Carcass traits of twenty Texel x Ile de France crossbred lambs slaughtered after weaning (52 days of age), or at 25, 30 and 35kg live weight were evaluated. Lambs were placed in individual stalls (1.5m²) and fed ad libitum with a diet composed of sorghum silage (Sorghum bicolor (L.) Moench) and a concentrate mix (ground corn, soybean meal, calcium carbonate and salt). Commercial dressing percentage was related quadratically with slaughter weight, being highest in lambs slaughtered after weaning. Real dressing percentage increased linearly. Shoulder proportion decreased with slaughter weight, whereas leg, rib and neck proportions remained constant. Carcass fat was positively correlated to the slaughter weight. Slaughter of feedlot Texel x Ile de France crossbred lambs can be recommended at 28kg live weight.

SummaryThe effects of two levels of energy intake, ad libitum and 80% of ad libitum, of diethylstilboestrol implantation and no such treatment, and of two slaughter weights (‘450’ and ‘490’ kg), on the performance of Israeli-Friesian intact male cattle were studied.Average daily gain was 1130 g and 959 g and daily carcass gain was 630 g and 553 g for animals on ad libitum and 80% of ad libitum energy intake, respectively. Average daily gain was 1038 g and 944 g and daily carcass gain was 595 g and 562 g, for diethylstilboestrol-treated and untreated animals, respectively. Slaughter weight had little effect on rate of gain.The differences in conversion ratio of ME into live weight between treatments were small. Diethylstilboestrol-treated animals were slightly more efficient.The non-implanted animals on the restricted plane of nutrition and which had been slaughtered at ‘490’ kg had a significantly higher dressing percentage, a higher percentage of fat trim and less bone than animals slaughtered at ‘450’ kg body weight on both levels of nutrition.Among the diethylstilboestrol-implanted male calves, however, the animals fed at 80% of ad libitum feed and killed at ‘450’ or ‘490’ kg live weight had significantly more fat trim in the carcass and less bone than the animals fed ad libitum.

In this study, canonical correlation analysis was applied to estimate the relationship between body measurements and carcass traits of 28 male cross bred rabbits of about 12 weeks of age, reared under semi intensive system. Four body measurements, pre-slaughter weight (PSW) , body length (BL), chest circumference (CC), and ear length (EL) as predictor variable while dressing percentage ( DP) , hot carcass weight (HCW) and cold carcass weight (CCW) as criterion variables. Pre-slaughter weight and body length had significant (P<0.001) simple correlation coefficients with the carcass traits except for dressing percentage. The three canonical variate pairs ranged between .99 to .42 and only the first pair was significant (P<0.001). From the analysis pre-slaughter weight and body length can be regarded as the main factors as live measurement traits, while dressing percentage did not have pronounced effect on the emerged criterion variables.

Abstract Some definitions of feed efficiency such as residual energy intake (REI) and residual gain (RG) may not truly reflect production efficiency. The energy sinks used in the derivation of the traits include metabolic live-weight; producers finishing cattle for slaughter are, however, paid on the basis of carcass weight, as opposed to live-weight. The objective of the present study was to explore alternative definitions of REI and RG which are more reflective of production efficiency, and quantify their relationship with performance, ultrasound, and carcass traits across multiple breeds and sexes of cattle. Feed intake and live-weight records were available on 5,172 growing animals, 2,187 of which also had information relating to carcass traits; all animals were fed a concentrate-based diet representative of a feedlot diet. Animal linear mixed models were used to estimate (co)variance components. Heritability estimates for all derived REI traits varied from 0.36 (REICWF; REI using carcass weight and carcass fat as energy sinks) to 0.50 (traditional REI derived with the energy sinks of both live-weight and ADG). The heritability for the RG traits varied from 0.24 to 0.34. Phenotypic correlations among all definitions of the REI traits ranged from 0.90 (REI with REICWF) to 0.99 (traditional REI with REI using metabolic preslaughter live-weight and ADG). All were different (P < 0.001) from one suggesting reranking of animals when using different definitions of REI to identify efficient cattle. The derived RG traits were either weakly or not correlated (P > 0.05) with the ultrasound and carcass traits. Genetic correlations between the REI traits with carcass weight, dressing difference (i.e., live-weight immediately preslaughter minus carcass weight) and dressing percentage (i.e., carcass weight divided by live-weight immediately preslaughter) implies that selection on any of the REI traits will increase carcass weight, lower the dressing difference and increase dressing percentage. Selection on REICW (REI using carcass weight as an energy sink), as opposed to traditional REI, should increase the carcass weight 2.2 times slower but reduce the dressing difference 4.3 times faster. While traditionally defined REI is informative from a research perspective, the ability to convert energy into live-weight gain does not necessarily equate to carcass gain, and as such, traits such as REICW and REICWF provide a better description of production efficiency for feedlot cattle.

