This research aimed to determine the effect of different harvesting times on the chemical composition of stinging nettle (Urtica dioica L.). The leaves of nettle were harvested at the same place once a month in the period of April–September 2019. The analysis focused on the contents of dry matter, soluble solids, ascorbic acid, titratable acidity, chlorophyll a and chlorophyll b, total carotenoids, total phenolic compounds, antioxidant activity, ash content, and macro- and microelements. The nettles harvested in April were characterized by the highest levels of soluble solids and some macro-and microelements (P, K, Fe, Zn). The plants harvested in May were distinguished for titratable acidity, chlorophyll a, chlorophyll b, and carotenoid contents. In this month, the plants were determined to have the highest antioxidant activity during the entire vegetation period. The plants collected in July contained the highest amount of Mn, but the antioxidant activity of these plants was the lowest during the vegetation period. In August, the plants had the highest levels of ascorbic acid, phenolic compounds, and ash, while the plants collected in September were characterized by having the highest amounts of Ca, Mg, and B as compared to those established in other months of vegetation.

The increased consumption of acerola in Brazil was triggered because it is considered as a functional food mainly for its high ascorbic acid content, but the fruit also has high nutritional value, high levels of phenolic compounds, total antioxidant activity, anthocyanins and carotenoids in its composition. The objective was to evaluate the chemical, physical-chemical and antioxidant activity of eight varieties of acerola tree. The acerolas used in the research were the harvest 2015, 8 varieties: BRS 235 - Apodi, Mirandópolis, Waldy - CATI 30, BRS 238 - Frutacor, Okinawa, BRS 236 - Cereja, Olivier and BRS 237 - Roxinha, from the Active Bank Germplasm APTA Regional Alta Paulista in Adamantina - SP. Avaluated the following attributes: pH, titratable acidity, soluble solids, reducing sugar, instrumental color, ascorbic acid, total phenolics, flavonoids and antioxidant activity. The design was completely randomized, 8 varieties and 3 replications of 20 fruits each. Acerola fruit of the analyzed varieties prove to be good sources of phenolic compounds and antioxidant activity, ensuring its excellent nutritional quality relative to combat free radicals. The variety BRS 236 - Cereja presents higher ascorbic acid content, antioxidant activity and phenolic compounds, and the lowest value for flavonoid, which was higher than the other cultivars, especially Olivier and Waldy CATI-30.

Brazil is the third largest producer of fresh fruits in the world. Among fruits, berries such as strawberry, blueberry and blackberry can be highlighted for the benefits they provide to the body, owing to their presence of bioactive compound content. The phenolic compounds, especially anthocyanins and ascorbic acid, are examples of bioactive compounds that mainly function in the body as antioxidants. However, the processing steps that lead to the generation of derivatives from these fruits, are damaging to these compounds, often leading to their loss. Thus, the aim of this study was to physically and chemically characterize fresh berries (strawberry, blueberry and blackberry) and their jams, and also to quantify and to evaluate the antioxidant activity of bioactive compounds in berries and their jams. The following parameters were analyzed: moisture, ash, pH, titratable acidity, soluble solids, and color. The levels of total phenolic compounds, total anthocyanins, ascorbic acid content and antioxidant activity were measured. We concluded that there were significant differences in the chemical composition of berries and jams. There was also a significant loss of bioactive compounds due to processing, nevertheless these jams remain good sources of bioactive compounds, and are still considered important to promote some favorable health effects.

Abstract The Atlantic Forest is recognized as a biome rich in biodiversity. Cambuci trees (Campomanesia phaea) produce fruits that may be consumed as both fresh and processed forms but are still underutilized. The aim of this study was to describe the physicochemical characteristics and bioactive compounds in cambuci fruits from Brazilian Atlantic Forest, located at Natividade da Serra-SP, Brazil. Cambuci fruits of the fifty-nine accessions were characterized according to fresh weight, pulp yield, peel percentage, longitudinal and transversal diameters (LD and TD, respectively), pH, soluble solids content (SSC), titratable acidity (TA), SSC/TA ratio, ascorbic acid, total phenolic compounds content, and antioxidant activity using the DPPH assay. The soluble solids contents varied from 5.10 °Brix to 11.00 °Brix. The titratable acidity varied from 1.29 to 2.90 g citric acid 100 g-1. Ascorbic acid content was of 31.12 to 139.38 mg 100 g-1. Total phenolic compounds varied from 330.5 mg GAE 100 g-1 to 3,526.04 mg GAE 100 g-1. The antioxidant activity was of 65.03 µmol Trolox g-1 fruit pulp (fresh weight) to 199.78 µmol Trolox g-1 fruit pulp (fresh weight), a factor of 6.7 difference between the extremes. These results showed cambuci fruits presented as rich source of ascorbic acid, total phenolic compounds, and with high antioxidant capacity.

