Abstract The rheological and structural properties of cheese govern many physical processes associated with cheese such as slumping, slicing and melting. To date there is no quantitative model that predicts shear modulus, viscosity or any other rheological property across the entire range of cheeses; only empirical fits that interpolate existing data. A lack of a comprehensive model is in part due to the many variables that can affect rheology such as salt, pH, calcium levels, protein to moisture ratio, age and temperature. By modelling the casein matrix as a series core-shell nano particles assembled from calcium and protein these variables can be reduced onto a simpler two-dimensional format consisting of attraction and equivalent hard sphere volume fraction. Approximating the interaction between core-shell nano particles with a Mie potential enables numerical predictions of shear moduli. More qualitatively, this two-dimensional picture can be applied quite broadly and captures the viscoelastic behaviour of soft and hard cheeses as well as their melting phenomena.

The niclel nanoparticles were prepared via polyol process with hydrazine hydrate as reductant, the optimum conditions were investigated and proposed to be the molar ratio of NiCl2: NaOH: Hydrazine hydrate =1: 2: 11, 60 °C, pH5.5. The qualified fluorescent-magnetic dual functional CdTe/Ni nanoparticles were synthesized via layer-by-layer (LBL) technique, Ni was designed to be magnetic core and CdTe was used as fluorescent shell material, the molar ratio of CdTe:Ni is 4.5:1. The morphology of the Ni nano particles and CdTe/Ni core shell dual functional nano particles were characterized by transmission electron microscopy (TEM), and optical properties were investigated with fluorescence spectrum (FS) and ultra violet spectrum (UV). The synthesized CdTe/Ni nanoparticles showed yellow fluorescence when excited at 365nm, CdTe/Ni magnetic core shell QDs can be simply precipitated with a common magnet. TEM data indicated that ~15nm of Ni nanoparticles were obtained and ~25nm of CdTe/Ni core shell dual functional nanoparticles were prepared. Red shift of maximum absorbance peak was detected via UV, and these results inferred the QDs growth, moreover, 40nm red shift of maximum emission wavelength from 530nm to 570nm was observed, and which showed the growth QDs and formation of CdTe shell. The prepared magnetic core shell CdTe/Ni nanoparticles showed excellent optical properties, and it is expected to be useful and helpful in DNA sensing based on fluorescence resonance energy transfer, biological separating, and DNA labeling process.

This paper emphasis has researched the ER properties of Ni group core-shell nano particles modifier with Urea,SDBS and other polar molecule, analysis the relationship among ER properties and polar molecule type ,compound modifier under different electric field or magnetic field. It is found that the shear stress increasing with adding polar molecule, compound polar molecule modify can marked advance the properties of Ni group core-shell particles ER fluid.

This paper stated the preparation of nano-TiO2 via Sol-Gel method and modification of nano-TiO2 by coupling agent—MPS. Then Ethanol/PSt and nano-TiO2/PSt core-shell hybrid particles were prepared via miniemulsion polymerization by using the cationic surfactant Cetyl Trimethylammonium Bromide as emulsifier and Cyclohexane as co-stabilizer. These two hybrid nano-particles were added to the sizing agent—SX-5 respectively, to determine the sizing agents’ adhesive force to Terylene (T) and Terylene/Cotton (T/C) yarns respectively via roving method. The breaking strength and hairiness number of T/C yarns were determined by single yarns’ sizing method. The adhesive force of T and T/C yarns, breaking strength and hairiness number of T/C ones, showed that small size effect, high fluidity, and high surface energy caused by large specific surface area of hybrid nano-latices would make a great contribution to sizing properties.