AbstractBulls (½ Blonde d'Aquitaine ⅜ Charolais) were used in a 2 × 3 factorial design experiment with two planes of nutrition in the finishing period and three slaughter weights. High and low planes of nutrition were based on diets with similar forage to concentrate ratio (0·40 of dry matter (DM)) offered ad libitum or at 0·78 of ad libitum DM intake at equal live weight respectively. The target slaughter live weights were 550, 625 and 700 kg. Twelve bulls were taken to each slaughter point and an additional five animals were killed as a pre-experimental slaughter group. Mean initial live weight was 412 (s.e. 5·3) kg at a mean age of 342 (s.e. 2·5) days. No significant interactions were found between the main factors. For the high and low planes, live-weight and estimated carcass gains were 1251 and 989 (s.e. 47·7), and 816 and 668 (s.e. 35·3) g/day respectively, the reduction in gains being similar to the proportional degree of nutritional restriction. Plane of nutrition had no effect on live-weight or carcass gain per unit of energy intake. The low plane of nutrition produced significant decreases in body cavity fat depots, subcutaneous fat in the sample joint and increased the proportions of both saleable beef and high-priced joints in the carcass.With increase in slaughter weight, energy intake per unit of live weight0·75 and rates of both live-weight and carcass gain tended to decline. The dressing proportions were 583,579 and 609 (s.e. 9·1) g/kg for the slaughter live weights of 550, 625 and 700 kg. Carcass conformation improved while fat depots in the body cavity and estimated concentration of separable fat in the carcass increased with increase in slaughter weight, and both estimated lean and bone concentrations decreased. Forequarter as a proportion of total side tended to increase with increase in slaughter weight. Slaughter weight had no effect on concentration of saleable meat or ultimate pH of carcass muscle. It is concluded that bulls of this genotype can be taken to high slaughter weights on diets having a relatively high proportion of forage as grass silage, with high rates of growth and acceptable carcass leanness.

AbstractA total of 180 Holstein-Friesian male calves, mean age and live weight (LW) at start of the study 112 (s.d. 26·0) days and 134 (s.d. 37·6) kg, respectively, were used to evaluate the effect of slaughter weight on food efficiency and animal performance. Animals were offered concentrates ad libitum and a restricted quantity of straw and slaughtered at one of six LWs as bulls: 300, 350, 400, 450, 500 or 550 kg. A further group of cattle were slaughtered as steers at 450 kg LW. Mean age at slaughter was 247 and 434 days for bulls slaughtered at 300 and 550 kg LW respectively. Neither rate of LW or carcass gain was influenced by weight at slaughter ( P>0·05), with mean values of 1·31 and 0·70 kg/day, respectively. Food conversion ratio, killing-out proportion, carcass conformation, fat classification and weight of internal fat depots increased ( P<0·001) as slaughter weight of the bulls increased. In the comparison of steers and bulls slaughtered at 450 kg, steers had lower ( P<0·001) rates of LW and carcass gains and had a higher ( P<0·001) food conversion ratio than comparable bulls. Steers had lower ( P<0·001) estimated carcass lean, and higher ( P<0·01) estimated carcass fat concentrations than bulls slaughtered at the same LW.

