AbstractRecently, edible flowers (EF) have aroused increased interest because of their aesthetic properties as well as potential health benefits related to the occurrence of some bioactive compounds. Therefore, the aim of this work was to evaluate the total phenolics, anthocyanins, flavonoids, and antioxidant activity (AOA) (following DPPH and ABTS methods) in eleven EF. The samples were subjected to three successive extraction steps using methanol, and these extracts were then analysed for the aforementioned properties using spectrophotometric methods. The obtained extracts were used for the quantification of phenolic composition and AOA. The results indicated that, among the flowers analysed in this study, red rose, pink rose, and red carnation possessed the highest total phenolic contents (27.53, 23.30, and 18.17 mg g−1 gallic acid equivalents, respectively), total anthocyanins (3.07, 1.97, and 4.47 mg g−1 catechin equivalents [CE], respectively), and AOA (12.07, 15.77, and 12.93 mg g−1 TE, respectively, as given by the DPPH method or 8.23, 9.27 and 8.00 mg g−1 TE, respectively, as given by the ABTS method). The flowers with highest flavonoids contents were red carnation, Mexican marigold, and pink rose (17.50, 16.90, and 16.57 mg g−1 CE, respectively). Cluster analysis grouped the analysed flowers into two groups, those richest in phenolics with AOA and those not so rich. Finally, some important correlations were observed between the total phenolics and the AOA. In conclusion, these flowers could represent a potential source of natural compounds with antioxidant capacity.

Crataegusfruit is one of most important fruits in Tunisian flora. Some fruits of this genus are edible. This study was undertaken in order to examine the benefits of these fruits in human health and their composition of antioxidants including total polyphenol, flavonoids, proanthocyanidins content, and total anthocyanins. The antioxidative properties of the ultrasonic methanolic extract were assessed by different in vitro methods such as the FRAP, DPPH, andβ-carotene/linoleic acid assay. We concluded that peel fraction of red fruits possessed relatively high antioxidant activity and might be a rich source of natural antioxidants in comparison with the pulp and seed fruit extract. The results also showed that hawthorn yellow fruit presents lower amounts of phenolic content, absence of anthocyanins, and less antioxidant capacity. Most of peel and seed fractions were stronger than the pulp fractions in antioxidant activity based on their DPPH IC50, FRAP values, and results ofβ-carotene/linoleic acid. The total phenolic compounds contents were also highly correlated with the DPPH method and the FRAP assay.

In Tunisia, despite the large annual production and the numerous citrus varieties under cultivation, citrus processing industries lack product diversity. Products based on dietary properties are a new trend aiming to develop innovative foods and to meet the requirements of the new customer class. In the present study, formulations of reduced sugar jelly products using antioxidant rich-fruit, citrus, were carried out. The effects of citrus juices on the jelly’s antioxidant properties, colour, consistency, and sensory evaluation were also investigated. Results showed that all citrus jellies maintain their antioxidant activity, correlated with phenolic content presence. In fact, total phenolic contents ranged between 123.16 and 192.76 mg GAE/100 g, while flavonoid content varied between 1.54 and 9.06 mg QE/100 g for grapefruit jelly and blood orange jelly, respectively. Results illustrated that antioxidant activity varies according to the variety. A sensory evaluation employing hedonic scale technique exhibited satisfactory acceptance of the reduced sugar blood orange and blond maltase jellies. These results highlight and promote the potential use of these citrus varieties in jelly industry as they present a rich source of phenolic compounds and may generate numerous phytochemicals with potential health promoting properties.

AbstractThe aim of this study was to investigate antioxidant activity, total phenolic compounds and flavonoids of propolis from three provinces of Indonesia with two methods of extraction. Stingless bee propolis from Banten, South Kalimantan, and South Sulawesi was prepared through ultrasound-assisted extraction with water and ethanol solvents, separately. Antioxidant activity was measured by the 2,2-diphenyl-1-picrylhydrazyl (DPPH) method. Total phenolic and flavonoid contents were analyzed by Folin-Ciocalteu colorimetric and aluminum chloride (AlCl3) methods, respectively. The result showed that the antioxidant activity expressed as IC50 of Indonesian propolis ranged from 452.52 to 1027.29 mg/L. Ethanol extracts showed higher antioxidant activity than water extracts. Total phenolic and flavonoids content detected in the samples ranged from 10.00 to 28.65 mg/g GAE and 0.76 to 3.39 mg/g QE, respectively. The ethanol extract of propolis from South Kalimantan had the highest total phenolic contents, while that from South Sulawesi possessed the highest total flavonoids.

