Abstract By-products such as beef liver (BL) and beef heart (BH), while rich in protein, vitamins, and minerals, can be difficult products for incorporation into mixtures. Sodium alginate (SA) and calcium lactate (CL) can be used to improve structure of protein sources. The objective was to determine the quality of restructured BL and BH pet treats using ALGIN as a structure forming agent. Quality parameters assessed were pH, expressible moisture, cooking loss, and water activity of raw and dehydrated pet treats. After grinding, BL and BH, were mixed: 25%BL:75%BH, 50%BL:50%BH, and 75%BL:25%BH. The 3 BL:BH combinations were mixed with 2 dosages of ALGIN (0.5% SA + 0.425% CL, and 1% SA + 0.85% CL) to produce 6 treatments. Each treatment was then extruded into 20-mm-thick jerky slices and refrigerated at 3°C for 48 h. Samples were dehydrated at 93°C for 2.5 h for cooking loss analysis. Ten raw samples (25.4 mm × 25.4 mm) were used to measure expressible moisture, and another ten raw samples were used to measure pH. Water activity was assessed on ten raw and ten dehydrated samples. Data were analyzed with the GLIMMIX procedure of SAS and means were separated at P ≤ 0.05. Cooking loss decreased as ALGIN dosage increased in all BL and BH mixtures (P < 0.0001); however, cooking loss percentage increased as BH proportions increased (P = 0.0001). Water activity of dehydrated samples decreased as BL proportions increased (P < 0.0001), but with increasing ALGIN dosage, water activity of dehydrated treats increased (P = 0.0193). Raw pH was not affected by treatment. Expressible moisture of samples increased with increasing BL proportions (P < 0.0001) but decreased as ALGIN dosage decreased (P < 0.0001). Use of ALGIN allowed for BL and BH to be restructured into an acceptable form for use in pet treats.

Purpose. The aim of the research conducted during 2016-2019 was to determine the impact of technological methods on the indicators of corn grain quality to optimize the elements of growing technology depending on the directions of use in conditions of the Forest-Steppe natural zone of Ukraine. Methods – field, quantitative and weight, chemical, comparative and calculation, mathematical and statistical. Results. On the results of the research, dependences of formation of quality of grain on the content of protein, starch, fat in it and correlation dependencies between these indicators and yield of corn have been revealed. The best quality of grain of a forage and food direction is formed when applying high doses of mineral fertilizers, and for processing on bioethanol the optimal content of starch and protein is guaranteed at optimum and raised level of fertilizing. It was established that the content of protein, starch and fat had less effect on their yield from 1 hectare than the general yield level. The technologies of cultivation of different intensity as to their possible application for the production of grain of different directions of use with the given quality parameters, the yield of protein, starch, fat and bioethanol have been evaluated. Conclusions. The technology of corn growing with complex application of intensification elements in conditions of the Forest-Steppe zone, which includes introduction of N240P120K240 on the background of by-products of its predecessor, application of the soil and insurance herbicide, plant growth and micro-fertilizers is suitable for fodder and food purposes and ensured the yield of 12.1 t/ha of grain with protein content and yield – 10.56% and 1.28 t/ha, fat – 4.29% and 0.52 t/ha, starch – 71.27% and 8.62 t/ha. For processing on bioethanol effective is the technology of corn growing with the introduction of N180P120K180, by-products of the predecessor, soil herbicide and bio-stimulants, which provided a yield of 9.76 t/ha of grain with a starch content of 72.26% for the yield of 7.05 t/ha and yield of bioethanol at the level of 3982 l/ha.

During plant-based drinks production a significant amount of valuable by-products (BPs) is obtained. The valorization of BPs is beneficial for both the environment and the food industry. The direct incorporation of the fermented and/or ultrasonicated almond, coconut, and oat drinks production BPs in other food products, such as wheat bread (WB) could lead to the better nutritional value as well as quality of WB. Therefore, in this study, various quantities (5, 10, 15, and 20%) of differently treated [ultrasonicated (37 kHz) or fermented with Lacticaseibacillus casei LUHS210] almond, coconut, and oat drinks preparation BPs were used in wheat bread (WB) formulations. Microbiological and other quality parameters (acidity, color, specific volume, porosity, moisture content, overall acceptability) as well as bread texture hardness during the storage and acrylamide content in the WB were evaluated. Among the fermented samples, 12-h-fermented almond and oat, as well as 24-h-fermented coconut drinks preparation BPs (pH values of 2.94, 2.41, and 4.50, respectively; total enterobacteria and mold/yeast were not found) were selected for WB production. In most cases, the dough and bread quality parameters were significantly (p ≤ 0.05) influenced by the BPs used, the treatment of the BPs, and the quantity of the BPs. The highest overall acceptability of the WB prepared with 20% fermented almond drink preparation by-product (AP), 15% fermented oat drink preparation by-product (OP), and 15% ultrasonicated OP was established. After 96 h of storage, the lowest hardness (on average, 1.2 mJ) of the breads prepared with 5% fermented AP, coconut drink preparation by-product (CP), and OP and ultrasonicated CP was found. The lowest content of acrylamide in the WB prepared with OP was found (on average, 14.7 μg/kg). Finally, 15% fermented OP could be safely used for WB preparation because the prepared bread showed high overall acceptability, as well as low acrylamide content.

