The move towards more sustainable production and consumption patterns is a goal shared by a large part of society. In the oil-mill sector, whether it be animal feed or human food, this development should make it possible to improve the protein autonomy of the territories and to use proteins more efficiently. Current methods make some of the rapeseed proteins indigestible and leave most of the undesirable compounds from the seeds in resulting meals. Residual oil, fibrous envelopes, glucosinolates, phytic acid, phenolic compounds and oligosaccharides, as well as overcooking, however, have negative effects on the value of proteins. An important part of the article is devoted to reviewing these effects. Their extraction, combined with milder heat treatments, would provide excellent quality proteins to the market and generate value for the entire value chain. Efficient dehulling and mechanical extraction would be the prerequisites for this development. An ethanolic extraction revisited to exploit the secondary metabolites would then complete this process with, however, a limited effect on phytic acid. All these technologies have the advantage of not posing major acceptability problems. This development requires new investments in applied research to make this new approach to processing oilseeds possible and efficient.

This article argues for more extensive attention by environmental historians to the role of agriculture and animals in twentieth-century industrialisation and globalisation. To contribute to this aim, this article focuses on the animal feed that enabled the rise of ‘factory farming’ and its ‘shadow places’, by analysing the history of fishmeal. The article links the story of feeding fish to pigs and chickens in one country in the global north (the Netherlands), to that of fishmeal producing countries in the global south (Peru, Chile and Angola in particular) from 1954 to 1975. Analysis of new source material about fishmeal consumption from this period shows that it saw a shift to fishmeal production in the global south rather than the global north, and a boom and bust in the global supply of fishmeal in general and its use in Dutch pigs and poultry farms in particular. Moreover, in different ways, the ocean, and production and consumption places of fishmeal functioned as shadow places of this commodity. The public health, ecological and social impacts of fishmeal – which were a consequence of its cheapness as a feed ingredient – were largely invisible on the other side of the world, until changes in the marine ecosystem of the Pacific Humboldt Current and the large fishmeal crisis of 1972–1973 suddenly changed this.

Meat production and consumption have been claimed to have negative impacts on the environment, and even on the consumer’s health. In this sense, alternative sources of protein, mainly meat substitutes and cultured meat, have emerged due to those perceived negative effects. Our paper carries out a choice experiment to analyze the preferences of 444 Spanish consumers and their willingness to pay for plant-based and cultured meats, as compared to conventional meat. Spain was considered of interest for this study due to its significant gastronomic culture, with high-quality meat products that make a great contribution to the economy, meaning that this could be a suitable and also challenging market in which to test alternative sources of protein. The findings show that consumers’ motivations and their interactions with these products are complex. Additionally, a cluster analysis allowed us to identify three types of consumers in terms of preference for these products: price-sensitive millennials, conscious/concerned consumers, and indifferent consumers. Only one group showed some level of acceptance of these alternative products meats.

A variety of measures are currently being taken on both the national and international levels in order to mitigate the negative effects of climate change. The promotion of electric mobility is one such measure for the transport sector. As a key component in a more environmentally-friendly, resource-saving, and efficient transport sector, electric mobility promises to create better sustainability. Several challenges still need to be met to exploit its full potential. This requires adapting the car technology, the value chain of vehicles, loads on the electricity network, the power generation for the drive, traffic, and charging infrastructure. The challenges to this endeavor are not only technical in nature, but they also include social acceptance, concerns, and economic, as well as ecological, aspects. This paper seeks to discuss and elucidate these problems, giving special focus to the issues of driving range, phenomenon of range anxiety, charging time, and complexity of the charging infrastructure in Germany. Finally, the development of social acceptance in Germany from 2011 to 2020 is investigated.

In order to put cultured species on the market with high quality and few casualties, many important studies are carried out. Most of the researches are conducted in the development of feed and feed ingredients 30-60% of the production cost in farming. Therefore, in aquaculture, an interest in alternative feed ingredients is moving at a very fast rate. In this context, the use of enzymes, probiotics and prebiotics in animal feed has steadily increased in recent years with reasons such as effective control of fish diseases and prevention of infection, strengthening the immune system of fish, increase of the digestibility, reduction of the feed cost, reduction of larval-term mortality, provision of increase in growth, live weight gain, and getting rid of the negative effects of stress.

The objective of this chapter is to evaluate the contribution of structural change to production and consumption patterns with respect to sustainability analysis, with specific reference to sustainable production and consumption issues. In the face of delocalization processes and value chain restructuring, the analysis of sustainable development should instead provide both consumption and production dimensions. In the empirical analysis, the authors consider four measures of emission intensity: consumption-based emissions, consumption-based emissions due to structural change, production-based emissions, and production-based emissions due to structural change. The empirical results suggest a moderate contribution of structural change to decreases in overall emissions.