ABSTRACT The objective of this work was to evaluate the content of phenolic compounds, anthocyanins and flavonoids extracted with 80% ethanol and water, and antioxidant capacity (DPPH and ABTS) of five blackberry cultivars produced in Western Paraná, Brazil. Brazos, Tupy, Arapaho, Choctaw and Guarani blackberries were studied. Soluble solids, titratable acidity and ascorbic acid of fruits were also characterized. Total phenolic compounds ranged from 8.23 to 14.98 mg GAE g-1 (f.w.) and Arapaho cultivar exhibited the highest contents in both solvents. Anthocyanins ranged from 2.57 to 9.42 mg ECy3glu g-1 (f.w.), being the solvent ethanol 80% more efficient than the water, and Choctaw cultivar showing the highest content. Flavonoids ranged from 0.46 to 1.14 mg EQ g-1 (f.w.) and Guarani cultivar showed the highest content. High linear correlations were found between total phenolics and antioxidant capacity in both extraction solvents. However, linear correlations between anthocyanins and antioxidant capacity were observed only for the aqueous solvent. Ascorbic acid ranged from 87.87 to 134.09 mg 100 g-1, with emphasis on Brazos cultivar. The aqueous extract showed greater ability to scavenge ABTS radical, but the ethanolic extract was more efficient for the DPPH radical. Blackberries produced under Western Paraná conditions showed high levels of antioxidants with emphasis on Arapaho cultivar. This study showed that water and ethanol solvents influence different results on phenolic composition and antioxidant activity of blackberries.

ABSTRACT The family farming from the Borborema Territory-PB, Brazil, produces sweet oranges that supply the regional market. In this context, it is necessary to define standards of identity and quality, as well as to quantify the bioactive compounds in the fruit, in view of adding value and creating more competitive markets. This work sought to evaluate the quality, bioactive compounds and total antioxidant activity (TAA) of oranges from family farming. A 3x3 factorial completely randomized design was used, with three cultivars (Baía, Comum, Mimo-do-Céu) and three maturity stages (predominantly green, green/yellow, yellow), with 60 replications of 1 fruit for the physical evaluations, and 4 of 15 fruit for the others. The whole fruits were evaluated by color index, length, diameter, fresh weight and firmness. The juice was assessed for yield, pH, soluble solids (SS), titratable acidity (TA), SS/AT ratio, and ascorbic acid. Total extractable polyphenols (TEP) and ABTS•+ and DPPH• total antioxidant activity (TAA) were measured in the juice and albedo. The 'Baía' and 'Mimo-do-Céu' oranges presented quality parameters aligned with the CEAGESP standards. On average, the ascorbic acid content was higher than 45 mg 100 g-1, with ‘Mimo-do-Céu’ presenting the highest content (50.26 mg 100 g-1). During maturation, the firmness decreased, and the SS, TEP and TAA of the juice and the albedo increased. In general, the TEP content was about eight-fold higher in the albedo than juice, corresponding to the much higher TAA in this portion, thereby highlighting its higher functional potential, especially for ‘Baía’ orange.

ABSTRACT This study aimed to prepare jellies of conventional type of red strawberry guava (with added sucrose) and no added sugar and evaluate the physical and chemical composition and content of bioactive compounds in them. Four jellies formulations were prepared: conventional with addition of sucrose (F1), aspartame (F2), saccharin and cyclamate (F3), acesulfame and sucralose (F4). Physicochemical analysis of pH were carried out, as well as analysis of titratable acidity, total soluble solids, ashes, proteins, lipids, moisture, carbohydrates, calories, lightness, color tone, total phenols, anthocyanins, carotenoids, ascorbic acid and antioxidant activity, by the capture of DPPH and ABTS radicals. Conventional and no added sugars jellies did not differ for total phenols, total anthocyanins and ascorbic acid. However, processing exerted significant influence (p=0.05) on total carotenoids and antioxidant activity. It is feasible to use red strawberry guava for the preparation of conventional and no added sugar jellies. The products, however, show a significant difference in carotenoids content, with the highest content of these and higher antioxidant activity in processed jellies without sugars addition.

