Many farmers are sowing mixed swards containing chicory (Cichorium intybus), plantain (Plantago lanceolata), red clover (Trifolium pratense) and white clover (T. repens) (hereafter termed herb and clover mix). This herb and clover mix has comparable annual dry matter (DM) production to perennial ryegrass white clover pasture (rye/wc), however, it has a different pattern of growth, producing more DM during summer and autumn. The herb and clover mix also has a higher nutritive value and is able to support greater rates of animal production, especially over summer, than rye/ wc in both sheep and cattle. The herb and clover mix is most suited to a rotational grazing interval of 3-4 weeks to an 8 cm residual height, with no winter grazing. When managed appropriately the herb and clover mix is able to persist for at least 2 years and up to 5 years under both sheep and cattle grazing. Plantain (Plantago lanceolata) and chicory (Cichorium intybus) are now widely used in combination with clover species to provide greater annual lamb live weight gains than perennial ryegrass and white clover pasture. Reported selective grazing of the species in herb-clover mixes could potentially detrimentally change the relative abundance of species and decrease lamb production. Lambs were offered three herbage treatments: Pasture (perennial ryegrass and white clover) mix, plantain (plantain, red clover and white clover) mix and a chicory (chicory, plantain, red clover and white clover) mix in each of four seasons for two years. The experiment was a randomized complete block design with three replicates with 18–30 lambs per treatment replicate depending on the season. Lambs were rotationally grazed and fed ad libitum. Selection by the lambs of individually tagged plants within the pasture treatments was observed for three days on two occasions per season. Red clover was the most selected species on day 1, but by day 3 there was no difference in the selection of the species (p < 0.05). Plantain and chicory in the plantain and chicory mixes were selected less on day 1 in autumn relative to the other seasons (p < 0.05). It was concluded that three days of grazing before moving lambs maintained the relative abundance of species in the herb-clover mixes.

The objective of Experiment 1 was to examine the diet selection and grazing preference of ewe lambs for plantain (Plantago lanceolata), chicory (Cichorium intybus), red clover (Trifolium pratense) and white clover (Trifolium repens). This was examined in a herb and legume sward mix containing plantain, chicory, red clover and white clover between seasons under both hard- and lax-grazing. During early spring, the sward predominately comprised plantain (63%) and chicory (21%) and ewe lambs grazed a greater proportion (P < 0.05) of these species and displayed greater (P < 0.05) grazing preference for plantain and chicory ahead of red and white clover. From late spring onward, ewe lambs had a greater (P < 0.05) defoliation rate and a greater (P < 0.05) grazing preference for red clover than for all other species. This greater selection of red clover was particularly evident in summer and autumn when red clover made a greater (P < 0.05) contribution to the sward composition (8–9%) and the overall sward nutritive value dropped. This supports previous evidence, suggesting that diet selection is intrinsically affected by availability, access and palatability. The objective of Experiment 2 was to determine whether ewe lamb grazing behaviour during late summer was affected by time since a pure plantain sward was previously grazed. Ewe lambs were observed while grazing plantain of varying weeks since previous grazing (3, 6,10 or 16 weeks). Experiment 2 found no difference (P > 0.05) in the average number of ewe lambs grazing each sward of varying weeks since previous grazing. However, ewe lambs grazed the 3-week-old plantain growth to a lower (P < 0.05) post-grazing sward height than the height of the swards of greater number of weeks since previous grazing. Organic matter digestibility and metabolisable energy content did not differ (P > 0.05) among all swards, regardless of weeks since previous grazing. This suggests that the palatability of plantain is not affected by the time since it was last grazed.

Forty-five plots (3 by 2 m) of perennial ryegrass-white clover pasture were randomly allocated within 3 sites to 5 winter defoliation interval treatments to determine the effect of site on best defoliation interval as measured by winter and spring herbage accumulation. Defoliation intervals were 14, 28, 42, 56, and 84 days. The defoliation intervals resulting in maximum total winter dry matter (DM) accumulation at sites 1 and 3 were 42, 56 and 84 days. Available feed accumulated at the end of winter was highest for the 84-day defoliation interval at both sites (2.0 and 1.4 t DM/ha, respectively). At site 2, maximum total winter DM accumulation was achieved for defoliation intervals of 28, 42 and 56 days. Available feed accumulation at the end of winter was 1.2 t DM/ha for the 42-day interval and did not increase thereafter. The difference in response was associated with pasture composition. The results of the experiment showed that there is scope for flexibility in winter grazing management to suit livestock requirements without compromising total winter dry matter accumulation.