Abstract This article provides results of an experimental investigation of hybrid- (MIR-FD), mid-infrared- (MIR) and freeze drying (FD) on the drying characteristics, energy consumption and quality parameters of pear. Rehydration ratio, color, texture, water activity, phenolic content and antioxidant activity were measured to evaluate the quality of dried pear products. Mid-infrared-freeze drying (MIR-FD) had the higher drying rate, which reduced the drying time by 14.3–42.9 % compared with FD method. Two empirical models were chosen to fit the drying curves and the models had the suitable R2 and RMSE values. Temperature characteristics of MIR and MIR-FD dried pear were determined in terms of interior temperature variation. The MIR-FD pear had darker color, better rehydration capacity, similar water activity, lower hardness (except of MIR-FD70°C) and highest content of chemical composition than single stage of FD products. Above all, the MIR50-60°C-FD was suggested as the best drying method for pear in this study.

A study on quality of jelly candy formulated from k-carrageenan and konjac (jelly powder), hasbeen conducted. The objective of this study was to determine the best ratio of k-carrageenan andkonjac in the formulation of jelly candy. The ratio of k-carrageenan and konjac was varied from40:25; 35:30; 30:35; to 25:40. The quality parameters observed on jelly candy produced were gelstrength, elasticity, stickiness, water activity (a w), and sensory test. Results showed that the bestratio of -carrageenan to konjac was 40:25 (formula A) which produced candy with physicochemicalquality closed to that of commercial one with hardness of 470.7 g, elasticity of 4.5 mm, stickinessof 36.15 g, and a wof 0.5. While the results of the sensory test showed that the difference ratio of -carrageenan and konjac had no significant effect on the product. Based on that result, the bestformulation in production of jelly candy was formula A.

Wet cassava starch noodles have been developed in Srihardono Village, Pundong-Bantul District. The disadvantage of this noodle is the short shelf life. The objective of this study was to determine the optimum drying conditions to obtain the best quality of dried cassava noodles. The factors, such as temperature and drying time, and noodle layer were evaluated. Dried cassava noodles contain a combination of traditionally processed cassava starch and manufactured cassava starch. The ratio of traditional starch to manufactured starch was 3:2 (w/w). Drying was conducted using a cabinet drier at various temperatures (70, 80 and 90 °C) for 2 h, 2.5 h, 3 h, 3.5 h and 4 h. Noodle layers were 1, 2, 3 and 4. The observed quality parameters were elongation, water content, cooking loss and water absorption. The obtained data were analyzed using a Response Surface Methodology. The range of optimum drying condition was between 76 and 84 °C and drying time between 3.2 and 3.5 h. Noodles were arranged in 2 layers. Dried cassava noodles had an elongation value of 60 to 70%, water content of 8 to 9%, cooking loss of 10 to 12% and water absorption of 140 to 150%.

Dehydrated pineapple by-products enriched in bromelain using a hydrostatic pressure treatment (225 MPa, 8.5 min) were added in marinades to improve beef properties. The steaks from the silverside cut (2 ± 0.5 cm thickness and weight 270 ± 50 g), characterized as harder and cheaper, were immersed in marinades that were added to dehydrated and pressurized pineapple by-products that corresponded to a bromelain concentration of 0–20 mg tyrosine, 100 g−1 meat, and 0–24 h time, according to the central composite factorial design matrix. Samples were characterized in terms of marination yield, pH, color, and histology. Subsequently, samples were cooked in a water-bath (80 °C, 15 min), stabilized (4 °C, 24 h), and measured for cooking loss, pH, color, hardness, and histology. Marinades (12–24 h) and bromelain concentration (10–20 mg tyrosine.100 g−1 meat) reduced pH and hardness, increased marination yield, and resulted in a lighter color. Although refrigeration was not an optimal temperature for bromelain activity, meat hardness decreased (41%). Thus, the use of pineapple by-products in brine allowed for the valorization of lower commercial value steak cuts.

Three methods of obtaining 20 Å resolution in sectioned protein crystals have recently been described. They include tannic acid fixation, low temperature embedding and grid sectioning. To be useful for 3-dimensional reconstruction thin sections must possess suitable resolution, structural fidelity and a known contrast. Tannic acid fixation appears to satisfy the above criteria based on studies of crystals of Pseudomonas cytochrome oxidase, orthorhombic beef liver catalase and beef heart F1-ATPase. In order to develop methods with general applicability, we have concentrated our efforts on a trigonal modification of catalase which routinely demonstrated a resolution of 40 Å. The catalase system is particularly useful since a comparison with the structure recently solved with x-rays will permit evaluation of the accuracy of 3-D reconstructions of sectioned crystals.Initially, we re-evaluated the packing of trigonal catalase crystals studied by Longley. Images of the (001) plane are of particular interest since they give a projection down the 31-screw axis in space group P3121. Images obtained by the method of Longley or by tannic acid fixation are negatively contrasted since control experiments with orthorhombic catalase plates yield negatively stained specimens with conditions used for the larger trigonal crystals.