The present study was conducted to investigate the carcass traits of Karayaka lambs slaughtered at different slaughter weights (SWs) and to find out optimum SWs. Male Karayaka lambs with 20 kg live weight (n=30) constituted the animal material of the study. Lambs were randomly divided into five SW groups; 30 (GI; n=6), 35 (GII; n=6), 40 (GIII; n=6); 45 (GIV; n=6) and 50 (GV; n=6) kg. Lamb fattening feed (concentrate feed, ad libitum) and forage (lentil straw, 100g/lamb/day) were used as the feed material. Lambs were sent to slaughter at target SWs. Following the slaughter, non-carcass components, tailless hot and cold carcass weights were taken. Carcasses were separated into six sections as leg, foreleg, back, loin, neck and others. Physical dissection was performed to investigate carcass composition. Only the differences in carcass dressing and skin percentages of slaughter groups were not found to be significant. Increasing carcass fat percentages and decreasing carcass lean and bone percentages were observed with increasing SWs. Considering the consumer preferences, current findings revealed that Karayaka lambs should be sent to slaughter at weights between 30-35 kg. However, considering the red meat deficit of the country, current market conditions and producer preferences, the optimum SW for Karayaka lambs were recommended to be between 40-45 kg.

Abstract The objective was to evaluate the effect of feedlot days (FD) on intake (DMI) and performance of Nellore heifers. Fifty-one Nellore heifers [325±19.3 kg of body weight (BW); 16±1 months], blocked by initial BW and stratified by carcass ultrasound, were divided into three treatments: 45, 75 or 105 FD; and placed in 18 pens [17 heifers/treatment; 6 pens/treatment (5 pens with 3 heifers and 1 pen with 2 heifers)]. The animals were fed ad libitum allowing 3% of refusals. The diet consisted of corn silage, ground corn, soybean meal, protected fat and minerals. The adaptation diet [16% CP and 79% TDN; roughage:concentrate (R:C) = 44:56] was offered from day 1 to 15 and the finishing diet from day 16 to 105 (14.5 % CP and 86% TDN; R:C = 25:75). At the end of each FD, heifers were weighted to obtain the shrunk final BW and slaughtered in the same slaughterhouse. The final BW and hot carcass weight (HCW) were greater (linear effect; P ≤ 0.01), respectively, for heifers on 105FD (442 and 244 kg) compared to 75FD (411 and 228 kg) and 45FD (374 and 206 kg). The DMI, backfat thickness and longissimus area increased over FD (linear effect; P ≤ 0.01; 45FD = 7.10 kg/d, 5.05 mm and 64.3 cm2; 75FD = 7.68 kg/d, 5.69 mm and 68.5 cm2 and 105FD=7.79 kg/d, 7.04 mm and 73.3 cm2). The FD did not affect carcass gain (P = 0.38) and feed efficiency based on carcass gain (P = 0.84). However, total carcass gain increased over FD (linear effect; P ≤ 0.01; 29, 51.4 and 75.9 kg, respectively to treatments 45, 75 and 105 FD). In conclusion, the feedlot days increase the BW, backfat thickness and longissimus area. However, the feed efficiency based on carcass gain does not reduce when the heifers are submitted for a long time on feedlot.

ABSTRACTHereford and Charolais x Hereford steer calves were given an all-concentrate diet ad libitum. The Hereford steer calves were marketed at about 400, 440 and 475 kg live weight. The Charolais x Hereford steer calves were marketed at about 525, 570 and 610 kg. For each kg increase in slaughter weight of Hereford steers, the digestible energy required per unit live weight gain increased by 0·024 (s.e. 0·009) MJ, the killing-out proportion increased by 0·22 (s.e. 0·08) g/kg, and the backfat thickness by 0·004 (s.e. 0·002) cm. The area of m. longissimus increased by 0·245 (s.e. 0·037) cm2 and 0·139 (s.e. 0·048) cm2 for Hereford and Charolais X Hereford steers, respectively, for each kg increase in carcass weight. Among Hereford steers, mean backfat thickness as indicated by carcass grade scores (score of 1 to 4 as backfat increases) at the two lowest slaughter weights were similar and lower than scores at the high weight. Among Charolais X Hereford steers, the carcass grade was not influenced by slaughter weight. Slaughtering Hereford and Charolais x Hereford steers at light weights does not ensure that all the carcasses will be lean when the cattle are given a high concentrate diet to appetite from weaning to slaughter.