Pasture is the primary feed source for NZ deer production with the greatest proportion grazed in situ. The quantity and quality of the pastures available to grazing deer varies markedly as a result of environmental factors and feed planning decisions by deer farmers. The grazing behaviour of deer responds to changes in pasture height and mass and the effect of pasture variables (height, pre -and post-grazing pasture mass and pasture allowance) on deer productivity are presented. These show that maximum levels of deer production from pasture will be achieved at a pasture height of around 8 cm (continuously stocked or post-grazing) although there is some evidence that for large genotypes, higher pasture availability is required. The relationship of liveweight gain of young deer with pasture availability shows marked seasonal effects. At the same level of pasture availability liveweight gain in spring is about twice that in winter, with autumn and summer intermediate. Increasing pasture availability cannot compensate for seasonal differences in liveweight gain. Furthermore, liveweight gain increases at a greater rate in spring than winter to increasing pasture availability, thus it is more important that appropriate pasture allowances are provided in spring than in winter. There is more variability in liveweight gain at a similar pasture availability in summer than in other seasons because of the greater variation in pasture quality in summer with the potential accumulation of seedheads and dead material. Alternative forage species are used in deer production for times of the year when quantity and quality of perennial ryegrass-based pastures limit productivity. Relative to weaner red deer grazed on perennial ryegrass/ white clover pasture, grazing on pure swards of red clover or chicory increased growth during autumn by 26-47% and during spring by 10-14%. The proportion of stags attaining target slaughter liveweight at 12 months of age increased from 75 to 94%. Pre-weaning growth during lactation was increased by approximately 20%. Red clover and chicory produce a greater proportion of their total DM during late summer and autumn than does perennial ryegrass/white clover pasture, and are therefore better aligned with deer feed requirements, particularly those of lactating hinds. Grazing on sulla in autumn and spring increased the growth of weaner deer by 33 and 10%, relative to pasture fed deer. Indoor studies showed that relative to perennial ryegrass, chicory was of higher organic matter digestibility, disintegrated more rapidly in the rumen with a low rumination time and had shorter mean retention time of material in the rumen. This explains differences in voluntary feed intake which were 56, 26 and 15% higher for deer grazing chicory than perennial ryegrass/white clover pastures during summer, autumn and spring respectively. Similar r esults have been found for the digestion of red clover versus perennial ryegrass by red deer. Plant density in stands of both chicory and red clover declines with time, with their lifetime under deer grazing being approximately 4 years. A mixture of both plants offers a food option as specialist forage for increasing deer growth and also fixing nitrogen. To ensure good persistence such forages should not be grazed in periods of prolonged wet weather. Best persistence is obtained when these are managed as specialist forages for increasing deer growth on a small area of the farm, (10- 20% total area), rather than being sown as a mixture with grasses over large areas of the farm. There is no specific comparison of deer production under different stocking systems and both continuous grazing and rotational grazing are used. Based on evidence and practices with other species, choice of stocking system has more to do with pasture/forage species, feed budgeting, pasture management and animal behaviour than with productivity. At high stocking densities (150 deer/ha), the grazing time of subordinate animals is reduced. Where possible, without inducing undue stress (e.g. at weaning), young deer should be grouped for grazing by liveweight. Deer production systems have a seasonal pattern of energy demand that does not match that of pasture growth in most NZ environments. This calls for manipulation of the feed demand by integration of livestock systems and/ or modification of the feed supply through conservation and supplementation. The most commonly used supplements are pasture and lucerne silage/baleage and grain. The quality (ME/kg DM) has a significant impact on the resulting liveweight gain.

