A Feira do Agricultor fornece uma importante fonte de renda para a agricultura familiar do município de Laranjeiras do Sul, na qual são comercializados principalmente hortaliças, produtos de panificação, massas alimentícias, doces e derivados do leite. O presente projeto de extensão universitária teve como objetivo a elaboração de uma ferramenta de cálculo de informação nutricional de produtos alimentícios. A partir de uma pesquisa exploratória, foi verificado que poucos produtores possuíam produtos alimentícios com rótulos e os mesmos tinham interesse na obtenção dos rótulos para se adequarem às normas municipal e federal. Para isso, uma ferramenta de cálculo foi desenvolvida em planilha eletrônica baseada na metodologia proposta pela Agência Nacional de Vigilância Sanitária (ANVISA) e em tabelas de composição de alimentos (TACO). Os feirantes foram conscientizados da importância de obter produtos alimentícios portando rótulos, e um levantamento da situação atual da feira foi realizado. Com o processo de rotulagem dos alimentos, as receitas tiveram que ser padronizadas, e o rendimento da produção foi medido. O serviço de confecção dos rótulos foi oferecido para os produtores que comercializavam os seus alimentos na feira e depois estendido para a comunidade. Palavras-chave: Composição dos Alimentos, Rótulos, Feiras Livres, Extensão Universitária.   Development of a nutritional information calculation tool for labeling the food products sold at the Farmer’s Market from Laranjeiras do Sul-PR Abstract: The Farmer’s Market provides an important income source for family farming in the city of Laranjeiras do Sul,he  where vegetables, bakery products, pasta, sweets and milk-based foods are the main products for sale. This university extension project was aimed at developing a nutritional information calculation tool for the food products. From an exploratory study, it was found that only a few producers had food products with labels and they were interested in getting the labels to suit the municipal and federal standards. For this, a calculation tool was developed with electronic spreadsheets based on the methodology proposed by the Agência Nacional de Vigilância Sanitária (National Health Surveillance Agency - ANVISA) and food composition tables (TACO). The food sellers were made aware about the importance of obtaining products with labels and a survey of the current Farmer’s market situation was conducted. With the process of food labeling, the recipes were standardized and production yield was measured. The labeling service was offered to the Farmer’s Market producers and then offered to the community. Key-words: Food composition, Labels, Farmer’s Market, University Extension. Desarrollo de herramienta de cálculo de información nutricional para el etiquetado de los productos alimenticios comercializados en la feria de agricultores de Laranjeiras do Sul-PR/Brasil Resumen: La Feria de Agricultores proporciona una fuente de renta importante para la agricultura familiar en la ciudad de Laranjeiras do Sul, ubicada al sur de Brasil, donde son comercializados las verduras, productos de panadería, pastas, dulces y alimentos a base de leche. Este proyecto de extensión universitaria tuvo como objetivo el desarrollo de una herramienta de cálculo de la información nutricional de los productos alimenticios. A partir de un estudio exploratorio, se verificó que solo unos pocos productores tenían productos alimenticios con etiquetas pero estaban interesados ​​en conseguir-las para adaptarse a las normas municipales y federales. Para ello, una herramienta de cálculo fue desarrollada con hojas de cálculo electrónicas basadas en la metodología propuesta por la Agencia Nacional de Vigilancia Sanitaria (ANVISA) y las tablas de composición de alimentos (TACO). Los vendedores de alimentos se hicieron conscientes de la importancia de la obtención de productos con etiquetas y una encuesta de la situación corriente de la Feria de Agricultores se llevó a cabo. Con el proceso de etiquetado de los alimentos, las recetas fueron estandarizadas y se midió el rendimiento de producción. El servicio de etiquetado se ofreció a los productores de la Feria de Agricultores y luego se ofreció también a la comunidad. Notwithstanding a growth in popularity and consumption of gluten-free (GF) food products, there is a lack of substantiated analysis of the nutritional quality compared with their gluten-containing counterparts. To put GF foods into proper perspective both for those who need it (patients with celiac disease) and for those who do not, we provide contemporary data about cost and nutritional quality of GF food products. The objective of this study is to develop a food composition database for seven discretionary food categories of packaged GF products. Nutrient composition, nutritional information and cost of foods from 63 GF and 126 gluten-containing counterparts were systematically obtained from 12 different Austrian supermarkets. The nutrition composition (macro and micronutrients) was analyzed by using two nutrient composition databases in a stepwise approximation process. A total of 63 packaged GF foods were included in the analysis representing a broad spectrum of different GF categories (flour/bake mix, bread and bakery products, pasta and cereal-based food, cereals, cookies and cakes, snacks and convenience food). Our results show that the protein content of GF products is >2 fold lower across 57% of all food categories. In 65% of all GF foods, low sodium content was observed (defined as <120 mg/100 g). Across all GF products, 19% can be classified as source high in fiber (defined as >6g/100 g). On average, GF foods were substantially higher in cost, ranging from +205% (cereals) to +267% (bread and bakery products) compared to similar gluten-containing products. In conclusion, our results indicate that for GF foods no predominant health benefits are indicated; in fact, some critical nutrients must be considered when being on a GF diet. For individuals with celiac disease, the GF database provides a helpful tool to identify the food composition of their medical diet. For healthy consumers, replacing gluten-containing products with GF foods is aligned with substantial cost differences but GF foods do not provide additional health benefits from a nutritional perspective.

