This chapter aims at understanding the Rooster of Barcelos (Galo de Barcelos) as local intangible cultural heritage, being the case study of a research leading to the proposal of this explanatory model for developing and implementing tourism creative destinations. The Barcelos Rooster is the result of two ancestral customs of this territory, namely handicrafts and the Jacobin legend of the miracle of the rooster. These two customs, eternalized in time, were associated by the intervention of tourism. In addition, handicrafts, the Camino de Santiago, gastronomy (roast rooster from this legend), wine (vinho verde) and the traditional market, and heritage associated with the Rooster of Barcelos emerge as the main tourist attractions of this territory. It might be concluded that the Rooster of Barcelos, as one of the main symbols of Portuguese tourism, local heritage, and tourism product honey pot has the potential to leverage the sustainable development of this territory as a creative tourist destination.

Delinquent behaviour is predominantly an expression of adolescent developmental phases, but at the same time a possible entry into criminal careers. Where socio-educational measures and admonitions no longer help, society reacts with youth detention and imprisonment as a last resort, in doing so it brings the young people into an environment of violence and power. The concept of the socio-educational pilgrimage as an alternative measure to imprisonment takes the young people out of this context and offers space for reflection and self-efficacy. In this article, different concepts of Learning Walks for young offenders are discussed and theoretically analysed.

The role of the Associations of Friends of the Camino de Santiago is virtually unknown in research into the pilgrimage to Santiago. Their function is crucial for understanding the modern-day recovery of the Camino, its international fame and the conservation of many of the unique features along the way. In this paper, based on surveys and interviews, we analyse their current vision of the pilgrimage as well as their relations with public administrations and the Church. Their work, in direct contact with the pilgrims, means that they have a good knowledge of their needs, developing actions to support and guide the wayfarer. However, they are often not taken into account by the institutions that manage the Jacobean itineraries. We conclude by stating that the importance of these associations is fundamental for maintaining the dynamics of the route and that some obstacles must be overcome in order to maintain the central place they occupy in the Jacobean world.

This study identifies the main dimensions and attributes that shape the experience of the Camino de Santiago for Chinese travelers as a tourism product. By exploring the similarities and differences between their experiences and that of Western pilgrims, it also reflects on the sustainable marketing strategies of the Camino among Chinese travelers. The research adopts a phenomenological approach and gathers data from 112 online travel journals posted by Chinese Camino pilgrims, and from in-depth interviews with twelve Chinese pilgrims. The results reveal that the Camino is experienced by Chinese pilgrims as a personal journey of well-being and growth, as well as a cross-cultural experience. Authenticity and harmony are observed to be the key elements that contribute to a satisfying and transformative experience for Chinese pilgrims, where they find a cultural-spiritual center close to their traditional values, yet distant from their everyday social practices. Both Chinese and Western pilgrims undergo similar external and internal journeys, although each group travels in its respective sociocultural framework. The study is based on Cohen’s (1979) five travel-mode theory and enriches the discussion from a cross-cultural point of view. The implications for the sustainable management of the Camino as a global cultural heritage route, and for effectively marketing it among Chinese tourists, are also discussed.