ABSTRACTSilage cut twice annually (June and August) from a tetraploid red clover/grass sward and three times annually (May, July and September) from a low nitrogen (N) and high N perennial ryegrass/white clover sward was fed in proportion to dry-matter yield from each cut, over a 10-week period, each winter for 3 years to castrated male cattle of initial live weight 401 kg in year 1 and 425 kg in years 2 and 3. The silages were supplemented with 0, 1, 2 and 3 kg concentrate per head daily.Total dry-matter yield from the red clover/grass sward was similar to that from the perennial ryegrass/white clover sward (high N grass) receiving 360 kg N per ha but the digestibility, particularly of first cut material was much lower. Dry-matter production of the low N grass/white clover sward was 0·73 of high N grass sward and produced silages of similar digestibility and fermentation.Dry-matter intakes by the cattle were higher on the legume-based silages in years when clover made a worthwhile contribution to total yield, but this did not significantly improve utilization or animal performance compared with high N grass silage. Mean daily carcass gain per head on red clover/grass silage was 0·41 kg which was significantly less than the 0·61 kg on white clover/grass silage and 0·59 on high N grass (P < 0·001). Carcass output from red clover/grass silage was 618 kg/ha and 629 kg/ha from white clover/grass, both of which were significantly less than the 863 kg/ha from the high N grass silage (P < 0·001). Dressing proportion was also significantly poorer in animals fed red clover/grass silage compared with the other silage types.

SummaryDuring 3 years, three groups of 20 Scottish half-bred ewes were grazed on perennial ryegrass, white clover or red clover. During this period the two legumes were oestrogenic, in terms of teat-length extension of wethers, but the perennial ryegrass was not. The white clover was only markedly oestrogenic when there was a high proportion of diseased leaves. The mean litter size and lambing percentage of the ewes grazed on red clover was significantly reduced. White clover, although it was oestrogenic, had no effect on mean litter size or lambing percentage. The mean litter size of the ewes on the perennial ryegrass was 2·35, 2·30 and 2·24, on the white clover was 2·20, 2·33 and 2·23 and on the red clover was 1middot;60, 1·67 and 1·78 for the three lambings. Lambing percentage of the ewes on the perennial ryegrass was 175, 225 and 218, on the white clover was 210, 222 and 189, and on the red clover was 160, 128 and 118 for the three lambings. The lambing date of the ewes grazing on the red clover was significantly later at the third lambing.

In many south-eastern Australian dairying regions, supraoptimal ambient temperatures (Ta > 30°C) often challenge the perennial ryegrass (Lolium perenne L.)-dominated feed-base during the summer months. A glasshouse experiment was undertaken to identify alternative summer-active temperate (C3) perennial forages more tolerant of supraoptimal temperature stress (day/night Ta of 38/25°C) than perennial ryegrass. Supraoptimal temperature stress was imposed both with and without irrigation. Chicory (Cichorium intybus L.) was the only species to survive 18 days of combined supraoptimal temperature stress and non-irrigation. Lucerne (Medicago sativa L.), plantain (Plantago lanceolata L.), and tall fescue (Festuca arundinacea Schreb.) survived 12 days of this treatment. Twelve days of exposure to these conditions caused death of perennial ryegrass, prairie grass (Bromus catharticus Vahl.), cocksfoot (Dactylis glomerata L.), birdsfoot trefoil (Lotus corniculatus L.), and red clover (Trifolium pratense L.). Irrigation (daily to through drainage) mitigated detrimental effects of imposed supraoptimal temperature stress on the growth and survival of all species. Chicory and to a lesser extent lucerne, plantain, and tall fescue may have a role to play in south-eastern Australian dairying regions, where supraoptimal temperature stress is a frequent and ongoing issue.