The beneficial effects attributed to açaí and its derivatives are associated with its significant content of phenolic compounds, which has stimulated multiple/many researchers to identify these compounds and demonstrate their pharmacological properties, which include anti-inflammatory and antioxidant activities. The aim of this study was to determine the concentration of total phenolic compounds and the antioxidant activity of lyophilized pulps and functional gels of açaí. The antioxidant activity was the determining variable for the choice of the best formulation for the supplement. Pulp L exhibited higher antioxidant activity than the others according to the DPPH method, as well as higher content of total phenolic compounds. For the antioxidant activity, gels 3 and 4 did not differ significantly for the DPPH method, whereas in the ORAC method, gels 1 and 3 showed greater Trolox equivalents. It was concluded that gels 3 and 4 which had higher concentrations of lyophilized açaí pulp, showed higher concentrations of total phenolic compounds and consequently higher antioxidant capacity as demonstrated by the two methods applied and by the results obtained in the statistical analysis. Functional açaí gel may be used by adults who are involved in physical activities to reduce oxidative stress.

Four different types of yoghurt were manufactured using purple basil which was added to milk as water extract or powder forms at levels of 1.0 % and 0.4 % (w/w). Physicochemical and rheological properties, antioxidant capacity, color and total phenolic contents of yoghurt samples were measured during 21 days of storage. None of changes were observed for titratable acidity, pH and hardness parameters of yoghurt samples; however, some changes were observed during storage. The contents for total phenolic compounds and antioxidant activity [2,2'-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid diammonium salt (ABTS+*) and 2,2-Diphenyl-1-picrylhydrazyl (DPPH*) values] were dramatically higher in powder-added yoghurt samples than those of its water extract counterparts, while the lowest total phenolics and ABTS+* were observed in control sample during storage. The values for storage and loss modulus were higher in water extract-added samples than powder-added counterparts. In conclusion, no significant effect of the addition of powder or water extract of basil was observed on gross chemical characteristics of yoghurt, while use of basil powder positively contributed to antioxidant activity and changed the rheological behavior of yoghurt gel.

Diferentes grupos vegetais encontrados no bioma Cerrado vêm sendo amplamente estudados quanto as suas possíveis características químicas, apresentando dentre essas biocompostos de interesse para a indústria de alimentos, como na produção de barras de cereais nutritivas e em condimentos alimentares capazes de inibir ações de radicais livres causadores de patologias. No entanto, ainda pouco se sabe sobre a grande variedade destes compostos bioativos, que compõem as características químicas das espécies rasteiras, arbustivas e arbóreas, que coabitam nas mais diversas variantes deste bioma. A descoberta dos efeitos deletérios dos radicais livres sobre as células, agindo como causadores de doenças, impulsionando a busca por novos compostos bioativos na área de alimentos, que a cada ano cresce com a produção de novos produtos alimentícios, com características mais saudáveis, permitindo a prevenção e minimizando os danos oxidativos sobre as células. O presente trabalho teve como objetivo avaliar a atividade antioxidante pela captura do radical DPPH, conteúdos de fenólicos totais pelo reagente de Folin-Ciocalteau, carotenoides, provitamina A em equivalente de Retinol por métodos espectrofotométricos UV-Vis dos extratos etanólicos foliares das espécies botânicas: Byrsonima coccolobifolia (Kunth.), Dimorphandra mollis (Benth.), Hymenaea stignocarpa (Mart. ex Hayne), Solanum lycocarpum (St. Hil.) e Cardiopetalum calophyllum (Schlecht.). The discovery of the deleterious effects of free radicals on cells, acting as cause of disease, driving the search for new bioactive compounds in the area of food that grows every year with the production of new food products with healthier characteristics allowing prevention and minimizing the oxidative damage on  cells. The objective of the present work was to evaluate the antioxidant activity by capturing DPPH radical, total phenolic contents by Folin-Ciocalteau reagent, carotenoids, provitamin A in Retinol equivalent by UV-Vis spectrophotometric methods of the foliar ethanolic extracts of botanical species: Byrsonima Coccolobifolia (Kunth.), Dimorphandra mollis (Benth.), Hymenaea stignocarpa (Mart. ex Hayne), Solanum lycocarpum (St. Hil.) and Cardiopetalum calophyllum (Schlecht.). The results showed the presence of antioxidant activity by the DPPH radical sequestration method, expressive total phenolic content, β-carotene content, lycopene content, except for Dimorphandra mollis and Hymenaea stignocarpa species, with low levels of provitamin A.Keywords: Sheets. ABSTRACT Yacon (Smallanthus sonchifolius) is a tuberous root from the Andean region in the South America rich em water, fructooligosaccharides and phenolic compounds, some of which are natural antioxidants and may help prevent the deleterious action of free radicals in the body. The yacon has attracted much attention due to their potential health benefits to humans. In this study the levels of total phenolics, tannins, phenolic acids, and total antioxidant activity were measured in the peel and pulp of yacon tubers both in the fresh and flour forms. The flours of yacon presented higher concentrations of total phenolics and tannins, especially peel flour. The yacon pulp flour stood out as the main source of phenolic acids, mainly caffeic and chlorogenic acid. The total antioxidant activity assessed by DPPH (2,2-Diphenyl-1-picrylhydrazyl) and ABTS (2,2′-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid)) assays was higher in the yacon peel flour. The total antioxidant activity was correlated with the total phenolic content and tannins by the DPPH and ABTS assays. These results suggest that yacon can be used as an alternative food source of phenolic compounds that help prevent degenerative processes caused by oxidative stress, especially in the flours form.

