Hericium erinaceus is reported as a source of several nutritional contents and bioactive compounds, especially β-glucan. However, various uncontrolled processes lead to the formation of byproducts that can affect human health, including biogenic amines. These amines are concerning, because their presence is an important indicator of the process of hygiene and food spoilage or quality. A better understanding of various pretreatment processes can control the content of biogenic amines. In this work, we studied the effect of pretreatment processes, i.e., sample size (whole, ripping, and chopping); heating process (non-heating, blanching, and boiling); and drying method (nondrying, hot air drying, and freeze-drying) on biogenic amine contents in H. erinaceus extract. A method of the post-column high-performance liquid chromatography (HPLC) technique was used for the analysis of putrescine (PUT) and spermidine (SPD) in H. erinaceus extract following the acceptable guidelines. In this study, treatment 20 (chopping/non-heating/hot air drying) was suggested as a good choice for the pretreatment process, because low levels of PUT and SPD were shown in the extract while high levels of the bioactive compounds β-glucan and antioxidant activity were presented. This treatment process can be applied to the industry because of its easy operation and cost-saving.

AbstractThe drying of sweet potatoes not only helps to prolong its storage life but the dried form reportedly enriched with high bioactive compounds than regular sweet potatoes. The study aims to investigate the influence of dual-frequency ultrasound pretreatments (40 and 60 kHz) at two different hot air drying temperatures (70 °C and 80 °C) on quality of dried product. Ultrasound pretreatment at 40 kHz with 70 °C maintained the phytochemical compounds in the dried sweet potatoes. Ellagic acid and chlorogenic acid were found as predominant phenolic acids using HPLC analysis, while identification of two new bioactive compounds quercetin-3-rhamnoside and quercetin 3-β-D-glucoside were the novel finding of the current study. A short new band appeared in FTIR in all treatments from 2164 to 2041 cm−1 which refers to C = C alkenes functional group. The multivariate analysis showed a great influence of USH3 and USH1 with a positive relationship with most of bioactive compounds.

Abstract Eucalyptus deglupta is one of the promising medicinal plants from Mytracea family consisting of bioactive compounds that are to be used in medications. The bioactive compounds present in Eucalyptus deglupta were extracted at the best yield using a hybrid drying method consisting of ultrasound assisted osmotic dehydration (UOAD) and hot air drying in this study. The drying conditions of UAOD were optimised with response surface methodology (RSM) to attain the highest antioxidant activity via of DPPH radical scavenging assay. Four parameters were optimised with response surface methodology, namely concentration of sucrose (v/w), temperature (°C), duration of drying and intensity of ultrasound (%) ranged from 30% to 50%, 20°C to 60°C, 40 min to 100 min and 60% to 100%, respectively. A series of 27 combinations of the UAOD drying conditions were performed and followed by hot air drying performed at 60°C until a constant weight was achieved. A moderate scavenging activity of DPPH assay (56.12%) was achieved at a concentration of sucrose, temperature, duration of drying and intensity of ultrasound of 50%, 40°C, 100 min and 264 W, respectively.
