Fishball is a fish product that knows for their distinctive taste and chewy texture. The quality of fishball greatly affects the attractiveness of consumers to consume it, regarding the taste and aroma. The ingredients of fishball that have properties as an emulsifying is  carrageenan. The purpose of this study was to determine the quality of tuna fishballs substituted with carrageenan flour with different concentrations and storage times. The treatment design used was RAL (completely randomized design) which consisted of 4 different concentration treatments of added carrageenan, for 0%, 1%, 2% and 3% with 2 days of storage and 2 times repetition. The quality parameters were organoleptic test, water content, pH and TPC (Total Plate Count). The results showed that the addition of carrageenan affected the water content and pH of fishballs. Tuna fishballs with the addition of a concentration of 2% are the best products with an average value of organoleptic values: 6.58; water content: 71.63; pH: 5.46; and TPC: 2.6 × 10 4. Water content in fishballl is not met SNI quality requirements. Total bacteria (TPC) in fishballs met SNI quality requirements.Keywords: tuna fishballs, carrageenan

Liquid smoke contains acid, carbonyl, and phenolic compounds, so it is very appropriate to be used as a preservative. Traditional smoking can be replaced with liquid smoke because it is safer and more practical. The study of the use of coconut shell liquid smoke has been used in skipjack fish to determine the effect of liquid smoke concentration and storage time on dissolved protein content and total bacteria in smoked fish. The quality of smoked fish was determined by two treatments, namely the variation in the concentration of liquid smoke (2, 3, 4, and 5%) and storage time (2, 4, 6, 8, and 10 days). The results showed that the best concentration of liquid smoke to produce smoked skipjack fish is 3% with a water content of 62.41% and dissolved protein content of 17.58%. The maximum storage time of smoked skipjack tuna is 6 days with a total plate count (TPC) value or total bacteria 1.8 x 105.

A trial was conducted to evaluate quality of quail eggs from two companies (A and B) at two storage times (5 and 15 days after packing). A total of 480 eggs were kept at room temperature and distributed in a completely randomized design in 2x2factorial arrangement (companies and storage time). The results indicated that trays from company B presented higher weight, as well as mean egg weight. However, the eggs in trays from company A showed greater uniformity. Evaluating the external quality, we found that above 90% of eggshell were considered with total integrity, and no difference for this characteristic between companies was found. The eggs from company A presented lower average weight in comparison to those from company B, regarding storage time. No differences were observed between eggs from companies A and B for Haugh unit value. Storage time of 15 days after packing promoted reduction in Haugh unit value in comparison to those stored for 5 days. Quail eggs from company A presented lower variation in weight, although heavier eggs are produced by company B. Internal quality of quail eggs from both companies was similar. Storage time affected eggs quality.

This study aimed to evaluate the influence of homeopathic products in diets of quails in the egg quality when submitted to different storage periods. In the trial we used 200 Japanese quails in a completely randomized design with 4 diets: reference diet, vehicle used in homeopathic products and 2 homeopathic products - Fertsigo® and Ovosigo® with ten replicates of three eggs in each. Egg quality parameters were evaluated during 3 storage periods. Data were evaluated as repeated measures in time, the effects of the interactions between treatments and time as well as their isolated effects were verified. There was the interaction between homeopathic products and storage time in the parameters of albumen and yolk height, Haugh unit, and yolk index, in which a reduction was obtained over time. For egg weight, yolk, albumen and shell, percentage of albumen, and percentage of eggshell there was a significant effect only for homeopathy. The inclusion of homeopathic additives increased egg weight. It is indicated the addition of the product with homeopathic basis Ovosigo® and FertSigo® in diets of Japanese quails in the laying phase resulting in better egg and components but did not influence the quality maintenance of eggs of Japanese quails in the periods evaluated.

A research on sausage scad fish (Decapterus sp) using 4 treatments with 3 replications with complete randomized design. Washing is done 0 to 3 times and storage for 0 to 9 days. The results of the study addressed the interaction of storage time washing meat and kite fish sausage (Decapterus sp) are fortified with Moringa leaves an effect on levels of protein, fat and water content. Organoleptic quality sausages from the value in 9 days can still be accepted by the panelists. During storage protein value reduction from 0 days (16.38%) decreased (14.40%) on day 9. The water content increased from 0 days up to 61.22% 66.96% on day 9. Fat in fish sausage 0.64% down 0.19% on day 9. Good quality sausage was taken 9 days because of the old fish sausage stored beyond 9 days is not liked by the panelists, because the texture and taste was not good© Penelitian pembuatan sosis ikan layang (Decapterus sp) menggunakan 4 perlakuan dengan 3 kali ulangan dengan metode rancangan acak lengkap (RAL). Pencucian dilakukan 0 sampai 3 kali dan penyimpanan selama 0 sampai 9 hari. Hasil penelitian menunjukan bahwa interaksi pencucian daging dan lama penyimpanan sosis ikan layang (Decapterus sp) yang difortifikasi dengan daun kelor berpengaruh terhadap kadar protein, lemak dan kadar air. Mutu sosis dari nilai organoleptik dalam 9 hari masih bisa diterima oleh panelis. Selama penyimpanan nilai protein terjadi penurunan dari 0 hari (16,38%) menurun (14,40%) pada hari ke-9. Kadar air mengalami kenaikan dari 0 hari 61,22 % naik menjadi 66,96% pada hari ke-9. Lemak pada sosis ikan 0,64 % turun 0,19% pada hari ke-9. Sosis yang baik mutunya adalah dibawa 9 hari karena sosis ikan yang lama penyimpanannya melebihi dari 9 hari sudah tidak disukai oleh panelis, karena tekstur dan rasa sudah kurang baik©

