The analysis of modern achievements in the technology of producing bread from triticalе flour using additives of vegetable origin has shown that the finished product is not always characterized by a balanced chemical composition caused by a low content of micronutrients, organoleptic indicators, uneven porosity of the crumb. Obtaining bread of increased nutritional and biological value is achieved due to the use of carrot powder and triticalе flour of the T-70 variety. The bread prepared accordingto the proposed method has improved physico-chemical parameters, which ensures the production of products of sufficient volume with a more elastic crumb and well developed porosity. To evaluate the quality of bread, generally accepted methods were used in the bakery industry. Protein content was determined by Kjeldahl titrimetric metod (GOST 13496.4–93), phosphorus was determined by vanado molybdate metod (GOST 26657–97), calcium content was determined by trilonometry metode with fluorexone (GOST 26570–95). Bread obtained using additives of plant origin is of interest from the point of view of chemical composition and can be considered as a product of therapeutic and prophylactic purpose.

Buffalo milk due to its high fat content from the energy point of view is more valuable compared to cow's milk. Thepercentage of fat varies depending on the stage of lactation, season, individual, health, animal age and diet. The studyof the chemical composition and the antioxidant capacity of buffalo milk is required for both scientific andtechnological considerations, given the importance of this type of milk in the consumer's diet. The purpose of this studywas to evaluate the antioxidant capacity and the physico-chemical composition of buffalo milk by lactation. Buffalomilk can have different qualities, so the quality of buffalo milk is also determined by its content in its components(protein, fat, lactose, vitamins, fatty acids, water content, antioxidant capacity). The physicochemical parameters andantioxidant capacity were influenced by lactation, presenting the highest values in lactations III and IV. Duringlactation I, parameters such as fat, protein and lactose showed a content of 7.88, 4.35 and 4.71%, respectively.Furthermore, in lactation IV, fat, protein and lactose had increased, showing the content of these parameters as follows9.53, 4.68 and 4.77%. Antioxidant capacity of buffalo milk showed the highest numbers in lactation III (360.1) and IV,358.9 μg/ml. From all of the analyzed parameters, only total dry substance content presented the most increased values18.9% in lactation I.

In this article, it is proposed to improve the technology of preparing baursaki dough for children with the addition of carrot flour. I focused on the advantages and features of carrot flour, was selected as an additive to the test for baursaks, and analyzed the chemical composition. In the course of the study, for wheat flour 5%, 10%, 15%, 20%, 25% cook baursaks with the addition of carrot flour. The dough was kneaded with a mixer, as it had a creamy consistency. Baked baursaks with the addition of carrot flour had good organoleptic quality indicators. The use of an optimal recipe prepared with the addition of carrot flour to wheat flour shows the effectiveness of the production of national baursaks and allows not only to improve the quality of finished products, but also to expand the range of food for children. Baursaks prepared from a mixture with 15% carrot flour are recognized as the most suitable for organoleptic and physico-chemical parameters.

