Preliminary study on consumers’ and meat traders’ perceptions of beef quality and how the beef quality is affected by animal welfare practices

Reading books to shelter animals combining auditory enrichment with human presence is increasingly used although its effects on animal welfare have not yet been investigated. This study compared the behaviour of single-housed shelter dogs and cats during a prerecorded reading condition in the absence or presence of an unfamiliar human (without direct physical contact). Fourteen dogs and twenty-one cats were observed in their enclosure in the two conditions in a counterbalanced order. Behaviours such as scratching the door, gaze direction and location in relation to the audio source/human were analysed from video recording for 10 min per condition. Dogs spent more time in their bed (p < 0.047) and looking at the auditory source (p < 0.004) when a human was present. Cats showed door scratching and rubbing when a human was present (p < 0.043), whereas they tended to spend more time in the vertical dimension (p = 0.051), where the hiding boxes were located, during auditory stimulation without a human present. These results show that the presence of a human induces greater interest compared to just audio stimulation in shelter dogs and cats but may induce frustration likely due to not being able to physically interact in some animals.

Captive animal welfare is important for establishments that exhibit species for education, conservation, and research. However, captive animals are often exposed to a number of potential stressors, such as visitors and anthropogenic noise. We aimed to identify the impact of a concert series on the behaviour of Fiordland penguins (Eudyptes pachyrhynchus; n = 2), and solitary- (n = 1) or group- (n = 4)-housed collared peccaries (Pecari tajacu). Animal behaviour, visitor density, and visitor behaviour was monitored pre-concert (afternoons; 16:00–19:00), during the concert (evenings; 19:00–21:00), and post-concert (nights; 21:00–00:00) on concert days (penguin n = 7 days; peccary n = 8 days) and in the same periods on days when there was no concert (penguin n = 8 days; peccary n = 6 days). Fiordland penguins spent more time surface swimming and diving in the pool on concert afternoons and evenings (all p < 0.001), more time in the nest on concert nights (p < 0.001), preened less on concert afternoons and nights (p = 0.019), and engaged with their habitat less on concert evenings and nights (p = 0.002) compared to these periods on days without a concert. The group-housed peccaries slept more in the afternoon and evening (p ≤ 0.01) and were more vigilant at night (p = 0.009) on concert days compared to no-concert days. The solitary-housed peccary slept more on concert nights (p = 0.035), rested more frequently across all time periods on concert days (p < 0.001), and used the front of the enclosure more across all concert time periods (p < 0.001) compared to no-concert days. We provide evidence that behaviour was altered on event days; however, we cannot determine the nature of these changes. Further research is needed to understand the impact of music concerts on zoo animal welfare.

Meat quality includes intrinsic qualities (the characteristics of the product itself) and extrinsic qualities (e.g. animal health and welfare, environmental impacts, price). There is still a high level of variability in beef palatability, which induces consumer dissatisfaction. We also observe a general trend towards an increasing importance of healthiness and safety (intrinsic) and environmental issues and animal welfare (extrinsic). Most grading systems describe carcasses using only animal traits (e.g. weight, conformation, fatness, animal age and sex). In North American and Asian countries, emphasis has been put on maturity and marbling. The European system is mainly based on yield estimation. The Meat Standards Australia grading scheme, which predicts beef palatability for each cut, proved to be effective in predicting beef palatability in many other countries. Some genetic markers are available to improve beef quality. In addition, gene and protein expression profiling of the bovine muscle revealed that the expression level of many genes and the abundance of many proteins may be potential indicators of muscle mass, tenderness, flavour or marbling of meat. The integration of all these parameters is likely to predict better beef palatability. The integration of extrinsic qualities in the prediction model increases the difficulty of achieving a global evaluation of overall meat quality. For instance, with respect to environmental issues, each feeding system has its own advantages and disadvantages. Despite this, win–win strategies have been identified. For example, animals that were less stressed at slaughter also produced more tender meat, and in some studies the most economically efficient farms had the lowest environmental impact. In other cases, there are trade-offs among and between intrinsic and extrinsic qualities. In any case, the combination of the different integrative approaches appears promising to improve the prediction of overall beef quality. A relevant combination of indicators related to sensory and nutritional quality, social and environmental considerations (such as e.g. carbon footprint, animal welfare, grassland biodiversity, rural development) and economic efficiency (income of farmers and of other stakeholders of the supply chain, etc.) will allow the prediction of the overall quality of beef mainly for consumers but also for any stakeholder in the supply chain.

