It was experimentally determined whether crossbreeding with Bos indicus dams compared to Bos taurus dams may provide meat which is competitive in organoleptic properties and fatty acid (FA) profile and if tenderness, assumed to be lower, is really adversely affected. Eight Black Angus × White Lamphun (A×W) bulls were compared with 8 Black Angus × Holstein Friesian (A×H). M. longissimus thoracis, M. semimembranosus and M. infraspinatus were analyzed for organoleptic properties and objective explanatory properties related to tenderness, as well as FA profile.Tenderness was judged lower in the M. infraspinatus of A×W than A×H, but not in the other muscles. Shear force and collagen solubility tended (P < 0.10) to be lower in all 3 muscles of A×W compared to those of A×H. The fat content of the M. longissimus thoracis from A×W was lower than that from A×H. The lipids in the M. longissimus thoracis from A×W were richer in polyunsaturated FA and total n-3 FA, and poorer in C18:0 and saturated FA than those of A×H. Furthermore, the lipids of the M. semimembranosus from A×W had higher proportions of C14:1 and C16:1 than that of A×H. The FA in the M. infraspinatus from A×W had higher proportions of C18:3 n-3, mono-unsaturated FA and total n-3 FA and the proportion of saturated FA was lower than in A×H. The M. infraspinatus from A×W was lower in cholesterol content than that from A×H. There were some differences in tenderness (inferior in White Lamphun crossbreds) and FA profile (superior in White Lamphun crossbreds), but differences were numerically small and, thus, may be of low practical relevance. Therefore, crossbreeding with indigenous Bos indicus cattle does not seem to be restricted by low meat quality.

The number of male calves from the Irish dairy herd has increased following the abolition of EU milk quotas in 2015. This is a new resource for the industry, and they can be reared economically to produce meat of acceptable eating quality with optimal fatty acid (FA) profile. The effects of breed and feeding treatment on the FA profile of the longissimus thoracis (LT) muscles of young dairy bulls (n = 69) of Holstein–Friesian and Jersey × Holstein–Friesian were evaluated. The relationship between FA composition and sensory characteristics was also investigated. Bulls were offered either 1 or 2 kg of concentrates at pasture during the first grazing season. Bulls finished on silage with 5 kg of concentrates or on ad libitum concentrates were slaughtered at 15 months of age, while bulls slaughtered at 19 months were fed either ad libitum pasture or pasture with 5 kg of concentrates during a second grazing season and finished on pasture with 5 kg of concentrates or ad libitum concentrates. Pasture-finished 19-month-old bulls had higher relative proportions of C18:0 (P &lt; 0.001), C20:5n3 (eicosapentaenoic acid; P &lt; 0.001), C18:2n6c (P &lt; 0.05), C20:4n6 (P &lt; 0.01), and total n-3 (P &lt; 0.001) and n-6 polyunsaturated FAs (P &lt; 0.05), but reduced C14:0, C16:0, C14:1, C16:1 and total monounsaturated FA (P &lt; 0.001) proportions than in other production treatments. The silage-based finishing system of 15-month-old bulls increased the relative proportions of C15:0 (P &lt; 0.01), C18:0 (P &lt; 0.001) and total saturated FA (P &lt; 0.01), but decreased the proportions of C20:3n6 (P &lt; 0.05) and total unsaturated FA (P &lt; 0.01) compared with the ad libitum-concentrate finishing system. However, the feeding system of the first or second grazing seasons had limited effects on the FA profile. Jersey × Holstein–Friesian breed type had higher relative proportions of C14:1 and C16:1 (P &lt; 0.05), but lower C15:0 (P &lt; 0.01), C17:0 (P &lt; 0.001) and C17:1 (P &lt; 0.01) proportions than did Holstein–Friesian beef. Slaughter age did not affect the FA profile. Monounsaturated FA, C14:0 and C16:0 proportions were positively (P &lt; 0.05) correlated, but polyunsaturated FA proportion was negatively (P &lt; 0.05) correlated with intramuscular fat content, sensory roast beef aroma, flavour, flavour length, juiciness, initial tenderness and ease of disintegration scores. Finishing system and slaughter weight were well discriminated on the basis of FA relative proportions by canonical discriminant analysis.