O Brasil apresenta grande disponibilidade de água doce em seus mananciais. Fazendo parte desse recurso encontra-se, o rio Paciência, localizado na Ilha do Maranhão destacado pela sua importância local, principalmente por contribuir com suas águas para recarga dos mananciais subterrâneos, fonte de abastecimento público de vários bairros de São Luís, capital do estado. No entanto, este rio vem sofrendo comprometimento da qualidade de suas águas, consequência do processo de uso e ocupação dos espaços em sua bacia. Destacando-se como um dos principais problemas relacionados a qualidade de ambientes fluviais,  a eutrofização, que consiste no processo em que o corpo d’água adquire elevados níveis de nutrientes (fosfatos e nitratos), é um indicador determinante da qualidade da água. Neste sentido, o objetivo deste trabalho foi caracterizar a qualidade da água e do estado trófico na bacia hidrográfica do rio Paciência atráves dos parâmetros fisico-químico evidenciando os trechos mais comprometidos conforme os valores alcançados nas análises. Os resultados das análises foram comparados com a CONAMA No. 357/05 que indicaram uma situação preocupante quanto à qualidade da água no local de estudo.Palavras-chave: Qualidade de água; Eutrofização; Ilha do Maranhão. ABSTRACTThe Brazil has great availability of fresh water in its springs. Within these contexts, the Paciência River, located on the Island of Maranhão stands out for its local importance, mainly for contributing its waters to the recharge of the underground springs, source of public supply of several districts of São Luís, capital of the state. However, this river has been compromising the quality of its waters, a consequence of the process of use and occupation of the spaces in its basin. Highlighting as one of the main problems related to the quality of fluvial environments, eutrophication, which consists of the process in which the body of water acquires high levels of nutrients (phosphates and nitrates), is a determinant indicator of water quality. In this sense, the objective of this work was to characterize the water quality and trophic status in the Paciência river basin through the physico-chemical parameters, showing the most compromised stretches according to the values reached in the analyzes. This paper presents the results of pedological and phytocoenological research focused on the detailed research of chemical parameters (pH, organic carbon, and nutrients), risk elements (As-metalloid, Cd, Co, Cr, Cu, Ni, Pb, and Zn), and species composition of the vegetation of two different peatlands on the territory of Slovakia—Belianske Lúky (a fen) and Rudné (a bog). Sampling points were selected to characterize the profile of the organosol within the peatland, the soil profile between the peatland and the agricultural land, and the soil profile of the outlying agricultural land, which is used as permanent grassland. Based on phytocoenological records, a semi-quantitative analysis of taxa in accordance with the Braun–Blanquet scale was performed. The study revealed that the thickness of the peat horizon of the fen in comparison with the bog is very low. In terms of the quality of organic matter, the monitored peatlands are dominated by fresh plant residues such as cellulose and lignin. Differences between individual types of peatlands were also found in the soil reaction and the supply of nitrogen to the organic matter of peat. The values of the soil exchange reaction were neutral on the fen, as well as slightly alkaline but extremely low on the bog. A significantly higher nitrogen supply was found in the organic matter of the fen in contrast to the bog. At the same time, extremely low content of accessible P and an above-limit content of As in the surface horizons were also found on the fen. From the phytocoenological point of view, 22 plant species were identified on the fen, while only five species were identified on the bog, which also affected the higher diversity (H’) and equitability (e). The results of the statistical testing confirmed the diversity of the studied peatlands and the different impact of environmental variables on plant diversity.

This paper shows the results obtained in field analysis performed at the Tamis River, starting from the settlement Jasa Tomic - border between Serbia and Romania to Pancevo - confluence of Tamis into the Danube. The Tamis is a 359 km long river rising in the southern Carpathian Mountains. It flows through the Banat region and flows into the Danube near Pancevo. During the years the water quality of the river has severely deteriorated and badly affected the environment and the river ecosystem. In situ measurements enabled determination of physico-chemical parameters of water quality of the Tamis River on every 400 m of the watercourse, such as: water temperature, pH value, electrical conductivity, contents of dissolved oxygen and oxygen saturation. The main reason of higher pollution of Tamis is seen in connection to DTD hydro system. Sampling was performed at 7 points with regard to color, turbidity, total hardness, alkalinity, concentration of ammonium nitrogen, nitrite nitrogen, nitrate nitrogen, iron, chlorides and sulphates in samples. The aim of the present work was to evaluate water quality in the Tamis River taking into account significant pollution, which originates from settlements, industry and agriculture, and to suggest appropriate preventive measures to further pollution decreasing of the river's water.

Physico-chemistry and biological data were investigated  from  October 2010 until April 2011 of Jatiluhur reservoir. A total of six sampling stations were selected for this study. The discharge and hidrological data were obtained from Perum Jasa Tirta II Jatiluhur. The results showed that the hydrological regime in the reservoir Jatiluhur was affected by global phenomenon La Nina events in 2010 and early in 2011. Stream flows were determined during sampling to range from 78  to 482.5 m3/s. The water quality findings were as follows: pH (6.93-8.81), temperature (26.37-30.6°C), dissolved oxygen (0.733-5.2 mg/l), conductivity (2.45-233µmhos/cm), COD (7.36-96.9 mg/l), turbidity (4.063-65.6 NTU), total phosphate (0.002-0.324 mg/l), total nitrogen (0.99-5.96 mg/l), chlorophyl (2.237-43.37 mg/m3), visibility (30-160 cm). The eutrophication was pronounced at Jatiluhur reservoir. Canonical Correspendence Analysis found that some water quality parameters correlated positively with the discharge and the water level.