AbstractSeventy-two crossbred barrows (28.7 ± 0.3 kg live weight (LW)) were used to examine whether there is a relation between eating traits, and performance and carcass traits in ad libitum and restrictedly fed group-housed pigs. The experiment included two replicates, each consisting of 36 pigs. From day 1 to 42, all pigs were maintained with free access to a starter diet containing 12.7 MJ metabolizable energy (ME) and 8.2 g ileal apparent digestible lysine per kg. The experimental period was from day 42 (55.9 kg LW) to the end of the experiment (110.2 kg LW). The pigs in treatment 1 were maintained with free access to a high (H) energy diet (13.1 MJ ME and 7.1 g ileal apparent digestible lysine per kg). For pigs in treatments 2 and 3 the daily energy allowance per pig was restricted to 18 MJ ME above the daily energy requirement for maintenance using diet H, and a low (L) energy diet (12.5 MJ ME and 6.7 g ileal apparent digestible lysine per kg), respectively. The weekly measured LW was used to compute the energy requirements for maintenance (M = 0·719 MJ ME × LW (kg)0.63). Daily food intake and eating traits per pig were determined using transponders and an electronic feeding station equipped with an antenna.Daily energy intake of the ad libitum and restrictedly fed pigs was correlated with growth and lean meat tissue content of the carcass. In the pigs given food ad libitum, daily energy intake was correlated with daily feeder visiting time, time per meal and food intake per meal, but not with number of meals per day and rate of food intake. In the restricted treatments, number of meals per day was correlated with energy intake, but not with lean tissue content of the carcass. In conclusion, number of meals per day explained part of the variation of lean tissue content of the carcass in ad libitum, but not in restrictedly fed group-housed pigs.

ABSTRACTThe effects of halothane phenotype on growth were estimated from generations 1 to 3 of British Landrace positive and negative selection lines. A total of 241 full-sib pairs (castrated male and gilt) from 133 second litters were performance tested from 25 to 85 kg live weight on either ad libitum or scale (0·69 g/g ad libitum daily food intake) feeding.Compared with negative reactors over feeding regimes, positive pigs showed significant advantages in food conversion ratio (−0·07, s.e. 0·02), eye-muscle area (0·8, s.e. 0·3 cm2), proportion of lean in sample joints (16, s.e. 7 g/kg), and visual conformation scores, accompanied by disadvantages in meat colour (5·9, s.e. 2·1 EEL units), incidence of pale, soft, exudative (PSE) meat (0·36 v. 0·05, P < 0·001), post-weaning mortality (0·09 v. 0·01, P < 0·001) and ad libitum daily food consumption (−0·08, s.e. 0·02 kg). In addition, there were non-significant indications of an advantage in carcass lean proportion (11, s.e. 10 g/kg), with disadvantages in carcass length (−14, s.e. 7 mm) and proportion of lean in high-priced cuts (−6, s.e. 2 g/kg). Only daily food consumption showed significant selection line × feeding level interaction.Averaged over feeding regimes, an estimated extra return of £1·70 (s.e. 0·50) from lean growth would be offset by increased PSE and mortality to give a net loss of roughly £3·90 (s.e. 1·00) per positive reactor. Taking these results as the minimum difference between homozygotes, and if the gene is additive for lean proportion but recessive for stress susceptibility, the heterozygote would have an advantage of £0·90 over the normal homozygote. The effects of the gene on growth and carcass traits in British Landrace appear similar to those reported in other breeds, although the advantage of positive reactors in lean proportion may be slightly smaller.
