The work analyzes the global experience of using wines and grape-processing products to support a person’sphysical, mental, and psychological health, to slow down aging, to prevent and treat many diseases, in particular cardiovascular andoncological ones, endocrine system disorders, etc. It has been shown that a great deal of waste, including marc, is obtained whileprocessing grapes and producing wine. The fact has been pointed out that in Ukraine, the technologies of using wine-making waste infood and cosmetic industries and in medicine are being developed and introduced but slowly, though the level of viticulture is high.The importance and prospects of finding ways to process grape marc have been proved, as its valuable chemical composition allowsobtaining dietary supplements and oenotherapeutic products for spa and wellness industry. The following rational parameters havebeen suggested to extract the most valuable biologically active substances (polyphenols) from grape marc: microwave extraction;specific power of the microwave installation 1.6–1.7 kW/kg; 40% ethyl alcohol as the extractant; proportion of water(hydromodulus) 1:5; extraction temperature 60–65°C; 4 heating stages; stage interval 1.5–2 minutes; total extraction time 12–14minutes. The physico-chemical parameters of the marc extracts obtained from the grapes harvested in 2016 and 2017 have beendetermined. It has been established that, besides polyphenols, a whole complex of biologically active substances is extracted. It hasbeen shown that grape marc can be used to produce dietary fibre, pectins, and other valuable substances. The medical and biologicalproperties of the polyphenolic complex obtained from marc (the Odesky Chorny variety of grapes) have been studied on laboratoryrats to determine its antioxidant activity and the prospects of its use in treating type 2 diabetes. The protective properties of theobtained product have been proved. Such processes have been established to take place as the mobilization of the antioxidant systemof cells, the normalization of the enzyme activity of the antioxidant protection system, and a decrease in the level of markers ofoxidative modification of proteins and lipids (that are higher than normal with diabetes mellitus). It has been suggested to usepolyphenolic complex extracts in oenotherapy as a skin and face care product with protective properties.

Medicinal plants are potential natural sources of biologically active substances that have geroprotective properties, slowing down the aging process. Vegetable raw materials are used as antioxidants in the food industry. Pulmonaria officinalis L. has a high content of biologically active substances. The purpose of this work is to determine the operating parameters for extracting the maximum amount of biologically active substances from Pulmonaria officinalis L. by extracting ethanol and finding sources of natural antioxidants.The antioxidant activity of several ethanol extracts of Pulmonaria officinalis L. – 30-70% with a step of 10 ethanol obtained from the dried root culture of the medicinal plant of biologically active substances was determined. The total content of polyphenols, flavonoids and proanthocyanidins was estimated. According to the data obtained, the relationship between the values determined for the biologically active substances presented and the values of antioxidant activity was revealed. Extracts of Pulmonaria officinalis L. showed a high yield of polyphenolic compounds-889.39±4.29 mcg of Gallic acid/ml, flavonoids-728.90±6.98 mcg of rutin/ml, proanthocyanidins-211.65±5.31 mcg of catechin/ml at an ethyl alcohol concentration of 60% and an extraction temperature of 50°C in 4 hours. The antioxidant activity using 2 methods: A spectrophotometric method DPPH (2,2-diphenyl-1-picrylhydrazyl) and the FRAP method (iron reducing/antioxidant power) was investigated. During DPPH spectrophotometric analysis, the antioxidant activity is equal to 86.96% for polyphenols, 75.47% for flavonoids, and 51.25% for proanthocyanidins. FRAP analysis showed that extracts with operating parameters had a pronounced antioxidant activity (tэ= 4 ч; Tэ= 50°C; Сэ= 60%)и (tэ= 5 ч; Tэ= 60°C; Сэ, = 70%).

Vegetable raw materials serve as a source of a large number of organic compounds of various structures with a variety of preventive and curative nutritional properties. The article presents the results of a study on the establishment of parameters and modes of extraction of biologically active substances from fruit and berry raw materials in order to obtain extracts for the preparation of functional beverages. The work was carried out on the basis of the educational and scientific laboratory of technology of winemaking and food from vegetable raw materials of the Stavropol State Agrarian University according to generally accepted methods in accordance with GOST (State standards). When preparing the extracts, water treatment of the crushed mass of feijoa and blackberries was used. The extraction process was controlled by changing the mass fraction of dry substances. As a result of the research, the optimal conditions for the process of extracting dry substances from feijoa and blackberries were established: hydromodule – 1:1, the duration of the process – 24 hours; the extraction temperature is 25 degrees C. Such conditions of the process provided the greatest extraction of dry substances without destroying the functional ingredients, allowed the extraction to be carried out within a short period of time and reduced the cost of temperature treatment of the medium. The paper presents the results of tasting evaluation of the obtained extracts.