The objective of this study was to investigate the influence of genotype and the energy concentration in the diet on the sensorial and chemical quality of lamb meat. It was evaluated samples from 18 Morada Nova animals, 18 Santa Inez animals, and 18 Santa Inez x Dorper crossbred animals, totalizing 54 animals. The animals were kept with two diets, with energy concentrations of 10.46 and 12.56 MJ ME/kg, respectively, and slaughtered at 30 kg average weight. It was determined contents of protein, moisture, fat and ash, as well as cooking loss, water-holding capacity, shear force, and sensorial attributes of flavour, firmness and juiciness of the meat. Genotype influenced the chemical composition of lamb meat because animals of Morada Nova breed presented the highest moisture content, and Santa Inez x Dorper crossbred showed the highest protein percentage; however, there was no variation in the sensorial attributes of lamb meat of these three genotypes. The diet with the highest energy concentration provides meat with higher juiciness.

The study was to conduct to evaluate the chemical composition and nutritive values of feedstuffs (forages and concentrate mixtures) used for dairy goats nutrition in Vojvodina. Samples were collected from six farms, including one organic farm. The results showed that the relative feed values of analyzed forages were in the range of good, medium to lower quality. Average protein content from lowest to highest for investigated forages was: corn silage (Zea Mays) (65.37-82.57g kg??DM), alfalfa haylage (Medicago sativa L.) (159.99-184.17g kg??DM), pasture (185.30g kg?? DM), and alfalfa hay (Medicago sativa L.) (167.48-203.60g kg??DM). The non-fibre carbohydrates and protein content most varied in organic hay samples (cv: 29.25% and 19.09%, respectively). Generally, feedstuffs used in organic nutrition, including organic concentrate, were of lower nutritional quality and moreover contained higher amounts of crude fibre and lignin. Especially, a high source of variation was observed in investigated concentrate mixtures for the crude protein content (p<0.0001), ranged from 135.32 to 209.87g kg??DM. Corn silages also varied substantially in their chemical composition and significant difference (p<0.05) was observed in regard to acid detergent fibre (ADF) and lignin content (ranged: ADF: 242.20-319.24g kg??DM; ADL: 27.98-52.54g kg??DM, respectively). Furthermore, pasture contained the most soluble materials during May and June and their content was related inversely to crude fibre amount. This survey highlights that investigated farms still pay insufficient attention to the quality of the feedstuff. For the development of intensive goat farming, greater emphasis should be placed on using higher quality feedstuffs, as well, standards for feed quality must be considered and established.

Purpose of the study: The purpose of this study is to make sure that the Bird valley’s quarry water is suitable for drinking purposes or not and to monitor the seasonal variations in the physico-chemical parameters of this quarry water. Methodology: Water samples from the quarry were collected in clean and sterilized polyethylene bottles. Water samples were collected from different points and mixed together to get an integrated sample. Some of the selected physico-chemical parameters of the quarry water have been analyzed. Results were compared with standard limits of IS: 10500-2012. All the parameters were analyzed in the laboratory by using standard methods and techniques. Main Findings: As per the obtained results this quarry water contains a very large number of Coliforms detected in the months of September and December and in June month Coliform count was 33 CFU/ml. This overall result for coliform is making this quarry water unfit for domestic purposes. Applications of this study: This study helps us to understand the current condition of this quarry water and also enables us to know whether the quarry water is fit for drinking purposes. It also enables us to know whether this quarry water can be used for domestic purposes after the treatment. Novelty/Originality of this study: Bird valley’s quarry water has not been analyzed from this point of view till date. This study will help us to understand the present condition of the water.