Desirable ripened quality banana fruits are important for the consumer acceptability. Banana cv. Amritasagar was treated with different ripening agents like control (R1), RipestuffTM @ 42 mg/10 mL water (R2), RipestuffTM @ 84 mg/10 mL water (R3), Ethephone @ 200 ppm (R4) and Ethephone @ 400 ppm (R5); and storage durations were 24 h (H1), 48 h (H2), 72 h (H3), and 96 h (H4). The two factors experiment was conducted with complete randomized design with three replications. Fruits were placed in container (RFL). With the progress of storage duration quality parameters like weight loss (%), peel color, pulp to peel ratio, softness, total soluble solids (TSS), and pH were recorded. Fruits treated with R3 and R5 produced uniform yellow color and the highest softness at 96 h. Whereas banana fruits treated with R2 developed peel colour and softness a bit slower compared to other treatments; and untreated fruits (control) were hard, poor in color and quality, and were not suitable for consumption at 96 h. The highest TSS (%) were found at 72 h treated with R5 and at 96 h with R5 including R3, and R4 showed the mostly similar TSS (%). Thus, RipestuffTM @ 84 mg/10 mL water (R3) and ethephon @ 400 ppm (R5) can be used maintaining quality and ripening banana for better price of banana growers and traders through avail it at earlier marketing and reduced postharvest loss.

                                                                                                                                   ABSTRAK Kelapa sawit merupakan tanaman perkebunan yang memegang peranan penting dalam industri pangan. Luas perkebunan kelapa sawit di Indonesia pada tahun 2014 mencapai 10 juta Ha. Pertumbuhan yang pesat diikuti dengan produksi crude palm oil (CPO) dan palm karnel oil (PKO) yang juga meningkat, sekaligus produk sampingan berupa limbah. Salah satu limbah pabrik kelapa sawit yang jumlahnya besar adalah tandan kosong kelapa sawit (TKKS). Tandan kosong kelapa sawit merupakan limbah organik yang berpotensi dimanfaatkan dibidang pertanian. Akan tetapi, TKKS memiliki nilai C/N yang cukup tinggi, akibatnya sukar dan lama untuk terdekomposisi. Salah satu cara pemanfaatan TKKS adalah dengan dilakukan pengomposan dengan pengkayaan urea. Diharapkan dengan perlakuan tersebut TKKS akan cepat terdekomposisi dan dapat segera dimanfaatkan oleh tanaman. Penelitian ini bertujuan untuk (1) mengetahui pengaruh pemberian urea terhadap pengomposan TKKS dan (2) mengetahui pengaruh peningkatan dosis urea terhadap kualitas kompos TKKS. Rancangan yang digunakan dalam penelitian ini adalah Rancangan Acak Lengkap (RAL) faktor tunggal dengan 5 perlakuan, yaitu U1 (urea 0 g setara dengan nilai C/N=), U2 (urea 30,9 g setara dengan nilai C/N=), U3 (urea 79,3 g setara dengan nilai C/N=), U4 (urea 176,1 g setara dengan nilai C/N=) dan U5 (urea 466,3 g setara dengan C/N = ) dan 9 ulangan, sehingga diperoleh 45 satuan percobaan. Hasil penelitian menunjukan bahwa pemberian urea berpengaruh sangat nyata terhadap susut bobot, kadar air, nilai pH kompos, C-organik, N-total, P-tersedia, dan nilai C/N, selain itu pemberian urea mengakibatkan terjadi perubahan tekstur dan warna pada kompos TKKS. Pemberian dosis urea 466,3 g mampu meningkatkan kandungan N-total, serta menurunkan nilai C/N dan nilai pH kompos. Pemberian dosis urea 79,3 g atau setara dengan C/N = mampu meningkatkan kandungan P-tersedia dan kadar air, menurunkan susut bobot dan kandungan C-organik, serta menunjukan perubahan tekstur dan warna yang lebih baik. Kata kunci: tanda kosongkelapa sawit (TKSS), kompos, urea                                                                                                                                        ABSTRACT Empty fruit bunches (EFB) is a solid wastes produced in large quantity from palm oil industry. Empty fruit bunches can be used as compost material, additionally difficult to decompose because it contain cellulose, hemicellulose, and lignin, as well as value of ratio C/N is high. Use EFB as compost material through the provision of urea has been done in this research. Urea are expected to reduce the value of ratio C/N and became a starter for microbial decomposers. The purpose of this research were (1) to determine the effect of urea on composting of EFB and (2) to determine the effect of increasing doses of urea to the quality of compost of EFB. This research was used a single factor of Completely Randomized Design (CRD) with 5 treatments, namely U1 (urea 0 g), U2 (urea 30,9 g), U3 (urea 79,3 g), U4 (urea 176,1 g), and U5 (urea 466,3 g), and 9 replications, until result 45 experimental units. The result showed that urea significant effect on weight loss, water content, value of pH compost, C-organic, N-total, P-available, and value of ratio C/N, besides urea resulted Widodoe, K. dkk Percepatan Pengomposan Tandan Kosong Kelapa Sawit…..…. 114 in a change in texture and color on the compost EFB. Application of urea 466,3 g was able to increase the content of N-total, reduce the value of ratio C/N and the value of pH compost. Application of urea 79,3 g can improve the content of P-available and water content, reduce the weight loss and the content of C-organic, and showed the changes in texture and color as better. Food hygiene is an important factor to protect ourselves from the contamination of germs and bacteria that enter through these food intermediaries. Food contaminated by bacteria will cause disease and can cause death if not treated immediately. Common bacteria that contaminate food are Salmonella thypii and Eschericia coli. Both types of bacteria are a group of gram-negative bacteria in the form of bacilli. This study aims to analyze and identify the bacteria S. thypii and E. coli found in corn ice samples. The study was conducted with a descriptive method by conducting a bacteriological examination to determine the quality of sample cleanliness. There are 3 stages in this study, the first stage is calculation of amount of total bacteria (total plate count), analysis of S. thypii and E. coli bacteria and identification with Gram staining. The results showed 40% of samples tested is positive for S. thypii and 60% for E. coli. The largest amount of total bacteria was shown by samples 1 and 3, which were 78 cfu and 52 cfu, respectively. The presence of S. thypii and E. coli bacteria in the sample is thought to be due to poor hygiene factors in the processing of the drink

