Foliar application of a vegetal-derived protein hydrolysate as a biostimulant was assessed for possible interaction with the ripening of diploid watermelon grafted onto interspecific hybrid rootstock. Assessment encompassed crop performance; fruit morphometric and sensory quality traits; soluble carbohydrates; macrominerals; and bioactive composition at 10, 20, 30, 40, and 50 days post anthesis (dpa). The biostimulant effect on yield components was confounded by the vigorous rootstock effect. Pulp firmness declined precipitously with cell enlargement from 10 to 30 dpa, and the biostimulant phyto-hormonal potential on firmness and rind thickness was masked by grafting. Pulp colorimetry was determined solely by ripening and peaked at 40 dpa. The biostimulant effect reduced lycopene content by 8% compared to the control. Total sugars coevolved with soluble solids content, peaked at 30 dpa, and then stabilized. Fructose and glucose prevailed during rapid fruit growth from 10 to 30 dpa and sucrose prevailed at advanced ripeness between 40–50 dpa, whereas acidity peaked at 20 dpa and then decreased. Potassium, which was the most abundant micromineral, peaked before full ripeness at 30 dpa. The biostimulant effect on the watermelon fruit ripening process is not granted, at least regarding the conditions this study was carried out under. The absence of biostimulant effect might relate to rootstock vigorousness, the grafted watermelon physiology, or the type of biostimulant used.

The beneficial effect on yield and quality of `Anna' apple fruits for the application of ascobine at 0.1% and citrine at 0.6% was studied during 1995 and 1996. Results showed that two citrine sprays at start of growth and 30 days later of ascobine at 0.1% or citrine at 0.6% were of material promotion effect on yield, fruit weight, total soluble solids, and total sugars, while reducing the total acidity. Both fertilizers were equally very effective in all the studied characters. The most striking and promising treatment was the application of ascobine at 0.1% or citrine at 0.6% twice during the growing season; i.e., growth start at 30 days later.

The aim of this study was to determine some physicochemical characteristics of fruits of eight strawberry cultivars (Aromas, Camino Real, Campinas, Dover, Oso Grande, Toyonoka, Tudla-Milsei and Ventana) cultivated in organic and conventional systems. The evaluated characteristics were soluble solids (SS), titratable acidity (TA), SS/AT ratio and anthocyanins. Evaluated sensory characteristics were flavor and appearance. The cultivars had a differential performance between themselves and among the systems for the evaluated characteristics. Generally, the conventional system produced fruit with higher levels of soluble solids and, organic system produced higher concentrations of anthocyanins. The fruits of the cultivar Toyonoka had the best soluble solids content in both systems and the anthocyanins content of 'Tudla-Milsei' and 'Camino Real' were proeminent in comparison to the other cultivars. The fruits from the organic system of production were preferred by judges on the sensorial attributes. The highest notes were given to the appearance of the cultivar Ventana in the conventional system and 'Tudla-Milsei' in the organic system.

Abstract The study was conducted to determine the effects of Myrobalan rootstock and Blackthorn interstock on fruit physical and chemical traits of five apricot cultivars. The results showed that cultivars grafted on Myrobalan rootstock appear to induce a higher fruit mass when compared with the Blackthorn interstock. Blackthorn interstock showed a tendency to induce a higher soluble solids/titratable acidity ratio than Myrobalan. Values of soluble solids content, total sugars, titratable acidity and fruit firmness between Myrobalan rootstock and Blackthorn interstock were not significant. Regarding cultivars, the greatest fruit mass observed in Roxana in both treatments, and the lowest in Biljana on Myrobalan and in Vera on Blackthorn. The lowest soluble solids, total sugars and soluble solids/titratable acidity ratio were found in Roxana in both variants of grafting, whereas the greatest titratable acidity also observed in Roxana in both cases, respectively. Based on the results from this study, the fruits of Roxana can be recommended for fresh consumption, whereas fruits of the other cultivars can be recommended for processing.

