The widespread introduction of non-traditional and local types of raw materials and the development of new types of products on their basis should be combined with the scientific substantiation of the composition and technology, which ensures the production of high-quality products, strengthening the control of biological and nutritional value, and the safety of new types of confectionery. One of the most important tasks faced by the confectionery industry is the development of new products in order to improve the structure of the range, save on scarce raw materials, reduce sugar content; creation of dietetic products, with a long shelf life. The use of raw materials of local and non-traditional species can contribute to solving this problem. The main source of vitamins, easily digestible carbohydrates, enzymes, fiber, pectin and minerals is fresh fruits and vegetables. Flour confectionery products, due to the high content of carbohydrates, fats and proteins, are high-calorie, well-digestible products with a pleasant taste and attractive appearance. Out of all the flour semi-finished products, the sponge cake is the bloated and softer. A well-baked cake is handy for processing; it has a smooth, thin crust; porous, elastic structure of the pulp – during compression is easily compressed, after removal of effort restores the old form. In the production of many foods, supplements that regulate the consistency and form the texture of food products are used. The structure of the sponge cake product is formed, mainly, at the stage of paste formation. The sponge cake is a poorly structured system with saturated air. The quality of the semi-finished product, above all, will depend on the quality of the resulting dough, which is substantially affected by the raw material. We have developed a recipe for a sponge dough, semi-finished product containing a pumpkin powder containing a significant amount of pectins, fiber, etc. In the structure of a sponge semi-finished product with pumpkin powder, thanks to the contents of polycarcids, which are merged with proteins bridges are formed. Osmotic swelling occurs as a result of the diffusion of water molecules inside the protein molecule, causing swelling of proteins. Microscopy of the structure of the biscuit semi-finished product was investigated in Slovakia (SPU).

The quality of baked products is the complex, multidimensional result of a recipe, and a controlled heating process to produce the desired final properties such as taste, colour, shape, structure and density. The process of baking a sponge cake in a convective oven at different air temperatures (160-180-220 °C) leading to the same loss of mass was considered in this study. A special mould was used which allowed unidirectional heat transfer in the batter. Instrumentation was developed specifically for online measurement of weight loss, height variation and transient temperature profile and pressure in the product. This method was based on measuring heat fluxes (commercial sensors) to account for differences in product expansion and colour. In addition, measurement of height with a camera was coupled to the product mass to calculate changes in density over time. Finally, combining this information with more traditional measurements gave a better understanding of heat and mass transfer phenomena occurring during baking.

AbstrakMakanan adalah salah satu hal penting dalam kehidupan masyarakat. Semakin berkualitas suatu makanan maka dapat menghasilkan sumber daya manusia yang berkualitas juga. Akan tetapi maraknya pemalsuan salah satunya pemalsuan tanggal kadaluarsa mengakibatkan masyarakat harus jeli dan teliti dalam memilih produk. Salah satu makanan yang digemari masyarakat adalah jenis kue dan bolu. Toko Kemuning salah satu toko yang banyak memproduksi jenis-jenis kue tersebut untuk didistribusikan dan dijual sendiri di tokonya. Oleh karena itu, untuk meningkatkan kepercayaan masyakarat terhadap kualitas produk yang dihasilkan oleh Toko Kemuning maka pada penelitian ini dibuat sebuah aplikasi untuk mengelola data produk, dimana konsumen dapat mengecek tanggal kadaluarsa melalui anroid dengan cara scan qr code yang terdapat dalam kemasan kue. Adapun yang digenerate ke dalam bentuk qr code adalah id produk,id tersebut berisi string unik yang dienkripsi menggunakan algoritma vigenere chipper sehingga tidak mudah dideteksi oleh orang lain. Admin dapat melakukan pengelolaan data produk sehingga ketika toko memproduksi kue, data dapat tersimpan di database dan qr code dapat dicetak. Dengan penelitian ini diharapkan dapat meningkatkan kepercayaan konsumen derta menjaga kualitas produk dari toko kemuning.Kata Kunci��Kue, Enkripsi, Algoritma Vigenere Chiper�AbstractFood is one of the important things in people's lives. However, the rise of counterfeiting, one of which is falsification of expiration date, causes the public to be observant and careful in choosing products. One of the foods that are favored by the public is a type of cake and sponge cake. Kemuning Shop is one shop that produces many types of cakes to be distributed and sold alone in the store. Therefore, to increase public trust in the quality of products produced by the Kemuning Shop, an application is made to manage product data, where consumers can check the expiration date via anroid by scanning the qr code contained in the cake packaging. As for what is generated in the form of qr code is a product id, the id contains a unique string that is encrypted using the vigenere chipper algorithm so that it is not easily detected by others. Admins can manage product data so that when a shop produces cookies, data can be stored in a database and the QR code can be printed. Abstrak Tujuan penelitian ini untuk memperoleh variasi cake dari tepung singkong dengan mensubstitusi terigu. Karena terigu merupakan produk impor olahan dari gandum, sebagai usaha mendukung peningkatan ketahanan pangan. Penelitian ini menggunakan metode penelitian eksperimental semu di laboratorium karena keterbatasan untuk mengontrol semua variabel yang relevan. Instrumen pengumpulan data menggunakan lembar observasi untuk memperoleh data uji kualitas dari panelis terlatih, sedangkan data uji selera diperoleh dari masyarakat umum untuk mengetahui keberterimaan variasi cake singkong. Analisis data penelitian dilakukan secara deskriptif kualitatif. Hasil penelitian memperoleh kualitas cake singkong pada kriteria yang sempurna pada, (a) pound cake dengan substitusi 80% bahan utama, (b) roll cake dengan substitusi 100% bahan utama, tetapi kualitas tekstur terendah, (c) chiffon cake dengan substitusi 100% bahan utama, serta pengembangan (volume) maksimal, (d) bolu kukus dengan substitusi 80% bahan utama, tetapi kualitas aroma terendah, (e) sponge cake dengan substitusi 80% bahan utama, tetapi semua kriteria terendah, (f) brownies dengan substitusi 100% bahan utama, serta semua kriteria tertinggi, (g) fruit cake menggunakan buah-buahan lokal dengan substitusi 100% bahan utama, serta semua kriteria tertinggi, dan (g) rainbow cake dengan substitusi 100% bahan utama, tetapi kualitas tekstur terendah. Secara umum keberterimaan masyarakat sangat menyukai variasi cake singkong, tetapi sponge cake dan rainbow cake memperoleh keberterimaan terendah. Dengan demikian 8 jenis cake dapat menggunakan tepung singkong sebagai substitusi terigu untuk mendukung peningkatan ketahanan pangan. Because wheat is imported products processed from wheat, in an effort to support increased food security. This study uses a quasi-experimental research in the laboratory because of the limitations to control all the relevant variables. Data collection instrument uses observation sheets to obtain quality test data from trained research, while the taste test data obtained from the general public to determine the acceptability of variation cassava cake. The data analysis was conducted by qualitative descriptive study. Research results obtained quality cake cassava on the criteria perfectly on, (a) pound cake with a substitution of 80% of the main ingredient, (b) roll cake with substitution of 100% main ingredient, but the quality of the texture of the lowest, (c) chiffon cake with substitution of 100% the main ingredient, and development (volume) maximum, (d) steamed sponge with the substitution of 80% of the main ingredient, but the quality of the aroma room, (e) sponge cake with a substitution of 80% of the main ingredient, but all the criteria lows, (f) brownies with substitution 100% main ingredient, as well as all the supreme criterion, (g) fruit cake using local fruits by substitution of 100% main ingredient, as well as all the supreme criterion, and (g) rainbow cake by substituting 100% main ingredient, but the texture quality lowest. In general acceptability of the community is like the variety of cassava cake, but the cake and rainbow sponge cake obtain the lowest acceptance. Thus the 8 types of cake can be used as a substitution of cassava flour wheat to support increased food security. Keywords: cassava flour, cake variation, substitution wheat

