Cheese whey (CW) is the yellow-green liquid main by-product from cheese manufacturing. Historically, it has been recognized as a major environmental pollutant. Nowadays, it represents a source of high-quality nutrients, such as lactose. Enzymatic bioprocesses, chemical synthetic reactions and microbial bioprocesses use lactose as substrate to obtain relevant derivatives such as lactitol, lactulose, lactosucrose, sialyllactose, kefiran and galacto-oligosaccharides. These lactose derivatives stimulate the growth of indigenous bifidobacteria and lactobacilli improving the intestinal motility, enhancing immunity and promoting the synthesis of vitamins. Also, they have versatile applications in pharmaceutical, biotechnological and food industries. Therefore, this book chapter shows the state of the art focusing on recent uses of CW lactose to produce value-added functional compounds and discusses new insights associated with their human health-promoting effects and well-being.

Abstract. To advance knowledge of the mechanisms underlying the relationship between leadership and employees’ well-being, this study examines leaders’ effects on their employees’ compensatory coping efforts. Using an extension of the job demands–resources model, we propose that high-quality leader–member exchange (LMX) allows employees to cope with high job demands without increasing their effort expenditure through the extension of working hours. Data analyses ( N = 356) revealed that LMX buffers the effect of quantitative demands on the extension of working hours such that the indirect effect of quantitative demands on emotional exhaustion is only significant at low and average levels of LMX. This study indicates that integrating leadership with employees’ coping efforts into a unifying model contributes to understanding how leadership is related to employees’ well-being. The notion that leaders can affect their employees’ use of compensatory coping efforts that detract from well-being offers promising approaches to the promotion of workplace health.

This analysis was conducted using the Implan regional economic modeling system and associated state and county databases (IMPLAN Group LLC) to estimate economic multipliers and contributions for over 500 different industry sectors. Multipliers capture the indirect and induced economic activity generated by re-spending of income or sales revenues in a regional economy. A collection of 121 industry sectors were included in the analysis to represent the broad array of activities encompassed by agricultural and natural-resource commodity production, manufacturing, distribution and supporting services in Florida. Economic contributions can be measured in terms of employment, industry output, value added, exports, labor income, other property income, and business taxes. A glossary of economic terms used in this report is provided following this summary.

: The food industry is constantly shifting focus based on prebiotics as health-promoting substrates rather than just food supplements. A prebiotic is ‘‘a selectively fermented ingredient that allows specific changes, both in the composition and/or activity in the gastrointestinal microflora that confers benefits upon host well-being and health.” Prebiotics exert a plethora of health-promoting effects, which has lead to the establishment of multimillion food and pharma industries. The following are the health benefits attributed to prebiotics: mineral absorption, better immune response, increased resistance to bacterial infection, improved lipid metabolism, possible protection against cancer, relief from poor digestion of lactose, and reduction in the risk of diseases such as intestinal disease, non-insulin dependent diabetes, obesity and allergy. Numerous studies in both animals and humans have demonstrated the health benefits of prebiotics.

AbstractFructans are carbohydrates consisting of fructose monomers linked by β-2,1- and/or β-2,6-glycosidic bonds with linear or branched structure. These carbohydrates belong to the group of prebiotic dietary fibre with health-promoting potential for humans and mammals due to their indigestibility and selective stimulation of microorganisms in the gastrointestinal tract. This makes fructans interesting mainly for healthy food as well as animal feed applications. As a consequence of a growing public awareness for animal welfare, dietary fibre and thus fructans move into the focus as a fibre-rich feeding improving not only animals’ health but also their well-being. Against this background, this paper summarises the known effects of fructans focusing on pigs and highlights the state of the art in fructan production processes from plant material as well as selected current research lines. Additionally, an attempt is made to assess the potential of European fructan production for an application as animal feed. Based on this, challenges in the field of fructan production are addressed and alternative substrates for fructans are discussed and pointed out.

Abstract Background People are living longer than ever before. However, with living longer comes increased problems that negatively impact on quality of life and the quality of death. Tools are needed to help individuals assess whether they are practicing the best attitudes and behaviors that are associated with a future long life, high quality of life, high quality of death and a satisfying post-death legacy. The purpose of paper is to describe the process we used to develop a novel questionnaire (“Preparedness for the Future Questionnaire™ or Prep FQ”) and to define its psychometric properties. Methods Using a multi-step development procedure, items were generated, for the new questionnaire after which the psychometric properties were tested with a heterogeneous sample of 502 Canadians. Using an online polling panel, respondents were asked to complete demographic questions as well as the Prep-FQ, Global Rating of Life Satisfaction, the Keyes Psychological Well-Being scale and the Short-Form 12. Results The final version of the questionnaire contains 34 items in 8 distinct domains (“Medico-legal”, “Social”, “Psychological Well-being”, “Planning”, “Enrichment”, “Positive Health Behaviors”, “Negative Health Behaviors”, and “Late-life Planning”). We observed minimum missing data and good usage of all response options. The average overall Prep FQ score is 51.2 (SD = 13.3). The Cronbach alphas assessing internal reliability for the Prep FQ domains ranged from 0.33 to 0.88. The intra-class correlation coefficient (ICC) used to assess the test–retest reliability had an overall score of 0.87. For the purposes of establishing construct validity, all the pre-specified relationships between Prep FQ and the other questionnaires were met. Conclusion Analyses of this novel measure offered support for its face validity, construct validity, test–retest reliability, and internal consistency. With the development of this useful and valid scale, future research can utilize this measure to engage people in the process of comprehensively assessing and improving their state of preparedness for the future, tracking their progress along the way. Ultimately, this program of research aims to improve the quality and quantity of peoples live by helping them ‘think ahead’ and ‘plan ahead’ on the aspects of their daily life that matter to their future.