Post-weaning growth and body condition, puberty and pelvic size of 197 heifers comprising straightbred Hereford (HxH) and Brahman (BxB), first-cross (BxH) and back-cross (HxBH and BxBH) heifers were evaluated. The heifers were born over a 3 year period, and grazed improved and semi-improved pastures following weaning at Grafton, New South Wales. Prior to weaning, heifers had been reared by dams on three pasture systems (high, medium and low quality pastures). Heifers from low quality pre-weaning pasture had higher (P < 0.05) post-weaning liveweight gain than those from high and medium quality pastures. BxH heifers gained 71 g/day more (P < 0.05) than the mean gain of their contemporaries of the other genotypes, whose gains were similar, from weaning to either 26 or to 30 months of age. Liveweight at all ages was influenced by genotype x pre-weaning pasture system interaction. At 30 months of age, BxH heifers from high and medium pre-weaning pastures were the heaviest. At the same age, but from low quality pre-weaning pasture, heifers with crossbred dams (HxBH and BxBH) were the heaviest. Wither height depended significantly (P < 0.05) on the proportion of Bos indicus genes, increasing from 113.8 cm in the HxH heifers to 124.4 cm in the BxB heifers at 30 months of age. BxH heifers had a higher (P < 0.05) body condition score than their contemporaries of the other genotypes, which were in similar condition, at 26 and 30 months of age. On average (across pre-weaning pasture system), 9% of BxB heifers had reached puberty by 22 months of age compared to 62, 95, 82 and 64% (s.e.= 9) for HxH, HxBH, BxH and BxBH heifers respectively. No significant genotype differences were obtained in the height, width and size of the pelvic opening of the heifers, measured just prior to the beginning of the mating season at 26 months of age.

In recent years, Brazil has become the leading country in the world for the number of embryos produced in vitro (Thibier M 2009 IETS Embryo Transfer Newsletter 22, 12-19). This is partly due to the large numbers of Bos indicus animals in Brazil, making up about 80% of the total cattle. The mean oocyte production per ultrasound-guided follicular aspiration from Bos indicus is higher than those for European breeds (Pontes JHF et al. 2009 Theriogenology 71, 690-697). In the present study, we analyzed 5407 ovum pick ups (OPU) and compared the average production of total (n = 90,086) and viable (n = 64,826) oocytes and the number of embryos produced in vitro from Gir (Bos taurus indicus), Holstein (Bos taurus taurus), 1/4 Holstein × 3/4 Gir, and 1/2 Holstein-Gir crossbreed cows. To obtain oocytes, OPU was repeated from 4 to 7 times (mean = 5.7 ± 2.4) in each donor cow aged from 3 to 7 years (mean = 5.0 ± 2.3) during a 12-mo period. COCs (n = 90,086) obtained were classified according to the presence of cumulus cells and the oocyte cytoplasm aspect (homogeneous or heterogeneous/fragmented). The viable oocytes (n = 64,826) were in vitro matured for 24 h at 38.8°C in an atmosphere of 5% CO2 in air. Since this was a commercial programm, frozen sexed semen (2 × 106 mL-1) from Gir (n = 8) or Holstein (n = 7) sires previously tested for high efficiency was used for IVF. Fertilization was carried out (18-20 h) and the presumed embryos were cultured for 7 days in the same conditions as were used for IVM. Data were analyzed by ANOVA. On average, 16.7 ± 6.2 oocytes were obtained per OPU/IVF procedure and 71.96% were considered viable. The mean numbers of total oocytes per OPU/IVF procedure were 17.1 ± 4.4 for Gir cows (n = 617), 11.4 ± 3.9 for Holstein cows (n = 180), 20.4 ± 5.8 for 1/4 Holstein × 3/4 Gir (n = 44), and 31.4 ± 5.6 for 1/2 Holstein-Gir crossbreed females (n = 37, P < 0.01). The mean numbers of viable oocytes per OPU/IVF procedure were 12.1 ± 3.8 for Gir cows, 8.0 ± 2.6 for Holstein cows, 16.8, ± 5.0 for 1/4 Holstein × 3/4 Gir, and 24.3 ± 4.7 for 1/2 Holstein-Gir crossbreed females (P < 0.01). The average number of embryos produced by OPU/IVF were 3.2 (n = 12,243/3378) for Gir cows, 2.2 (n = 2426/1138) for Holstein cows, 3.9 (n = 1033/267) for 1/4 Holstein × 3/4 Gir, and 5.5 (n = 1222/224) for 1/2 Holstein-Gir. The average number of embryos produced per IVF session from 1/2 taurus × indicus donor cows was greater (P < 0.01) than from Bos indicus cows. The number of recoverable and viable oocytes and the number of embryos produced in vitro from Bos indicus donors were higher than from Bos taurus females. Therefore, the highest oocyte yield and the greatest embryo production were obtained from 1/2 taurus × indicus females. This work was supported by In Vitro Brasil.

