and 2.95 log CFU/g total molds. The evaluations showed the incidence of anaerobic mesophilic in 70% of the samples, Clostridium spp. 77%; total coliforms 60%, fecal coliforms 62%, molds 83% and 34% yeasts. Five genera of the isolated molds commonly found in honey were Fusarium spp. 0.35 log CFU/g; Aspergillus spp. 0.52 log CFU/g; Cladosporium spp. 1.2 log CFU/g, Phoma spp. 0.71 Phoma spp. and 0.16 log CFU/g Penicillium spp. Multivariate analysis showed the formation of two groups and indicated the heterogeneity in the bacterial load of the samples. Although microbiological analyses were not mandatory for honey, these results demonstrated the hygienic-sanitary quality of the samples of honey produced. For the reduction of secondary-origin microorganisms, the handlers were recommended to follow the sanitary hygiene norms and handling techniques.

The microbiological quality of fresh blue crabmeat, soft- and hardshell clams and shucked Eastern oysters was determined at the retail (crabmeat, oysters) and wholesale (clams) levels. Geometric means of aerobic plate counts incubated at 35°C were: blue crabmeat 140,000 colony-forming units (CFU)/g, hardshell clams, 950 CFU/g, softshell clams 680 CFU/g and shucked Eastern oysters 390,000 CFU/g. Coliform geometric means ranged from 3,6/100 g for hardshell clams to 21/g for blue crabmeat. Means for fecal coliforms or Escherichia coli ranged from <3/100 g for clams to 27/100 g for oysters, The mean Staphylococcus aureus count in blue crabmeat was 10/g.

Monitoring the microbiological quality of water used for recreational activities is very important to human public health. Although the sanitary quality of recreational marine waters could be evaluated by standard methods, they are time-consuming and need confirmation. For these reasons, faster and more sensitive methods, such as the defined substrate-based technology, have been developed. In the present work, we have compared the standard method of membrane filtration using Tergitol-TTC agar for total coliforms and Escherichia coli, and Slanetz and Bartley agar for enterococci, and the IDEXX defined substrate technology for these faecal pollution indicators to determine the microbiological quality of natural recreational waters. ISO 17994:2004 standard was used to compare these methods. The IDEXX for total coliforms and E. coli, Colilert®, showed higher values than those obtained by the standard method. Enterolert® test, for the enumeration of enterococci, showed lower values when compared with the standard method. It may be concluded that more studies to evaluate the precision and accuracy of the rapid tests are required in order to apply them for routine monitoring of marine and freshwater recreational bathing areas. The main advantages of these methods are that they are more specific, feasible and simpler than the standard methodology.

There are problems associated with sludge management in small treatment plants (<10 L/s) located in rural communities, due to costly conventional technology for sludge stabilization. Many of these plants have only sludge drying beds. Mexican Institute of Water Technology has proposed developing suitable low-cost technologies, one of which is vermicomposting a biodegradation system using earthworms of the species Eisenia foetida (earthworm) which stabilize sludge and reduce its pathogenicity. The objective of this work is to present two case studies where vermicomposting technology has been applied in Mexico. The first study corresponds to a plant where 4.8 m3/month of sludge are produced; for these wastes, a vermicomposting system was built and installed. The second study is a treatment plant where 9 m3/month of sludge are produced; experimental tests were conducted with sludge and water hyacinth and a vermicomposting system was designed. The vermicomposts were analyzed using parameters defined by Mexican standards. In regards to stabilization, TVS was reduced by 38% and the microbiological quality of the vermicompost was Class A and B, with a reduction in fecal coliforms and Helminth eggs according to NOM-004-SEMARNAT-2002. A CRETI (Corrosivity, Reactivity, Explosivity, Toxicity and Ignitability) analysis (NOM-052-SEMARNAT-2005) was used to show that the process reduced the concentration of releasable sulfides. The agronomic quality of the vermicompost exhibited a high content of organic matter comparable to many organic manures and high content of nutrients such as nitrogen and phosphorus. It is concluded that it is possible to improve the conditions of sewage sludge management in small plants of rural communities with a minimum investment (less than $10,000.00 USD) and with a requirement of a minimum area of 60 to 70 m2 for a production of less than 9 m3/month of dehydrated sludge (80% humidity).

Microbiological quality of Ulva lactuca and Ulva clathrata (Chlorophyta) along the coastline of La Paz, B.C.S., México Total, fecal coliforms and the enterococcus group in Ulva lactuca and U. clathrata were measured in four localities of the coastline of La Paz, B.C.S, Mexico. Levels of fecal coliforms in water were below the standard of the Ecological Criteria of Water Quality (EC-WQ) which indicates a healthy La Paz inlet (below 200 MPN/100ml). Values of fecal coliforms in algae were below the NOM-031-SSA1-1993 levels determined for marine organisms destined for human consumption. These values were high only in few months. No enterococci were detected in the samples.
