The article presents the main factors influencing the functioning of hotel-restaurant complexes and tourism in Ukraine. It has been established that hotel and restaurant and tourist complexes are included in the structure of the subjects of tourist activity. It was found that in the period 2013– 2019 the volume of services provided by temporary accommodation and catering companies, travel agencies, travel operators, companies providing other services, in particular, booking and related activities, has an unstable dynamic. It was determined that the dynamics of the total number of inbound (foreign), outbound and domestic tourists who were served by tour operators and travel agents by type of tourism was unstable, since the main reason that negatively affected this trend was the economic crisis of 2013–2015 in Ukraine, caused primarily by the instability of the situation in the political sphere. It was determined that in the species classification of tourism, that is, the distribution of tourists who were served by tour operators and travel agents, the highest is the number of outbound tourists traveling outside Ukraine. It was found that the number of domestic tourists is significantly lower than the number of outbound tourists, since on average for 2011–2020 was 23,6 %, and the lowest was in 2019 – 9,4 %, due to the COVID–2019 pandemic, under the influence of which another economic crisis arose not only in Ukraine, but also in the world as a whole. It was found that the proportion of inbound (foreign) tourists in the period 2011–2020 decreased sharply – from 10,6 % in 2010 to 0,5 % in 2020, the reason for which is the decrease in the attractiveness of the tourism industry of Ukraine for foreign tourists. It is noted that the prospects for further research in this direction are the development of a methodological approach to assessing the quality of tourism and hotel and restaurant services.

Trials can be defined as prospective human research studies to test the effectiveness and safety of interventions, such as medications, surgeries, medical devices and other interventions for the management of patient care. Statistics is an important and powerful tool in trials. Inappropriately designed trials and/or inappropriate statistical analysis produce unreliable results, with limited clinical use. The aim of this systematic literature review is to identify, describe and synthesise factors contributing to or influencing the statistical planning, design, conduct, analysis and reporting of trials. This protocol will describe the methodological approach taken for the following: conducting a systematic and comprehensive search for relevant articles, applying eligibility criteria for the inclusion of such articles, extracting data and information, appraising the quality of the articles, and thematically synthesizing the data to illuminate the key factors influencing statistical aspects of trials.

The paper analyzes research, technologies, and equipment related to wastewater heat utilization systems. The main factors influencing the development of the industry and the implementation of such systems are given. Such factors include: social, political, economic, technological, legal and environmental. The classification of technologies and equipment for wastewater heat utilization according to the place of heat extraction is given. Namely, low potential wastewater heat can be collected at the treatment plants, in sewer collectors leading to treatment plants and directly in houses. The paper describes the available research in the scientific literature on these three categories The global scientific community is working to create efficient wastewater heat recovery systems. The environmental situation requires greater use of wastewater recovery systems. An important issue is to increase awareness and education of the population, as this approach will increase the degree of implementation of wastewater heat utilization systems in residential buildings.

Of the four main factors commonly regarded as influencing keeping properties of ghee, viz. moisture content, acidity, heat treatment and type of bacterial culture used in souring, the heat treatment was found to be the most important. In general, the higher the final temperature (110° C. and higher) attained during evaporation, the better were the keeping properties of the product, providing that the butter had been heated in contact with curd, boiled as rapidly as possible, and given a minimum amount of stirring. The improved keeping properties conferred on ghee heated to 110–150° C. were promoted by antioxidants (apparently phospholipids) extracted from the curd during cooking.Initial acidity and moisture contents had no effect on storage life of ghee at 38° C., and the practice of grading ghee according to its acidity would appear to be of questionable value. Souring of milk to give 2·5–3·0% lactic acid and the accompanying desirable flavour did not detract from the keeping quality of the ghee made from it.The type of bacterial culture used for souring had only slight influence on keeping quality of ghee, but a marked influence on flavour.Storage life of ghee at 38° C. (‘Indian summer temperature’) could be predicted with fair accuracy from its rate of oxidation at 100° C. in a ‘Swift oxidation tester’.

