At the present development stage of fish culinary production special significance has range expanding and technology improving for the following purposes: the available fish resources use; the organoleptic characteristics improvement and the nutritional value and competitiveness increase of products manufactured at the enterprises of the food industry. This study concerns the technology and the consumer properties formation improvement of cold appetizers from silver carp in the form of a roll. Unlike traditional the developed products consist of fillet of a bighead silver carp on a skin and an original stuff from egg, vegetables and mushrooms. The researchers conducted study using conventional and special methods. They recommended to introduce gelatin in a dry powdered at the stage of roll forming form in a recipe of the developed fish rolls. A man tested fish gelatin as anew consistency regulator of the developed products. The traditional and fish gelatin use allows to increase the yield of fish cold appetizers in the form of a roll by 8.0 %. When adding gelatin, there was an improvement in consistency and sensory perception of the product as a whole. The analysis results of biological value showed that the developed dishes, being an important additional source of protein and essential amino acids such as threonine, lysine, valine, may well improve the ration balance. The fatty acids ratio in fish rolls prepared according to new recipes is close to the ideal fat in the ratio of saturated, monounsaturated and polyunsaturated fatty acids (35:45:20) and is determined mainly by the composition of fatty acids in silver carp fat. The developed production will allow to expand the range of the food industry enterprises by cold fish appetizers of high quality and food value from available fish raw materials.

Pigeonpea [Cajanus cajan (L.) Millsp.] is a favourite crop of rain-fed farmers due to its high food value, drought tolerance and various soil improving properties. The productivity enhancement of this crop has been a long-term goal at the national level but with a little success. In this context, the advent of hybrid breeding technology with over 30% on-farm yield advantages has provided a much-needed breakthrough. The hybrids in pigeonpea were bred using a stable CMS system and natural out-crossing. It is believed that the adoption of locally adapted hybrids would contribute significantly towards both family income and nutrition.

This chapter examines the links between water, food and society in Africa. Agricultural transformation to promote growth, eliminate poverty and hunger and sustain ecosystems is one of the central pillars of current development agenda in Africa. Achievement of this agenda will crucially depend on sustainable water management. However, agri-food systems and water resources are under greater pressure than ever before due to demographic, economic and climatic changes. The nature and scale of these changes suggest that only a holistic and integrated management of all shades of water resources, green, blue and grey, will allow Africa to eliminate hunger and poverty. Research-based technical solutions as well as institutional and policy measures are proposed that would allow available water resources to be sustainably used to promote climate-resilient farming systems, improve agricultural productivity and food security and spur the development of viable food value chains needed for agricultural and rural transformation.

Although one of the main goals of supply-chain management is to maximize consumer values, the research to date has mainly focused on the supply side. In the case of the food industry, understanding consumer needs and maximizing its utility are essential. In this study, we analyze consumers’ 12 meta-values (e.g., safety, taste, health, price, environment, etc.), then suggest the strategy of food cold-chain management satisfying consumers’ perception. We focused on consumers from three countries in Asia: Korea, China, and Japan. The survey was conducted with over 1000 consumers in those three countries, and a random parameter logit model was utilized to determine the importance of each food value that could affect consumers’ food choice. Similarities and differences were both found in share of preference of each food value across countries. While safety is one of the top three values in all three countries, naturalness and nutritional value ranked among the top three only in China. To propose the consumer-centric strategy of food cold-chain management, we investigated the relationship between each food value and each node of supply chain based on the big data analysis. It shows that consumers prefer when the entire supply chain is managed where each node is organically connected with each other instead of individual nodes being managed separately. Further, strategies for food cold-chain management should be developed differently by country, incorporating differences of consumers’ preferences on food value. These results would motivate governments and companies related to food cold chain to reconsider their marketing strategies on the import and export food market.