Indonesia is one of ten biggest countries that produce tea for world. It makes Indonesia produce various tea products. Every tea production process produces the large quantity of industrial tea wastes every day. Our previous research showed that industrial tea wastes still have antioxidant activity. It means that industrial tea wastes contained of phenolic compounds which can be used as UV filter for sunscreen. This research compared antioxidant activity, total phenolic contents and UV filter effectiveness between green and black industrial tea wastes. Antioxidant activity were analyzed by reducing power and DPPH method, total phenolic contents of tea wastes extract were analyzed using Folin-Ciocalteu assay, while UV filter effectiveness were assessed by UV spectra and absorbance of each tea wastes extract related to its concentration in order to yield maximum protection. The results showed that although green tea waste extract had higher antioxidant activity but adversely, black tea had higher total phenolic contents. UV filter effectiveness is affected by polyphenols content in substances, so it suggested that black tea waste extract is more potential than green tea waste extract as photoprotection substance.Keywords: tea waste, UV filter, sunscreen

Cordia macleodii, an important medicinal plant traditionally used for the treatment of various disorders, including wound healing, jaundice, gastric ulcer, hepatoprotective activity and antivenom potential, thus the plant showed the high antioxidant properties. Successive extraction of leaf and barks powder with methanol and water was tested for quantitative determination of total phenolics, total flavonoids and various in vitro antioxidant activities. Phytochemical screening of crude plant extracts revealed the presence of sterols, alkaloid, flavonoid, phenolic, Reducing sugar, glycosides, tannins and saponins. All extracts showed the significant total phenolic and flavonoid contents and as well as radical scavenging and iron-chelating activities. Among all, methanol leaf extract was observed to be higher antioxidant activity than that of other extract. The methanol extracts showed greater antioxidant activity by DPPH scavenging the free radical with IC50 values of 7.63 ± 0.38 μg gm-1 along with scavenged free radical in a concentration depended manner, which is compare to the standard ascorbic acid.  Our results revealed that the presence of grater antioxidant activity of C. macleodii extract may be due to the high level of flavonoid and phenolic content in the plant. These results clearly indicated that C. macleodii is an effective natural antioxidant. Key words: Cordia macleodii, antioxidant, radical scavenging, phenolics, flavonoid, phytochemical.

Biodiversitas 21: 941-947. Teak (Tectona grandis) grows in tropical area and the teak wood is widely used for building construction and furniture. Young teak leaf contains red pigment and often are used for natural food coloring. The research objectives were to isolate the young teak leaf chemical compounds and to investigate their antioxidant activities. The compounds identification was carried out by UV-Vis Spectroscopy, GC-MS and LC-MS. The antioxidant activity determination was carried out by 2,2-diphenyl-1-picryl-hydrazyl-hydrate (DPPH) method. The total phenolics content was determined using Folin-Ciocalteu method and total anthocyanins content was examined using the H-differential method. Two fractions were observed further by UV-Vis Spectroscopy, GC-MS and LC-MS. The UV-Vis spectrum of FA confirmed the presence of anthocyanins which has maximum absorbance at 208 and 492 nm. The GC-MS spectrum of fraction A (FA) revealed 4-hydroxy-4-methyl-2-pentanone, glycerin monoacetate, glycerin diacetate and 1-eicosanol. The UV-Vis spectrum of FC also confirms the presence of anthocyanins which has maximum absorbance at 489 nm. The LC-MS spectrum of fraction C (FC) shows anthocyanins, namely malvidin-3-o- (6-o-acetyl)-5-o-diglucoside. The FA and FC teak leaf fractions have strong antioxidant activities as their IC50 values are less than 50 ppm. Total phenolic of teak leaf extract was 6.17 mg GAE/g and total anthocyanins of teak leaf extract were 67.5 mg/L.
