AbstractInsufficient knowledge and improper food handling practices by child caregivers contribute greatly to food borne illnesses among children. Training and certificate programs which can translate into good practice have been found to improve the overall food handling behaviors of the caregivers. Thus the need to intervene on the poorly identified knowledge of food safety among child caregivers in Ogun state, Nigeria. One hundred and seventy (170) child caregivers between the ages 18 to 35years living in Ijebu-Ode Local Government area of Ogun State were involved in the study. These caregivers were initially identified to poor knowledge of food safety and practice in the study area. Informed consent were obtained from the Head of Child Caregivers Centres (CCC) and the caregivers themselves before the commencement of the program. One week intervention program in form of training was then organized for the concerned caregivers. A validated semi structured food safety knowledge (FSK) questionnaires were re-administered to the same food handlers after the training. Scores above 15 were categorized as adequate knowledge while those below 15 were categorized as poor knowledge. Numerical data were analysed using mean, standard deviation while t-test was used to test hypotheses. All the respondents were female (100%) and majority (43.6%) had secondary education. Respondents gained knowledge on the followings after the training: hand washing, procedure for feeding babies, cleaning of utensils and disinfection, handling of breast milk, formula feeding, diapering and general cleaning of the environment with mean scores of 18.25 ± 3.5, 20.18 ± 4.30, 16.38. ± 8.35, 25.68 ± .9.00, 15.79 ± 3.25, 30.00 ± 6.33 and 19.20 ± 4.00 respectively. knowledge of food safety among child caregivers significantly increased after the intervention exercise. Training and other forms of interventions on knowledge of food safety should be organized regularly for child caregivers

The purpose of this study was to evaluate the level of food safety knowledge among cadets of Military Academy in the Republic of Serbia. For that purpose, a structured, self-administrative questionnaire was designed and used to assess the level of food handling practices and food safety knowledge. In total, 120 cadets were involved in the study. For each participating cadet, the food handling practice score (FHPS) and food safety knowledge score (FSKS) was calculated by dividing the sum of correct answers by the total number of correct responses. Additionally, knowledge gaps were identified for each question. Our results indicated that on the average FHPS among Serbian cadets was 44.5%, while FSKS was 50.5%. Female cadets showed better scores compared to males, although this was not statistically significant. Better FHPS scores were determined among cadets living with parents (48.7%), compared to cadets living with roommates (43.6%, p?0.05), while an opposite was determined for FSKS. In total, 95.8% of cadets apply good practice of hand hygiene before preparing food, 90.8% of them knew that is not safe to consume food when the shelf-life is expired, and 89.2% knew that the opened sterilized milk should not be stored outside the refrigerator. Also, 91.7% of cadets knew that content of blown can is not safe for the consumption. Almost 64.2% of all cadets could successfully make association between meat and Trichinella, while merely 27.5% of them knew that Escherichia coli O157 is the most important pathogen for raw minced meat, and only 13.3% of cadets knew that Listeria monocytogenes is associated with ready-to-eat meat products. Finally, only 10% of cadets knew that Campylobacter is food-borne pathogen mostly associated with raw and undercooked chicken meat. Also, our cadets were not aware that color, smell or appearance of food would not give any indication of food contamination, as only 6.7% of cadets knew this. Results obtained in this study pointed out some food safety areas which need further improvement via educational program, but also via media and internet courses, material or short clips.

Purpose – The purpose of this paper is to explore Chinese food safety issues by analysing select incidents within he Chinese agricultural marketing system. Design/methodology/approach – A marketing utility framework is utilized to discuss some of the major food safety incidents in China and potential solutions are explored. Findings – The paper finds that food safety issues arise from problems of asymmetric information which leads to the profit seeking behaviour of agents distorting rather than enhancing the creation of one of the four types or marketing utility (time, form, place and possession). Additionally, structural causes found within the Chinese food marketing system have contributed to the food safety problems. Research limitations/implications – This is not an empirical research with numerical data. Originality/value – This study is one of the first to address Chinese food safety problems from an agricultural marketing utility perspective. Key anecdotes are used to support the claims made in this study.

