AbstractCorn (Zea mays L.) provides a major source of calories for human consumption and therefore, the nutritional components of corn have a large impact on human health. For example, corn kernels contain antioxidants, such as polyphenols (including anthocyanins and other flavonoids) and carotenoids. Such compounds represent useful targets for biofortification breeding. In this study, we used 34 corn inbred lines from three different regions (East Asia, Southern Asia, and subtropical regions) and 11 F1 hybrids derived from the inbreds to investigate antioxidant activity in yellow corn. We compared different methods for measuring antioxidant activity to test their consistency and to determine whether color could be used as an indicator of antioxidant activity. We also measured carotenoid levels in yellow corn. No difference in antioxidant activity was detected between inbred corn lines from temperate vs. tropical regions. We determined that carotenoid is a major contributor to antioxidant activity in yellow corn and that kernel color, especially yellowness, could be used as an indicator of antioxidant activity in yellow corn. These findings lay the foundation for the biofortification of yellow corn by providing information about the correlations among kernel color, carotenoid contents, and antioxidant activity and by identifying an easy method to assess antioxidant activity in yellow corn.

ABSTRACT Corn (Zea Mays L.) is widely developed in Indonesia. Corn kernels showed total phenolic and antioxidant activity. Antioxidants have the potential as photoprotectors, therefore, plants containing phenolic compounds can be used in the prevention of free radicals. For this reason, researcher is interested in further researching the phytochemical screening, antioxidant activity and sunscreen testing from extracts of stems, leaves, hair and leaf wrapping from corn (Zea mays L.). The samples used were corn plants (corn silk, corn leaves, corn stalks and leaf wrapping corn) originating from Kauditan area, North Minahasa. The results of the study showed that the leaf contained saponin and flavonoid compounds, the stem contained alkaloid and saponin compounds, the hair contained alkaloid and flavonoid compounds, and the leaf wrapping only contained alkaloid compounds. The highest to lowest total phenolic content values starting from the stem were 46.93 μg / mL, the leaf wrapping 37.76 μg / mL, the leaf 26.63 μg / mL and hair 14.49 μg / mL. The leaf has the highest antioxidant activity with a value of 72.81% followed by 62.87% stem then wrapping leaf 43.13%  and finally hair 29.14%. The SPF value of the stem was included in the ultra protection with a value of 16.117 followed by the leaves included in the maximum protection with an SPF value of 10.902. While the hair with SPF value of 0.6 and wrapping leaf with SPF value of 0.222 are included in the minimum protection. Keywords: Corn (Zea Mays L.), Sunscreen, Antioxidants, Phenol ABSTRAK Jagung (Zea Mays L.) banyak dikembangkan di Indonesia. Biji jagung menunjukkan kadar total fenolik dan aktivitas antioksidan. Antioksidan memiliki potensi sebagai fotoprotektor, oleh karena itu, tanaman yang mengandung senyawa fenolik dapat digunakan dalam pencegahan radikal bebas. Untuk itu peneliti tertarik untuk meneliti lebih lanjut tentang skrining fitokimia, uji aktivitas antioksidan dan tabir surya dari ekstrak batang, daun, rambut, dan daun pembungkus dari jagung (Zea mays L.). Sampel yang digunakan ialah tanaman jagung (rambut jagung, daun jagung, batang jagung dan daun pembungkus jagung) yang berasal dari daerah Kauditan, Minahasa Utara. Hasil dari penelitian menunjukkan daun mengandung senyawa saponin dan flavonoid, batang mengandung senyawa alkaloid dan saponin, rambut mengandung senyawa alkaloid dan flavonoid, dan daun pembungkus hanya mengandung senyawa alkaloid. Nilai kandungan total fenolik  yang paling tinggi sampai paling rendah dimulai dari batang sebesar 46.93 μg/mL, daun pembungkus 37.76 μg/mL, daun 26.63 μg/mL dan rambut 14.49 μg/mL. Daun memiliki aktivitas antioksidan yang paling tinggi dengan nilai 72.81% diikuti oleh batang 62.87% kemudian daun pembungkus 43.13% dan yang terakhir adalah rambut 29.14%. Nilai SPF batang termasuk dalam proteksi ultra dengan nilai 16,117 diikuti oleh daun yang termasuk dalam proteksi maksimal dengan nilai SPF 10,902. Watermelon (Citrullus lanatus) juice is known for its refreshing flavor, but its high perishability limits its availability throughout the year. Watermelon juice concentrate has extended shelf-life and lower transportation and storage costs, but the conventional thermal evaporation process for concentrating juice degrades the nutritional components and sensory quality of the product. Thus, in this work, a large-scale, non-thermal forward osmosis (FO) process was used to concentrate fresh watermelon juice up to 65°Brix. The FO concentrate was compared to thermal concentrate and fresh juices, and to commercially available refrigerated watermelon juices, in terms of lycopene and citrulline content, total soluble phenolics, antioxidant activity, and sensory properties. The FO concentrate had statistically similar (p < 0.05) levels of all the nutrients of interest except antioxidant activity, when compared to the thermal concentrate. The reconstituted FO concentrate maintained the same antioxidant activity as the raw source juice, which was 45% higher than that of the reconstituted thermal concentrate. Sensory results showed that reconstituted FO concentrate resulted in highly liked juice, and it outperformed the reconstituted thermal concentrate in the sensory hedonic rating. This work demonstrates the possibility to produce a high-quality watermelon juice concentrate by forward osmosis.

