Egg laying genotypes have been selected for generations due to their high yield and egg quality, resulting in efficient feed utilization and low body weight; hence, they are not suitable for meat production. This imposes an issue for the male layer chicks, which are killed at one day old. Because of ethical and food waste concerns, the search for suitable dual-purpose genotypes in order to avoid euthanasia of male day-old chicks has intensified. The aim of the present study is to evaluate potential dual-purpose genotypes for their egg quality compared to a representative egg laying genotype. Three dual-purpose genotypes with divergent characteristics were evaluated: genotype A represented an experimental crossbreed based on a broiler type male and an egg layer female, genotype B was a pure breed, and genotype C was a crossbreed of a layer type. These were compared to a control genotype D, which was an egg layer. Eggs were collected six times during the period of 21–54 weeks of hen age, i.e., a total of 1080 shell eggs were analyzed. Examined parameters were weights of egg, shell, yolk, and albumen, by calculating their relative proportions. Shell quality was assessed by shell strength, shell stiffness, and shell thickness. Yolk quality was determined as yolk color and inclusions of blood and meat spots, and albumen quality was evaluated in terms of pH and dry matter (DM) content. The egg layer genotype produced the smallest eggs with least blood and meat spot inclusions compared to that produced by the three dual-purpose genotypes. Shell quality was superior for the layer genotype. However, the experimental genotype A laid eggs of comparable shell quality, albumen DM, and yolk weight, but also with the darkest and most red-yellow colored yolk. The two other dual-purpose genotypes produced eggs of low-medium quality. In conclusion, the genotype A could serve as dual-purpose genotype from an egg quality perspective.

The aim of the study was to determine daily changes in some egg quality parameters, indirectly reflecting egg freshness, and to assess the possibility of predicting time from laying using mathematical methods. The study material consisted of 365 table eggs of medium (M, ≥53 g and <63 g) and large (L, ≥63 g and <73 g) weight classes (commercial stock, cage system, brown-shelled eggs) collected on the same day. Eggs were numbered individually and placed on transport trays and stored (14 °C, 70% RH). Every day, for 35 days, egg quality characteristics were analyzed (10 eggs per group). The change of traits in time was analyzed on the basis of linear and polynomial regression equations, depending on the trait. Based on model fitting, eight traits were selected as those most affected by storage time: egg weight and specific weight, Haugh units, albumen weight, air cell depth, yolk index, albumen and yolk pH. These traits, excluding those related to the weight, were then used in a multiple linear regression model to predict egg age. All regression models presented in this study were characterized by high predictive efficiency, which was confirmed by comparison of the observed and estimated values.

The experiment was conducted to evaluate the influence of strain and age on some egg quality parameters (egg weight and egg shell strength) of commercial laying hens. Layers of lines ISA Brown and DeKalb White were examined in period of nine months. Both lines were at same age (28 weeks) and were confined in common facility in battery cages. Laying hens were reared and fed according to standard breeding technology. Once a month 25 eggs of each line were taken to be examined for eggshell strength and egg weight, or in other words, total 450 table eggs were tested. Analises were done in Laboratory for testing egg quality by gaudges Egg Multi Tester EMT 5200 and Egg shell Gauge (Robotmation Co. Ltd., Tokyo, Japan) which have computerised equipment to examine quality and physical characteristics of eggs. Statistic analyses on results were done by computer sub-programme ANOVA and Fisher's LSD test to determine the level of statistical significant difference between examined factors. Egg weight was under significant impact of age (P ? 0,05), but not under the influence of strain, although eggs of ISA Brown line were insignificantly heavier than eggs of DeKalb White line. Eggs were heaviest at layers with older age, while they were lightest at younger birds. The results have shown significant differences (P ? 0,05) in eggshell strength compared to line influence (genotype) and months of age. Eggs from ISA Brown laying hens had much better and eggshell strength than those eggs from DeKalb White. Correlations between eggshell strength and egg weight were with significant (R < 0,05) negative value, which indicating that with increasing egg weight decreases of eggshell strength.

ABSTRACT Eggs are one of nearly perfect protein foods, offering nutrients of great biological value. However, during storage, egg albumen and yolk components may alter and deteriorate egg quality. Therefore, the aim of this work was to assess egg quality during 9-week storage. Parameters such as Haugh unit, weight loss, egg width and length, specific gravity, yolk and albumen dimensions and their pH were evaluated weekly. A total of 270 eggs (n=5) collected from two different hen strains were evaluated under room (20 to 35 °C in summer; 11.2 to 29.7 °C in autumn) and refrigerated (0 to 5 °C in summer; -3.1 to 6.5 °C in autumn) temperatures. For storage time, an unfolding analysis was accomplished by regression analysis using orthogonal polynomials. As a second approach, principal component analysis (PCA) was performed in order to assess correlations among quality parameters on storage conditions and laying hen strains. By the end of the 9-week storage period, eggs kept under refrigeration presented similar quality parameters to eggs stored at room temperature for only 3 weeks. In contrast, eggs kept at room temperature presented faster degradation from week 1 to 5. No differences on egg quality parameters were noticed between white and brown shells eggs. PCA suggests that better egg quality (first week) was associated mainly with higher egg weight and its specific gravity, Haugh unit and albumen height. Eggs stored at room temperature should be consumed in 2 weeks or refrigerated until 8 weeks, preserving internal quality from farm to retail.