Introduction. In Ethiopia, it is the second cause for clinical presentation among under five-year child population. Objective. The main aim of this study was to assess knowledge, practice, and associated factors of home-based management of diarrhea among caregivers of children attending the under-five clinic. Methods. Institution based quantitative cross-sectional study was carried out from March 1, 2016, to April 22, 2016. Results. Two hundred eight (56.2%) of them had good knowledge and one hundred thirty-nine (37.6%) of them had the good practice of home management of diarrhea, specifically, primary education (AOR: 5.384, 95% CI: 2.008, 14.438), secondary and above education (AOR: 11.769, 95% CI: 3.527, 39.275), daily laborer (AOR: 0.208, 95% CI: 0.054, 0.810), and no information about diarrhea (AOR: 0.139, 95% CI: 0.054, 0.354). Moreover, age range of 25–35 (AOR: 4.091, 95% CI: 1.741, 9.616) and 36–45 (AOR: 3.639, 95% CI: 1.155, 11.460), being single (AOR: 0.111, 95% CI: 0.013, 0.938), being divorced (AOR: 0.120, 95% CI: 0.024, 0.598), illiteracy (AOR: 0.052, 95% CI: 0.017, 0.518), primary education (AOR: 0.143, CI: 0.046, 0.440), and no information about diarrhea (AOR: 0.197, 95% CI: 0.057, 0.685) were significantly associated variables with the outcome variables in multivariate regression. Conclusion. Caregivers had slightly adequate knowledge but poor practice.

In several areas, Kentuckians practice more risky health behaviors than most of the rest of the nation. The Health Belief Model states that individuals with lower perceived risks practice less healthy behaviors. This study sought to determine if this was true for food safety by assessing food safety perceptions and behaviors of Kentucky consumers. Data were collected through a telephone questionnaire based on a survey by the U.S. Food and Drug Administration; 728 respondents participated. Food safety perceptions were analyzed by examining participants' responses to confidence in the safety of the food supply, perception of likelihood of people becoming sick because of foodborne illness, and perception of where food safety problems are most likely to occur. Significant differences were found in food safety perceptions for age, gender, household income, education, and employment in the food industry. Analysis of food safety behaviors revealed differences in food handling behaviors for gender, education level, household income, race, and households with a member aged 65 years or older. Significant relationships were found between respondents' food safety perceptions and behaviors. In general, Kentucky consumers who perceived higher risks exhibited safer food handling behaviors. Strategies to increase the understanding of real and perceived food safety risks in the home combined with strategies that target specific demographic groups may be the most effective approach to improve food handling practices. A better understanding of consumers' food safety risk perceptions and behaviors could lead to more effective food safety education materials and messages.

Purpose Viewing consumer confidence as a set of static factors has informed previous research and underpinned strategies used in recovering from food safety quality failures, but this approach has not delivered reliable and quick recovery from large-scale food safety scandals. The purpose of this paper is to examine extant models and the factors they are composed of, and suggest an extended model that has a better potential for consumer confidence. The paper focuses on food products where supply chains are visible, and use these features to group the findings. Design/methodology/approach In this study principal components and logit analyses are used to assess the role of 30 variables operating in a consumer confidence model constructed from several existing in the literature. This combined model considers emotional, cognitive, trust and sociodemographic factors. In total, 14 independent factors are identified. The authors examine the factors, and from these, the decision-making mechanisms before and after the Sanlu Infant Milk Formula (IMF) scandal of 2008. Findings The authors find that the factors considered by consumers are different for different IMF supply chains, and different again before and after the scandal. The authors develop the argument for an extension to the existing models, incorporating a dynamic consumer confidence system. Research limitations/implications The paper uses a single survey after the focus event to establish “before” and “after” decision-making factors. Since the IMF scandal is recent and of very high profile, this is likely valid even if it carries memory bias effects. The study is directly applicable to food safety scandals in a Chinese context. Deductive reasoning extends our assertions to a wider context. They are logically validated but have not been formally tested. Practical implications Using this system as a framework a checklist for recovery from a similar food safety scandal is suggested. The authors also suggest more general use for use where supply chains features are visible to consumers. Originality/value Models for food safety consumer confidence recovery have previously focused on identifying models and the static factors they consist of. These do represent a reflection of how this phenomenon operates, but using the principals of this model nevertheless does not result in good recovery from extreme food safety failures. This paper contributes by extending these models to one that can be applied for better recovery.

