The technologies for developing food products for people with type 2 diabetes involve enrichment with polyphenolic compounds that have hypoglycemic and/or hypolipidemic properties. The production of ingredients for introduction into such food products should involve the techniques of concentration of natural polyphenols on certain food-grade protein matrices. In this study, a technology was developed for the production of a functional food ingredient, which was a complex of polyphenols (mostly anthocyans) from cranberries with coagulated egg albumen. The optimal parameters of sorption of anthocyans from cranberry juice on the albumen during the coagulation of the latter were determined. The contents and profile of anthocyans within the resulting food ingredient were assessed. The concentration of total anthocyans (recalculated to equivalents of cyanidin-3-glucoside) was determined by pH-differential spectrophotometry; the profile of individual anthocyans was determined by highperformance liquid chromatography. Sensory evaluation of the resulting ingredient (through a taste panel test) evidenced the possibility of including the product in the functional foodstuffs. The technology developed can be used in the design of functional food ingredients for subsequent introduction into anti-diabetic food products. Abstract Abstract Acacia seyal gum is an abundant source of natural polyphenolic compounds (NPPCs) and antioxidant activity with numerous benefits and is often used in cancer treatment. The type of extraction technique can significantly impact the yield and isolation of NPPCs from Acacia seyal gum (ASG). The traditional use of maceration extraction reportedly yields fewer NPPCs. Objectives This study investigates five extraction techniques for NPPCs and ASG antioxidant activity, namely: homogenisation, shaking, ultrasonication, magnetic stirring, and maceration. Materials and Methods The evaluation of the antioxidant activity (AoA) of the extracted NPPCs from ASG used five assays, namely: Total Flavonoids Content (TFC), Folin-Ciocalteu index (FCI), 2,2-Diphenyl-1-Picrylhydrazyl radical scavenging activity (DPPH), Ferric Reducing Antioxidant Power (FRAP), and Cupric Reducing Antioxidant Capacity (CUPRAC). Results To minimise the dataset dimensionality requires Principal Component Analysis. The ultrasonic and maceration techniques were the best techniques to extract NPPCs and examine the AoA of ASG, with a high correlation between the NPPCs and AoA. However, the maceration process was slow (12 h) compared to ultrasonication (1 h). Slow extraction can result in a decline of the NPPCs due to polyphenol oxidase-enzyme and impact productivity. Conclusions These findings provide an essential guide for the choice of extraction techniques for the effective extraction of NPPCs from ASG and other plant materials.

Although there are over 4000 potato cultivars in the world, only a few have been commercialized due to their marketability and shelf-life. Most noncommercialized cultivars are pigmented and found in remote regions of the world. White-fleshed potatoes are well known for their energy-enhancing complex carbohydrates; however, pigmented cultivars are potentially high in health-promoting polyphenolic compounds. Therefore, we reveal the comprehensive compositions of pigmented cultivars and associated potential health benefits, including their potential role in ameliorating hunger, food, and nutrition insecurity, and their prospects. The underutilization of such resources is a direct threat to plant-biodiversity and local traditions and cultures.

Current research on phytochemicals is mainly focused on novel phenolic and polyphenolic compounds expressing their potential as therapeutic agents in various diseases like cancer, autoimmune diseases, cardiovascular disorders, diabetes, oxidative stress-related diseases, as well as their properties to inhibit the growth and proliferation of infectious agents. Among the human physiological disorders, one of the most severe endocrine metabolic diseases is Diabetes mellitus which is a clinical disease distinguished by a deficit in the production of insulin or resistance to the action of insulin. Globally, diabetes is an increasing health concern which is now emerging as an epidemic. About 700-800 plants are exhibiting anti-diabetic activity that has been studied. As far as nanotechnology in diabetes research is concerned, it has made possible the buildout of novel glucose measurement as well as insulin delivery modalities that possess the potential to excellently enhance the quality of life of the diabetic patient.

The term “flavonoid” is a broad term given to the collection of natural polyphenolic compounds which occur in plants (fruits, vegetables, roots, flowers, stems, bark, leaves) as their secondary metabolites. Subsequent research reveals that flavonoids possess anti-inflammatory, anti-mutagenic, anti-oxidative, anti-ageing, and anti-carcinogenic effects along with their capacity to modulate enzymatic activities, inhibit cell proliferation, and inhibit bacterial growth, among others. The main shortcomings of oral administration of flavonoids as therapeutic that various studies have revealed are related to their stability, bioefficacy, and bioavailability. Novel nanotechnological strategies involving nanocarrier systems are proving promising to overcome the delivery challenge of flavonoids as therapeutics. Nanocapsules, nanospheres, solid lipid nanoparticles, nanoemulsions, micelles are examples of novel nanocarrier systems that are currently being explored for targeted and efficient bio functioning of flavonoids after their oral administration.

Flavonoids are natural polyphenolic compounds that mainly possess antioxidant properties due to more hydroxyl groups in their structure and play an important role in combatting many diseases. Myricetin is a flavonoid found in grapes, green tea, fruits, and vegetables and is not only an antioxidant but also is a pro-oxidant. Myricetin is sparingly soluble in water and restricts its properties due to low bioavailability. The present study reports the liposomal nanoformulations of myricetin to improve its bioavailability with reduced pro-oxidant activity. The nanoformulated myricetin was characterized using different photophysical tools, such as dynamic light scattering (DLS), zeta potential, and scanning electron microscopy (SEM). The effect of nanoencapsulated myricetin on the developing zebrafish embryo was studied in terms of microscopic observations, cumulative hatchability, and antioxidant activities, such as catalase, glutathione peroxidase, and superoxide dismutase, after treating the zebrafish embryo with standard oxidant hydrogen peroxide. The results obtained from the cumulative hatchability, developmental studies, and antioxidant assays indicated that the liposomal nanoformulation of myricetin had enhanced antioxidant activity, leading to defense against oxidative stress. The formulation was highly biocompatible, as evidenced by the cumulative hatching studies as well as microscopic observations. The positive effects of liposomal nanoformulation on zebrafish embryos can open an avenue for other researchers to carry out further related research and to check its activities in clinical studies and developmental studies.

Red wine, an alcoholic beverage is composed of a spectrum of complex compounds such as water, alcohol, glycerol, organic acid, carbohydrates, polyphenols, and minerals as well as volatile compounds. Major factors that affect the levels of phenolic compounds in red wines are the variety of grapes and the storage of the wines. Among the constituents of red wine, phenolic compounds play a crucial role in attributes including color and mouthfeel and confer beneficial properties on health. Most importantly, phenolic compounds such as flavanols, flavonols, flavanones, flavones, tannins, anthocyanins, hydroxycinnamic acids, hydroxybenzoic acids, and resveratrol can prevent the development of cardiovascular diseases, cancers, diabetes, inflammation, and some other chronic diseases.