An experiment was conducted to determine the effects of feeding diets containing 0, 5, 10, and 15% ground raw rapeseed to three replicates of 14 laying hens each. Isocaloric isonitrogenous diets were fed for a 28-day experimental period and performance and egg quality parameters were measured. Egg production was depressed at the two higher levels of rapeseed inclusion but was not affected at the 5% level of inclusion. Haugh unit, albumen height, and shell deformation were not affected significantly (P > 0.05) but egg weight decreased progressively as rapeseed inclusion increased. Feed consumption was significantly depressed (P < 0.05) at the 15% level of rapeseed and slightly reduced at the other levels.

The effects of diet type (wheat- or maize-based) and concentration of available phosphorus (AP; about 4, 3 and 2 g/kg) on the parameters of hen performance and egg quality as well as shell calcium (Ca) and phosphorus (P) contents were examined. Two experiments were carried out in which 240 and 120, respectively, older ISA Brown hens were housed in enriched cages. The interaction of diet type and AP concentration was ascertained for all evaluated characteristics except the amount of Ca and P deposited in shells in the first experiment. In the second experiment, the interaction of diet type and AP concentration was found for feed intake, egg weight, shell thickness and weight as well as the albumen quality parameters. Furthermore, Ca deposition in shells increased (P &lt; 0.001) with the wheat diet. Hens fed a maize-based diet (P &lt; 0.001) laid heavier eggs. The highest level of AP (4.1 g/kg) in the wheat-based diet significantly (P &lt; 0.001) decreased albumen height, albumen index and Haugh units (HU). These trends were the same in both experiments. The results indicate that 0.27% AP in wheat-based diet and 0.30% AP in maize-based diet are adequate for hens with the intake 115 g of feed with 3.5% of Ca without a negative impact on performance or egg quality.

SUMMARY Birds show poor utilization of phytic phosphorus in their diets because of the lack of endogenous enzymes to digest phosphorus and make it bioavailable. Therefore, the objective of this study was to evaluate phytase supplementation in the diets of laying quails. Eighty quails were used in a completely randomized experimental design with five treatments and four replicates of four birds each. The treatments were as follows: 0.35% Pd; 0.20% Pd; 0.20% Pd + 500FTUs of phytase; 0.09% Pd; 0.09% Pd + 500 FTUs of phytase. The birds were housed in metallic batteries during a trial period of 21 days, for evaluation of egg production, egg weight, feed intake and feed conversion. After being collected, the eggs were sent to the nutrition laboratory of the department of zootechnics of the CEO/Udesc, where analyses of albumin, yolk and shell quality were performed. The results were subjected to analysis of variance, and the differences between the averages were compared using the Tukey test at 5% of significance. No differences (P> 0.05) were observed in terms of performance and egg quality parameters. We conclude that the inclusion of phytase in the diet of laying quails can be accomplished without compromising the performance and quality of the eggs. Additionally, 0.09% of 22 disponible phosphorus can be used to grant adequate performance for 21 days.

The present study envisaged the effects of different levels of dietary copper supplementation on performance, egg quality parameters, serum and yolk cholesterol and triglyceride levels, and yolk fatty acid profile in laying hens. Total 96 Lohman laying hens (38 weeks old) were randomly divided into four groups (n=24 each). Experimental diets were prepared by adding copper (0, 200, 250 or 300 mg/kg) to basal diet and feeding was lasted 12 weeks. Dietary copper supplementation decreased egg weight and feed intake but did not affect other performance parameters compared to the control diet. Shape index, shell weight, shell thickness, yolk color, yolk index, albumen index, and haugh unit were not influenced by dietary copper supplementation, whereas shell strength increased due to the inclusion of copper in the basal diet. Copper supplementation did not affect the fatty acid profile of the egg yolk. The yolk cholesterol ratio decreased by 7.22% in the presence of 250 mg/kg copper supplementation compared to control diet. Therefore, high levels of dietary copper supplementation in the diet of laying hens can be beneficial for improving shell strength and reducing the cholesterol content of the yolk.