Foodborne diseases have always been linked to numerous food manufacturing elements and home practices of purchasers and the latter does play a critical role in disease prevention. Consumers have the ultimate responsibility for handling and storing food safely and take adequate safety precautions when preparing and consuming food at home to avoid health related problems associated with microbial hazards. The objectives of this survey were to evaluate current knowledge of consumers pertaining to food hygiene and food safety concepts as well as to assess food handling practices that residents adopt to reduce microbial hazards in the domestic environment. A sample of 300 Mauritian residents were selected to participate in a questionnaire based survey. Questions in the questionnaire were based on hygienic practices with respect to food handling, food safety and personal hygiene. SPSS (Statistical Package for Social Sciences) was used to analyze the results and Microsoft excel was used to generate pie charts, and bar charts. The results obtained demonstrated that the level of knowledge pertaining to food safety and food hygiene and how to reduce microbial hazards were above average. Majority of the residents were knowledgeable about major aspects related to proper food handling behaviors but need more education pertaining to the use of thermometers to check for food temperature. The nature of the risk, personal and environmental factors (psychological, demographic and socio-economic factors, cultural and economic) were found to be the factors affecting food safety behaviors among consumers. Consumers can become more motivated to improve their behaviors if they are made aware of the impact of risky practices. Although, most consumers had basic knowledge pertaining to food safety, food hygiene and food handling practices, it is important to continually inform consumers about safe food handling practices through various channels.

Abstract Background: Intestinal parasitic diseases are one of the general medical conditions in numerous networks, especially among youngsters in country spaces of agricultural nations. Ethiopian studies have concentrated on the commonness and circulation of 2 intestinal parasitic contaminations, fundamentally among younger students. A couple of studies have looked at the scope on knowledge of under-five children’s mothers regarding the prevention of parasitic infections. Methods: A community-based cross-sectional examination with a quantitative methodology was conducted from November 30 to December 30, 2020, among mothers of under-five children in Bule Hora town. The example size in this investigation was 403. The information will be coded, checked sent out to SPSS Statistics rendition 25 for investigation. Further in age group (31-35) (AOR 2.94, 95% CI 1.38-6.24) had a good practice, Amara (AOR 0.39, 95% CI 0.18-0.85) people had poor practice and mothers who not able to read and write (AOR 3.97, 95% CI 1.26-12.49) had good practice than other educated.Conclusion: Mothers with children under the age of five have a considerably low degree of optimal awareness and experience when it comes to preventing intestinal parasitic infection. As a result, campaigns or formal training can be used to raise community consciousness about intestinal parasitic invasion counteraction and control.

Adequate knowledge regarding danger signs during pregnancy, child birth and postpartum period plays a vital role in safeguarding mothers as well as child health. This cross sectional study was conducted by purposively selected 262 pregnant women in two hospitals in Bogura district from 1st January to 31st December, 2018 with the aim to assess the knowledge of pregnant women on danger signs related to pregnancy and child birth. Data were collected with a semi-structured questionnaire through face-to-face interview. The mean age of the respondent’s was SD = 23.37 ± 4.47 years. Most of the respondents 61.4%, (n=161) knew about danger signs during pregnancy from health workers and 65.6 % (n=172) had poor knowledge regarding danger signs during pregnancy whereas 34.4% (n=90) respondents had good knowledge. Most of the respondents 61.5%, (n=161) understood danger signs during child birth and 68.7 % (n=180) had poor knowledge regarding danger signs during child birth. Among the respondents 40.5% (n=106) understood dang.er signs after child birth and only 12.2% (n=32) respondents had good knowledge regarding danger signs after child birth. Significant association was found between age of the respondents and level of knowledge regarding danger signs during pregnancy (p=0.0001). Health education on danger signs related to pregnancy and child birth should be imparted to all pregnant women to increase their knowledge regarding this issue.

Food safety has become a global issue due to the morbidity and mortality associated with it, particularly in developing countries. The objective of this community-based study is to examine food safety practices and its associated factors among postnatal mothers in the Western Region of Ghana. A cross-sectional survey study was conducted from August 1 2019 to January 31, 2020 from which data was obtained from the postnatal mothers ( N = 300 ). The data was analysed using SPSS v.23. The findings suggest that majority (86%) of the respondents exhibited good food handling practices. Also, 66.3% and 91.7% of the respondents exhibited good food preparation and proper storage practices, respectively. Results also revealed that the odds of performing good handling practice among respondents within the age group of 36-45 years were five times higher compared to those within the age group of 18-25 years [ OR = 4.92 (95% CI: 1.44–16.86), p = 0.011 ]. Moreover, respondents who had tertiary education qualifications were more likely to have proper food handling practices compared to those with primary education [ OR = 0.27 (95% CI: 0.09–0.71), p = 0.009 ]. These findings provide useful insights for policy directions. The government of Ghana and other stakeholders should develop a communication strategy to increase and sustain publicity and education on food safety particularly to postnatal mothers and the citizenry in general.
