This study aimed to evaluate the physico-chemical composition and bioactive compounds of pulp and the peel of the pitomba arising from the state of Sergipe/Brazil. The income, the physico-chemical characterization, mineral content, vitamin C and carotenoids of pulp and pitomba peel were determined. The peel presented high income (44,60% of the fruit). A significant amount of vitamin C (20,68 ± 2,93 mg/100g of fresh sample) and carotenoids (43,56 ± 2,04 μg/mL of the extract) were observed in the pulp, while the peel had a high mineral content, mainly potassium (223,00 ± 2,00 mg/100g), calcium (78,90 ± 0,40 mg/100g) and magnesium (47,50 ± 0,90 mg/100g). The constituents’ knowledge of the peel and pulp of the pitomba in natura adds value to the fruit, since it allows a better use of it, considering that the peel is discarded and only its pulp is consumed.

Effects of fermentation on the chemical composition, mineral, total phenolic, total flavonoid, tannin, vitamin C, total carotenoid content, and antioxidant activity of “Nabag” Ziziphus spina-christi (L.) seeds were investigated. The fermentation process was carried out for 6, 12, 24, and 48 h. The fermentation significantly (p < 0.05) improved the chemical composition and mineral content of “Nabag” seeds, particularly the Ca, Fe, and Zn content. The phenolic, vitamin C, total carotenoid content, and antioxidant activity were significantly (p < 0.05) increased as a result of fermentation compared with unfermented Ziziphus spina-christi (L.) seeds. Fermentation of the seeds for 48 h resulted in the highest increase in crude fiber, Ca, Fe, Zn, and bioactive compounds. These results indicate the potential utilization of fermented “Nabag” seeds in the production and formulation of functional foods rich in crude fiber, essential minerals, and bioactive compounds.

The work had as objective the physico-chemical characterization of yellow mangosteen fruits. Six samples of 25 fruits were harvested in yellow mangosteen plants of the Active Germoplasm Bank of São Paulo State University and characterized by evaluation of length and width, weight, percentage and number of seeds per fruit, peel and pulp percentage, soluble solid (SS), titratable acidity (TA), vitamin C and SS/TA rate. Yellow mangosteen fruit is an intermediate vitamin C source with an average content 120.33 mg/100g of fresh fruit and has good technological quality.

The physical and chemical characteristics of the fruits influence the consumer acceptance. The objective of this study was to perform the physical, physico-chemical and chemical characterization of fruits of accessions of bushy cashew (Anacardium humile A. St.-Hil.) (cashew nut and cashew apple) in a germplasm bank located in southwest of the state of Goi&aacute;s, in Brazil, aiming at the selection of superior accessions, in order to facilitate the initiation of a program to encourage the production and consumption, for provide information for breeding programs and the specie preservation. This research study was conducted at the Laboratory of genetics and molecular biology with material collected in the Experimental Station of the Federal University of Jata&iacute;, within the biological ex situ collection of Anacardium humile, in the field of genetic resources. In the harvest of 2016, within this collection, they were evaluated accesses for the characteristics of the cashew apple: length, diameter of base, apex diameter, weight, instrumental coloration of the epidermis and pulp, titratable acidity (citric acid), vitamin C content (ascorbic acid) and carotenoid content; cashew nut were evaluated: length, width, thickness and weight. The results were submitted to descriptive analysis, obtaining average, minimum, maximum and variation coefficient and the correlation between the variables, testing the significance by the t test. Most of the accesses showed high CV for most of the variables, demonstrating high heterogeneity of the observed values. Cashew apples have high levels of vitamin C and carotenoids, indicating the nutritional potential of the specie.

The fourth generation cephalosporin antibacterial agent, cefepime, was loaded into layered double hydroxides for enhancing antibiotic efficiency, reducing side effects, as well as achieving the sustained release property. The intercalation of antibiotic into the inter-gallery of ZnAl-layered double hydroxide (LDH) was carried out using ion exchange method, by this constituting a nano-sized organic-inorganic hybrid material for a controlled release novel formulation. Although cefepime is a broad spectrum antibiotic, it has various adverse effects and a significant degradation rate. Thus, the preparation and physico-chemical characterization of nanomaterials able to intercalate this drug is an important study for medical and pharmaceutical field. The antibiotic inclusion into LDHs nanostructure was confirmed by advanced characterization techniques and the release profile of cefepime was analysed with the respect to pH of the simulated media.