Semen was collected from four rams, using artificial vagina and viability%, motility% and plasma membrane integrity% were measured. Fresh ejaculates (n = 32) were separated by modified swim-up separation using modified human tubal fluid medium. Four fractions of supernatant were collected at 15-minute intervals. The mean volume, mass activity, concentration, motility%, viability%, normal morphology and membrane integrity% (HOST +ve) of fresh semen were 1.0 ± 0.14, 4.1 ± 0.1 × 109 spermatozoa/ml, 85.0 ± 1.3, 89.4 ± 1.0, 85.5 ± 0.7, 84.7 ± 0.5 respectively. There was no significant (P>0.05) difference in fresh semen quality parameters between rams. The motility%, viability% and HOST +ve % of first, second, third and fourth fractions were 53.4 ± 0.5, 68.2 ± 0.3, 74.8 ± 0.3 and 65.5 ± 0.4; 55.5 ± 0.4, 66.2 ± 0.4, 74.5 ± 0.3 and 73.6 ± 0.3 and 66.7 ± 0.5, 66.8 ± 0.5, 65.2 ± 0.4 and 74.7 ± 0.5 respectively. The motility%, viability% and membrane integrity% of separated semen samples differed significantly (P<0.05) between four fractions. The mean motility% and viability% were significantly higher (P<0.05) in third fraction (74.8 ± 0.3%), whereas the mean HOST +ve% was significantly higher (P<0.05) in fourth fraction (74.7 ± 0.5). All quality parameters of separated spermatozoa were significantly (P<0.05) lower than that of fresh semen. The pregnancy rates were higher with fresh semen (71%) in comparison to that of separated sample (57%).Bangl. vet. 2016. Vol. 33, No. 2, 62-70

The experiment was conducted to find out the effect of variety, nitrogen level and harvesting time on yield and seed quality of barley. The treatments used in the experiment consisted of two varieties viz. BARI Barley 4 and BARI Barley 5, three harvesting time viz. 35, 40 and 45 Days after Anthesis (DAA) and nitrogen levels viz. 0, 70, 85 and 100 kg N ha-1 . The experiment was laid out in a spilt- spilt-plot design with three replications assigning the variety to the main plot, harvesting time to the sub-plots and nitrogen level to the sub-sub plots. Variety had significant effects on the all yield attributes except fertile seeds spike-1 . Seed quality parameters viz. normal seeds spike-1 , deformed seeds spike-1 , germination (%) and vigour index were statistically significant. The variety BARI Barley 5 produced higher grain yield and seed quality than BARI Barley 4. Grain yield from BARI Barley 5 and BARI Barley 4 were 4.59 t ha-1 and 4.24 t ha-1 , respectively. Significantly, the highest 1000-seed weight (46.90 g) was produced by BARI Barley 5 than (37.90 g) BARI Barley 4. The result revealed that harvesting time had significant effect on yield and yield attributes and seed quality parameters. Seed yield was highest (4.65 t ha-1 ) when the crop harvested at 40 DAA and it was increased linearly from 35 DAA. Maximum quality seed and 1000-seed weight (43.20 g) was obtained when the crop harvested at 40 DAA. All the yields, yield attributes and seed quality parameters were significantly influenced by nitrogen levels. The highest grain yield (5.14 t ha-1 ) was obtained when BARI Barley 5 variety was fertilized by 100 kg N ha-1 and the lowest (3.14 t ha-1 ) was obtained from control treatments. Normal seeds spike-1 , vigour index, germination (%) were better at 85 kg N ha-1 in variety of BARI Barley 5 than BARI Barley 4. So it can be concluded that BARI Barley 5 showed better result when fertilized with 100 kg N ha-1 and harvested at 40 DAA for getting maximum yield and 85 kg N ha-1 and harvested at 40 DAA for getting better quality seed.

This article assesses the reliability, constructive validity and reproducibility of a special questionnaire for determining the quality parameters of rendering physiotherapeutic care to patients with chronic generalized periodontitis. The analysis of literary sources showed that there are studies of quality of dental services, however, we have not met with research into the quality and comfort of physiotherapy procedures for periodontal patients. At the same time, the importance of this issue is obvious and requires study and analysis. Without making judgments about the quality of the service, a full-fledged medical dental procedure can not take place. The assortment of physical devices and methods grows annually, their use in the periodontoloical treatment is not always sufficiently justified, the effectiveness is not always confimed therefore it is important to pay attention not only to the marketing efforts directed by the clinics for comfort, but also to analyze the ideas about the quality of the clinical characteristics of physiotherapeutic procedures.