The objective of this study was to characterize meat quality in Bos taurus and Bos indicus and to determine the influence of finishing system and genetic group on the physicochemical properties of the longissimus thoracis at 24 hours and 10 days post mortem (1ºC). The sample included 160 bulls of the B. taurus (n=75) and B. indicus (n=85) groups, finished either on pasture (n=46) or with grain supplementation (n=114), slaughtered at a carcass weight of 270 to 300 kg. Pasture-finished animals had higher pH, lower red content and a fat content 2.5 times lower than those finished with supplementation. Meat from supplement-finished animals had lower shear force in comparison to that from animals finished on pasture, with means of 7.7 and 8.5 kg at 24 hours, and of 5.5 and 5.9 kg at 10 days, respectively. Samples of B. taurus and B. indicus were similar in moisture and protein, but B. taurus presented higher means for ash and lower means for fat. Aged samples of B. indicus finished on pasture showed lower values for lightness and yellowness. Overall, lightness and yellow content increased and red content decreased with 10-day ageing. Means for shear force were lower in B. taurus than in B. indicus, with differences of 1.4 kg in fresh meat and 0.6 kg in aged samples. The reduction in shear force with ageing was more pronounced in samples with higher initial shear force, in spite of the positive relationship between shear force before and after ageing.

The effect of repeated implantation with 20 mg oestradiol-17β (Compudose 100) on carcass and meat quality traits was investigated using 478 Bos indicus and B. indicus × Bos taurus cross steers finished on either pasture or grain to achieve carcass weight for one of three market end points (domestic, 220 kg; Korean, 280 kg; or Japanese, 340 kg). In the oestradiol-17β treatment group, animals were administered implants at ~100-day intervals, with the number of implants administered to any steer ranging from one to eight. Cattle were slaughtered and at boning the anterior portion of the M. longissimus lumborum was removed and frozen after aging for 1 day for later objective meat quality measurements (shear force, compression and cook loss %). The adjoining portion was aged for 14 days before consumer sensory testing using the Meat Standards Australia protocols. Each sample was scored for tenderness, juiciness, like flavour and overall liking by 10 untrained consumers. Implanting increased carcass weights and ossification scores (P < 0.05) and reduced marbling scores in comparison to non-implanted carcasses. For tenderness, like flavour, overall liking and MQ4 scores there was a significant (P < 0.05) interaction between B. indicus content and oestradiol-17β treatment, whereby high B. indicus content cattle that were implanted with oestradiol-17β had the lowest sensory scores. The number of implants administered did not affect carcass weights or marbling scores, whereas ossification scores increased in carcasses as the number of implants increased. The number of implants administered had no effect (P > 0.05) on sensory scores, or objective meat tenderness.

There is conflict regarding the relative abilities of Bos indicus and Bos taurus cattle to digest the feedstuffs. Part of this conflict may have arisen because a wide variety of diets have been fed at different range of intakes and only digestibility in whole tract measured. Generally no attempts have been made to partition rumen and post-rumen digestion or to assess the relative importance of rumen digestion and clearance between diets and between genotypes. Nitrogen (N) is frequently a major limiting nutrient for ruminants specially when they are given diets of mature herbage. On the other hand the extent to which cattle are able to recycle urea-N from blood to rumen for utilization in production of microbial protein could have an important influence on animal survival under condition of severe N limitation. The present experiment was designed to compare rumen microbial population and the end products of rumen fermentation between Sistani (Bos indicus) and Holstein (Bos taurus) breeds.