Настоящая работа затрагивает тему оптимизации процесса экстракции биологически активных веществ из биомассы корневых культур in vitro лекарственных растений Сибирского федерального округа, а именно шлемника байкальского, шлемника обыкновенного и лапчатки белой. Параметры, которые влияли на ход процесса, были выбраны следующие: продолжительность процесса, температура экстракции и гидромодуль. В ходе эксперимента выяснилось, что для максимального выхода экстракта шлемника байкальского необходимо соблюдать следующие параметры: соотношение объема растворителя, наиболее эффективного в данном случае 70 %-ного этанола, к массе исходного сырья 1:10, продолжительность процесса 60 мин, температура 50 °С. Максимальный выход биологически активных веществ из шлемника обыкновенного будет достигаться при температуре экстракции 60 °С в течение 60 мин с использованием 70 %-ного этанола в качестве органического растворителя в соотношении к высушенному образцу 1:10. Оптимальные параметры извлечения активных веществ из лапчатки белой: соотношение экстрагента, в качестве которого выступает диэтиловый эфир, к исходному сырью 1:20, продолжительность 60 мин при температуре экстракции 40 °С. Извлечение экстрактов из культур in vitro позволит сохранить популяцию растений, произрастающих в естественных условиях. This work touches on the topic of optimization of the process of extraction of biologically active substances from the biomass of root cultures in vitro of medicinal plants of the Siberian Federal District, namely Scutellaria galericulata, Scutellaria Baicalensis, Potentilla alba . The parameters that influenced the course of the process were chosen as follows: process duration, extraction temperature and hydronic module. In the course of the experiment, it turned out that for the maximum yield of the Scutellaria Baicalensis extract, the following parameters must be observed: the ratio of the volume of the solvent, the most effective in this case 70% ethanol, to the weight of the feedstock 1:10, the duration of the process is 60 min, the temperature is 50 °C. The maximum yield of biologically active substances from Scutellaria galericulata will be achieved at an extraction temperature of 60 °C for 60 minutes using 70 % ethanol as an organic solvent in a ratio of 1:10 to the dried sample. The optimal parameters for the extraction of active substances from Potentilla alba are: the ratio of the extractant, which is diethyl ether, to the feedstock 1:20, lasting 60 minutes at an extraction temperature of 40 °C. The extraction of extracts from in vitro cultures will allow preserving the population of plants growing in natural conditions.

The identification of the diversity of microscopic fungi of lithobiont communities of the Argentine Islands in specimens collected during the 22nd Ukrainian Antarctic Expedition was the purpose of this work. Samples of rock, soil, mosses and lichens of rock micro-habitats of “Crustose lichen sub-formation and fruticose lichen and moss cushion sub-formation” were used in the work. These samples were used for extracting and cultivation of filamentous fungi on dense nutrient media. Determination of physiological and biochemical characteristics and identification of yeast-like fungi were performed using a microbiological analyser ‘Vitek-2’ (‘Bio Merieux’, France). Cultivation of microorganisms was carried out at temperatures from +2 to +37 °C. In results cultures of microscopic fungi of Zygomycota (Mucor circinelloides), Ascomycota (species of the genera cf. Tlielebolus, Talaromyces), representatives of the Anamorphic fungi group (Geomyces pannorum, species of the genera Alternaria, Acremonium, Aspergillus, Penicillium, and Cladosporium) were isolated from Antarctic samples. Microscopic fungi Penicillium spp. were dominated after the frequency in the studied samples (54.5%). Rhodotorula rubra and Candida sp. among isolated yeast fungi, and dark pigmented fungi represented by Aureobasidium pulhdans and Exophiala spp. were identified. The biological properties of a number of isolated fungi (the potential ability to synthesise important biologically active substances: melanins, carotenoids, lipids) are characterised. Mycobiota of rock communities of Argentine Islands is rich on filamentous and yeast fungi similarly to other regions of Antarctica. A number of fungi investigated are potentially able to synthesise biologically active substances. The dark pigmented species of the genera Cladosporium, Exophiala, Aureobasidium pulhdans, capable of melanin synthesis; ‘red’ yeast Rhodotorula rubra (carotenoid producers and resistant to toxic metals); Mucor circinelloides and Geomyces pannorum, lipid producers, are among these fungi. Yeast-like fungi assimilated a wide range of carbohydrates, which will allow them to be further used for cultivation in laboratory and process conditions. The collection of technologically promising strains of microorganisms, part of the Culture Collection of Fungi at Taras Shevchenko National University of Kyiv (Ukraine), is updated with isolated species (strains) of filamentous fungi and yeast – potential producers of biologically active substances, obtained within this study.