Abstrak: Bit merah (Beta vulgaris L.) merupakan salah satu komoditas yang memiliki keunggulan sebagai zat pewarna alami dan sumber antioksidan. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan pasta bit merah (beta vulgaris L.) terhadap kualitas mutu sponge cake. Rancangan penelitian ini menggunakan (RAL) dengan 6 perlakuan 4 kali ulangan, perlakuan yang diberikan yaitu perbedaan konsentrasi penambahan pasta bit (b/b) yakni T0= 0% (kontrol) , T1=10%, T2= 20%, T3= 30%, T4= 40% dan T5= 50%. Hasil penelitian menunjukkan bahwa penambahan konsentrasi pasta bit yang berbeda memberikan pengaruh nyata (P<0,05) terhadap aktifitas antioksidan, morfologi crumb, warna (L*), mutu organoleptik tekstur, aroma dan overall sedangkan untuk parameter daya kembang, warna (a*) dan (b*) dan mutu organoleptik rasa tidak berpengaruh nyata. Penambahan pasta bit yang terbaik yakni perlakuan T5 (50%) dengan nilai daya kembang 74,75±3,50, morfologi crumb baik, aktifitas antioksidan 60%, warna (L*) 64,68, warna (a*) 5,79, warna (b*) 33,12, dan mutu organoleptik rasa manis, aroma tidak langu, tekstur agak lembut, dan Overall suka. Abstract: Red beet (Beta vulgaris L.) is a commodity that has advantages as a natural coloring agent and source of antioxidants. This study aims to determine the effect of the addition of red beet paste (Beta vulgaris L.) on the quality of sponge cake quality.The design of this study uses (CRD) with 6 treatments and 4 replications, the treatment given is the difference in the concentration of the addition of beet paste (b / b) namely T0= 0% (control), T1= 10%, T2= 20%, T3= 30%, T4= 40% and T5= 50%. The results showed that the addition of different concentrations of beet paste gave a significant effect (P <0.05) on antioxidant activity, crumb morphology, color (L *), organoleptic quality of texture, aroma and overall while for the parameters of developt capacity, color (a * ) and (b *) and organoleptic quality of taste have no significant effect. The best addition of beet paste is the treatment of T5 (50%) with a value of developt capacity 74.75 ± 3.50, good crumb morphology, antioxidant activity 60%, color (L *) 64.68, color (a *) 5.79 , color (b *) 33.12, and organoleptic quality of sweet taste, unpleasant aroma, rather soft texture, and overall like.