PurposeThe purpose of this paper is to contribute the advancement of knowledge on food heritage and indigenous entrepreneurship in a non-Western country, specifically in the Persian gardens as the touristic destination for increasing the tourism and food businesses in Iran.Design/methodology/approachThe methodological approach adopted is based on qualitative and quantitative approaches to compare two representative gardens named as Bagh-Chehel-Sotoun and Bagh-Fin, as famous examples of a Persian garden in Iran. The methods supported the research to explain the lack of strategies for improving virtuous cycles in Persian gardens despite their potentials as the main places to attract many tourists.FindingsRegarding local food and the quality of servicing, most of the visitors and tourists (85–90%) had interest to test local and traditional foods around both gardens, but they had no sufficient awareness of Iranian traditional foods. According to the tourists’ interests, the authors concluded the lack of servicing and facilities to present and introduce local and traditional food for tourists.Research limitations/implicationsDespite the limitation of local food services and lack of awareness of tourists about local foods, the implication of the study offers possible avenues to promote local food business.Practical implicationsThe results could be useful for cultural heritage and tourism organizations and for investors in the economic sector due to more exploitation of the tourism industry.Originality/valueThe paper is the first work evaluating the Persian garden with a new perspective of local foods in Iran.

Introduction. The tourism industry is one of the most promising sectors of the economy, as international revenues consist of the costs of incoming tourists, including payments to carriers for transport, the cost of temporary accommodation, prepayment for goods and services in the host country. The development of the tourism industry encourages the improvement of its own infrastructure, the creation of new jobs. In the world's leading tourist centers, revenues from international tourism are one of the most important components in the country's economy. For example, in Spain, Italy, Turkey in 2018, revenues from international tourism amounted to 12% of GDP, in the UK - 11%, in Egypt - 15%, in Greece - 20% of GDP. At the same time, Ukraine's direct contribution of tourism to the country's GDP was only 1.5%, which suggests that tourism is an undervalued asset. Purpose. The purpose of the article is to develop a methodological approach to assessing the level of management of the tourism market of the regions of Ukraine. Method (methodology). The methodological basis of the article consisted of general scientific methods - the method of generalization, comparison and description, methods of data systematization, statistical analysis of data. Results. The conducted diagnostics of the processes of formation and management of the tourist market of the regions of Ukraine gives grounds to assert that powerful tourist centers have been formed in Ukraine, the quantitative indicators of which do not depend on the forms of ownership; the efficiency of the tourism industry in the region largely depends on the number of travel agents, tour operators, their income, the number of sold tourist vouchers, the total number of tourists and the number of tourists served; in all regions of Ukraine, tour operators and travel agents are mainly focused on providing services to citizens of Ukraine for travel abroad, this fact is a consequence of too slow development of domestic tourism; the share of foreign tourists in the tourist flow of Ukraine is constantly decreasing, despite the obvious positive changes in the development of infrastructure, level of service, image factors. The explanation for this is the gradual increase in the number of Ukrainian citizens who choose and can afford to travel abroad due to the introduction of a visa-free regime with a number of countries and the growth of financial well-being of the average household.

There are several challenges on way to the forming modern international tourist center on the territory of Crimea meeting the criteria of a year-round, demand and competitiveness. The harmonization of tourism product’s prices and its quality is the main among them. Existing currently unbalanced price policy of tourist service enterprises in the territory of the peninsula could have a negative impact on the region’s image and lead to the loss of competitive position in the market of tourist services. This explains the relevance of this study and its purpose. The research aimed at evaluating the experience of successful development of tourism in foreign destinations and analyzing the factors influencing the pricing policy of tourist service enterprises in the Crimean destinations. To achieve the objectives of the study the authors analyze the approaches to the definition of "destination" and "image". There are a variety of definitions of these terms, but they are all focused on a consumer’s comprehensive perception of tourism product. The distinctive features of main consumer of tourist services in Crimea are established. The reasons for the success of tourism in the destinations in Turkey and Egypt are analyzed. The authors have revealed that the government's efforts to support enterprises in Crimean tourism industry create preconditions for improving the quality of tourism products and the introduction of pricing policies aimed at reducing prices. The article provides an analysis of the factors influencing the pricing policy of tourist service enterprises in Crimean destinations through the method of PEST-analysis. The authors concluded that the current pricing policy of the majority of tourist service companies on the territory of the Republic of Crimea, is apart from the pricing policy of its nearest competitors, does not meet the quality of service and, therefore, does not meet the expectations of the consumers.