Natural environments have been shown to promote health, and are, therefore, important for achieving social sustainability in cities. As cities grow and become denser, it is important to develop knowledge about the characteristics of natural environments that work to promote health. Perceived Sensory Dimensions (PSDs) is a tool that defines eight different cultural ecosystem services. They correspond to different human needs (rest, exercise, socialising, pleasure, or security) resulting in rehabilitation and health and well-being promotion. An experiment was conducted to study the potential of PSDs to restore people who experienced stressful accidents. One hundred and fifty-seven participants were recruited and asked first to watch a film clip of serious accidents, then to look at the pictures, depicting one particular type of PSDs, while listening to its respective audio recording. Their stress levels were measured before exposure to the stressor (baseline), after exposure to the stressor (pre-test), and after exposure to a particular type of PSDs (post-test). The results show that all eight PSDs effectively provide mental recovery, but there are statistical differences in their potentials. As such, it is proposed that the combined potential of the PSDs is needed, and should be used to increase the capacity and supply of health-promoting urban green areas.

<p>With the recent release of a new international charter on health promoting universities and institutions of higher education, universities and colleges are increasingly interested in providing learning experiences that enhance and support student well-being. Despite the recognition of learning environments as a potential setting for creating and enhancing well-being, limited research has explored students’ own perceptions of well-being in learning environments. This article provides a qualitative exploration of students’ lived experiences of well-being in learning environments within a Canadian post-secondary context. A semi-structured focus group and interview protocol was used to explore students’ own definitions and experiences of well-being in learning environments. The findings illuminate several pathways through which learning experiences contribute to student well-being, and offer insight into how courses may be designed and delivered in ways that enhance student well-being, learning and engagement. The findings also explore the interconnected nature of well-being, satisfaction and deep learning. The relevance for the design and delivery of higher education learning experiences are discussed, and the significance of the findings for university advancement decisions are considered.</p>

PurposeThe purpose of this paper is to describe Burmese migrant women’s perceptions of health and well-being during pregnancy, their health promoting practices and their experiences with the Thai antenatal services.Design/methodology/approachThe study used an ethnographic design. Observations were conducted in two antenatal clinics in southern Thailand. Ten Burmese migrant women and three Burmese interpreters participated in interviews. Data were analysed using thematic analysis.FindingsThe Burmese women wanted to take care of themselves and their baby to the best of their ability. This included following traditional practices and attending the antenatal clinic if able. Negotiating the demands of earning an income, and protecting their unborn baby, sometimes led to unhealthy practices such as consuming energy drinks and herbal tonics to improve performance. Accessing antenatal care was a positive health seeking behaviour noted in this community, however, it was not available to all.Research limitations/implicationsThis is a small ethnographic study conducted in one Province in Thailand and all Burmese participants were legal migrants. Further research is required to understand the needs of pregnant women not able to access maternity services because of their status as an illegal migrant.Practical implicationsCommunity-based health promotion initiatives need to focus on the nutrition of pregnant women who are migrants living in southern Thailand. New models of care may increase migrant women’s use of antenatal services.Originality/valueMost studies of the health of migrant women are conducted in high-income countries. This study demonstrates the difficulties experienced by women migrating from a low to middle-income country.

PurposeThrough a two-stage survey, this paper examines how researchers judge the quality of answers on ResearchGate Q&A, an academic social networking site.Design/methodology/approachIn the first-stage survey, 15 researchers from Library and Information Science (LIS) judged the quality of 157 answers to 15 questions and reported the criteria that they had used. The content of their reports was analyzed, and the results were merged with relevant criteria from the literature to form the second-stage survey questionnaire. This questionnaire was then completed by researchers recognized as accomplished at identifying high-quality LIS answers on ResearchGate Q&A.FindingsMost of the identified quality criteria for academic answers—such as relevance, completeness, and verifiability—have previously been found applicable to generic answers. The authors also found other criteria, such as comprehensiveness, the answerer's scholarship, and value-added. Providing opinions was found to be the most important criterion, followed by completeness and value-added.Originality/valueThe findings here show the importance of studying the quality of answers on academic social Q&A platforms and reveal unique considerations for the design of such systems.