The high protein content of beef makes it easy to get a contamination caused by an activity of bacteria. The use of formalin as a preservative substance especially for beef can make a damage to health, so it is required to find preservative substances as alternative to substitute formalin. Mengkudu (Morinda citrifolia L.) has antibacteria compounds to the decompose bacteria of beef, so mengkudu fruit can be one of natural preservative substance alternatives, especially for beef. The purposes of this research were to determine the influence of ethanol extracts concentration of mengkudu fruit and a storage-time effect toward bacteria amount, and to determine the concentration that had a same activity with formalin to combate the replication of bacteria. This research used two-way completely randomized design. The samples were fresh meat beef that be submerged in mengkudu extract with concentrations of 10%, 20%, 30%, 40%, 50%, 60%, 70%, 80%, 90%, 100% and formalin 1% as a comparator. After that, the beef was storaged in a room temperature during 16 hours, and every 4 hours it was tested for water content, pH value, beef temperature and a total plate count (TPC) test with a dilution method, and then the number of bacteria colonies with the limit of the bacteria amount of the beef to consume might not be more than 1x104 CFU/gram. The data were analyzed by ANOVA. If there was a significance, it would be continued by a DMRT test with an error rate 5%. The research results showed that all extracts concentration of mengkudu fruit and storage-time gave a significant effect (p<0.05) toward bacteria amount. The concentration of 100% had the same activity with formalin to combate the replication of bacteria among 16 hours storage time.

Duck meat is a perishable food that has a short shelf-life. Therefore, packaging is needed to be used tomaintain duck meat quality during storage, one of the ways to extend shelf-life of duck meat is usingpropolis extract as edible coating which is contained antioxidant substances which can be used to extendduring storage. The aim of this research was to analyze the effect of propolis extract as an edible coatingmaterial on duck meat to maintain the quality and extend shelf-life of duck meat at room temperature.The research was used a completely randomized design (CRD) factorial 4x3 with 3 replications,consisting of 4 propolis concentrations (0.0%, 0.5%, 1.0%, 1.5%) and 3 storage times (0 hours, 6 hoursand 24 hours). Duck meats coated with propolis extracts had a significant effect on the water content andantioxidant activity of duck meat (P < 0.05). The storage time had a significant effect on the pH valueand the cooking loss of duck meat (P <0.05). The addition of propolis extract and storage time had asignificant effect on the pH value, cooking loss and antioxidant activity of duck meat (P <0.05).

This study aims to determine the quality of jackfruit seed juice drinks with the addition of red ginger and to determine the level of acceptance of panelists on jackfruit seed juice drinks. Parameters observed included water content, protein content, carbohydrate content and organoleptic including color, taste, aroma and texture. This study used a Completely Randomized Design (CRD) consisting of one factor, namely the concentration of red ginger juice with four treatments, namely: 0%, 6%, 12%, 18%, each repeated three times. The results showed that jackfruit seed juice drink with the addition of 18% red ginger was the best treatment from the results of organoleptic tests. The proximate test results showed that the best treatment was 3.13% water content in 12% ginger treatment, 2.17% protein in 18% red ginger treatment and 95.61 carbohydrate in 18% red ginger treatment.