Herbage dry matter (DM) production, botanical composition and nutritive value of pastures were measured in response to the application of 24 g/ ha gibberellic acid (GA; 60 g ProGibb®/ha) and 50 kg N/ha nitrogen fertiliser (N; 106 kg urea/ha) in autumn. Responses were compared for simple two species grass (perennial ryegrass or tall fescue)-white clover pastures and multi-species pastures where herbs (chicory and plantain), legumes (red clover and lucerne) and prairie grass were sown with the simple mixtures. Four weeks after application, the increase in DM yield averaged across pasture mixtures relative to untreated plots was 273, 104, and 493 kg DM/ha for GA alone, N fertiliser alone, and GA and N combined, respectively. Application of GA increased the white clover percentage in all pastures except simple tall fescue pastures. The percentage of herbs in multispecies pastures was increased by application of N but not GA. Crude protein concentration was decreased by GA application in all pastures except simple ryegrass pastures. The results from this study show that it is important to consider the botanical composition of pastures when determining the effect of GA on DM yield and nutritive value. Chicory (Cichorium intybus) is perhaps best known for the extract of its roots used as an ingredient in ‘coffee substitute’ beverages. It is less well known as a grazed forage for ruminants. Thomas et al. (1952) reported the high content of some major and minor trace minerals in chicory grown in the UK, and commented on its use in pasture mixtures as a source of these minerals. Chicory was first mentioned in New Zealand (NZ) literature as an animal forage by Cockayne (1915), but a long period then elapsed before Lancashire (1978) reported its excellent value for forage production under rotational grazing in dry summer conditions. Plant selection then followed and the cultivar ‘Grasslands Puna’ was approved for commercial release as a grazed forage plant in 1985 (Rumball 1986). The use of Puna chicory has now spread throughout NZ and the variety is also being used commercially in Australia, North America and South America and is being evaluated in parts of Europe and Asia (W. Green, personal communication). Chicory is a herb, whereas other temperate forages used for ruminant production are either grasses or legumes. This paper reviews work on the chemical composition, nutritive value and feeding value of chicory relative to perennial ryegrass (Lolium perenne) and to red clover (Trifolium pratense), a legume that, like chicory, is used as a forage for dry summer conditions. Throughout this paper, feeding value is defined as the animal production response to grazing a forage under unrestricted conditions (Ulyatt 1973), with its components being voluntary feed intake (VFI), the digestive process and the efficiency of utilization of digested nutrients; the latter two comprise nutritive value/dry matter (DM) eaten.

ABSTRACTSilages were made from the primary growth of perennial ryegrass (Lolium perenne) or red clover (Trifolium pratense) and were given ad libitum to 52 British Friesian cows, together with 70 kg dry matter per day of a barley/ground maize/soya bean supplement in 2 years. Twenty of the cows were used in both years, providing a total of 72 observations. Three treatments were imposed during weeks 3 t o 20 of lactation: red clover silage, (RC/RC); red clover silage, weeks 3 to 10, grass silage weeks 12 to 20 (RC/PRG); grass silage (PRG/PRG).Apparent digestibility of the gross energy assessed in lactation weeks 14 and 15 was slightly lower for red clover than for perennial ryegrass (0·683, 0·706 and 0·701 for treatments RC/RC, RC/PRG and PRG/PRG respectively). There was no effect of previous treatment on the digestibility of perennial ryegrass diets (RC/PRG v. PRG/PRG). Cows given red clover silage consumed proportionately 1·22 of the dry matter and 1·09 of the digestible energy ingested by those given perennial ryegrass. The intake of perennial ryegrass in mid lactation was similar, irrespective of early lactation treatment.During weeks 3 to 20, cows given red clover yielded 1·9 kg more milk than did those given perennial ryegrass (P < 0·01). However, this milk had a significantly lower concentration of fat (P < 0·01; 37·2 and 41·2 g/kg for treatment RC/RC and PRG/PRG respectively). In mid lactation the cows that had received red clover silage in early lactation (RC/PRG) had the lowest yield of milk, milk fat, protein and lactose and the difference between this treatment and PRG/PRG was significant for milk and milk fat yields (P < 0·05).Red clover silage rather than perennial ryegrass silage of similar digestibility resulted in higher silage intake and higher yields of milk, milk protein and lactose. However, the strategic use of red clover silage to increase yield in early lactation did not induce positive residual effects in mid lactation; rather, there was evidence of a negative effect on milk and milk-fat yield.