Background: Bambusa vulgaris (bamboo) is a common plant in tropical regions of the world, with multiple biological activities. Cereal steep liquors have been identified to act against some fecal bacteria. Given the increasing prevalence of antimicrobial resistance coupled with the cost of antibiotics, there is a need for mitigation efforts and the shift by locals to herbal products. Methods: The factorial study design was employed. Bamboo leaves were washed, dried, milled, and soxhlet extracted for 16 h using the steep fermented liquor from Zea mays subsp. mays as the solvent. Rotary evaporated extracts of various weights were used to carry out sensitivity and minimum inhibitory concentration (MIC) tests. Oral acute toxicity was determined. The in vivo assay was used to determine the effective dosage for the treatment of infected mice while distilled water and ciprofloxacin served as negative and positive controls, respectively. Results: The average inhibition zone diameters in the sensitivity test at 25, 50, and 100 mg/mL concentrations were 16.20 ± 0.06 mm, 19.10 ± 0.02 mm, and 22.10 ± 0.05 mm, respectively, while the MIC against Salmonella typhi was 25 mg/mL. The extract was found to be safe at up to 5000 mg/kg dose, which means that the LD50 was ≥ 3808 mg/kg. The Widal test revealed that mice responded to treatment with the extract at different concentrations (50, 100, and 200 mg/mL) as the number of days increased. The in vivo assay on day 14 showed the bactericidal property at a dosage of 200 mg/mL. Conclusions: Bamboo leaves extract in steep liquor from fermented yellow maize displayed excellent pharmacological activity against the pathogenic organism of typhoid fever with a potential source of active agents.

In Vietnam, the giant mottle eel Anguilla marmorata is the most widely distributed species and being exploited for seed in aquaculture as well as for human consumption. This study aims to investigate the basic nutritional components of the fish. The eels were collected from six locations of Thua Thien Hue province, with weights from 5 to 3200 g. In addition, the content of lipid in skin and tissue was also examined. The results show that eel flesh has a relatively high nutritional value. The water, protein, lipid, and total sugar content of the fish meat is 60.4 ± 0.94%, 19.54 ± 4.31%, 18.2 ± 1.02%, and 1.34 ± 0.34 (mg/g), respectively. The nutritional components of the eel have a good correlation with the weight according to the equation: Y = a × ln (W) + b (where W is the weight of eels; Y is the content of nutritional components; a is the correlation coefficient b is a constant) with r > 0.9. The lipid content of the fish skin is higher than that of muscle and meat.