Potassium (K) fertilization may affect peach quality and preservation. This study aimed at evaluating the effect of doses of K on physico-chemical and functional characteristics of ‘Sensação’ peaches in the postharvest period. Mass loss, pulp color, total soluble solids, titratable acidity, pH, pulp and skin firmness, total concentrations of phenolic compounds and carotenoids and antioxidant activity were evaluated in fruits. The experiment was a randomized block design in a 5x3 factorial scheme, five doses of fertilizers (0, 40, 80, 120 and 160 Kg ha-1 K2O) and three storage periods (harvest day, 10 days and 20 days in cold storage at 1±1ºC, followed by a day of simulated commercialization at 20±1ºC). Mass loss, pulp firmness, phenolic compounds, antioxidant activity and carotenoids decreased when fruit underwent cold storage, independent of the dosage of K fertilization. Doses of 40 and 160 kg ha-1 K2O applied to the soil lead to a larger number of phenolic compounds and higher antioxidant activity in fruits at harvest time. After cold storage, fertilization with 160 kg ha-1 K2O exhibited the highest antioxidant activity and the lowest mass loss in fruits. Increase in doses of K strengthened the color of peach pulp

Blackberries are an excellent source of natural antioxidants. Fully ripened fruit of `Apache', `Arapaho', `Chester', `Loch Ness', `Navaho', and `Triple Crown' thornless blackberries were evaluated for their physicochemical and antioxidative activity. Differences in initial pH, titratable acidity (TA), total soluble solids (TSS), TSS/TA ratio and soluble sugars (reducing sugar, sucrose, and total sugars) differed among cultivars. Differences among cultivars with respect to reduced ascorbic acid (AA) were established, but there were no differences in either oxidized ascorbic acid (DHA) or total ascorbic acid (TAA) content. Antioxidant activity was determined by ABTS radical cation procedure for fractionated crude fruit extracts and the cultivars varied in the parameters evaluated. Hydrophilic antioxidant activity (HAA) was not different among cultivars evaluated. In contrast, lipophilic antioxidant activity (LAA) and total antioxidant activity (TAA) differed. The results obtained in this study indicate that Alabama-grown blackberries vary in their quality indices and are an excellent source of natural antioxidants. Information compiled will assist in marketing, handling, postharvest storage of these fruit and serve as a guide to partial fulfillment of recommended daily dietary requirements.

The present work evaluated the influence of calcium silicate on the polygalacturonase enzyme activity, respiration, ethylene, and the physicochemical characteristics on the post-harvest quality of two tomato hybrids. The experimental design was of randomized blocks, with four repetitions in protected cultivation environment. The treatments were distributed in a 2 x 5 factorial scheme, corresponding to the hybrids (Ivety and Natalia) and five doses of calcium silicate (0, 150, 300, 450 and 600 kg ha-1), which were applied on the same day as the pots were filled. Evaluations were carried out on the fruits, namely: ethylene production, fruit respiration, firmness, number of loculus, polygalacturonase activity, total carotenoids, lycopene, phenolic compounds, soluble solids content, pH, titratable acidity and ascorbic acid content.  The application of calcium silicate provided the reduction of ethylene production and fruit respiration. Natalia hybrid showed low polygalacturonase activity, this difference being due to genetic variabilityThe increase of calcium silicate doses provided the reduction of polygalacturonase enzyme concentration due to its constitution in the cell wall. The concentrations of lycopene, phenolic compounds, soluble solids, pH, titratable acidity and ascorbic acid in the fruits increased in response to the increasing doses of calcium silicate for 'Ivety'. Hybrids present distinct behaviors on the influence of the fertilization of tomatoes with calcium silicate, which can increase the post-harvest conservation and improve the physical-chemical characteristics of tomato fruits.
