The article is devoted to the research of the problem of compensation of energy losses of servicemen doing  qualification course of the UAF Special Operations Forces as well as development of the method of promp response of the officials of food service on changing of energy losses of servicemen on different phases of qualification course by corresponding correction of their daily nutrition ration. The aim of work was directed for development and substantiation of informational model of nutrition ration calculation for compensation of energy losses of the Ukrainian Armed Forces servicemen. Time and tabular method of energy losses calculations, calculations of ration composition, instrumental estimations, laboratory and statistics assessments were used as methods of research. Calculations of informational model were done in Microsoft Excel 2007 functional environment. The description of informational polyparametrical model of the computational system of nutrients composition and energy value of servicemen daily nutrition ration depending on revealed energy losses doing qualification course of UAF Special Operations Forces has been presented. The model is meant for operative calculations of nutrients composition and energy value for compensation of energy losses of corresponding servicemen doing different phases of qualification course. Informational model got approval and was implemented in the UAF Special Operations Forces activities.

In a scientific and economic experiment, it was studied the effect of the multifunctional probiotic preparation Bionorm K on the stabilizing digestion process and dairy cow milk productivity-increasing during the transition from one ration composition to another. The probiotic drug Bionorm K is a multi-strain product, which consists of 14 strains of bifidobacteria and lactobacillus. Moreover, it has a protective shell, which retains the microorganism activity after passing the acid barrier of the cow's abomasum. It was found that the diet probiotic addition is advisable to start from the first day after calving and continues for 45 days in a dose of 5 g per head per day. The experimental group animals outpaced the control animals by the consumption of dry matter of the diet by 2.6 %. At the same time, the likelihood of developing digestive disorders and the incidence of diarrhea is reduced by 2-2.5 times. At the end of the studies, none of the cows suffered from digestive upsets. Besides, cows, which injected the probiotic to the ration, had improved the ruminative processes due to an increase in the frequency of their contractions compared to the control. Already on the fifth day, the number of ruminal contractions at the experimental animals was 12.5% higher than the control. The higher intensity of rumen work at the experimental cows was maintained during the entire time of probiotic addition into the diet, although the difference with the control was constantly decreasing. The feed probiotic addition promotes a gradual increase in milk production by 7.64 % and an increase in the fat level in milk by 0.02 % compared to the control. At the same time, feed costs of 1 kg of milk decreased by 5.6 %. The probiotic stabilizes the biochemical composition of the cow blood quickly and increases the gamma globulin level at blood serum, which indicates an increase in the immune status of cows in the experimental group.

The biochemical and organoleptic characteristics of the longissimus thoracis muscle from suckler bulls (n = 56) finished on a concentrate-based system (C) or raised in a pasture-based system (P) incorporating 99 (P99), 162 (P162) or 231 days (P231) of grazing prior to indoor finishing on the concentrate-based diet were investigated. Age at slaughter increased with increasing period at pasture. Intramuscular fat concentration was lower (p < 0.001) for P99 than for C, P162 and P231 bulls, which did not differ. Soluble collagen proportion was lower (p < 0.01) for P162 and P231 than for P99 and C bulls. Collagen cross-link content was higher (p < 0.05) for P231 than for P99 and C bulls and for P162 than for C bulls. The proportion of type I muscle fibres was higher (p < 0.01) for P231 and P162 than for P99 and C bulls. Sensory tenderness was higher (p < 0.001) for C and P162 than for P99 and P231 bulls and overall liking was higher (p < 0.01) for C than for P99 and P231 bulls but similar to P162 bulls. Extending the grazing period to 162 days did not negatively influence the sensory qualities of beef compared to the intensive concentrate-based system.

For the purpose of improvement of the Ukrainian nutritional standards this Article provides comparative analysis of field rations of different countries worldwide to make a proposal on improvement of food-stuff assortment in food ration for military personnel in the Armed Forces of Ukraine, Army of USA, the British Army, Army of Germany, Army of Italy, Army of Canada, Army of France, Army of Belarus, Army of Armenia. In accordance with the comparative analysis it was established that ration composition used for the Armed Forces of Ukraine military personnel lags behind developed countries of the world both in nutrition arrangement and in nutrient composition, especially in relation to assortment and variety of ration food-stuff. Moreover, a field ration is strictly unified and doesn’t consider individual needs of military personnel in calories, proteins, fats, carbohydrates, food fibers. Selection of individual field ration takes to account only age of military personnel, i. e. individual needs related to nutrition composition such as physical abilities, level of physical activity, gender, type of occupation before military conscription and etc. are not consideredThe obtained results confirms practicability of assortment products assortment included to field rations for the purpose to correct nutrition rations towards optimal balance for military efficiency of army, adaptation of military personnel to physical and psychological loads.