Gunung Anyar Tambak is one of the villages that is located adjacent to the UPN "Veteran" campus in East Java. Most (2/3) of the Gunung Anyar Tambak area is the pond area, which has the main yield is milkfish. Besides being sold in fresh form, milkfish from ponds from Gunung Anyar Tambak are also processed into a variety of processed products including shredded, crackers, soft thorns and milkfish “sapit”. Milkfish “Sapit” is a processed milkfish which is unique in its serving. The milkfish are clamped using bamboo stems and then processed using a choice of spices that make a distinctive taste in this dish. Processing by burning, causing a distinctive aroma that is not forgotten. Barokah is one of the community groups of “sapit” milkfish processing in RW I of Gunung Anyar Tambak Village which consists of 6 people. Chairman of UD. Barokan is Hj's. Khasibah, explained that most of the milkfish produced are only fulfilling orders from the surrounding area and orders from outside the city to be used as souvenirs typical of Surabaya. From observations and interviews it is known that the problem in processing milkfish is a very simple packaging that is a very thin plastic bag that is not closed. The second problem is that the packaging has no labeling at all, even though the label can identify the identity of the product in the package. The importance of labels on food products in addition to being the identity of the packaged product is also a communication between producers and consumers. Therefore a very absolute label must be given to the marketed food products. Training has been conducted on packaging and labeling milkfish “sapit” in UD. BAROKAH, Gunung Anyar Tambak, Surabaya. Before being packed with a vacuum packer, milkfish saplings are first dried in a cabinet dryer for 3 hours at 60°C. Labeling on milkfish packaging is in accordance with the law on food labeling on primary (plastic) and secondary (carton) packaging. In addition to providing training, our team also donates dryers and Vacuum Sealers.

Acrylamide is a byproduct of the Maillard reaction and is potentially carcinogenic to humans. It is found in a number of foods with higher concentrations in carbohydrate-rich foods and moderate levels of protein-rich foods such as meat, fish and seafood. Acrylamide levels in food distributed in vending machines placed in public areas of the city of Perugia were analyzed by high-performance liquid chromatography. Samples included five different categories, depending on the characteristics of the products: 1) potato chips; 2) salted bakery products; 3) biscuits and wafers; 4) sweet bakery products; 5) sandwiches. A high variability in acrylamide level among different foods and within the same category was detected. Potato chips showed the highest amount of acrylamide (1781±637 μg/kg) followed by salted bakery products (211±245 μg/kg), biscuits and wafers (184±254 μg/kg), sweet bakery products (100±72 μg/kg) and sandwiches (42±10 μg/kg). In the potato chips and sandwiches categories, all of the samples revealed the presence of acrylamide while different prevalence was registered in the other foods considered. The data of this study highlight the presence of acrylamide in different foods sold in vending machines and this data could be useful to understand the contribution of this type of consumption to human exposure to this compound.