Estimates of microbial crude protein (MCP) production by ruminants, using a method based on the excretion of purine derivatives in urine, require an estimate of the excretion of endogenous purine derivatives (PD) by the animal. Current methods allocate a single value to all cattle. An experiment was carried out to compare the endogenous PD excretion in Bos taurus and high-content B. indicus (hereafter, B. indicus) cattle. Five Holstein–Friesian (B. taurus) and 5 Brahman (> 75% B. indicus) steers (mean liveweight 326 ± 3.0 kg) were used in a fasting study. Steers were fed a low-quality buffel grass (Cenchrus ciliaris; 59.4 g crude protein/kg dry matter) hay at estimated maintenance requirements for 19 days, after which hay intake was incrementally reduced for 2 days and the steers were fasted for 7 days. The excretion of PD in urine was measured daily for the last 6 days of the fasting period and the mean represented the daily endogenous PD excretion. Excretion of endogenous PD in the urine of B. indicus steers was less than half that of the B. taurus steers (190 µmol/kg W0.75.day v. 414 µmol/kg W0.75.day; combined s.e. 37.2 µmol/kg W0.75.day; P < 0.001). It was concluded that the use of a single value for endogenous PD excretion is inappropriate for use in MCP estimations and that subspecies-specific values would improve precision.

ABSTRACTResting heat production (H), respiratory rate (RR) and rectal temperature (Tr) were measured at different controlled temperatures (Tt) in Hariana (Bos indicus) and its F, crosses with Jersey (JH), Brown Swiss (BH) and Holstein Friesian (FH) (Bos taurus) breeds and the values obtained were used to assess their relative thermosensitivity.The lowest Tt at which H significantly decreased from that at 17°c was 32°c for Hariana, JH and BH and 27°c for FH after exposure for 8 days. The corresponding values after exposure for 18 days were 37°c for Hariana and 32°c for all the three crossbred groups. Differences between the genetic groups were also significant. The lowest Tt at which metabolizable energy (ME) decreased significantly in comparison with those at 17CC was 32°c in all the genetic groups. The differences in ME intake between genetic groups were significant only at 32°c Tt. The lowest Tt at which RR significantly increased from those at 17°c were 32°c in Hariana, 27°c in JH, BH and FH for both 5 to 7 and 15 to 17 days of exposure. The corresponding Tt for increase in Tr was 37°c in Hariana, 32°c in JH and 27°c in BH and FH at both 5 to 7 and 15 to 17 days of exposure.The ambient temperature at which H would have significantly decreased and RR and Tr increased from the respective values at 17CC Tt were calculated curvilinearly for different genetic groups. There were differences in these values of calculated ambient temperatures between genetic groups and between exposure durations in respect of H, RR, and Tr, indicating differences in thermosensitivity.

Abstract The aim of this study was to determine the fatty acid (FA) profile of Simmental cow milk in relation to lipid intake in feeds and their composition, and to compare it with FA composition of milk from cows of Polish Holstein-Friesian (PHF) breed. To this end, 104 milk samples were collected from Simmental cows and 52 milk samples derived from PHF breed were taken over a 2-year period. The season significantly influenced both contents of lipid, dry matter and crude protein as well as FA content in lipids extracted from forages. Winter and autumn seasons were characterized by a significantly higher intake of lipids with forages resulting from the intake of fresh silages, compared with the other seasons when the animals were fed stored silages. This was reflected in the highest content of conjugated linoleic acid (CLA) c-9 t-11 C18:2 in milk from the autumn season. Compared with PHF, milk from Simmentals had a higher content of short-chain saturated FAs (SCSFAs) and was characterized by great differences in FA contents determined in the group of odd- and branched-chain FAs (OBCFAs). Milk from Simmental cows had the butyric acid C4:0 and iso C15:0 content of 4.99 and 1.20 g/100 g FA on average, respectively, which have been associated with benefits for human health.

Some 70 % of filial generation Red Sindhi x Jersey and Sahiwal x Jersey crossbred animals were discarded from the dairy herd on the F. D. McMaster Field Station, CSIRO, because of failure to continue in lactation when separated from their calves. This well-known characteristic of Bos indicus cattle, generally referred to as 'maternal instinct,' has been assumed to emanate from the dam's sense of loss on separation from her offspring. Observations on animals in the Field Station herd suggested that this separation causes the dam to cease producing secretory hormones with consequent cessation of lactation. Two systems of management, in one of which the calf was separated from its dam within 24 hr of birth while in the other the dam and offspring were allowed to run together for 10 days, both failed to overcome the problem. Injections of oxytocin after separation were also unsuccessful. Some success was obtained by daily injections of 250 i.u. of prolactin for the 10 days immediately following the separation of dam and offspring, and it was concluded that the presence of the calf stimulated prolactin secretion by the pituitary. Continuation of injections over a period of 7-10 days enabled some animals to continue their lactation without the stimulation afforded by the calf.