The effects of prolonged ethylene exposure on external and internal quality parameters of tomato fruits were studied in order to explore the feasibility of its use as a nondestructive technique for screening immature and inferior quality fruit. `Agriset' and `CPT-5' tomatoes were hand harvested at Stage 1 (green) and held at 20°C and 50 ppm ethylene for 1-7 days. Each 24 hours, fruits reaching Stage 2 (breaker) were removed from C2H4 and transferred to 20°C air for subsequent ripening. Tomatoes were considered at edible maturity upon reaching full red-ripe stage and 4 mm deformation and final quality parameters were determined. For both cultivars, fruits which required prolonged C2H4 exposure to reach Stage 2 had lower overall visual appearance. `Agriset' tomatoes which required short exposure times to C2H4 (1 to 3 days) had somewhat higher quality than those requiring prolonged times (4 or 5 days). Days to reach edible maturity were 9.5 and 7.7, respectively. For the short exposure times, peel color was more intense (higher chroma value), while soluble solids content and total sugars were significantly higher (P = 0.05). Quality of `CPT-5' tomatoes was not adversely affected until requiring 6 or 7 days exposure to C2H4. Days to reach edible maturity decreased from an average of 12.5 to 11.0 for 1 to 5 or for 6 to 7 days exposure, respectively. For fruits requiring 7 days exposure, soluble solids content, total sugars and pH were significantly higher than for those reaching Stage 2 in fewer days. There were no significant differences in titratable acidity or ascorbic acid content for either cultivar.

The green pepper (Capsicum annuum L.) is an important Brazilian vegetable and it is very much appreciated, besides being a source of vitamins, minerals and fibers. However, it has serious post-harvest shelf-life problems, such as tissue softening. The exogenous application of pectin methyl esterase and calcium has been shown to be efficient in maintaining the firmness of several fruits. Thus, the present study had as objective to evaluate the effects of the application of exogenous pectin methyl esterase (PME) and calcium in post-harvest conservation of the cv. Yolo Wander. For this, the green peppers were submitted to vacuum infusion with water, vacuum infusion with 7% of calcium chloride and vacuum infusion of PME associated to 7% calcium chloride, fruits without infusion were used as control. Loss of fresh mass, fruit firmness, peel color, soluble solids content, pH, total acidity and PME activity were evaluated. In relation to the loss of fresh mass there was a significant increase over time in all treatments. Also, according to the results, the fruits not immersed or those immersed in calcium chloride showed greater maintenance of the firmness, as well as smaller variations in the activity of the SME and low levels of organic acids. The vacuum infusion with 7% calcium chloride maintained the firmness and the physicochemical characteristics of the green pepper. However, the application of PME + CaCl2 did not promote the maintaining desirable firmness characteristics for the green pepper.

Abstract The physicochemical characteristics of fruits of species native to the Atlantic Forest are little known, especially during ripening. The aim of this work was to evaluate the effect of the interaction between ripening period and post-harvest storage of araçaúna and grumixama. Fruits were harvested at three ripening stages: green, partially ripe and ripe, according to the epicarp color, and separated into two groups, being stored for 2 and 48 hours. The following variables were evaluated: longitudinal (LD) and cross-sectional (CD) diameter, LD / CD ratio, fresh fruit mass (FM), pulp yield (PY), pH, soluble solids content (SS), titratable acidity (TA), SS / TA ratio, and ascorbic acid content (AA). Araçaúna fruits stand out due to their high PY (74.43%), with low SS (2.07 ºBrix) and high TA (1.17% citric acid). However, harvesting fully ripe fruits increases SS by 21% and reduces TA by 32.5%. Grumixama fruits are slightly sweet (6.06 ºBrix), with low acidity (0.39% citric acid), high vitamin C content (206.94 mg of ascorbic acid/100g of pulp), and harvest must be performed when fruits are fully ripe. Both species have pulp of potential quality to be commercially exploited, especially for processing.