Improper beef cattle handling could affect welfare and meat quality. The effect of beef cattle handling during transportation and in the lairage on the animal welfare and beef quality was studied in relation to Guder and Ambo markets and abattoirs. Data were collected from 200 respondents using a semi-structured questionnaire. For laboratory analysis, animals were randomly assigned into three groups: Group I - trekked from the nearest places (≤30 km), Group II - trekked farthest places (>30 km), and Group III - transported using vehicles (>50 km). One-hundred pooled beef swab samples were collected from the flank, brisket, and rump to determine aerobic bacterial load and another 100 beef samples to assess pH values. Descriptive statistics, independent t-test, and ANOVA were used for analysis. The result of the study indicated that trekking was the major means of transportation (72%). The majority of animal handlers (92%) did not allow animals to feed, water, and rest during trekking. Beef cattle were overcrowded and beaten during vehicle transport. About 47% of the beef samples were abnormal of which the majority were DFD (dark, firm and dry) beef and DFD beef with spoilage. The pH of meat was significantly affected by the distance traveled before slaughter using both trekking and vehicle transportation (t= -3.5, p=0.001). Therefore, it is concluded that there was poor handling and stressful situation of beef cattle before slaughtering, which negatively affected the welfare and beef quality. Hence, pertinent proclamations, regulations, and delivery of animal welfare awareness training for different stakeholders are urgently needed.

A preliminary study of human mammary carcinoma on the ultrastructural level is reported for a metastatic, subcutaneous nodule, obtained as a surgical biopsy. The patient's tumor had responded favorably to a series of hormonal therapies, including androgens, estrogens, progestins, and corticoids for recurring nodules over eight years. The pertinent nodule was removed from the region of the gluteal maximus, two weeks following stilbestrol therapy. It was about 1.5 cms in diameter, and was located within the dermis. Pieces from it were fixed immediately in cold fixatives: phosphate buffered osmium tetroxide, glutaraldehyde, and paraformaldehyde. Embedment in each case was in Vestopal W. Contrasting was done with combinations of uranyl acetate and lead hydroxide.

A new strain of mice, which had arisen by mutation from a dystrophic mouse colony was designated ‘mdx’, because the genetic defect, which manifests itself in brief periods of muscle destruction followed by episodes of muscle regeneration appears to be X-linked. Further studies of histopathological changes in muscle from ‘mdx’ mice at the light microscopic or electron microscopic levels have been published, but only one preliminary study has been on the tibialis anterior (TA) of ‘mdx’ mice less than four weeks old. Lesions in the ‘mdx’ mice vary between different muscles, and centronucleation of fibers in all muscles studied so far appears to be especially prominent in older mice. Lesions in young ‘mdx’ mice have not been studied extensively, and the results appear to be at variance with one another. The degenerative and regenerative aspects of the lesions in the TA of 23 to 26-day-old ‘mdx’ mice appear to vary quantitatively.

Left ventricular assist systems are being developed for eventual long term or permanent implantation as an alternative to heart transplantation in patients unsuitable for or denied the transplant option. Evaluation of the effects of these devices upon normal physiology is required. A preliminary study was conducted to evaluate the morphology of aortic tissue from calves implanted with a pneumatic Left Ventricular Assist device-LVAD. Two 3 month old heifer calves (calf 1 and calf 2) were electively explanted after 128 days and 47 days respectively. Descending thoracic aortic tissue from both animals was removed immediately post mortem and placed into karnovsky’s fixative. The tissue was subsequently processed for transmission electron microscopy (TEM). Some aortic tissue was fixed in neutral buffered formalin and processed for routine light microscopy.