Gram is important crop of Nepali and Indian farmers. Most of the people take gram as regular food. There are several edible food products prepared from gram. Gram is cultivated mostly in Birgunj (Parsa), Morang and Terai region. Recently in these states industrialization and infrastructure development work going very fast causing huge amounts of pollutants and particulate entering into the atmosphere. The purpose of this study is to explore the effect of corrosive pollutants on gram production and study tries to find the gaps of pH in the different areas. Resumo Normas relacionadas à gestão de Resíduos de Construção Civil (RCC) estão vigentes no Brasil há mais de uma década. O intuito dessa gestão é amenizar os impactos ambientais decorrentes do gerenciamento indevido desses resíduos. O objetivo do presente trabalho é investigar a conformidade técnica e legal de sistemas de gerenciamento de resíduos de construção civil no município de Curitiba. Para tal, elaborou-se uma lista de verificação baseada nas normas em vigor e em alguns modelos de certificações ambientais, como: LEED, AQUA, CASBEE, BREAM e HQE. 24 obras de edifícios residenciais e comerciais foram  visitadas — com ou sem certificação ambiental. Essa lista de verificação foi aplicada nas construções, para realizar um diagnóstico do setor. Apesar da gestão de resíduos ser obrigatória e restritiva à obtenção dos certificados de conclusão de obra, os resultados da pesquisa demonstraram que há problemas na segregação, acondicionamento e transporte dos resíduos. Entretanto, a falta de conscientização e a aparente conformidade documental não se traduz em efetivo gerenciamento dos RCC. Palavras-chave: Resíduos de construção e demolição. Gestão de resíduos. Resíduos sólidos. Auditorias ambientais. Abstract Standards related to the management of Construction Waste (CW) have been in force in Brazil for more than a decade. The goal of this management is to alleviate the environmental impacts resulting from the poor management of these wastes. The objective of this work is to investigate the technical and legal compliance of construction waste management systems in the city of Curitiba. To this end, a checklist was drawn up based on current standards and on some models of environmental certifications, such as: LEED, AQUA, CASBEE, BREAM and HQE. 24 works of residential and commercial buildings were visited — with or without environmental certification.  A checklist was applied, in these buildings, to promote a diagnosis of the sector. Although waste management is mandatory and restrictive to obtain building completion certificates, the research results showed that there are problems in the segregation, packaging and transport of waste. El objetivo de este trabajo es investigar la conformidad técnica y legal de sistemas de gestión de residuos de la construcción civil en el municipio de Curitiba. Para ello, se elaboró una lista de cotejo basada en las normas vigentes y en algunos modelos de certificaciones ambientales como: LEED, AQUA, CASBEE, BREAM y HQE. Se visitaron 24 obras de edificios residenciales y comerciales — con o sin permiso ambiental. Se aplicó esa lista de cotejo en las construcciones, para realizar un diagnóstico des sector. Aunque la gestión de residuos sea obligatoria y restrictiva para la obtención de las certificaciones de conclusión de obra, los resultados de la investigación demostraron que hay problemas en la segregación, acondicionamiento y trasporte de los residuos.   El embarazo en adolescentes es un problema de salud pública mundial que altera la salud física, emocional, la condición educativa y económica de los futuros padres; asimismo, frecuentemente se afecta también al producto de la gestación. La investigación fue de tipo retrospectiva, correlacional y cuantitativa. La muestra fue 461 embarazadas adolescentes atendidas en el Hospital “Verdi Cevallos Balda” de la ciudad de Portoviejo durante el 2016. Los resultados de este estudio mostraron que la mayor tasa de embarazo en adolescentes se produjo en primigestas (88,72 %) de 18 años. La desproporción céfalo-pélvica fue el factor materno-fetal que ocupó el primer lugar como causa de cesárea, seguida de factores fetales como distocia de presentación y ruptura prematura de membranas.   Palabras clave: Parto espontáneo, cesárea, pretérmino, postérmino, embarazo.   Abstract Teenage pregnancy is a global public health problem that alters the physical, emotional, educational and economic condition of future parents; likewise, the gestation product is frequently affected. The research was retrospective, correlational and quantitative. The sample was 461 adolescent pregnant women treated at the Hospital "Verdi Cevallos Balda" of the city of Portoviejo during 2016. The results of this study showed that the highest rate of adolescent pregnancy occurred in first-time pregnant women (88.72 %) of 18 years. Cephalopelvic disproportion was the maternal-fetal factor that ranked first as a cause of caesarean section, followed by fetal factors such as presenting dystocia and premature rupture of membranes.   Keywords: Spontaneous delivery, cesarean section, preterm, postterm, pregnancy.