Guazuma ulmifolia Lam., popularly known as mutamba, mutambo and mucungo, is widespread throughout Latin America. Studies on the physicochemical characteristics and the technological application of its constituents can support its use as raw material for enrichment and formulation of food products. This study aimed at to identify substances of food interest derived from mutamba fruit, through its physical, physicochemical, proximate, mineral, bioactive compounds and antioxidant activity characterization in two maturation stages. The incomplete and full physiological maturation had, on average, mass of 5.52 and 3.54 g, respectively, and acid pH of 4.84 on average. Soluble solids content increased with maturity reaching 32.9 °Brix. Regarding proximate composition, it was observed an increase in protein, lipid, crude fiber and ash; and reduction of 80% in moisture. The most concentrated minerals were K, N, Ca, P and Mg. The content of anthocyanins, polyphenols, yellow flavonoids and the antioxidant activity increased with maturation, while vitamin C remained at 1500 mg.100 g-1. This study is innovative as mutamba fruits with incomplete physiological maturation were characterized for the first time. That mutamba fruits, no matter the physiological maturation, have potential of exploitation in the food industry, due to their high content of soluble solids, as well as in the enrichment of other food products as source of vitamin C and minerals.

The cultivar Annurca is an apple that is cultivated in southern Italy that undergoes a typical redding treatment and it is appreciated for organoleptic characteristics, high pulp firmness, and nutritional profile. In this study, the effects of three different biostimulants (Micro-algae (MA), Protein hydrolysate (PEP), and Macro-algae mixed with zinc and potassium (LG)), with foliar application, on the quality parameters of Annurca apple fruits at the harvest, after redding, and at +60 and +120 days of cold storage were analyzed: total soluble solids (TSS) content, total acidity (TA), pH, firmness flesh, and red coloration of epicarp. Additionally, the polyphenolic quali-quantitative profile of pulp and peel was analyzed by UHPLC-Q-Orbitrap HRMS and Folin-Ciocalteu and the antioxidant capacity with the methods 1,1-diphenyl-2-picrylhydrazyl (DPPH) and ferric-reducing antioxidant capacity (FRAP). The results obtained suggest that biostimulants are involved in the regulation of the secondary metabolism of the treated plants, acting positively on the quality of the Annurca fruits and their nutritional value. Fruits treated with PEP have shown, during cold storage, a significantly higher content of total polyphenols in flesh and a higher concentration of phloretin xylo-glucoside and phloridzin (350.53 and 43.58 mg/kg dw respectively). MA treatment caused, at the same time, an enhancement of flavonols between 0.6–28% and showed the highest total polyphenol content in the peel after 60 and 120 days of cold storage, with 2696.048 and 2570.457 mg/kg dw, respectively. The long-term cold storage (120 days) satisfactorily maintained phenolic content of fruits deriving from MA and PEP application, in accordance with data that were obtained for peel, showed an increase of 7.8 and 5.8%, respectively, when compared to the fruits cold stored for 60 days. This study represents the first detailed research on the use of different types of biostimulants on the quality of the Annurca apple from harvest to storage.

The study of unknown and therefore unexploited genetic material from landraces and wild relatives could be essential to help modern plant breeders to respond to ongoing requirements and new challenges in food production. The present study evaluates the most relevant physicochemical values and nutrient contents of a genetically unique array of traditional melon varieties, cultivated in Spain at least since the 19th century, and compares them with modern melon hybrids available on the market. This research is complemented with an assessment of variety, environment and repetition effects on each trait to determine their stability. Spanish melon landraces displayed extraordinary diversity with respect to juiciness (70.59–95.97 g/100 g water fresh weight), firmness (20.75–149.89 N), soluble solids content (9.57–16.53 °Brix), pH (5.04–6.38), total sugars (360.21–877.36 mg/g dry weight), carotenoids (0.01–2.05 μg/g fresh weight) and ascorbic acid values (7.55–44.33 mg/100 g fresh weight). A subset of these landraces, belonging to Piel de Sapo and Rochet market classes, revealed remarkably superior values of ascorbic acid in comparison with all commercial varieties, doubling ascorbic acid values with respect to their corresponding market class. Furthermore, most of these landraces exhibited high acidity and accumulated high levels of sugars, fulfilling those sensory and physicochemical characteristics that researchers and breeders have spent many years seeking. The possibilities of these landraces to be used in improvement projects are innumerable; they should be surely taken into account in the near future.