A protein-based material created from a new approach using whole defatted larvae of the Black Soldier fly is presented. The larvae turn organic waste into their own biomass with high content of protein and lipids, which can be used as animal feed or for material production. After removing the larva lipid and adding a plasticizer, the ground material was compression molded into plates/films. The lipid, rich in saturated fatty acids, can be used in applications such as lubricants. The amino acids present in the greatest amounts were the essential amino acids aspartic acid/asparagine and glutamic acid/glutamine. Infrared spectroscopy revealed that the protein material had a high amount of strongly hydrogen-bonded β-sheets, indicative of a highly aggregated protein. To assess the moisture–protein material interactions, the moisture uptake was investigated. The moisture uptake followed a BET type III moisture sorption isotherm, which could be fitted to the Guggenheim, Anderson and de Boer (GAB) equation. GAB, in combination with cluster size analysis, revealed that the water clustered in the material already at a low moisture content and the cluster increased in size with increasing relative humidity. The clustering also led to a peak in moisture diffusivity at an intermediate moisture uptake.

Purpose Research in the field of indigenous value chains is limited in theory and empirical research. The purpose of this paper is to interpret values that may inform a new approach to considering value chains from New Zealand Maori kin community contexts. Design/methodology/approach The paper derives from research that develops Indigenous research methods on positionality. By extending the “included researcher” (Kawharu, 2016) role, the research recognises the opportunity of being genealogically connected to one of the communities, which may enable “deep dive research” relatively easily. Yet practical implications of research also obligate researchers beyond contractual terms to fulfil community aspirations in innovation. Findings Research findings show that a kin community micro-economy value chain may not be a lineal, progressive sequence of value from supplier to consumer as in Porter’s (1985) conceptualisation of value chains, but may instead be a cyclical system and highly consumer-driven. Research shows that there is strong community desire to connect lands and resources of homelands with descendant consumers wherever they live and reconnect consumers back again to supply sources. Mechanisms enabling this chain include returning food scraps to small community suppliers for composting, or consumers participating in community working bees, harvesting days and the like. Social implications The model may have implications and applicability internationally among indigenous communities who are similarly interested in socio-economic growth and enterprise development. Originality/value The apper’s originality, therefore, derives from addressing a research gap, showing that indigenous values may provide a new approach to conceptualising value chains and developing them in practice.

This paper analyzes how a newly developed food product (potagurt) with nutritional and health benefits can be promoted in Ghana. We employ the hedonic modeling and contingent valuation methods to estimate monetary values attached to the product’s attributes using 400 consumers in the Ashanti, Eastern, and Greater Accra regions of Ghana. The findings reveal that consumers have positive perceptions on the health and nutritional benefits of the product. Buyers place a higher value on potagurt relative to normal yogurt. The high value attached to potagurt is mainly linked to the health, nutritional, food safety, and quality attributes of the product, as well as perception. Consumers’ socioeconomic factors such as income, educational, and awareness levels also play a significant role in explaining their choice of the product. The practical implication is that the development and promotion of potagurt could stimulate sustainable economic development through better consumer health and improvement in the livelihoods of many players in the sweet potato value chain, especially the producers of potagurt and sweet potato farmers. We conclude that the promotion of the innovative food product could contribute to sustainable production and consumption of sweet potatoes.

Purpose The purpose of this paper is to describe the authors’ experience operationalizing the care delivery value chain (CDVC) as a management and continuous quality improvement (QI) approach to strengthen HIV/AIDS services provided in Northern Togo through addressing gaps across a care continuum. Design/methodology/approach The authors led a series of discussions to develop a CDVC specific to existing HIV/AIDS services in Northern Togo. Using the CDVC framework, 28 specific gaps in service delivery were identified and integrated into a strategic QI plan. Findings At 12 months, 92 percent of delivery gaps had demonstrated improvement. The CDVC framework proved to be valuable in the following ways. First, it facilitated the first comprehensive mapping of HIV/AIDS services in the Kara region of Togo. Second, it enabled the identification of gaps or insufficiencies in the currently available services across the full continuum of care. Third, it catalyzed the creation of a strategic QI plan based on identified gaps. Research limitations/implications This case description is the authors’ experience in one setting and should not be considered comparative in nature. Furthermore, the approach described may not be applicable to all initiatives and/or organizations. As described, the lack of sophisticated and comprehensive data collection systems limited the authors’ ability to collect reliable data on some of the QI initiatives planned. Practical implications The operationalization of the CDVC framework is an effective approach to drive continuous QI. Originality/value Through the operationalization of the CDVC, the authors developed a new approach for assessing existing services, identifying gaps in service delivery and directing continuous QI initiatives in a strategic manner.

Abstract In monogastric animals, tissue fatty acid profile directly reflects the fatty acid profile present in the animal’s diet. Inadequate ratio of fatty acids in food can lead to negative effects on human health. Conjugated linoleic acid (CLA) is a group of isomers of linoleic acid (C18:2), and its most interesting role is in the prevention of tumors, atherosclerosis and diabetes. CLA is found in ruminant meat and milk, and since pigs and poultry do not have the ability to synthesize CLA, it is possible to add them to animal feed with biotechnological solutions. The scientific public imposes modern parameters for determining the nutritional value of fatty acids, in which the AI – index of atherogenicity, TI – index of thrombogenicity and H/H - hypocholesterolemic/hypercholesterolemic ratio are distinguished. The aim of this study was to determine the effect CLA addition to the diet of non-ruminants on the lipid indices of certain categories of meat, from the aspect of consumer health needs. A significant influence of the correction of feed’s fatty acid composition on the lipid indices in food of animal origin was determined.
