This study reported for the first time anatomical features, fatty acid composition and tocopherol content for the fruits of Cakile maritima subsp. maritima Scop. collected from two sites located at the coastal part of North Tunisia (Bizerte and Soliman). Anatomical investigations characterized the indehiscent siliqua of Soliman population. Transverse sections through fresh fruit show a large number of prismatic crystals located at the three first layers of the mesocarp, which parenchyma was characterized by the presence of large amounts of starch grains and solitary oil drops. A particular anatomical structure is identified at the valves junction. The endocarp is a thin tissue composed of 2-3 layers of small lignified wall cells and one layer of tangentially elongated and thin cells surrounding the seed. Moreover, the fruit oil from both populations are characterized by their richness in unsaturated fatty acids, particularly monounsaturated ones. The major identified fatty acids with GC/MS analysis of fatty acid methyl esters for Bizerte and Soliman populations are oleic (20.20 ± 1.42 and 23.9 ± 2.87%, respectively), erucic (20.82 ± 1.60 and 22.04 ± 2.65%, respectively) and linoleic (24.09 ± 2.47 and 21.34 ± 2.76%, respectively) acids. Besides, analysis of tocopherols allowed the identification of two isoforms (α- and γ-tocopherols). The α-tocopherol was found as the prominent one in the two fruit oils and was most important in Soliman population than in Bizerte one (31.13 ± 2.45 mg/kg against 28.88 ± 2.21 mg/kg).

Refining of crude red fruit oil (CRFO) through the degumming and neutralization steps intended to produce oil free of impurities (non triglycerides) such as phospholipids, proteins, residues and carbohydrates, and also reducing the amount of free fatty acids (FFA). This study aims to determine the effect of red fruit oil purification through degumming and neutralization stages on chemical properties, fatty acid composition, carotenoid content and tocopherol of red fruit oil (RFO). The results showed that degumming of CRFO did not affect the decrease in water content, FFA levels, peroxide numbers, iodine values, carotenoids and tocopherols content; but decrease in levels of phosphorus, β-carotene and α-tocopherol. Neutralization of degummed-RFO (DRFO) did not affect the decrease in water content, iodine value, carotenoid, tocopherol and α-tocopherol; but the FFA levels, peroxide number, phosphorus and β-carotene levels decreased significantly. The fatty acid composition of RFO was dominated by unsaturated fatty acids (± 75%), which increases through degumming and neutralization stages. β-carotene is more sensitive than α-tocopherol during refining process of crude oil, but in general, this process can improve the RFO quality.

The objective of this research was to assess the effects of including oil-rich feedstuffs in diets for lactating goats on the fatty acid (FA) profile of their milk. Thirty-six Murciano-Granadina goats were randomly assigned to three treatment groups, namely a control diet (CTRL), a diet based on whole rapeseed (RS), and a diet based on pumpkin seed cake (PSC). The diets were composed of 1 kg hay (70 % Italian ryegrass, 30% alfalfa) and 1.24 kg concentrate, and were formulated to be isoenergetic and isonitrogenous. Milk yield and its contents of protein, fat and lactose did not differ significantly among the groups. However, including oil-rich feeds in the diet altered the fatty acid profile of the milk significantly, decreasing its saturated fatty acid (SFA) content and increasing its content of unsaturated fatty acids (UFAs). Effects on polyunsaturated fatty acids (PUFAs), conjugated linoleic acid (CLA), and the n-6 to n-3 ratio depended on the source of dietary lipids. The PSC augmented diet increased the relative amount of PUFAs and fatty acid methyl esters (FAME) in milk (+25 %) significantly In comparison with CTRL, whereas the RS diet produced a limited and statistically insignificant increase (+7.5%). The concentration of CLA was higher in milk from does fed the PSC diet, whereas the n-6 to n-3 ratio was lower in milk from does fed RS. These preliminary results form the basis for developing premium dairy products that are enriched in fatty acids that are more favourable for human health.

Abstract Chloroplasts isolated from three populations of the tropical marine Chlorophyte Anadyomene stellata collected off the coast of Greece were analyzed for their fatty acid composition. Following the preparation of fatty acid methyl esters, GC-MS (El) was utilized to identify the fatty acids present in each population. Including isomers, the fatty acid profile of all three algal populations was comprised of 19 fatty acids (4 saturated, 6 monounsaturated, 9 polyunsaturated) with palmitic acid present in the highest amounts (25-27% of total fatty acids). Analysis of variance revealed significant differences amongst the three populations in the percent of total fatty acids for twelve of the fatty acids. High levels of C20 PUFAs, an atypical observation in Chlorophytes, were observed in all three populations comprising approximately 17% of total fatty acids. Furthermore a 14:2 PUFA , apparently rare in marine macrophytic Chlorophytes, was identified in significant quantities. Surprisingly, we did not find any of the conjugated tetraene containing fatty acids that we previously identified in the A. stellata populations studied from the Florida Keys.

A method for simultaneous determination of 16 free fatty acids (FFAs) in serum is described. The method involves conversion of FFAs to fatty acid methyl esters (FAMEs) using the heat of ultrasonic waves followed by gas chromatography and mass spectrometry (GC–MS) analysis. Optimum levels of the variables affecting the yield of FAMEs were investigated. The results indicate that the optimal levels are 55 °C, 60 W, 10% H2SO4/CH3OH, and 50 min. Recoveries ranged from 85.32% to 112.11%, with a detection limit ranging from 0.03 to 0.08 μg mL–1. The linearity, using the linear correlation coefficient, was higher than 0.9914.

A method of separation, identification and quantification of fatty acid methyl esters (FAMEs) was developed by gas chromatography with flame ionization detector (GC-FID) using a basic transesterification. In this sense, there were analyzed FAMEs in commercial samples of vegetable oils from soybean and olive oil. The referred method was linear (r>0.99), accurate and precise for palmitic (C16:0), linoleic (C18:2), oleic (C18:2), linolenic (C18:3) and stearic (C18:0) acids. The limits of detection (LOD) and quantification (LOQ) were from 0.03 to 0.31 and 0.08 to 0.94 mg.mL-1 for the five fatty acids, respectively. The results demonstrated that the unsaturated fatty acids were the most abundant for the two samples, being the oleic acid (C18:1) the major in three brands of olive oil (D, E and F), and the linoleic acid (C18:2) the most abundant in soybean oil and the other brands of olive oil (G, H and I), suggesting a possible adulteration in these brands. The proposed method could be considered a tool for the investigation of adulteration in commercial vegetable oils for guaranteed reliability in the results to be comparable with correlated legislations.

This study investigated the effect of fatty acid modification and cholesterol removal on physico-chemical characteristics of yoghurt and ice cream. Fatty acid profile of milk fat was modified by feeding calcium salts of soybean oil fatty acids to cows and cholesterol was removed by b-cyclodextrin. b-cyclodextrin removed 76% and 60% cholesterol from yoghurt and ice cream. Modification of fatty acid composition did not have a significant effect on a-tocopherol content; while b-cyclodextrin treated milk had substantially lower a-tocopherol content. The concentration of a-tocopherol in control and b-cyclodextrin treated yoghurt was 45.62, 32.73 mg/g and 210.34, 185.56 mg/g for ice cream, respectively. Fatty acid modification and cholesterol removal significantly decreased the overrun in ice cream (P<0.05), with no effect on sensory characteristics of yoghurt and ice cream. These results evidenced that milk with higher content of unsaturated fatty acids and low cholesterol can be used in the formulation of yoghurt and ice cream with improved health benefits and suitable sensory features.
